Ingredient Substitutes


Missing an ingredient for your favorite recipe, and there's no time to run to the store?
Use these emergency substitutions when cooking or baking a recipe.

Recipe calls for: Substitute with:
1 tablespoon cornstarch for thickening 2 tablespoons all purpose flour
1 teaspoon baking powder 1/2 teaspoon cream of tartar plus 1/4 teaspoon baking soda

1 cup sour cream 1 cup plain yogurt; 1 tablespoon lemon juice plus enough evaporated milk to make 1 cup; or 1 cup low-fat cottage cheese plus 2 tablespoons skim milk and 1 tablespoon lemon juice
1 cup ricotta cheese 1 cup cottage cheese plus 1 tablespoon skim milk
1 cup yogurt 1 cup buttermilk
1 cup light cream 7/8 cup milk plus 3 tablespoons butter
1 cup creme fresh 1 cup sour cream, 1 cup whipping cream plus 1 tablespoon buttermilk or yogurt, 1/2 cup whipping cream plus 1/2 cup sour cream
1 can sweetened condensed milk 1/3 cup plus 2 tablespoons evaporated milk plus 1 cup sugar and 3 tablespoons butter or margarine. Heat ingredients until sugar and butter are dissolved
1 cup butter or margarine 1 cup vegetable shortening plus 1/2 teaspoon salt
1 whole egg 2 egg yolks plus 1 tablespoon water
1 cup egg substitute 1/4 cup nonfat dry milk powder plus 6 egg whites and 1 teaspoon vegetable oil
1 cup honey 1 1/4 cups sugar plus 1/4 cup liquid
1 cup molasses 1 cup honey
1 cup brown sugar 3/4 cup granulated sugar plus 1/4 cup molasses
1 cup confectioners' sugar 1 cup granulated sugar plus 1 tablespoon cornstarch processed in a blender until powdery
1 teaspoon lemon juice 1/2 teaspoon vinegar
1 cup corn syrup 1 cup granulated sugar plus 1/4 cup water
1/4 cup apple cider vinegar 1/4 cup white vinegar
1 tablespoon balsamic vinegar 1 tablespoon sherry or cider vinegar
1 ounce unsweetened chocolate 3 tablespoons cocoa powder plus 1 tablespoon butter or margarine
1 square semi-sweet chocolate 3 tablespoons chocolate chips or 1 1-ounce square unsweetened chocolate
plus 1 tablespoon sugar
4 ounces German chocolate 1/4 cup unsweetened cocoa powder plus 1/3 cup sugar and 3 tablespoons fat
3/4 cup Dutch process cocoa 3/4 cup regular cocoa powder plus 1/4 teaspoon baking soda
1 clove fresh garlic 1 teaspoon garlic salt or 1/8 teaspoon garlic powder
2 teaspoons minced onion 1 teaspoon onion powder
1/4 cup freshly chopped onion 1 tablespoon dry minced onion
1 tablespoon gingerroot, grated 1 tablespoon candied ginger; rinsed and finely chopped or 1 1/2 teaspoons dry ground ginger plus 1/2 teaspoon lemon juice

1 teaspoon apple pie spice 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg and 1/4 teaspoon cardamom or ground cloves
1 teaspoon bouquet garni 1/2 teaspoon each dried parsley flakes, dried thyme leaves and 1 bay leaf
1 teaspoon allspice 1/2 teaspoon cinnamon plus 1/8 teaspoon ground cloves
1 teaspoon chervil 1 teaspoon dried parsley flakes plus 1/8 teaspoon rubbed, dried sage
1 teaspoon mixed Italian herbs 1/2 teaspoon leaf basil plus 1/4 teaspoon leaf oregano plus 1/4 teaspoon thyme
1 teaspoon pumpkin pie spice 1/2 teaspoon ground cinnamon plus 1/4 teaspoon ground ginger plus 1/4 teaspoon nutmeg
1 teaspoon dry mustard 1 tablespoon prepared mustard
Juice of 1 orange 1/4 cup orange juice
1/4 cup teriyaki sauce 3 tablespoons soy sauce plus 1 tablespoon sherry
1 tablespoon prepared mustard 1 teaspoon dry mustard plus 1 tablespoon water
1 cup beer 1 cup non-alcoholic beer, beef broth or apple cider
1 cup bread crumbs 3/4 cup cracker crumbs
1 cup ketchup 1 cup tomato sauce plus 1/2 cup sugar plus 2 tablespoons vinegar
2 cups tomato sauce 3/4 cup tomato paste plus 1 cup water
1 cup tomato juice 1/2 cup tomato sauce plus 1/2 cup water
1 10 3/4-ounce can tomato soup 1 cup tomato sauce plus 1/4 cup water
1 cup chili sauce 1 cup tomato sauce plus 1/4 cup brown sugar, 2 tablespoons vinegar, 1/4 teaspoon pepper, 1/4 teaspoon cinnamon, dash of ground cloves and a dash allspice
1 cup currants 1 cup raisins, 1 cup chopped dates or 1 cup other dried fruit
(cranberries, blueberries, cherries)
1 7-ounce jar marshmallow cream 1 16-ounce package marshmallows, melted, plus 3 1/2 tablespoons light corn syrup
1/2 cup tarter sauce 6 tablespoons mayonnaise or salad dressing plus 2 tablespoons pickle relish and
1 tablespoon finely chopped onion
