Whole Grains

Serve your Labor Day barbecue on whole-wheat buns.

Add one more item to whole grains' list of benefits. They can keep you out of the dentist's chair. In a recent study, people who regularly ate whole grains in any form, from oatmeal to pizza with whole-wheat crusts, were less likely to develop dreaded gum disease and the tooth loss that can come with it.

Who would have thought that eating shredded wheat cereal as a teenager would protect your gums as an adult? But that seems to be the case. Although scientists aren't sure why, it may be because the fiber in whole grains reduces blood sugar, which ultimately wards off inflammation that can settle in the gums and cause peridontal disease. If it wards off the dentist's chair, that may be all the explanation most people need.

Of course, that's just one more reason to choose whole-grain breads, breakfast cereals, and pastas over foods made with refined, processed, bleached flours. Whole grains are nutritional all-stars for a lot of reasons. Among the biggest their ability to help prevent heart disease, diabetes, digestive disorders, cancer, and gum trouble.

Substituting Whole Wheat Flour

Whole wheat flour may be substituted for part of the white flour in yeast and quick bread recipes, but the volume of the finished product will be reduced. Whole wheat flour contains the nutritious germ and bran as well as the endosperm of the wheat kernel. Bran particles cut through the gluten during mixing and kneading of bread dough, resulting in a smaller, heavier loaf. If substituting a very coarsely ground whole wheat flour for all purpose flour, use 1 cup plus 2 tablespoons whole wheat flour for every cup of all purpose flour. To substitute whole wheat flour in a white bread recipe, use half whole wheat and half bread flour for the best results.

Whole grain foods are high in fiber. In comparison to refined grains, whole grains also have more nutrients, such as vitamin E, vitamin B6, the B vitamin pantothenic acid, magnesium, manganese, zinc, potassium, chromium, copper and protein.

RECIPES

Apple Oatmeal Cookies

Bake these nutritious cookies for your kids lunch or an after-school snack. They are packed with healthy ingredients, honey, whole wheat flour, oatmeal, and fresh apples.

1/2 cup margarine, softened (use regular or reduced-fat margarine)
1/2 cup honey
1 egg
1 teaspoon Watkins Vanilla Extract (on sale this month)
3/4 cup stone ground whole wheat flour
1/2 teaspoon baking soda
3/4 teaspoon Watkins Ground Cnnamon (on sale this month)
1 1/2 cups quick-cooking oats
1 or 2 apples, peeled and chopped

Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets. In a large bowl, cream together the margarine, honey, egg and vanilla until smooth. Combine the whole wheat flour, baking soda and cinnamon; stir into the creamed mixture. Mix in oats and apples. Drop by teaspoonfuls onto the prepared cookie sheets. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Peanut Butter Blossom Cookies

1/2 cup shortening
1/2 cup peanut butter
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 teaspoon baking powder
1/8 teaspoon baking soda
1 egg
2 tablespoons milk
1 teaspoon Watkins Vanilla (on sale this month)
1-3/4 cup all-purpose flour
1/4 cup granulated sugar
54 milk chocolate kisses or your favorite jam or jelly

  1. In a large mixing bowl beat the shortening and peanut butter with an electric mixer on medium speed 30 seconds. Add the 1/2 cup granulated sugar, brown sugar, baking powder, and baking soda. Beat until combined, scraping the sides of bowl. Beat in egg, milk, and vanilla until combined. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour.
  2. Shape dough into 1-inch balls. Roll the balls in the 1/4 cup granulated sugar. Place 2 inches apart on an ungreased cookie sheet. Bake in a 350 degree F oven 10 to 12 minutes or until edges are firm and bottoms are lightly browned. Immediately press a chocolate kiss into each cookie's center. An alternative is to press center of cookie with thumb and add a dab of your favorite jelly or jam. Transfer cookies to a wire rack; let cool. Makes about 54 cookies.

Make-Ahead Tip: Bake and cool cookies completely, pressing chocolate kiss into hot cookie center. Arrange cookies in an airtight or freezer container in a single layer; cover with a sheet of waxed paper. Repeat layers, leaving enough air space to close container easily. Freeze up to 1 month.

Double Chocolate Chunk Biscotti
Eat this chocolately and crisp cookie for an afternoon snack dipped in a glass of cold milk or with a cup of hot tea or coffee. This cookie is a delicious addition to your holiday baking and cookie exchange.

