Signs and Symptoms of Arthritis

Steady or intermittent pain in a joint
- Temporary joint stiffness after getting out of bed
- Joint swelling or tenderness
- Joint creaking or grinding sounds
Now is the best time to determine whether you are at risk for arthritis.
Some indicators of risk are with you at birth, such as gender, a family history of osteoarthritis, or racial background. For example, compared to Asians, Caucasians generally have a higher risk of osteoarthritis of most joints, except for knee joints. Also, more women than men are affected by arthritis. Other risk factors involve personal lifestyle choices, and this is where you can make a big difference in the health of your joints. If you feel you are at risk of arthritis, speak with your doctor immediately to learn how you can reduce your risk.
Many lifestyle choices that you make now can greatly influence whether you are burdened by osteoarthritis symptoms later. For example:
Overeating can lead to excess weight, which causes mechanical stress that can contribute to osteoarthritis, especially of the knees and hand joints.
A job that requires repetitive movement, bending, or heavy lifting can place heavy demands on the joints, increasing arthritis risk.
Although normal use of muscles, joints, and tendons keeps joints healthy, heavy physical activity may increase the risk of osteoarthritis.
When risk factors are combined, susceptibility to osteoarthritis is even higher.
Eating right and getting regular physical exercise can help your health in two major ways: by keeping weight down and by reducing the risk of osteoarthritis, joint pain, and muscle pain.

RECIPES
Homemade Apple Pie
Pastry dough for a 9-inch/25-cm double crust pie (Recipe below)
3/4 to 1 cup/180 to 250 mL sugar
3 tablespoons/45 ml cornstarch
1/2 teaspoon/2.5 ml Watkins Apple Bake Seasoning
1 teaspoon/5 ml Watkins Cinnamon
Dash of salt
6 peeled, cored and thinly-sliced tart apples (I like Granny Smith apples for a pie)
1 tablespoon/15 ml butter or margarine, cut into pieces
Sugar
Place prepared pastry dough in pie plate; trim and flute edge. Combine sugar, cornstarch, Apple Bake Seasoning, Cinnamon, and salt in a large bowl. Add apples and toss to coat. Fill pastry with apple mixture. (I like the apples in my pie to be soft rather than firm so I cook the apples coated with cornstarch and seasonings in a large sauce pan for 10 minutes before filling the pastry. Stir in a little water so the apple mixture does not stick. This will make a juicy pie.) Dot with pieces of butter.
Roll out top crust and cut slits for steam to escape while pie is baking. Arrange top crust on pie. Trim edges and flute to seal. Sprinkle top crust with sugar. Bake at 400°F/205°C for 40 minutes or till done.
For French Apple Pie with Streusel Top
Instead of placing a second crust on top of apple filling top with the following streusel mixture.
1/2 cup/125 mL all-purpose flour
1/2 cup/125 mL brown sugar
1/4 cup/60 mL butter
Mix flour, brown sugar, and butter with a fork until crumbly. Sprinkle over apples. Bake at 400°F/205°C for 40 minutes or till done. Makes 8 servings. Serve warm with vanilla ice cream.
Pie Crust
For one 9 or 10 inch/25 or 28 cm double crust pie
2 cups/ 500 ml flour
1 teaspoon/5 ml salt
3/4 cup/180 ml shortening ( I use Crisco)
5 to 7 tablespoons/75 to 105 ml ice water
Cut shortening into flour and salt mixture with a pastry blender or fork until pieces are the size of small peas. Sprinkle 5 to 6 tablespoons ice water over mixture and gently toss with fork to mix. Gather dough with fingers to form a ball. For a two crust pie divide dough in half. On a lightly floured surface flatten ball and roll with rolling pin to 1/8 inch thick. Roll from center to edge using light strokes to form a circle. If edges split, pinch them together. Roll pastry over rolling pin and transfer to pie plate. Adjust and fit to bottom and sides of pie plate. Then fill with apple mixture.
Apple Gingerbread
2/3 cup sugar
1/3 cup unsweetened applesauce
1 egg
3 tablespoons molasses
1 cup all-purpose flour
1/2 cup whole wheat flour
2 teaspoons Watkins Ground Ginger
1 teaspoon Watkins Baking Powder
1 teaspoon baking soda
1 teaspoon Watkins Ground Cinnamon
1/4 teaspoon Watkins Ground Nutmeg
1/8 teaspoon Watkins Ground Allspice
1/2 cup reduced-fat plain yogurt
1-1/2 cups chopped peeled Granny Smith or other tart apples (about 1 medium)
1 cup plus 2 tablespoons reduced-fat whipped topping
In a mixing bowl, combine the sugar, applesauce, egg and molasses; mix well. Combine the flours, ginger, baking powder, baking soda and spices; add to the molasses mixture alternately with yogurt, beating just until combined. Fold in the apples.
Pour into an 8-in. square baking dish coated with nonstick cooking spray. Bake at 350° for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Cut into squares; dollop with whipped topping. Yield: 9 servings.
Nutritional Analysis One serving (1 piece with 2 tablespoons whipped topping) equals 203 calories, 2 g fat (1 g saturated fat), 24 mg cholesterol, 186 mg sodium, 42 g carbohydrate, 2 g fiber, 4 g protein. Diabetic Exchanges: 2 starch, 1 fruit.
Apple Cider Gelatin Salad
2 envelopes unflavored gelatin
1/2 cup cold water
2 cups apple cider or juice
1/2 cup sugar
1/3 cup lemon juice
1/4 teaspoon Watkins Ground Cloves
Dash salt
1 cup diced unpeeled apples
1/2 cup chopped walnuts
1/2 cup chopped celery
Topping
3/4 cup sour cream
1/4 cup mayonnaise
1 tablespoon sugar
Watkins Ground Cinnamon
Cinnamon sticks, optional
In a small bowl, sprinkle gelatin over cold water; let stand for 1 minute. In a saucepan, bring cider to a boil; stir in the gelatin mixture and sugar until dissolved. stir in lemon juice, cloves and salt. Pour into a large bowl. Refrigerate until slightly thickened, about 1 hour.
Fold in apples, walnuts and celery. Pour into a 1-qt.dish or individual dishes. Refrigerate until firm, about 2 hours.
For topping, combine the sour cream, mayonnaise and sugar in a bowl until blended. Dollop over salad; sprinkle with cinnamon. Garnish with cinnamon sticks if desired. Yield: 6 servings
Apple-Glazed Pork Chops
Simple enough for weeknights yet impressive enough for guests, these juicy chops are topped with a glaze of herbs, apple cider and brown sugar. The cooked apple slices and onions will make it a fast favorite in your home.
4 bone-in pork chops (3/4 inch thick)
2 tablespoons vegetable oil
1 cup apple cider or apple juice
2 tablespoons brown sugar, divided
1 teaspoon salt
1/4 teaspoon Watkins Rosemary, crushed
1/4 teaspoon Watkins Thyme
1 tablespoon cornstarch
1 tablespoon cold water
2 large tart apples, sliced
1/2 cup sliced onion
2 tablespoons butter or margarine
In a large skillet, brown pork chops in oil. Add the cider, 1 tablespoon brown sugar, salt, rosemary and thyme. Cover and cook for 7-8 minutes or until meat juices run clear. Combine the cornstarch and water until smooth; add to the skillet. Bring to a boil; cook and stir for 1-2 minutes or until thickened.
Meanwhile, in another skillet, cook the apples, onion, butter and remaining brown sugar over medium heat for 3-4 minutes or until apples are softened. Serve over pork chops. Yield: 4 servings.
