Make your life the best it can be. Eat nutritious foods, exercise, love, and laugh!

The purpose of stuffing is to absorb the flavors of the other ingredients and the juices of the turkey, providing a flavorful and filling dish for your holiday meal. The kind of bread used in the stuffing partially determines the taste - white bread, Italian bread, French bread, cornbread, sourdough bread or a combination.

Fresh or day old bread gives better flavor than packaged croutons because you can add your own spices, herbs and other ingredients. If you use fresh or day old bread allow it to air dry or dry on a baking sheet in a low temperature oven. Break or cut bread into bite sized pieces. The pieces of dry bread soak up the herbs and spices, butter, broth, and turkey juices for a more flavorful stuffing. I've used both fresh bread and packaged croutons for Thanksgiving stuffing with delicious results.

Slow Cooker Stuffing
1 cup butter
2 cups chopped onion
2 cups chopped celery
1/4 cup fresh parsley
12 ounces fresh mushrooms, sliced
12 1/2 cups dry bread cubes
1 teaspoon Watkins Poultry Seasoning
1 1/2 teaspoons Watkins Sage
1 teaspoon Watkins Thyme
1/2 teaspoon Watkins Marjoram
1 1/2 teaspoons salt
1/2 teaspoon Watkins Granulated Black Pepper
4 1/2 cups chicken broth, made with 4 1/2 cups boiling water and 2 tablespoons plus 1 teaspoon Watkins Chicken Soup Base
2 eggs, beaten

Melt butter in a skillet over medium heat. Cook onion, celery, mushroom, and parsley in butter, stirring frequently. Spoon cooked vegetables over bread cubes in a very large mixing bowl. Sprinkle with poultry seasoning, sage, thyme, marjoram, and salt and pepper. Slowly pour in enough broth to moisten; then mix in beaten eggs. Transfer mixture to slow cooker, and cover. Cook on High for 45 minutes, then reduce heat to Low, and cook for 4 to 8 hours.

BLT Turkey Salad
Add left-over Thanksgiving turkey to this bacon, lettuce, and tomato salad. Use left-over turkey for sandwiches and casseroles.

Salad
6 cups torn romaine or leaf lettuce
4 cups cubed cooked turkey
1 1/2 cups chopped tomatoes
1 cup shredded Mozzarella cheese
1 cup shredded Cheddar cheese
10 bacon strips cooked and crumbled
1/2 cup chopped green pepper
1/2 cup chopped red onion
1/2 cup chopped cucumber

Dressing
1 cup plain yogurt
1 cup mayonnaise
1/4 cup sugar
1/4 cup red wine vinegar
1 teaspoon Watkins Garlic Granules
1/4 teaspoon Watkins Granulated Black Pepper

In a large salad bowl, combine the salad ingredients. Just before serving, whisk the dressing ingredients. Pour over turkey mixture, toss to coat.

Pumpkin Cheesecake
This cheesecake recipe uses unflavored gelatin instead of eggs to thicken the filling so only the crust requires baking. Mix filling, pour into crust, chill 2 hours, and serve this delicious dessert.

Crust
2 cups graham cracker crumbs (from 14 graham crackers)
2 tablespoons granulated sugar
1/4 cup (1/2 stick) butter, melted

Filling
1 .25-ounce envelope unflavored gelatin
1 8-ounce bar cream cheese, at room temperature
1 15-ounce can pumpkin puree
1 cup sour cream
3/4 cup granulated sugar
2 teaspoons Watkins Pumpkin Pie Spice
1 teaspoon Watkins Double Strength or Pure Vanilla Extract

1. Make the crust: Heat oven to 400 degrees F. In a medium bowl, combine the graham cracker crumbs, sugar, and butter. Transfer to a 9-inch spring form pan. Using a straight-sided dry measuring cup, press the mixture into the bottom and 2 inches up the sides of the pan. Bake until set, 8 to 10 minutes. Let cool.
2. Make the filling: Sprinkle the gelatin over 1/4 cup boiling water. Let stand, stirring occasionally, until dissolved, about 5 minutes.
3. Using an electric mixer, beat the cream cheese until smooth. Mix in the pumpkin, sour cream, sugar, pumpkin pie spice, and vanilla. Mix in the gelatin mixture until incorporated.
4. Chill: Pour the mixture into the crust and refrigerate, covered, until firm, at least 2 hours and up to 2 days.

