How to Make Pumpkin Puree

To make pumpkin puree, cut a sugar pumpkin in half, scoop out the seeds and pulp, lie face down on a aluminum-foil lined baking pan. Bake at 350 degrees F until soft, about 45 minutes to an hour. Cool, scoop out the flesh. Freeze whatever you don't use for future use.

One medium pumpkin gives about one cup of seeds. To roast seeds, remove from pumpkin and separate seeds from pulp or membranes. Then either spread seeds on baking pan without washing (a little pulp adds to flavor) or wash and dry seeds with paper towels before roasting.

RECIPES

Whole Wheat Pumpkin Pancakes

1 C. whole wheat flour
1/2 C. cake flour
1 t. baking soda
2 t. Watkins Baking Powder
1/4 t. salt
1 t. Watkins Cinnamon
1/2 t. Watkins Ginger
1/2 t. Watkins Nutmeg
1 C. buttermilk
1 C. canned pumpkin puree
2 eggs
2 T. oil
1 t. Watkins Vanilla Extract
2 T. brown sugar

  1. In a large bowl, whisk together the first eight ingredients (whole wheat flour through nutmeg). In a separate bowl, whisk together the last six ingredients (buttermilk through brown sugar).
  2. Pour wet ingredients into dry ingredients and blend together until just combined. Lumps are ok, just make sure all the flour on the bottom of the bowl is mixed in. If batter seems too thick to pour, you can stir in a little more buttermilk.
  3. Drop pancakes by ladleful onto a medium-hot griddle. Pancakes are ready to turn when the edges start to look a little dry and you can see small bubbles forming on the surface. Turn pancakes and cook through.
  4. Serve with syrup, fruit, or powdered sugar.

Notes
You may substitute all-purpose flour for the cake flour if that’s all you have on hand. Two teaspoons of pumpkin pie spice can be used in place of the cinnamon, ginger and nutmeg.

Apple Cinnamon Waffles with Cider Syrup
Wake up your family with homemade apple cinnamon waffles and cider syrup.

Cider Syrup
It's not just for waffles! Use this yummy syrup to top French toast, pancakes or even ice cream.

1 cup sugar
3 tablespoons Bisquick or other pancake mix
1 teaspoon Watkins Cinnamon
2 cups apple cider
2 tablespoons lemon juice
1/4 cup butter or margarine

Waffles

2 1/4 cups Bisquick or other pancake mix
1 1/4 cups milk
2 tablespoons sugar
2 tablespoons vegetable oil
1 teaspoon Watkins Cinnamon
1 egg
1/2 cup finely chopped peeled apple

  1. In 2-quart saucepan, mix 1 cup sugar, 3 tablespoons Bisquick mix and 1 teaspoon cinnamon. Stir in cider and lemon juice. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute; remove from heat. Stir in butter.
  2. Heat waffle iron. (Waffle irons without a nonstick coating may need to be brushed with vegetable oil or sprayed with cooking spray before batter for each waffle is added.)
  3. In large bowl, stir all waffle ingredients except apple until blended. Stir in apple. Pour batter onto center of hot waffle iron. (Check manufacturer's directions for recommended amount of batter.) Close lid of waffle iron.
  4. Bake about 5 minutes or until steaming stops. Carefully remove waffle. Serve with syrup.

Pumpkin Bread

1-1/2 cups flour
1-1/4 tsp baking soda
1 15-oz can pumpkin
2 eggs
1 cup sugar
1/2 cup cooking oil
1/2 tsp Watkins Nutmeg
1 tsp Watkins Cinnamon
1 tsp Watkins Vanilla Extract

Mix flour and baking soda; set aside. Mix all other ingredients; beat well. Add flour mixture slowly, beating at low just until combined. Pour into 4 greased mini-loaf pans or one large greased loaf pan. Bake at 350 degrees about 40 minutes for mini-loaf pans; about 1 hour for large loaf pan. Makes 10 servings.

Note
This Pumpkin Bread recipe was recommended and had 1/2 teaspoon Watkins Orange Flavoring and 1/2 teaspoon Watkins Rum Flavoring. I made this bread yesterday and the orange flavor was the predominate flavor so I omitted the orange flavoring and the rum flavoring from the recipe. If a I bake Pumpkin Bread I don't want it to taste like orange bread!

Pumpkin Cookies with Cream Cheese Frosting
I made these cookies yesterday. They taste so yummy with the cream cheese frosting! If you don't like raisins in your cookies, omit them and the one cup orange juice from the recipe. Add 2 tablespoons of orange juice (not concentrate) with the pumpkin. Continue with recipe.

1 cup golden raisins
1 cup orange juice
1/2 cup butter (1 stick) at room temperature
1 1/2 cups sugar
1 egg
1 teaspoon Watkins Vanilla Extract
1/2 teaspoon Watkins Ginger
1 cup canned pumpkin
2 1/2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon Watkins Cinnamon
1/4 teaspoon Watkins Nutmeg

  1. Preheat over to 350 degrees F (180 degrees Celsius). Place raisins in a small bowl and cover with orange juice. Set aside.
  2. In a large bowl, cream the butter and sugar. Stir in egg, vanilla, and ginger. Mix in pumpkin.
  3. In a medium bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  4. Fold dry ingredients into pumpkin mixture. Drain raisins and add to the batter, mixing just enough to incorporate.
  5. Drop by tablespoonfuls onto an ungreased cooke sheet, allowing a one-inch space between each cookie. Bake until set and slightly golden brown around the edges, about 15 minutes.
  6. Allow to cool completely and frost with cream cheese frosting.

