COOKING TIPS

Baking Cakes and Cupcakes

  • When filling your cupcake liners with batter, especially chocolate, fill each liner about one-third of the way, insert one whole marshmallow in the center, finish filling with batter another third of the way. Bake your cupcakes. Cool slightly before eating. They make delicious cupcakes with a warm gooey center.
  • When baking round cake layers line the pans with waxed paper. The layers come out great and the waxed paper peels off easily.
  • Sprinkle cocoa powder in greased or buttered pan rather than flour when baking a chocolate cake.

RECIPES

Apple Pie Bread Pudding (Crockpot Recipe)

Watkins nonstick cooking spray
3 eggs, beaten
2 cups milk, half-and-half, or light cream
1/2 cup sugar
1/2 teaspoon Watkins Cinnamon or Watkins Apple Bake Seasoning
1 21-ounce can chunky apple pie filling (more fruit)
6-1/2 cups cinnamon-raisin bread cut into 1/2-inch cubes, dried* (4-1/2 cups dry)
Whipped cream or vanilla ice cream (optional)

  1. Lightly coat the inside of a 3-1/2- or 4-quart slow cooker with nonstick cooking spray; set aside.
  2. In a large bowl whisk together the eggs, milk, sugar, and cinnamon. Gently stir in pie filling and bread cubes. Pour mixture into the prepared cooker.
  3. Cover and cook on low-heat setting for 3 hours until a knife inserted near center comes out clean (mixture will be puffed). Remove liner from cooker, if possible, or turn off cooker. Let stand, uncovered, for 30 to 45 minutes to cool slightly before serving (pudding will fall as it cools).
  4. To serve, spoon bread pudding into dessert dishes. If desired, top each serving with a dollop of whipped cream or a scoop of vanilla ice cream. Makes 6 servings.

*Note: To make 4 -/2 cups dry bread cubes, you'll need 8 or 9 slices fresh bread. Spread bread cubes in a single layer in a 15x10x1-inch baking pan. Bake, uncovered, in a 300 degree F oven for 10 to 15 minutes or until dry, stirring twice; cool.

Upside-Down Apple Pecan Pie

1 C. chopped pecans*
1/3 C. melted butter or margarine*
1/2 C. firmly packed brown sugar*
Crust for 2-crust pie (homemade or purchased)
3/4 C. granulated sugar
3 T.flour
6 C. thinly sliced peeled apples (I like Granny Smith apples)
1/8 tsp. Watkins Nutmeg (all-natural jar), (organic tin), (special edition collector's tin)
1/2 tsp. Watkins Cinnamon
1 T. butter

Heat oven to 375 degrees F.

In 9 inch deep dish pie pan, combine pecans and brown sugar, pour butter evenly over pecans and brown sugar. Place bottom crust over pecan mixture in pan.

Mix flour with granulated sugar. In large bowl combine apples with sugar-flour mixture, nutmeg, and cinnamon; mix lightly. Spoon into crust lined pan. Dot with pieces of butter. Top with remaining crust, fold edge of top crust under bottom crust and seal edges. Cut slits in top crust.

Bake 40 - 50 minutes or until apples are tender and crust is golden brown. Cover edge with foil last 20 minutes so it doesn't brown too quickly.

Remove from oven. Cool upright for 5 minutes. Place serving plate over pie pan and invert. Replace any nuts that stay in pan. Cool 1 hour.

*These items are placed in bottom of pie pan, prior to crust, please see directions above.

Onion and Mushroom-Stuffed Burger

1-1/2 cups sliced onions (about 3 medium)
8 oz. button or cremini mushrooms, sliced (3 cups)
1 Tbsp. olive oil
2 Tbsp. snipped fresh parsley
2-1/2 lb. 85-percent lean ground beef
1/3 cup Watkins Meat Magic
1 teaspoon Watkins Organic Garlic Powder
1-1/2 tsp. salt
1 tsp. Watkins Granualted Black Pepper
16 slices applewood smoked bacon (about 1 lb.)
8 slices Swiss, provolone, and/or Colby and Monterey Jack cheese
8 Kaiser rolls or hamburger buns, split and toasted
Tomato slices (optional)

  1. In very large skillet cook the onions and mushrooms in hot oil over medium heat 15 to 20 minutes or until all liquid has evaporated, and onions and mushrooms are tender and golden brown, stirring occasionally. Remove from heat. Stir in parsley; set aside to cool slightly.
  2. In a very large mixing bowl mix beef, meat magic, garlic powder, salt, and pepper until just combined (do not over mix). Shape mixture into 16 (3-1/2-inch diameter) patties. Spoon filling onto half of patties to 1/2-inch of edge. Top with remaining patties; pinch to seal. Place 2 bacon slices over each stuffed patty in crisscross pattern, tucking ends under.
  3. For charcoal grill, arrange preheated coals around drip pan. Test for medium heat above pan. Place patties over drip pan on grill rack. Cover and grill 25 to 30 minutes or until done (160 F). (For gas grill, preheat grill. Reduce heat to medium. Adjust for indirect grilling. Grill as above.) Top with cheese. Cover; cook 1 to 2 minutes more or until cheese melts.
  4. Transfer burgers to serving platter. Serve on buns with tomato slices. Makes 8 servings.
Watkins Meat Magic is similar to Worcestershire sauce.

