Are You Getting Enough Calcium?

Many foods are excellent sources of calcium. If you're not taking supplements or consuming dairy or calcium-fortified products, you may not be getting enough calcium in your diet. The following foods have been identified by the National Institute of Child Health and Human Development as being high in calcium:

1 oz of cooked dried white beans: 161 mg of calcium
1/2 cup spinach: 122 mg
1/2 cup turnip greens: 99 mg
1/2 cup soybeans, cooked: 90 mg
1 cup broccoli, cooked or fresh: 90 mg
1/2 cup bok choy, cooked or fresh: 80 mg
1 oz dry-roasted almonds: 80 mg
10 dried figs: 269 mg
3 oz salmon, canned with bones: 180 mg

RECIPES

Crockpot Oatmeal
Here is a recipe for oatmeal that cooks while you sleep so if your family likes oatmeal there is no excuse for not eating a healthy breakfast.

1 cup steel cut oats
1 cup dried cranberries
1 cup dried figs (could also substitute for raisins or currants)
4 cups water
1/2 cup half-and-half
1/2 teaspoon Watkins Cinnamon

In a slow cooker, combine all ingredients and set to low heat. Cover and let cook for 8 to 9 hours. Stir and serve.

Crockpot Morning Casserole (Bacon or Ham, Eggs, and Hashbrowns)
Put the ingredients in your slow cooker before you go to bed and wake up to a yummy breakfast! You can halve this recipe for fewer eaters.

1 bag (32 oz.) frozen hash brown potatoes
1 lb. of bacon diced, cooked and drained or 1 lb. cooked ham, cubed
1 medium diced onion
1 green bell pepper diced
1 1/2 c. shredded cheddar or Monterey Jack cheese
1 dozen eggs
1 c. milk
1 t. salt
1 t. Watins Pepper (more or less to taste)

Place a layer of frozen potatoes on the bottom of the slow cooker, followed by a layer of bacon then onions, green pepper and cheese. Repeat the layering process two or three more times, ending with a layer of cheese. Beat the eggs, milk and salt and pepper together. Pour over the Crockpot mixture, cover and turn on low. Cook for 10-12 hours.

Apple French Toast with Cinnamon Sauce

4 eggs
1 cup milk
3 tablespoons sugar
1 teaspoon Watkins Vanilla Extract
1/2 teaspoon Watkins Cinnamon
8 slices day-old French bread or your choice of bread (French bread is better made with day-old bread. It will soak up the egg mixture more than fresh bread, and it will puff up more when cooked.)
3 tablespoons melted butter

Preheat oven to 375 F. To prepare toast, wisk eggs with milk, sugar, vanilla, and cinnamon. Dip bread into mixture, coating both sides, allowing bread to soak up mixture. Place bread in single layer on baking sheets brushed with butter to prevent sticking. Bake for 12 minutes, turn bread over, and bake another 12 minutes or until brown and puffy.

Sauce

2 teaspoons butter
1/2 cup brown sugar
3/4 cup water
1/2 teaspoon Watkins Cinnamon
3 apples, peeled, cored, and sliced thinly

To prepare sauce, mix butter and sugar in saucepan and cook until butter is melted. Add water, cinnamon, and apples. Cook on low heat for 8 to 10 minutes, until apples are tender.

To serve, arrange toast on plate, top with sauce.

Italian Zucchini Crescent Pie
Whether you have a bounty of zucchini from your garden or you pick up a few from the supermarket, this savory pie is a winner!

2 tablespoons butter or margarine
4 cups thinly sliced zucchini
1 cup chopped onions
2 tablespoons Watkins Parsley Flakes
1/2 teaspoon salt
1/2 tespoon Watkins Pepper
1/4 teaspoon Watkins Garlic Powder
1/4 teaspoon Watkins Basil
1/4 teaspoon Watkins Oregano
2 eggs, well beaten
8 oz. (2 cups) shredded Muenster or mozzarella cheese
1 (8-oz.) can refrigerated crescent dinner rolls
2 teaspoons prepared mustard

  1. Heat oven to 375 degrees F. Melt butter in 12-inch skillet over medium-high heat. Add zucchini and onions; cook 6 to 8 minutes or until tender, stirring occasionally. Stir in parsley flakes, salt, pepper, garlic powder, basil and oregano.
  2. In large bowl, combine eggs and cheese; mix well. Add cooked vegetable mixture; stir gently to mix.
  3. Separate dough into 8 triangles. Place in ungreased 10-inch pie pan, 12x8-inch (2-quart) glass baking dish or 11-inch quiche pan; press over bottom and up sides to form crust. Firmly press perforations to seal. Spread crust with mustard. Pour egg mixture evenly into crust-lined pan.
  4. Bake at 375 degrees F. for 18 to 22 minutes or until knife inserted near center comes out clean. If necessary, cover edge of crust with strips of foil during last 10 minutes of baking to prevent excessive browning. Let stand 10 minutes before serving. Makes 6 servings.

