From Lorraine, "My favorite beverage for August is Sumac Tea! Staghorn sumac grows in abundance in our area and makes a delicious tea. Take about 5 or 6 clumps of the bright red berries from the sumac and soak in 2 qts COLD water for a few hours or overnight. Gently squeeze the berries to release the flavor and strain. Use 1 quart of this concentrate and 1 quart water with up to about 1 cup sugar (to taste) and serve cold over ice. This is thirst quenching and high in vitamin C."

PAINTING TIP

I've been painting the trim on our house and the deck in our backyard. Usually I wear vinyl painter's gloves on my hands so they don't get covered with paint. My finger nails often poke through the ends of the fingers on the gloves and I still get paint on my hands. In this hot weather my hands sweat and when I lift my hands above my head the sweat runs down my arms.

A few days ago I started painting with a pair of cotton garden gloves on my hands. They work great! The paint doesn't soak through and get on my hands. My hands don't sweat because the cotton absorbs the moisture. My finger nails do not poke through the ends of the fingers on the gloves. I can wipe off dust, webs, and plant debris with my glove and just keep right on painting. The paint dries quickly and I can use the gloves over and over again. When I stop painting and remove my gloves, my hands are paint free!

RECIPES

Asparagus, Zucchini, and Yellow Pepper Frittata
Serve this colorful frittata for brunch, lunch, or supper. Add a crisp green salad and french roll or bread for a delicious meal.

1-1/2 pounds fresh asparagus or two 9-ounce or 10-ounce packages frozen cut asparagus
1 medium yellow sweet pepper, cut into 1/4-inch strips
1/3 cup chopped onion
1 small zucchini, halved lengthwise and sliced 1/4 inch thick (about 1 cup)
10 slightly beaten eggs
1 cup half-and-half, light cream, or milk
2 tablespoons snipped fresh Italian parsley or 1 tablespoon Watkins Parsley
1-1/4 teaspoons salt
1/4 to 1/2 teaspoon Watkins Black Pepper

Butter a 2-quart rectangular baking dish; set aside. If using fresh asparagus, snap off and discard woody stems. Cut into 1-inch pieces. In a saucepan, bring about 1 inch water to boiling. Add asparagus, pepper strips, and onion; bring just to boiling. Reduce heat slightly; cover and boil about 1 minute or until crisp-tender. Drain well, reserving some asparagus tips for garnish. Spread asparagus-pepper mixture evenly in baking dish. Layer zucchini slices over. Combine eggs, half-and-half, parsley, salt, and pepper. Pour over vegetables in baking dish. Bake, uncovered, in a 350 degree F oven about 35 minutes or until a knife inserted near center comes out clean. Let stand 10 minutes before serving. Garnish each serving with asparagus tips, if desired. Makes 8 servings.

Foil-Grilled Potatoes
3 medium russet potatoes (460 g), unpeeled and scrubbed
2 teaspoons (10 ml) olive oil
1/4 teaspoon (1.25 ml) Watkins Thyme
1/4 teaspoon (1.25 ml) Watkins Oregano
1/8 teaspoon (0.6 ml) Watkins Rosemary
1/8 teaspoon (0.6 ml) Watkins Garlic Salt or Watkins Garlic Flakes
1/8 teaspoon (0.6 ml) Watkins Paprika
1/4 teaspoon (1.25 ml) Watkins Black Pepper
2 tablespoons (24 g) freshly grated Parmesan cheese

Cut a 14-inch (35 cm) square sheet of heavy-duty aluminum foil. Slice the potatoes and place in center of the foil. Drizzle potatoes with olive oil. In a small bowl, combine thyme, oregano, rosemary, garlic salt, paprika, and pepper. Sprinkle over potatoes and toss gently to coat evenly.

Wrap and seal foil securely. Place on grill about 4 to 6 inches from source of heat over medium-hot coals. Cook 30 to 40 minutes until potatoes are tender. Open packet and stir gently. Sprinkle with cheese. Close packet and continue to grill another 3 to 5 minutes, until cheese melts. Serve hot. Makes 4 servings.

Potatoes can also be baked in oven at 350 degrees F.

Per serving: 125 calories (23% calories from fat), 4 g protein, 3 g total fat (1.0 g saturated fat), 21 g carbohydrates, 2 g dietary fiber, 3 g cholesterol, 65 mg sodium
Diabetic exchanges: 1 1/2 carbohydrate (bread/starch), 1/2 fat

Garden Burgers

1 egg white
1/4 cup fine dry bread crumbs
1/4 cup finely shredded carrot
1/4 cup finely chopped onion
1/4 cup finely chopped green sweet pepper
1/2 teaspoon salt
1/8 teaspoon Watkins Black Pepper
2 tablespoons grated Parmesan cheese
1 pound ground turkey, veal, or lean beef
Watkins Cooking Spray
1 medium tomato, sliced

  1. In a large bowl combine egg white and bread crumbs. Stir in carrot, onion, green sweet pepper, salt, and pepper. Add Parmesan cheese and ground meat; mix well. Shape meat mixture into four 3/4-inch-thick patties.
  2. Spray a cold grill rack with nonstick cooking spray. Then, place rack on grill.
  3. Grill burgers on an uncovered grill directly over medium coals. Place 1 tomato slice atop each burger and grill 1 minute more. Serve on toasted buns. Makes 4 servings.

Broiling directions
Place burgers on the unheated rack of a broiler pan. Broil 3 to 4 inches from the heat for 7 minutes. Turn and broil 8 to 11 minutes more or until internal temperature reaches 165 degrees F with an instant read thermometer. Place 1 tomato slice atop each burger and broil 1 minute more.

Bow Ties With Sausage and Sweet Peppers
Grilling the sausages and red sweet peppers gives them a wonderful flavor.