1/3 cup butter
2/3 cup sugar
1/4 cup Watkins Unsweetened Cocoa Powder
2 teaspoons Watkins Baking Powder
2 eggs
1-3/4 cups all-purpose flour
4 ounces white baking bar, coarsely chopped
3 ounces semisweet chocolate, chopped
2 tablespoons shortening (optional)
2 ounces semisweet chocolate or white baking bar, coarsely chopped (optional)

  1. Grease a large cookie sheet; set aside. In a large mixing bowl beat butter with an electric mixer on medium speed for 30 seconds. Add sugar, cocoa powder, and baking powder; beat until combined. Beat in eggs. Beat in as much flour as you can. Stir in any remaining flour. Stir in the 4 ounces white baking bar and the 3 ounces semisweet chocolate.
  2. Divide dough in half. Shape each half into a 9-inch-long roll. Place rolls 4 inches apart on prepared cookie sheet; flatten rolls slightly to 2 inches wide.
  3. Bake in a 375 degree F oven for 20 to 25 minutes or until a wooden toothpick inserted near the centers comes out clean. Cool on cookie sheet on a wire rack for 1 hour. Using a serrated knife, cut each roll diagonally into 1/2-inch-thick slices. Lay slice, one cut side down, on an ungreased cookie sheet.
  4. Bake slices in a 325 degree F oven for 8 minutes. Turn slices over and bake 7 to 9 minutes more or until slices are dry and crisp. (Do not overbake.) Transfer to a wire rack; cool.
  5. If desired, in a heavy small saucepan combine the shortening and the 2 ounces semisweet chocolate or white baking bar. Cook and stir over low heat until melted and smooth. Drizzle over tops of biscotti. Let stand until set. Store in an airtight container up to 1 week. Makes 32 biscotti.

Beef Fajitas

1-1/2 lb. beef sirloin steak, thinly sliced
1/2 cup zesty Italian reduced fat dressing
1 green bell pepper, cut into strips
1 sweet red bell pepper, cut into strips
1 large onion, cut into wedges
1/4 teaspoon Watkins Cumin
1/4 teaspoon Watkins Chili Powder
1/4 teaspoon Watkins Garlic Salt or Garlic Granules
16 flour tortillas, warmed in microwave or in skillet with small amount of oil
1 cup reduced fat cheddar cheese
1 cup reduced fat or light sour cream
1/2 cup salsa

Combine steak and 1/4 cup of the dressing in glass bowl; cover. Refrigerate 1 to 2 hours to marinate, stirring occasionally. Remove steak; discard marinade. Cook steak in remaining 1/4 cup dressing in large skillet on medium-high heat in 5 to 6 min. or until no longer pink. Remove steak; keep warm. Add peppers and onion; sprinkle with cumin, chili powder, and garlic salt. Cook until tender. Add steak; cook until heated through. Serve in warm tortillas topped with cheese, sour cream and salsa.

You can substitute thinly sliced precooked chicken or raw chicken for the steak in this recipe. Do not marinate chicken. Use 1/4 cup reduced fat Italian dressing to cook chicken. Continue as directed.

Chicken Enchiladas

Filling
2 cups chopped cooked chicken
2 tomatoes, chopped
Half of a medium onion, chopped
1 can (5 oz.) chopped green chiles, drained
Mexican Pepper (new product, Limited Edition)
Freshly-ground Sea Salt to taste
12 corn tortillas
8 oz. (2 cups) shredded marble jack

Easy Red Sauce
1/4 cup Original Grapeseed Oil or canola oil
1/3 cup Mexican Soup and Seasoning Base (new product, Limited Edition)
1 can (8 oz.) tomato sauce
1-1/4 cups water Mexican Pepper (new product, Limited Edition)
Sea Salt to taste

Make sauce
Heat oil in a skillet over medium-high heat. Stir in soup base, reduce heat to medium, and cook a few seconds. Stir in tomato sauce and water, and continue cooking over medium heat approximately 10 minutes, or until thickened slightly. Season to taste.

Combine filling ingredients. Soften tortillas in hot oil in skillet or in microwave. Coat 8 x 12-inch pan with Watkins Cooking Spray. Spread just enough sauce in bottom of pan to cover. Fill tortillas and roll, placing them seam-side down in pan. Pour remaining sauce over enchiladas; top with cheese. Preheat oven to 350°. Bake 25 minutes, or until cheese is golden brown.

Corn tortillas are more traditional for enchiladas, but flour tortillas sometimes soak up less sauce and maintain their shape better.

Barbecued Ribs
If you like barbecued ribs this is a very simple recipe for delicious tender ribs.

Pork Back Ribs
Watkins Original, Honey, or Mesquite Barbecue Sauce Concentrate prepared according to directions on bottle or your favorite barbecue sauce

Cut ribs into three or four rib sections. Bake in a 325 degree F oven or over indirect heat on your grill. Bake for 1 1/2 hours, turning once. Be careful as fat will drain from ribs as they cook. Brush with barbecue sauce on both sides. Cook 5 to 10 minutes and serve with additional warm sauce.

The Mourning Doves built another nest near our front door again this year. This is the second family of doves in this nest this year. I promised a picture of the doves in the nest. Well, guess what? The dove just up and flew away last week.