Pumpkin Spice Bundt Cake
Watkins Nonstick Cooking Spray, for pan
4 cups cake flour (not self-rising), plus more for dusting
4 teaspoons Watkins Baking Powder
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon Watkins Ground Ginger
2 teaspoons Watkins Ground Cinnamon
1/2 teaspoon Watkins Nutmeg
1/2 teaspoon Watkins Ground Cloves
1 cup (2 sticks) butter, room temperature
2 1/2 cups packed light-brown sugar
4 large eggs
1 cup buttermilk
1 1/2 cups canned pumpkin puree
Confectioners' sugar, for dusting

1. Preheat oven to 350 degrees F. Spray a 14-cup Bundt pan with cooking spray. Dust with flour, and tap out excess.
2. Whisk together flour, baking powder, baking soda, salt, ginger, cinnamon, nutmeg, and cloves. Set aside.
3. Beat butter and brown sugar together in the bowl of an electric mixer fitted with the paddle attachment, on medium speed until pale and fluffy, 2 to 3 minutes. Add eggs, one at a time, beating well after each addition and scraping down sides of bowl. Reduce speed to low. Beat in flour mixture in 3 additions, alternating with the buttermilk. Beat until just combined. Add pumpkin puree, and beat until combined. Pour batter into prepared pan.
4. Bake cake until golden and a wooden skewer inserted into the center comes out clean, about 55 minutes. Let cool on a wire rack for 30 minutes. Carefully turn cake onto rack too cool completely. Before serving, dust with confectioners' sugar.

Pumpkin Cream Puffs

Puff Pastry
3/4 cup water
6 tbsp. butter or margarine
2 tsp. sugar
1/8 tsp. salt
3/4 cup all-purpose flour
3 eggs
1 1/2 tsp. Watkins Original Double-Strength Vanilla

Pumpkin Filling
1 cup whipped cream
3 tbsp. sugar
1 tsp. Watkins Pumpkin Pie Spice
1 cup canned pumpkin

Maple-Caramel Sauce
1/2 cup packed brown sugar
1 tbsp. corn starch
1/3 cup half-and-half
1/4 cup water
2 tbsp. pure maple syrup
1 tbsp. butter
1/2 tsp. Watkins Original Double-Strength Vanilla

Directions
Puff Pastry
In medium saucepan, combine butter and water. Bring to boil over medium heat. Stir in flour, salt and sugar; cook, stirring constantly, until mixture leaves sides of pan in a smooth ball. Remove from heat and allow to cool slightly. Add eggs one at a time, beating vigorously after each addition, until mixture is smooth and glossy. Stir in vanilla.

Preheat oven to 400 degrees F. Using either a pasty bag or tablespoon, form the puffs on a greased cookie sheet. Using the back of a spoon, flatten any points. Makes 12 puff pastries. Bake for 25 to 30 minutes or until golden and crisp. Remove puffs from oven and cool on wire racks.

Pumpkin Filling
In a large chilled bowl combine whipped cream, sugar and pumpkin pie spice with chilled beaters until soft peaks form. Fold in 1 cup canned pumpkin.

Maple-Caramel Sauce
In a small saucepan stir together brown sugar, corn starch, half-and-half, water, maple syrup, and butter. Cook and stir over medium heat until slightly thickened and bubbly. Cook and stir for 2 minutes or more. Remove from heat; stir in vanilla

Cut puff pastry in half, fill with pumpkin filling and top with caramel sauce. Serves 12
