Instead of throwing away small amounts of leftover vegetables or rice, place in ziploc freezer bags and freeze. Then add to soup.

I tend to use my slow cooker or crock pot more during the fall and winter months. I'm going to include at least one slow cooker recipe in each issue, so dust off your slow cookers and get ready to simmer! If you have a favorite slow cooker recipe, email me and I will share it with our subscribers.
Greek Chicken Pitas (Slow Cooker Recipe)
From Sandra's Diary of a Stay at Home Mom Blog
1 onion, diced
3 cloves garlic, minced
1 lb. boneless, skinless chicken breasts, cut into strips
1 t. Watkins Lemon Pepper
1/2 t. Watkins Oregano
1/4 t. Watkins Allspice
1/4 c. plain yogurt
1/4 c. sour cream
1/2 c. cucumber, peeled and diced
4 rounds pita bread, halved and split
Place onion and garlic in a slow cooker; set aside. Sprinkle chicken with seasonings; place in slow cooker. Cover and cook on high setting for 6 hours. Stir together yogurt, sour cream and cucumber in a small bowl; chill. Fill pita halves with chicken and drizzle with yogurt sauce.
Makes 4 sandwiches.
Slow Cooker Decadent Chocolate Nut Clusters From
And Miles To Go Before We Sleep Blog
Package in pretty tins for holiday gifts.
32 oz jar unsalted peanuts or your choice of nuts
8 oz (2, 4-oz bars) of German sweet chocolate
8 oz semi-sweet chocolate chips
24 oz chocolate almond bark (confectioners coating)
Put in the crock pot in the order listed; cook on Low 2-3 hours. Stir and drop by spoonfuls onto wax paper. They will harden without putting in the refrigerator. Number of servings: 70 pieces
Howling Candy Corn Cookie Bark
16 Halloween Oreo Chocolate Sandwich Cookies, coarsely chopped
1 1/2 cups miniature pretzel twists, coarsely broken
1/3 cup raisins
2 (6-ounce) packages Premium White Baking Chocolate
1/2 teaspoon Watkins Vanilla
1/2 cup candy corn
1/4 cup brown and orange sprinkles
- Spread cookies, pretzels and raisins into 13x9-inch rectangle on lightly greased baking sheet; set aside.
- Place chocolate in small heavy saucepan; cook on very low heat until completely melted, stirring constantly. Stir in vanilla. Drizzle over cookie mixture; spread with spatula to evenly coat all ingredients. Top with candy corn and sprinkles; lightly press into chocolate mixture to secure.
- Cool until firm, then break into pieces. Store in airtight container at room temperature.
Makes 20 servings, about 1/3 cup each.
Homemade Pumpkin Puree Recipe
Many pumpkin recipes begin with pumpkin puree. Here's how to make puree from new pumpkins.
- Select ripe and firm medium pumpkins. (Bigger pumpkins can have a grainy texture)
- Cut open the pumpkin and remove the seeds and fibrous strings.
- Cut the pumpkin into four to eight pieces.
- Line a large baking pan aluminum foil.
- Place the pumpkin pieces, rind side up, onto the baking pan.
- Bake in the oven at 375 degrees F for one to 1 1/2 hours, or until pulp is soft.
- Scoop the soft pulp from the rind with a spoon. Discard the rind.
- Use a blender or food processor to mash the pulp into a smooth texture.
- You must eliminate as much water content as possible. Drain puree in a cheesecloth and squeeze out as much water as you can.
Pumpkin Muffins
From Gourmet November 2006
1 1/2 cups all-purpose flour
1 tsp Watkins Baking Powder
1 15-oz can solid-pack pumpkin or use 2 cups of fresh pumpkin puree
1/3 cup vegetable oil
2 large eggs
1 tsp Watkins Pumpkin Pie Spice (a combo of cinnamon, nutmeg, cloves, ginger, and allspice)
1 1/4 cups plus 1 Tbsp sugar
1/2 tsp baking soda
1/2 tsp salt
1 tsp Watkins Cinnamon
1/2 cup chopped walnuts
Equipment: 12 foil or paper muffin liners; a muffin pan with 12 (1/2-cup) muffin cups
If you don't have paper muffin liners, lightly butter the muffin pan cups.