Cream Cheese Frosting

4 ounces cream cheese, at room temperature
4 tablespoons butter, at room temperature
1 1/2 cups of confectioner's sugar
1/2 teaspoon Watkins Vanilla Extract
1 teaspoon milk or cream

Cream butter and cream cheese together. Stir in sugar, vanilla, and milk. Wisk or mix with mixer until smooth and creamy.

Frost cookies and eat!

Pumpkin Muffins

2 cups flour
2 teaspoons Watkins Baking Powder
1/2 teaspoon baking soda
1 scant teaspoon Watkins Cinnamon
1/2 teaspoon Watkins Ginger
1/2 teaspoon Watkins Nutmeg
1/2 teaspoon salt
1 can (15 to 16 ounces) pumpkin puree
1/3 cup melted butter
1/2 cup evaporated milk or half-and-half
1/2 cup brown sugar, packed
1/4 cup granulated sugar
2 large eggs, beaten
1 teaspoon Watkins Vanilla Extract
1/2 to 3/4 cup chopped pecans or raisins
cinnamon-sugar, optional

In a large bowl combine flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt. Stir to blend. In separate bowl, combine pumpkin, melted butter, milk or half-and-half, the beaten eggs, sugars, and vanilla; mix until blended. Stir pumpkin mixture into the dry ingredients until moistened. Fold in pecans or raisins. Do not overmix. Line 12-cup muffin tin with paper liners or grease well and dust with flour. Fill about 3/4-full with the pumpkin batter, sprinkle with cinnamon-sugar, if desired, and bake at 375 degrees for 20 to 25 minutes. Serve warm or at room temperature. Makes 12 to 16 pumpkin muffins.

Roast Pumpkin Seeds

  1. Cut a fresh, well-ripened pumpkin in half or remove top if carving. Remove the membrane and seeds. Remove most of the pulp from the seeds (Leaving some pulp on is okay because it adds to the flavor; do not rinse the seeds.)
  2. Heat oven to 300 degrees F.
  3. For each cup of seeds, add 1 tablespoon of olive oil, canola oil, or melted butter or margarine and 1/2 teaspoon salt. Mix until seeds are coated. Spread seeds on baking pan. (Covering pan with parchment paper or foil helps with clean up.)
  4. For additional flavor sprinkle with Watkins Chili Powder, Watkins Garlic Powder or other seasoning.
  5. Bake 20-30 minutes or until lightly browned, stirring occasionally; cool. (Cook seeds only until lightly browned.

Spiced Pumpkin Seeds

1 1/2 tablespoons margarine, melted
1/2 teaspoon salt
1/8 teaspoon Watkins Garlic Powder
2 teaspoons Worcestershire sauce
2 cups raw whole pumpkin seeds

  1. Preheat oven to 275 degrees F (135 degrees C).
  2. Combine the margarine, salt, garlic salt, Worcestershire sauce and pumpkin seeds. Mix thoroughly and place in shallow baking dish.
  3. Bake approximately 1 hour, stirring occasionally.

Toasted Pumpkin Seeds with Sugar and Spice

1 cup raw pumpkin seeds, rinsed and dried
6 tablespoons white sugar, divided
1/4 teaspoon salt
1/2 teaspoon Watkins Pumpkin Pie Spice
1 tablespoon vegetable oil

  1. Preheat the oven to 250 degrees F (120 degrees C). Spread pumpkin seeds in a single layer on a baking sheet. Toast for 45 minutes, stirring occasionally, until dry and toasted. Larger seeds may take longer.
  2. In a large bowl, stir together 2 tablespoons of white sugar, salt, and pumpkin pie spice. Set aside.
  3. Heat the oil in a large skillet over medium-high heat. Add the pumpkin seeds and sprinkle the remaining sugar over them. Stir with a wooden spoon until the sugar melts, about 45 seconds. Pour seeds into the bowl with the spiced sugar and stir until coated. Allow to cool before serving. Store in an airtight container at room temperature.

Pumpkin Soup

4 tbsp butter
1/2 cup chopped onion
1 clove garlic
1 tsp Watkins Curry Powder
1/4 tsp salt
1/4 tsp coriander
1/4 tsp Watkins Cayenne Pepper
1/2 tsp Watkins Black Pepper
3 cups chicken broth preapred from 3 cups boiling water and 4 1/2 teaspoons Watkins Chicken Soup Base
1 15 oz can pumpkin puree
1 cup half-and-half
Diced green onions and sour cream for topping

  1. Melt butter in a large saucepan over medium heat. Saute onion and garlic in melted butter, stirring until tender, about 2 minutes.
  2. Add curry powder, salt, coriander, cayenne pepper and black pepper to onion mixture. Mix well and continue stirring for 1 minute.
  3. Carefully stir broth into onion mixture. Bring to a boil over medium heat. Cook, stirring often, about 15 minutes.
  4. Add pumpkin and half-and-half to the broth mixture. Mix well and cook for 5 minutes.
  5. If desired, carefully pour soup into a blender and process until creamy. Serve soup immediately or refrigerate and reheat. If desired, garnish with diced green onions and a dab or sour cream. Number of Servings: 4-6
