Hi all!

Autumn arrives next week, Thursday, September 22nd. Even though some days were too hot for comfort I'd rather that summer last a little longer! My summer chore list still has too many uncompleted items. But, perhaps with cooler temperatures I'll feel more like working. Cooler temperatures means that more birds will be visiting my feeders to partake of a variety of tasty seeds and treats. This issue has amazing pictures of a hummingbird's nest from eggs to flight. A must see!

All the recipes featured in this issue use apples as an ingredient. Go apple picking with your family! Enjoy the fresh air and you get to sample too!

I found some recipes for dog biscuits and treats and kitty treats too. I made some for our dog last weekend and she's been begging for goodies ever since. We feed our dog a nutritious dog food, dog biscuits, and dog treats. The homemade treats don't have preservatives and are made from wholesome ingredients just like in people food! I'll include some of the recipes in future issues.

From Lorraine, "My favorite beverage for August is Sumac Tea! Staghorn sumac grows in abundance in our area and makes a delicious tea. Take about 5 or 6 clumps of the bright red berries from the sumac and soak in 2 qts COLD water for a few hours or overnight. Gently squeeze the berries to release the flavor and strain. Use 1 quart of this concentrate and 1 quart water with up to about 1 cup sugar (to taste) and serve cold over ice. This is thirst quenching and high in vitamin C."

TAX TIP

The IRS responded to the steep cost of gasoline by announcing an unusual midyear change to the mileage rate used for business-expense deductions. The standard mileage-rate deduction is jumping to 48.5 cents a mile for business miles driven from September 1 through December 31 from the 40.5 cent rate that will remain in effect for the first eight months of the year.

Using Your Computer

RECIPES

Apple Pancakes with Maple-Apple Sauce

1-1/2 cups all-purpose flour
3 teaspoons Watkins Baking Powder
1/2 teaspoon salt
3 T granulated sugar
1/4 teaspoon Watkins Nutmeg
1/3 teaspoon baking soda
1 egg, lightly beaten
3 T butter, melted
1/4 teaspoon Watkins Vanilla
1 cup milk
1 cup grated apple

Combine flour, baking powder, salt, sugar and nutmeg in mixing bowl. In a separate bowl, mix baking soda, egg, butter, vanilla and milk. Combine both mixtures, stirring only until blended. Fold in grated apple.

Using about 1/4 cup of batter for each pancake, pour batter onto hot, lightly greased griddle to bake. When top of each pancake shows full of holes, turn to brown on other side. Turn pancakes only once while cooking. Makes 4 servings.

Maple-Apple Sauce

2 teaspoons butter
2 large apples, peeled, cored and diced
1/4 cup pure maple syrup
2 T dark corn syrup
Dash of salt

Melt butter in a nonstick skillet over medium-high heat. Add apples and saute until just brown, about 2 to 3 minutes. Add maple syrup and corn syrup to apples and stir gently. Let cook another 2 to 3 minutes or until mixure thickens. Serve with Apple Pancakes. Makes 4 servings.

Cranberry Apple Oat Bar

3 cups rolled oats
2 cups flour, all-purpose
2 teaspoons salt
1 teaspoon Watkins baking powder
2 cups brown sugar (can use a brown sugar substitute)
1/2 cup applesauce
1/4 cup margarine, softened
2 cups cranberries, dried
1 cup apple juice
2 cups apples, peeled, cubed
1 teaspoon Watkins Ground Cinnamon

Blend first 4 ingredients; set aside. Beat brown sugar, applesauce and margarine, in large bowl, on high until smooth. Stir in flour mixture until crumbly. Press half into bottom of greased pan; reserve other half. Bake in preheated 350-degree F oven 15 minutes.

Place cranberries, apple juice, apples and cinnamon in small saucepan; soak 20 minutes. Boil over medium-high heat 5 minutes until tender, stirring occasionally. Spread hot fruit over crust; crumble remaining crust mixture over fruit.

Bake at 350 degrees F 20 to 25 minutes until light brown. Makes 48 bars.

Butterscotch Apple Dip

1 (14-ounce) can EAGLE BRAND Sweetened Condensed Milk (NOT evaporated milk)
1 cup butterscotch-flavored chips
1/4 teaspoon salt
2 teaspoons white vinegar
1/4 to 1/2 teaspoon Watkins Ground Cinnamon
Apple wedges

In heavy saucepan, over low heat, combine EAGLE BRAND, butterscotch chips and salt. Cook and stir until melted. Remove from heat; stir in vinegar and cinnamon. Serve warm with apples. Store leftovers covered in refrigerator.

To Reheat
In small heavy saucepan, combine desired amount of sauce with small amount of water. Over low heat, stir constantly until heated through. Serve warm over ice cream. Can be made several weeks ahead. Store tightly covered in refrigerator.
MICROWAVE METHOD: In 1-quart glass measure, combine EAGLE BRAND, butterscotch chips and salt. Microwave on HIGH (100% power) 3 or 3 ½ minutes, stirring after 2 minutes. Stir in vinegar and cinnamon.

