GROW YOUR OWN PUMPKINS
While most people usually buy their Halloween pumpkins from stands or stores, some actually grow their own. Pumpkins grow best in a sunny area, preferably where they will receive at least six hours of direct sunlight every day. Generally pumpkins require four to five months of frost-free growing days to reach maturity. The seeds should not be planted until the temperatures consistently reach the low 70's during the day. This is usually in late May, but may be different depending on your local climate.
Pumpkin plants love lots of growing space. A single vine can grow as long as twenty-five feet and will have many vine shoots along it's length. Select an area in your yard or garden with space for the number of pumpkin mounds you want to plant. Build up as many mounds as you have room for with loosely packed soil. If you plan on planting more than one mound of pumpkins, separate each mound by several feet. Each mound should be about three feet in diameter. Surround each mound with a six inch wide by six inch deep moat to help hold water around the plants roots.
Pumpkins need lots of indirect water, but the soil of the mound should be kept moist, not wet. As it gets warmer you may need to water more than once a day. The best indicator is the plants leaves. If they are green and look healthy, they're probably getting enough water. If the leaves look wilted, give them more water.
In each mound, make four or five seed holes about an inch deep in a circle around the middle of the mound. Drop one or two seeds into each hole and fill in the hole with loose soil. Water very gently with a sprinkling can or sprayer to avoid washing away any of the covering soil. Keep moist. For the first week or two the seeds start developing underground.
Generally it takes between 7 to 14 days for the seeds to sprout and crack though the top soil. Within a day or two you should see the sprout with two baby leaves have broken through the top soil and unfolded. About two weeks after the seeds have sprouted the seedlings should be established enough to thin them down. Pulled out all vines except two or three of the healthiest and largest plants on each mound. As they grow the pumpkins should be slightly rotated so they won't rot. For a well-shaped pumpkin without blemishes on sides carefully stand pumpkin upright when small, carefull not to damage vine or stem.

Breast cancer can be detected early and early detection improves the chances for successful treatment.
Discipline yourself to do a self-examination routinely. If you find any lumps, thickenings, or changes, tell your doctor right away. Most breast lumps are not cancer, but you don't know if you don't ask. Early detection is your greatest ally.
Ages 20-39
- Have a clinical breast exam by your health care provider at least every three years.
- Do a breast self-exam every month.
Ages 40 and over
- Have a mammogram every year.

COOKING TIP
Substitutes For More Flavor and Nutrition
If a recipe calls for water, substitute juices, bouillon, or water you've cooked vegetables in. If a recipe calls for milk, use buttermilk, yogurt or sour cream. It can add a whole new flavor and improve nutrition.

If you have a garden the growing season is about over in most parts of north America. Don't know what to do with all those green tomatoes still on the vines? Here are some tasty green tomato recipes.
Fried Green Tomatoes
4 to 6 green tomatoes, sliced 1/4-inch thick
Salt
Watkins Granulated Black Pepper
Flour for dusting
2 eggs, beaten
Cornmeal, bread crumbs, or cracker crumbs
Bacon grease or vegetable oil
Salt and pepper the tomato slices; dust lightly with flour. Dip slices in beaten egg, letting excess drip off, then coat well with meal or crumbs. Fry in hot grease or oil until browned, turning gently (about 3 minutes each side).
Keep warm in a low 200° to 250° oven if frying in batches.
Variation
Salt and pepper sliced tomatoes; coat with flour, cornmeal, bread crumbs, or cracker crumbs and fry.
Oven Fried Green Tomatoes
4 to 6 green tomatoes, cut in 1/4-inch thick slices
2 eggs, beaten
2/3 cup evaporated milk
1/3 cup water
Salt
Watkins Granulated Black Pepper
1 1/2 cups all-purpose flour
Sprinkle tomato slices with salt and pepper on both sides. In a shallow bowl mix beaten eggs, milk, and water. Put the all-purpose flour in a shallow bowl. Dip each slice into egg mixture, then into flour. Dip each slice into egg and then into the flour again.
Arrange tomatoes in large, shallow, greased baking pans, or bake in 1 pan, in batches. Tomatoes should not touch. Bake uncovered in 400° oven 20 minutes, turning halfway through.
For crunchier coating, dip slices the second time into egg mixture then into seasoned bread crumbs or corn flake crumbs, with a little Parmesan cheese, if desired.
Green Tomato Relish
This relish tastes great on sandwiches and burgers.
24 large green tomatoes
3 red bell peppers, halved and seeded
3 green bell peppers, halved and seeded
12 large onions
3 tablespoons Watkins Celery Seed
3 tablespoons mustard seed
1 tablespoon salt
5 cups white sugar
2 cups cider vinegar
In a grinder or food processor, coarsely grind tomatoes, red bell peppers, green bell peppers, and onions. (You may need to do this in batches.) Line a large colander with cheesecloth, place in sink or in a large bowl, and pour in tomato mixture to drain for 1 hour.
In a large, non-aluminum stockpot, combine tomato mixture, celery seed, mustard seed, salt, sugar, and vinegar. Bring to a boil and simmer over low heat 5 minutes, stirring frequently.
Sterilize enough jars and lids to hold relish (12 one-pint jars, or 6 one-quart jars). Pack relish into sterilized jars, making sure there are no spaces or air pockets. Fill jars all the way to top. Screw on lids.
Place a rack in the bottom of a large stockpot and fill halfway with boiling water. Carefully lower jars into pot using a holder. Leave a 2 inch space between jars. Pour in more boiling water if necessary, until tops of jars are covered by 2 inches of water. Bring water to a full boil, then cover and process for 30 minutes.
Remove jars from pot and place on cloth-covered or wood surface, several inches apart, until cool. Once cool, press top of each lid with finger, ensuring that seal is tight (lid does not move up or down at all). Relish can be stored for up to a year.