Hushpuppy Muffins

2/3 cup yellow or white cornmeal
1/3 cup all-purpose flour
1 teaspoon Watkins Baking Powder
1 teaspoon sugar
1/2 teaspoon salt
2 large egg whites
1/2 cup minced onion
1/3 cup milk
2 tablespoons chopped fresh parsley
1 tablespoon vegetable oil
1/4 teaspoon Watkins Granulated Black Pepper

Preheat oven to 450 degrees F. Grease a 12-cup muffin pan; set aside. Combine cornmeal, flour, baking powder, sugar, and salt in a large bowl. In a separate bowl, combine egg whites, onion, milk, parsley, oil and pepper; add to dry ingredients, stirring just until moistened. Spoon into prepared muffin tins. Bake for 10 minutes or until lightly browned. Remove and cool on a rack for 5 minutes. Serve immediately. Makes 1 dozen muffins.

Chicken Fajitas
Marinating the chicken in this recipe gives it more fajita flavor.

5 tablespoon canola oil
1/4 cup fresh lime juice
1/2 teaspoon Watkins Ground Cumin
1/2 teaspoon Watkins Cayenne Pepper
1 pound skinless, boneless chicken breasts, cut into thin strips
1 large red bell pepper, cut into thin strips
1 large yellow bell pepper, cut into thin strips
1 large green bell pepper, cut into thin strips
1 onion, thinly sliced
1 garlic clove, minced
1/4 teaspoon Watkins Pepper

Mix together 2 tablespoons oil, lime juice, cumin, cilantro and cayenne in a small glass dish. Add chicken to mixture and toss to coat completely. Marinate chicken in refrigerator for 2 to 3 hours.

Over medium high heat in a wok or large pan, heat 1 tablespoon oil until very hot. Add marinaded chicken and stir-fry over high heat until chicken is white throughout. Place on plate and set aside.

Add remaining 2 tablespoons oil to wok or pan and heat until very hot. Add peppers, onion, and garlic; stir-fry until crisp-tender, about 5 minutes.

Return chicken and season with pepper. Toss until heated through, about 2 minutes. Serve with warm flour or corn tortillas, shredded cheese, sour cream, fresh tomatoes, jalepenos or guacamole.

Almond-Apple Coffee Cake
Make this moist and tangy coffee cake for small gatherings or to give to a friend in need of a little cheer.

1-1/2 cups thinly sliced peeled tart apples
3 tablespoons brown sugar
1 tablespoon lemon juice
3/4 teaspoon Watkins Apple Pie Spice
2 tablespoons butter, softened
1/3 cup sugar
1 egg
1 teaspoon Watkins Vanilla Extract
1 cup all-purpose flour
1/2 teaspoon baking soda
1/8 teaspoon salt
1/2 cup buttermilk
1 tablespoon sliced almonds

Glaze

1/4 cup confectioners' sugar
1 teaspoon buttermilk
1/4 teaspoon Watkins Vanilla Extract

In a large saucepan, combine the apples, brown sugar, lemon juice and apple pie spice. Cook over medium-high heat for 5 minutes or until syrup is thickened and apples are tender, stirring occasionally.

In a small mixing bowl, cream butter and sugar. Beat in egg and vanilla. Combine flour, baking soda and salt; add to creamed mixture alternately with buttermilk. Spoon batter into a greased 9-in. springform pan. Arrange apple mixture over top; sprinkle with almonds.

Bake at 350 for 20-25 minutes or until a toothpick inserted near the center comes out clean. Cool on wire rack. Remove sides of pan. Combine glaze ingredients; drizzle over top. Yield: 8 servings.

BIRD WATCHING

The Devotion of Mourning Doves

You are probably tired of me writing about the Mourning Doves in our yard but I must tell you what happened yesterday!

We have a nest on the ledge near our front door. It's out of the way and high enough that the birds feel safe and no one going in or out of our front door is bothered. The Mourning Doves built this nest last year and raised two baby doves. It must be a good place for a nest because we've had three Mourning Dove families raised there this spring and summer. The first family raised two baby birds. The second family hatched one baby bird. And the third hatching had two baby birds. I look out every morning to see how much they've grown.

Well, yesterday when I looked out, one of the baby birds was sitting on the ground and the other baby was in the nest with its mother. My husband and I decided to put the baby bird back in the nest, so we drug out the ladder. I picked up the baby bird and was just about to put it in the nest when the mother bird flew out of the nest and the baby bird tried to fly but fell to the ground. I was so startled that I dropped the baby bird that I was holding. By the time I climbed down the ladder we couldn't see either baby bird and the mother bird was flapping around on the ground pretending to have a broken wing. Birds really use this defense mechanism. We looked around and couldn't find the baby birds so went back in the house thinking that our good deed was not so good after all and a little sad that something might happend to the baby birds.

Later that day I looked out around our front door and found the two baby doves and two adult doves huddled together on the ground. I had no idea that Mourning Doves were so devoted. Somehow the adult doves had found the baby birds and hurded them together.

This morning when I looked outside I didn't see them at first. The sprinklers had been on so the birds were forced to move. I saw two baby birds and an adult bird sunning themselves a few feet away.