8 ounces dried large bow-tie pasta
12 ounces uncooked spicy Italian sausage links (or your choice of sausage)
2 medium red sweet peppers, cut into 3/4-inch pieces
1/2 cup beef broth, prepared from Watkins Beef Soup Base
1/4 teaspoon Watkins Black Pepper
1/4 cup snipped fresh flat-leaf parsley

  1. Cook pasta according to package directions; drain. Return pasta to saucepan.
  2. Meanwhile, cut the sausage into 1-inch pieces. In a large skillet cook sausage and sweet peppers over medium-high heat until sausage is brown. Drain well. (Or grill sausages and peppers; then continue with directions.)
  3. Stir the broth and black pepper into skillet. Bring to boiling; reduce heat. Simmer, uncovered, for 5 minutes. Remove from heat. Pour over pasta; add parsley. Toss gently to coat. Transfer to a warm serving dish. Makes 4 servings.

Hazelnut Extract is one of the delicious Limited-Edition Gourmet Extracts available for the holidays. I've included two recipes using this extract.

Blackberry Pie with Hazelnut Glaze

3/4 cup sugar
1/4 cup all-purpose flour
1/2 teasoon finely shredded lemon peel or Watkins Lemon Peel
4 cups fresh or frozen unsweetened blackberries
1/3 cup packed brown sugar
3 tablespoons half-and-half or light cream
1/4 teaspoon Watkins Hazelnut Extract
1/3 cup chopped toasted hazelnuts
2 cups all-purpose flour
1/2 teaspoon salt
3/4 cup shortening or lard
6 to 7 tablespoons cold water

  1. In a mixing bowl stir together the 2 cups flour and the salt. Cut in shortening or lard until pieces are the size of small peas.
  2. Sprinkle 1 tablespoon of the water over part of the mixture; gently toss with a fork. Push to side of bowl. Repeat until all is moistened. Divide dough in half. Form each half of dough into a ball.
  3. On a lightly floured surface, flatten each ball of dough with you hands. Roll out one portion of dough from center to edges, forming a circle about 12 inches in diameter. Wrap pastry around a rolling pin. Unroll pastry into a 9-inch pie plate. Ease pastry into pie plate, being careful not to stretch pastry. Trim pastry even with rim of pie plate.
  4. For top crust, repeat rolling remaining dough. Cut slits to allow steam to escape. Cover with plastic wrap until needed.
  5. In a large mixing bowl combine the sugar, the 1/4 cup flour, and lemon peel. Add fresh or frozen blackberries; toss gently until coated. (If using frozen blackberries, before adding let them stand 15 to 30 minutes or until the berries are partially thawed.
  6. Transfer berry mixture to the pastry-lined 9-inch pie plate. Adjust top crust. Trim, seal, and flute edge.
  7. Bake in a 400 degree oven for 40 to 50 minutes, until top is golden and center is bubbly.
  8. Meanwhile, in a small saucepan combine packed brown sugar and half-and-half or light cream. Cook and stir over low heat until sugar melts. Stir in extract and chopped toasted hazelnuts. Pour over hot pie. Cool. Makes 8 servings.

Toasted Hazelnut Bars

1/2 cup butter, softened
2 3-ounce packages cream cheese, softened
1/2 cup packed brown sugar
2 cups all-purpose flour
2 cups granulated sugar
1-1/2 cups buttermilk
4 eggs
1/2 cup butter, melted
1/3 cup all-purpose flour
1 teaspoons Watkins Vanilla
1 teaspoon Watkins Hazelnut Extract
1/2 teaspoon salt
2 cups toasted chopped hazelnuts
Sifted Powdered Sugar

  1. For crust, in a large mixing bowl beat the 1/2 cup softened butter, cream cheese, brown sugar, and the 2 cups flour with an electric mixer until well combined. With lightly floured hands pat mixture onto the bottom and up sides of an ungreased 15x10x1-inch baking pan. Bake in a 350 degree F oven for 15 minutes.
  2. Meanwhile, for filling, in a medium mixing bowl beat together granulated sugar, buttermilk, eggs, the 1/2 cup melted butter, the 1/3 cup flour, vanilla, hazelnut extract, and salt with an electric mixer on low speed until combined. Stir in nuts. Pour into crust.
  3. Bake in a 350 degree F oven for 35 minutes or until golden. Cool completely in pan on a wire rack. Cut into bars. Sprinkle with powdered sugar. Store bars in the refrigerator. Makes 48.

SQUIRREL WATCHING

If you've read past issues of this newletter, you know that I'm a bird watcher and feed my backyard birds and squirrels seeds and peanuts in the shell. We have one squirrel in particular that has a distinct personality. If he is in our backyard when I go outside, he comes near me and stands up on his hind legs waiting to be fed peanuts. The following pictures show his venturesome side!

One day I was in the backyard watching a scrub jay, a common species of bird in our area. The bird was hopping around our yard and in and out of flower beds. As the bird went from place to place it was followed by a squirrel searching each place. I was amazed when I realized that the squirrel was following the jay looking for hidden peanuts. When I put out peanuts for the birds and squirrels they usually eat some of them and then hide some of them. The birds scratch in the grass and leaves to hide their treasures. The squirrels also hide peanuts. I've found several peanuts in my flower pots. A few weeks ago I noticed a strange plant growing in some of my flower pots that I hadn't seen before. The leaves looked a little bit like clover or lupin and I thought the the plants were just weeds. I pulled one of them out of the soil and much to my surprise the plant was growing from a peanut in a partially opened shell. One peanut plant has little orangish-yellow blooms. I'm wondering if the plant will produce peanuts!

I am continually amazed by the not-so-wild animals in our backyard! Hope you enjoy the pictures!