Pumpkin Swirl Bread
Sour cream and cream cheese combine for a delightful white swirl in this pumpkin bread.
Filling Ingredients
1 cup sour cream
1/4 cup sugar
4 ounces cream cheese, softened
1 egg
Bread Ingredients
3 1/2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon Watkins Ground Cinnamon
1/2 teaspoon salt
1/2 teaspoon Watkins Ground Ginger
1/2 teaspoon Watkins Ground Nutmeg
2 2/3 cups sugar
1 cup vegetable oil
1/3 cup water
1 (15-ounce) can pumpkin
4 eggs
Heat oven to 350°F. Grease and flour 2 (9x5-inch) loaf pans. Set aside.
Combine all filling ingredients in small bowl. Beat at medium speed, scraping bowl often, until well mixed. Set aside.
Combine flour, baking soda, cinnamon, salt, ginger and nutmeg in small bowl.
Combine 2 2/3 cups sugar, oil, water, pumpkin and 4 eggs in large bowl. Beat at low speed, scraping bowl often, until smooth. Continue beating, gradually adding flour mixture and scraping bowl often, until well mixed.
Spoon 1/4 (about 2 cups) pumpkin batter into each prepared loaf pan. Carefully spread half of filling mixture over batter in each pan; top each pan evenly with remaining pumpkin batter. Pull knife or spatula through batter and filling to create swirl effect.
Bake for 65 to 70 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans. Cool completely. Makes two 9x5 inch loaves.

Rolled Soft Sugar Cookies
Cookie Ingredients
4 cups all-purpose flour
2 cups sugar
1 cup butter, softened
1/2 cup sour cream
2 eggs
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon Watkins Vanilla
1/2 teaspoon salt
1/2 teaspoon Watkins Lemon Extract, if desired
Combine 2 cups flour and all other ingredients in large bowl. Beat at low speed, scraping bowl often, until well mixed. Stir in remaining flour by hand.
Divide dough into 4 equal portions. Wrap each in plastic food wrap. Refrigerate until firm (at least 2 hours).
Heat oven to 350°F. Roll out dough on well-floured surface, one portion at a time (keeping remaining dough refrigerated), to 1/8-inch thickness. Cut into desired shapes with 2 1/2-inch cookie cutters.
Place cookies 1 inch apart onto ungreased cookie sheets. Sprinkle with decorator sugars or leave plain for frosting, if desired. Bake for 7 to 10 minutes or until edges are lightly browned. Cool completely. Decorate with frosting.