Chicken Burgers
Ground chicken is combined with chopped onion, bell peppers and canned mushrooms, cooked with BBQ sauce, and served open-faced on toasted bun halves.

2 lbs ground raw chicken
1 small onion, diced
1 green bell pepper, chopped
1 red bell pepper, chopped
1 can button mushrooms
2 cloves garlic, diced
2 teaspoons Watkins Seasoning Salt (or to taste)
1 teaspoon Watkins Black Pepper (or to taste)
1 cup Watkins Gourmet Original Barbecue Sauce
8 leaves iceburg lettuce
8 large tomato slices (such as beefsteak variety)
Mayonnaise or salad dressing
Sliced dill pickles
4 white or wheat hamburger buns, split

Mix ground chicken, peppers, onion, garlic, mushrooms and salt and pepper in a bowl. Make 8 burgers out of meat mixture and gril, broil, or fry. Baste burgers with barbecue sauce as they cook. Baste and cook on both sides until done. Put bun halves in oven to toast until slightly browned. When burgers are done, spread mayonnaise on bun halves. Add pickles and lettuce, then tomato. Place burger on top of tomato and serve open-face. Makes 8 servings.

Italian Chicken Sub Sandwich

2 cups crushed saltine crackers
1/2 tsp. Watkins Basil (all-natural jar) or (organic tin)
1/4 tsp. Watkins Black Pepper
4 skinless, boneless chicken breast halves
1 cup all-purpose flour
1 slightly beaten egg
1/4 cup olive oil
1 can spaghetti sauce
1 cup shredded mozzarella cheese
1 loaf baguette-style French bread, cut into quarters and split lengthwise

In a shallow dish combine cracker crumbs, basil, and pepper; set aside. Pound each chicken breast until 1/4-inch thick. Dredge chicken in flour; dip into beaten egg. Coat both sides with cracker crumb mixture. Preheat oil in a large skillet over medium heat. Fry chicken for 6 minutes; turn and fry about 6 minutes more or until chicken is no longer pink. Pour spaghetti sauce into skillet with chicken. Reduce heat to low. Simmer for 5 minutes, turning chicken to coat with sauce. Sprinkle chicken with cheese. Serve chicken breasts on baguettes; top with extra sauce. Makes 4 large servings.

Tropical Layer Cake with Whipped Pineapple Frosting
Adapted using Watkins products from Trim and Terrific Diabetic Cooking, by Holly Clegg.

Watkins Nonstick Cooking Spray
1 box (18.25 ounces) yellow cake mix
1 can (11 ounces) mandarin oranges, drained
1 ripe mango, peeled, pitted, chopped or pureed
1/3 cup canola oil
1 egg
3 egg whites
1 cup plain fat-free yogurt
1 can (8 ounces) unsweetened crushed pineapple with juices
1 container (12 ounces) fat-free whipped topping, thawed
1 teaspoon Watkins Coconut Extract or Watkins Banana Extract
1/4 cup flaked coconut

Preheat oven to 375 degrees F. Spray two 9-inch round cake pans with cooking spray and dust with flour.

In a large bowl, combine cake mix, oranges, mango, oil, egg, egg whites and yogurt. Mix well.

Divide batter between prepared pans. Bake until a toothpick inserted into the center comes out clean, about 23 to 28 minutes. Turn cakes out onto racks and cool slightly. While cakes are still warm, poke holes in them with a toothpick. Drain pineapple, reserving juice. Drizzle pineapple juice over warm cakes. Cool completely.

In a small bowl, combine pineapple, whipped topping and coconut or banana extract. Frost one of the cake layers with frosting. Sprinkle with half of coconut. Top with remaining cake layer. Frost the top and sides with remaining frosting. Sprinkle with coconut. Makes 12 to 16 servings

Cool 'n Creamy Chocolate Pie

1 package (3 oz.) cream cheese, softened
1/4 cup sugar
1 teaspoon Watkins Vanilla Extract
1/2 cup chocolate syrup
1 cup (1/2 pt.) cold whipping cream
1 packaged crumb crust (6 oz.)
Chocolate curls

  1. Beat cream cheese, sugar and vanilla in medium bowl until well blended. Gradually add syrup, beating until smooth. Beat whipping cream until stiff. Carefully fold into chocolate mixture. Pour into crust.
  2. Cover; freeze until firm, about 3 hours. Just before serving, garnish with chocolate curls, if desired. 6 to 8 servings.