- Preheat oven to 350 degrees F. Put liners in muffin cups.
- Whisk together flour and baking powder in a small bowl.
- Whisk together pumpkin, oil, eggs, pumpkin-pie spice, 1 1/4 cups sugar, baking soda, and salt in a large bowl until smooth, then whisk in flour mixture until just combined. Add chopped nuts and mix.
- Stir together cinnamon and remaining 1 tablespoon sugar in another bowl.
- Divide batter among muffin cups (each should be about 3/4 full), then spinkle tops with cinnamon-sugar mixture. Bake until puffed and golden brown and a wooden pick or skewer inserted into center of a muffin comes out clean, 25 to 30 minutes.
- Cool in pan on a rack 5 minutes, then transfer muffins from pan to rack and cool to warm or room temperature. Enjoy!
Pumpkin Cookies
1 cup Shortening
3/4 cup Sugar
1 cup Cooked Strained Pumpkin or Canned Pumpkin
2 Eggs
2 cups Flour
1 cup Raisins
1/2 cup Molasses
1 teaspoon Baking Soda
1 teaspoon Watkins Cinnamon
1/4 teaspoon Watkins Nutmeg
1/2 teaspoon Salt
Pre-heat oven to 375 degrees F.
Cream shortening and sugar. Mix in pumpkin, eggs, and molasses. Stir in dry ingredients, spices and raisins. Drop by the spoonful onto an ungreased baking sheet. Bake 10 to 12 minutes.
Spiced Pumpkin Fudge
3 cups Sugar
3/4 cups Butter or margarine
1 (5 1/3 oz.) can (2/3 cup) Evaporated milk
1/2 cup Solid Pack Pumpkin
1 tsp. Watkins Pumpkin Pie Spice
1 (12 oz.) pkg. Butterscotch morsels
1 (7 oz.) jar Marshmallow Creme
1 cup Chopped almonds, pecans, or walnuts
1 tsp. Watkins Vanilla Extract
In heavy saucepan, combine sugar, butter, milk, pumpkin and spice.
Bring to a boil, stirring constantly until mixture reaches 234 degrees F (about 10 minutes).
Remove from heat, stir in butterscotch morsels. Add marshmallow creme, nuts and vanilla. Mix until well blended. Quickly pour into buttered 13 x 9 inch pan, spreading just until even. Cool at room temperature
Cut into squares. Store tightly wrapped in refrigerator. Yields 3 pounds.
Pumpkin Pancakes
1 cup All Purpose Flour
1/2 cup Pumpkin puree fresh cooked or canned
2 Tbs. Sugar
1 cup Milk
1 Egg, well-beaten
1 Tsp. Baking Soda
1/2 Tsp. Watkins Cinnamon
Dash of Watkins Nutmeg
2 Tbs. Vegetable Oil or Watkins Grapeseed Oil
Combine dry ingredients and spices in a bowl. In a second bowl, whisk together, pumpkin puree, egg, milk, and vegetable oil. Stir mixture into dry ingredients.
Pour 1/4 cup of batter onto a greased griddle and cook until golden brown.
Serve with syrup. Makes: 12-16 pancakes
Top with a spoonful of whipped cream.

BIRD WATCHING
Blue Jays love peanuts. This Jay is inside a peanut feeder designed especially for squirrels. I have one of these feeders in my backyard. This picture was taken by another bird watcher, Betty Jean of Greenwood, Indiana. The Western Blue Jays and Stellars Jays that visit my backyard often peck at the jar when they see that it contains peanuts but none of them have ventured inside.