Alfredo Ravioli Bake
This rich and flavorful main dish recipe is made with purchased Alfredo sauce to make it quick-and-easy to make.
2 tablespoons butter
1 1/4 pounds boneless skinless chicken breast halves, cut into 1-inch pieces
1 (8-ounce) package sliced fresh mushrooms
1 (16-ounce) jar Alfredo sauce
1 (25 to 27 1/2-ounce) package frozen cheese-filled ravioli
1 large (1 cup) red bell pepper, chopped
8 ounces (2 cups) Mozzarella Cheese, shredded
1/4 cup shredded Parmesan cheese
Heat oven to 350°F. Melt butter in 12-inch skillet until sizzling; add chicken pieces. Cook over medium-high heat until chicken is lightly browned (4 to 6 minutes). Add mushrooms; continue cooking until chicken is no longer pink and mushrooms are tender (4 to 6 minutes). Do not drain.
Spread 1/2 cup sauce into greased 13x9-inch baking dish. Arrange single layer of frozen ravioli over sauce; drizzle 3/4 cup sauce evenly over ravioli. Spread with 1 1/2 cups chicken and mushroom mixture, 1/2 cup red bell pepper and 1 cup mozzarella cheese. Repeat with remaining ingredients, except remaining 1 cup mozzarella cheese and Parmesan cheese. Cover tightly with aluminum foil. Bake for 45 minutes.
Remove foil; sprinkle with remaining mozzarella and Parmesan cheese. Bake, uncovered, for 15 to 20 minutes or until cheeses are melted. Let stand 15 minutes before serving.
Recipe Tip
To make ahead, prepare as directed above except do not bake. Cover; refrigerate up to 24 hours. When ready to bake, continue as directed above. Increase first baking time to 1 hour.

8 ounces (10) uncooked lasagna noodles
Meat Sauce Ingredients
1 tablespoon butter or oil
1 large (1 cup) onion, chopped
1 (8-ounce) package (2 cups) sliced fresh mushrooms
2 medium (2 cups) zucchini, cut into 1/4-inch slices, halved
2 cups cubed 1/2-inch cooked chicken
1/3 cup water
1 (14 1/2-ounce) can diced tomatoes with basil, garlic & oregano
1 (6-ounce) can tomato paste
2 teaspoons Watkins Italian Seasoning
1 teaspoon Watkins Garlic Salt
1/4 teaspoon Watkins Black Pepper
Filling Ingredients
8 ounces (2 cups) crumbled feta cheese, ricotta cheese, or cottage cheese
1/4 cup chopped fresh parsley
1 egg, slightly beaten
8 ounces (2 cups) Mozzarella Cheese, shredded
Heat oven to 350°F. Cook lasagna noodles according to package directions. Drain.
Meanwhile, melt butter in 12-inch skillet over medium heat until sizzling; add onions, mushrooms and zucchini. Continue cooking, stirring occasionally, until vegetables are crisply tender (6 to 7 minutes). Stir in all remaining meat sauce ingredients.
Combine all filling ingredients except mozzarella cheese in small bowl. Arrange half of noodles in greased 13x9-inch baking pan. Spread with half of filling; spoon half of meat sauce over top. Sprinkle with 1 cup mozzarella cheese. Layer with remaining noodles, filling and meat sauce.
Cover with aluminum foil. Bake for 50 minutes. Uncover; sprinkle with remaining mozzarella cheese. Continue baking for 5 to 10 minutes or until cheese is melted. Let stand 10 minutes before serving.

Best Ever Butter Cookies
These crisp, tender, buttery cut-out cookies can be decorated to capture the spirit of any season.
Cookie Ingredients
1 cup butter, softened
1 cup sugar
1 egg
2 tablespoons orange juice
1 tablespoon vanilla
2 1/2 cups all-purpose flour
1 teaspoon baking powder
Frosting Ingredients
3 cups powdered sugar
1/3 cup butter, softened
1 teaspoon Watkins Vanilla
1 to 2 tablespoons milk
Combine 1 cup butter, sugar and egg in large bowl. Beat at medium speed, scraping bowl often, until creamy. Add orange juice and vanilla; mix well. Reduce speed to low; add flour and baking powder. Beat until well mixed.
Divide dough into thirds; wrap in plastic food wrap. Refrigerate until firm (2 to 3 hours).
Heat oven to 400°F. Roll out dough on lightly floured surface, one-third at a time (keeping remaining dough refrigerated), to 1/8 to 1/4-inch thickness. Cut with 3-inch cookie cutters. Place 1 inch apart onto ungreased cookie sheets. Bake for 6 to 10 minutes or until edges are lightly browned. Cool completely.
Combine powdered sugar, 1/3 cup butter and 1 teaspoon vanilla in small bowl. Beat at low speed, scraping bowl often and adding enough milk for desired spreading consistency. Frost and decorate cooled cookies as desired.
Recipe Tip
If you use a 4 to 5-inch cookie cutter, recipe will yield approximately 2 dozen cookies.
