Good afternooon everyone and welcome to Around the Kitchen Table. I'm proud to say that I'm a Watkins associate. Watkins Incorporated is sending more than 2,000 large bottles of its Insect Repellent Lotion, as well as numerous personal care items to help aid the people affected by Hurricane Katrina. The products will be distributed directly to the victims by volunteers of Catholic Charities. The total retail value of the products is more than $20,000 US. In addition, Watkins has made a financial donation to the American Red Cross Disaster Response Fund to help with efforts to support those left homeless by the storm. Watkins has a long history of working with the Red Cross in Winona. For example, Watkins regularly hosts the Bloodmobile, providing release time for its employees along with a healthy “canteen” for those who donate. Both Watkins and its employees, like individuals and institutions all over the US and beyond, have significantly increased their charitable giving in response to the suffering and loss of our fellow citizens in Louisiana, Alabama, Florida, and Mississippi. We also know that many of you have risen to this challenge as well. At the same time, Watkins continues with its ongoing commitments to the United Way, Red Cross as well as other non-profit, education, and arts organizations. This issue features recipes using products from our Holiday Gifts and Entertaining line. October is Breast Cancer Awareness Month
Ketchup bottle squeeze tops get messy so fast. I save tops from used bottles and run them through the dishwasher so I have clean ones on hand. When the top currently on the ketchup gets messy, I replace it with a spare.
This issue has some yummy recipes using our Gifts and Entertaining products. Enjoy! Pork Tenderloin in Cranberry Mustard Cream Sauce
2 teaspoons Watkins Onion Liquid Spice In large skillet, heat Liquid Spices over medium heat. Add pork medallions and brown about 3 minutes per side. Add cran-apple juice, bring to a boil, reduce heat to a simmer, cover and cook 10 minutes. Remove medallions to a warm platter and cover loosely with foil. Increase heat to high and reduce pan liquid by half, stirring and scraping up browned bits. Remove from heat and stir in mustard, evaporated milk, pepper and salt. Return to medium heat and cook until mixture begins to thicken; do not boil. Spoon sauce over medallions; garnish with parsley and fresh cranberries. Makes 6 servings. Six-Onion Meatballs
3/4 cup bread crumbs In large bowl, combine bread crumbs, soup mix, eggs, salt and seasoning. Mix well. Add ground beef. Blend well, cover and refrigerate for 30 minutes. Form meatballs about 1-1/2 inches in diameter. In a non-stick skillet, brown meatballs on all sides until cooked through. Remove meatballs from skillet and set aside. Combine flour, soup bases and water in a separate container; blend well and add to skillet. Add half & half. Stir on medium heat until thick and bubbly. Return meatballs to skillet. Simmer meatballs and sauce for 10 minutes. Serve as an appetizer or as a main dish over pasta or rice. Makes approximately 50 meatballs. Six-Onion Mashed Potatoes
4 to 5 lbs potatoes Cook potatoes. Mash with cream cheese and sour cream. Add soup base and seasoned pepper. These can be made and refrigerated a day ahead of time and heated in oven, microwave or crockpot before serving. Makes 8 servings. Chocolate Truffles
6 oz/170 g semi-sweet chocolate Melt chocolate in microwave on high for 60 seconds. Stir and continue cooking on high for another 30 seconds or until completely melted. Beat cream cheese until smooth. Add powdered sugar and continue beating until well-blended. Stir in chocolate, vanilla and extracts. Refrigerate for 2 hours or until firm. Shape into 1-inch/25-mm balls. Roll in cocoa, sugar, nuts, etc. or dip in melted chocolate. Store in refrigerator. Makes approximately 3 dozen truffles. Use white chocolate in place of the semi-sweet and follow same directions. Or use white chocolate for dipping

6 oz/170 g semi-sweet chocolate Melt chocolate in microwave on high for 60 seconds. Stir and continue cooking on high for another 30 seconds or until completely melted. Beat cream cheese until smooth. Add powdered sugar and continue beating until well-blended. Stir in chocolate, vanilla and extracts. Refrigerate for 2 hours or until firm. Shape into 1-inch/25-mm balls. Roll in cocoa, sugar, nuts, etc., or dip in melted chocolate. Store in refrigerator. Makes approximately 3 dozen truffles.
Variations Watkins Wintergreen Mints
1/2 cup/125 mL butter In a medium bowl, cream butter at room temperature thoroughly. Add gradually confectioners' sugar and mix well. Add heavy cream and extract to mixture and blend. If you desire to color the mints, add green food coloring to the blend. Spoon batter into a cake decorator tube and using a shaped tip, press shapes onto waxed paper. Let the mints set for at least 30 minutes. Store in an airtight container in a cool place and enjoy. Makes approximately 3 to 4 dozen mints. CARAMEL CHEX MIX
¾ c. butter Bring butter, syrup, and sugar to a boil. Boil for 3-4 minutes. Remove from heat; stir in soda and extract. Pour over cereal, peanuts and pretzels. Spread in a greased jelly roll pan and bake for 1 hour at 200°F. Remove from oven and stir as it cools. Store in an airtight container. NUTS-N-BOLTS PARTY MIX
½ c. butter Preheat oven to 250°F. Heat butter in a large roasting pan; stir in the sauce, oil and salts. Add remaining ingredients. Bake for 1 hour, stirring every 15 minutes. Remove and stir. This freezes well! CHICKEN SNACK CRACKERS
1 bag oyster crackers Put crackers in a gallon Ziploc bag. Stir Grapeseed Oils together and pour over crackers and toss well. Add the Chicken Soup Base and shake until all the crackers are coated. Best if they sit for ½ hour before eating.
