Shipping Cookies to Loved Ones
Nothing sends the message that you care quite like home-baked goods. But often those loved ones are far away. How do you successfully send favorite cookies to a loved one away from home?
Choose sturdy cookies and bars to ship and ones that won't smear the frosting. Wrap cookies in plastic. Package them in small containers. If you want to ship a lot of cookies, use several smaller containers and place them in a bigger box. Cushion the smaller boxes in packing "peanuts" or crushed newspaper.
Make sure that the cookies are wrapped well enough that they won't dry out and get them to the shipper right away. Many shipping services offer remarkably quick deliveries. UPS Ground and USPS Priority deliver within two days to addresses several states away. For overseas and long distances, consider drier cookies that don't stale as quickly. And remember, the closer to Christmas that you ship, the more likely that the shipper will be backlogged and delivery will take longer.
Whipped Cream Tips
- Chill the cream, bowl, and beaters before starting.
- Beat at medium speed with an electric mixer or use a wire whisk.
- Use powdered sugar instead of granulated sugar for sweetening. The finer powdered sugar dissolves more readily and the small amount of cornstarch gives the cream a little more body.
- Do not over whip. Stop while the peaks are still soft.
- Add other ingredients such as syrups, extracts, and fruit at the end of the whipping.
- Extra cream should be stored in the refrigerator. Dollops of cream can be frozen on waxed paper.
1 cup heavy whipping cream
1/4 cup powdered sugar
1/2 teaspoon Watkins Vanilla

RECIPES
Spinach Waldorf Salad with Cinnamon-Apple Dressing
1/2 cup mayonnaise
2 tablespoons frozen apple juice concentrate, thawed
1/4 teaspoon Watkins Ground Cinnamon
2 large red eating apples, cubed (about 4 cups)
1/2 cup seedless red grapes, halved
1/2 cup chopped celery (1 medium stalk)
1/2 cup chopped walnuts
4 cups torn fresh spinach leaves
- In large bowl, mix mayonnaise, juice concentrate and cinnamon until well blended.
- Stir in apples, grapes, celery and walnuts to coat.
- Before serving, place spinach in large salad bowl. Spoon apple mixture over spinach; toss to mix and coat.
Roasted Turkey Breast with Apple Glaze
1 (6 to 8 Pound) bone-in turkey breast, fresh or thawed if frozen
2 Tablespoons melted butter
1 Teaspoon each salt and Watkins Black Pepper
1 Tablespoon Watkins Thyme
1/4 Cup apple jelly
1-1/2 Tablespoons country-style mustard
1 Tablespoon freshly squeezed lemon juice
Preheat oven to 350 degrees F. Pat turkey breast dry with clean paper towels.
Rub turkey breast with butter, salt, pepper and thyme.
Place turkey breast on a rack in a shallow roasting pan. Roast, uncovered, in preheated oven for 1 hour.
Meanwhile, melt jelly with mustard and lemon juice in a small saucepan over low heat, stirring.
Continue roasting turkey 30 to 45 minutes, basting occasionally with apple-mustard mixture, until a meat thermometer inserted in thickest part of breast registers 165 to 170 degrees F.
Remove from oven and let stand for 15 minutes before carving. Serves 6.
Roast Turkey With Apple Cider Gravy
Roasting
1 (12 to 14) Pound whole turkey (thawed or fresh) reserve giblets
As needed unsalted butter, melted
As needed salt and Watkins Black Pepper
Preheat oven to 325 degrees F. Place turkey, breast side up, on a V-shaped rack in a large roasting pan.
Tuck wing tips under turkey and return legs to tucked position.
Brush butter on top and sides of turkey. Sprinkle both cavities and outside with salt and pepper.
Roast turkey, uncovered, until the internal temperature in the thickest part of the thigh measures 180 degrees F. A general roasting time guideline for an unstuffed 12-14 pound turkey is 4-1/2 to 5 hours.
Transfer turkey to platter. Tent loosely with foil; let stand 20 minutes. Reserve pan juices for gravy. Serves 15.
Apple Cider Gravy
1 Package reserved giblets (do not use liver, flavor detracts from gravy)
4 Cups cold water
2 Cups apple cider
1/3 Cup all purpose flour
1/2 Teaspoon Watkins Sage
1 Teaspoon salt
1/2 Teaspoon Watkins Black Pepper
In saucepan over medium heat, bring giblets and 4 cups cold water to boil. Skim any foam from top and discard. Reduce heat to low and simmer 1 hour. Strain broth and remove meat from neck; finely chop gizzard and heart, removing grizzle. Set aside.
Skim fat from roasting pan juices, reserving 1/4-cup fat. Add cider to pan over medium-high heat. Bring to a boil, scraping up browned bits; reduce heat and simmer, until reduced by half, about 5 minutes.
In saucepan, over low heat, combine reserved fat and flour; cook 3 minutes, stirring constantly. Stir in cider mixture and then giblet broth and meat. Increase heat and simmer until thickened, about 10 minutes, stirring occasionally. Stir in sage and remaining salt and pepper.