Apples with Cinnamon-Cider Dip

2 tablespoons cornstarch
1 tablespoon brown sugar
1-1/4 cups apple cider
3 tablespoons honey
2 teaspoons lemon juice
1/2 teaspoon Watkins Ground Cinnamon
Dash Watkins Ground Cloves
Dash Watkins Ground Allspice
1 tablespoon butter or margarine
4 apples, cored and sliced

For dip, in a medium saucepan combine cornstarch and brown sugar. Stir in apple cider, honey, lemon juice, cinnamon, cloves, and allspice. Cook and stir until thickened and bubbly. Cook and stir for 2 minutes more. Remove from heat. Add butter or margarine; stir until melted. Serve dip warm with sliced apples. Makes 4 to 6 servings.

Apple-Stuffed Pork Roast

This pork roast contains a classic combination of ingredients and is sure to impress your dinner guests. Plus, it is low in calories and fat.

1 small apple, chopped
1/2 cup soft bread crumbs
1/4 cup chopped celery
2 tablespoons raisins
2 tablespoons chopped walnuts
2 tablespoons sliced green onions
Dash Watkins Ground Nutmeg
2 tablespoons apple juice or apple cider
3/4 pound pork tenderloin, trimmed of separable fat
1/2 cup apple juice or apple cider
1-1/2 teaspoons cornstarch
1/8 teaspoon Watkins Ground Cinnamon

For stuffing, stir together the chopped apple, bread crumbs, celery, raisins, walnuts, green onions, and nutmeg. Stir in 1 tablespoon of the apple juice or 1 tablespoon apple cider.

To butterfly the pork tenderloin, make a single lengthwise cut down the center of one narrow edge of the meat, cutting to within 1/2-inch of the other side. Spread the meat open. Place knife in the "v" of the first cut. Cut horizontally to the cut surface and away from the first cut to within 1/2-inch of the other side of the meat. Repeat on the opposit side of the"v". Spread these sections open.

Cover meat with clear plastic wrap. Pound with a meat mallet to 1/2-inch thickness. Spread stuffing over meat. Roll up from one of the short sides. Tie with string to secure. Brush with some of the remaining 1 tablespoon apple juice. Place meat on a rack in a shallow roasting pan. Roast, uncovered, in a 350 degree F oven for 1 to 1-1/4 hours or meat thermometer registers 170 degrees F, brushing with the remainder of the 1 tablespoon apple juice after 30 minutes.

Meanwhile, in a small saucepan stir together the apple juice or cider, the cornstarch, and cinnamon. Cook and stir until thickened and bubbly. Cook and stir for 2 minutes more. Serve with roast. Makes 4 servings.

Apple-Pork Tenderloin

3 pounds pork tenderloin
6 to 8 apples, peeled, cored and sliced
1 onion, chopped
1 teaspoon Watkins Cinnamon
2 tablespoons sugar
1 cup apple cider
2 tablespoons garlic, minced

Place the pork in the center of a roasting pan. In a bowl combine the apples, onion, cinnamon and sugar together and place in the pan surrounding pork. Pour the apple cider over the pork. Spread the garlic over the top. Bake, uncovered, at 325-degrees for 1 to 1-1/2 hours or until pork is cooked. Serves 8.

Bite-Of-Apple Cookies

1/2 cup margarine
1 cup brown sugar
2 eggs
1 1/2 cup flour
1/2 cup oatmeal, uncooked
2 teaspoons baking soda
1/2 teaspoon Watkins Cinnamon
3/4 cup wheat germ
1 cup apples, peeled, cored, and finely chopped

Cream margarine, sugar, and eggs. Mix dry ingredients and combine with creamed mixture. Add apples. Drop spoonfuls onto a greased baking sheet. Bake at 350 degrees for 10-15 minutes.

Apple Doughnuts

2 1/2 cups all-purpose flour
1 1/2 teaspoons Watkins Baking Powder
1 teaspoon baking soda
1/2 teaspoon Watkins Ground Cinnamon
1/2 cup granulated sugar
3 tablespoons butter, softened
1 egg
1/4 cup apple cider
1/4 cup milk
1 tablespoon Watkins Vanilla Extract
1 medium apple
oil (for deep frying)
1 cup confectioners' sugar
1 tablespoon Watkins Ground Cinnamon

In a large bowl, combine the flour, baking powder, baking soda, and cinnamon. Make a well in the center. In a small bowl, cream together the sugar and butter, then beat in the egg. Add the cider, milk, and vanilla to the creamed mixture. Beat well until combined. Pour mixture into the center of the dry ingredients and stir until smooth.

Peel, core, and finely chop the apple, then stir it into the batter. Cover and chill the dough for 1 hour. Place half the dough on a floured board; knead lightly, and roll out to about 3/8" thick. Cut with a floured 2 1/2-inch doughnut cutter. Heat the oil to 375 degrees in a skillet with high sides or a large pan. Fry the dough for 1-2 minutes on each side, until golden brown. Drain on paper towel. Cool slightly, then dust with confectioners' sugar or a mix of 1 cup sugar to 1 tablespoon cinnamon.