Slice roasted turkey and serve with gravy.
Country Stuffing in Casserole
2 loaves oven-dried white bread or two packages plain stuffing croutons
1 sleeve crushed saltines
1 pound bulk breakfast sausage
1 cup chopped celery
1 large onion, chopped
7 cups chicken stock made from 7 cups boiling water and 3 1/2 tablespoons Watkins Chicken Soup Base
Salt and Watkins Black Pepper
1 teaspoon Watkins Sage
1 tablespoon Watkins Poultry Seasoning
3 eggs, beaten
1/4 stick butter, melted
Preheat oven to 350 degrees F.
Crumble oven-dried bread into a large bowl. Add saltines.
Cook sausage in a large skillet until it starts to brown. Add celery and onion and saute until transparent, 5 to 10 minutes. Pour over bread mixture. Add salt, pepper, sage, and poultry seasoning. Add stock and mix well. Add the beaten eggs and melted butter. Mix well.
Pour stuffing into a greased pan and bake until cooked through and golden brown, about 45 minutes.
Lattice-Topped Turkey Casserole
2 1/4 cups chicken broth made from 2 1/4 cups water and 5 teaspoons Watkins Chicken Soup Base
2 cups diced red potatoes
2 celery ribs, chopped
1 large onion, finely chopped
1/2 teaspoon Watkins Rosemary, crushed
1/4 teaspoon Watkins Garlic Powder
1/4 teaspoon Watkins Thyme
1/8 teaspoon Watkins Black Pepper
3 tablespoons all-purpose flour
2/3 cup fat-free evaporated milk
3 cups frozen mixed vegetables, thawed and drained
2 cups cubed cooked turkey breast
Crust
1/4 cup all-purpose flour
1/4 cup whole wheat flour
1/2 teaspoon Watkins Baking Powder
1/8 teaspoon salt
4 tablespoons fat-free milk, divided
1 tablespoon canola oil
In a large saucepan, combine the water, chicken soup base, potatoes, celery, onion, rosemary, garlic powder, thyme, and pepper. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until potatoes are tender.
In a small bowl, whisk flour and evaporated milk until smooth; stir into broth mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in vegetables and turkey; heat through. Transfer to an ungreased 8-in. square baking dish.
For crust, combine the flours, baking powder and salt in a small bowl. Stir in 3 tablespoons milk and oil just until combined. Roll out and cut into strips; make a lattice crust over filling. Trim and seal edges. Brush lattice top with remaining milk.
Bake, uncovered, at 400 degrees F for 20-25 minutes or until filling is bubbly. Let stand for 10 minutes before serving. Yield: 6 servings
Artichoke Turkey Noodle Bake
Watkins Cooking Spray
8 ounces (about 5 cups) uncooked wide egg noodles
2 tablespoons butter
1/2 cup finely chopped onion
1 1/2 tablespoons all-purpose flour
1 1/2 cans (12 ounces each) evaporated skim milk
1/4 cup cream sherry (can substitute 1/4 cup orange or pineapple juice)
1 can (14.5 ounces) stewed tomatoes, drained
1/4 teaspoon salt
1/8 teaspoon Watkins Black Pepper
dash of Watkins Cayenne Pepper
2 1/2 cups shredded leftover cooked turkey
1 can (14 ounces) artichoke hearts, drained, thinly sliced
2 cups (8 ounces) shredded sharp Cheddar cheese, divided
Preheat oven to 375 degrees F. Spray 13×9 inch baking dish with cooking spray. Set aside.
Cook noodles according to package directions; rinse and drain. Set aside.
Meanwhile, melt butter in medium saucepan on medium-high heat. Add onion. Cook and stir 5 minutes, or until tender. Add flour; cook and stir 1 minute.
Gradually stir in milk and sherry ro juice. Cook and stir 5 minutes, or until thickened. Stir in tomatoes, salt, black pepper and cayenne pepper.
Combine noodles and tomato mixture. Stir in turkey, artichokes and 1 cup of the cheese. Spoon into prepared baking dish. Sprinkle with remaining cheese.
Bake 40 minutes, or until hot.
Double Layer Pumpkin Cheesecake
2 (8 oz) packages cream cheese, softened
1/2 cup white sugar
1/2 tsp. Watkins Vanilla Extract
2 eggs
1 (9 inch) prepared graham cracker crust
1/2 cup pumpkin puree (canned pumpkin)
1/2 tsp. Watkins Ground Cinnamon
1 pinch Watkins Ground Cloves
1 pinch Watkins Ground Nutmeg
1/2 cup frozen whipped topping, thawed
Preheat oven to 325 degrees F. In a large bowl, combine cream cheese, sugar and vanilla. Beat until smooth.
Blend in eggs one at a time.
Remove 1 cup of batter and spread into bottom of crust; set aside.
Add pumpkin, cinnamon, cloves and nutmeg to the remaining batter and stir gently until well blended.
Carefully spread over the batter in the crust. Bake in preheated oven for 35 to 40 minutes, or until
