COOKING TIPS
How to Fancy-up a Plain Pumpkin Pie
I love pumpkin pie with real whipped cream made with Watkins Vanilla but if you'd like to make your pie a little more distinctive, fancy it up with one of these suggestions.
- Try adding eggnog to your favorite recipe. Simply substitute eggnog for the milk or evaporated milk in your favorite pumpkin pie recipe for a richer, sweeter pie.
- Roll out extra pie dough and use small leaf-shaped cookie cutters to cut dough into shapes and place them around the edge of your pie.
- Use a lattice pie cutter to cut the top crust of your pie. They are available at baking and home supply stores. Or cut decorative holes in second crust with cookie cutter and bake as directed.
Tips for Using Springform Pans
- If your batter is especially thin or there is a great deal of sugar in your recipe, your pan may leak through the seam along the base of the pan. To protect against a leak, wrap the base of the pan with aluminum foil. Please note that with aluminum foil deflecting the heat, it may take just a little longer to bake.
- Tin, aluminum, or stainless springform pans may taint your cake with a metallic taste if it is stored on the pan base. It is okay to store the cake on a glass base or enameled base.
- If you are baking in a tin, aluminum, or stainless pan or would like to remove the cake from the base, cut a sheet of parchment paper and fit it to the base.
- If you would like to give your cake away, line the pan as above.
- Let the cake sit in the pan to cool before removing the ring. In a good nonstick springform pan or with a well-greased pan, the ring should fall away without needing to free it with a knife or spatula. To protect a nonstick finish, avoid using a metal edge against the finish. If you remove the ring too soon the cake may split or fall apart.
- If you do need to free the cake from the ring, use a cake or frosting spatula without a sharp edge.
- Wash your pans with warm, soapy water and a soft cloth. While most pans are dishwasher safe, they take up a lot of room and in our experience, tend not to come clean.
- Most springform pans are made of lighter gauge metal. Store them carefully where they will not get knocked around and possibly bent.

RECIPES
Chesapeake Appetizer Spread
1- 8 oz. package Cream Cheese
1/4 cup Sour Cream
3 tbsp. Mayonnaise
1 1/2 tbsp. Watkins Crab Snack and Dip Mix
1 tbsp. Watkins Onion Flakes
1/4 tsp. Watkins Garlic Powder Granules
Dash Watkins Cayenne Pepper
6 oz. Crab Meat - if canned, rinse and drain; if frozen, thaw (can use imitation crab)
1/2 Cup Shredded Cheddar Cheese
Watkins Paprika
In medium bowl, combine first 7 ingredients; mix well. Add crab meat. Place mixture in shallow serving dish, such as a decorative pie plate, and bake at 350 degrees for 10 minutes. Take out of oven and sprinkle with cheese and paprika. Return to oven and bake until bubbly (about 15 minutes). Let stand 5 minutes. Serve hot with assorted crackers, bread sticks, or toasted baguette slices. Makes 10 servings.
Caramel Fruit Dip
1 package (8 oz,) softened cream cheese
1/4 cup brown sugar
1 tsp Watkins Vanilla
1/2 tsp. Watkins Caramel Extract
Using an electric mixer, combine softened cream cheese, brown sugar and extracts. Use as a dip for apple or pear slices.
Crockpot Chicken and Mushrooms
4 bone-in chicken breasts with the skin removed
Salt
Watkins Black Pepper
Watkins Garlic Powder
Watkins Paprika
1 cup sour cream
1 can cream of mushroom soup
1 small can of mushrooms or 8 oz. sliced fresh mushrooms
1/4 cup white wine or chicken broth made with Watkins Chicken Soup Base
After removing the skin, sprinkle the chicken breasts with salt, pepper, garlic powder, and paprika; then place in the crockpot. Mix together the remaining ingredients and pour over the chicken pieces. Cook on low 6-8 hours. Serve over rice or egg noodles.
Honey-Rosemary Chicken with Yukon Gold Potatoes
12 skinless bone-in chicken thighs
1 tablespoon vegetable oil
1 pound baby Yukon Gold potatoes
2 medium onions, cut into thin wedges
4 garlic cloves, minced
1/4 cup honey
2 tablespoons fresh lemon juice
2 tablespoons cornstarch
1 teaspoon Watkins Rosemary
1 teaspoon salt
1/4 teaspoon Watkins Granulated Pepper
- Rinse chicken and pat dry. Heat oil in a large nonstick skillet over moderately high heat. Add chicken and cook, turning, until browned on all sides.
- Place the potatoes, onion and garlic in a 4- to 6-quart slow cooker; top with chicken.
- Stir together honey, juice, cornstarch, rosemary, salt and pepper in a small bowl. Pour over chicken. Cover and cook, 6 to 8 hours on low or 3 to 4 hours on high.
Oatmeal Apple Crisp from Naomi
6 tart apples, cored and sliced
1 cup brown sugar
3/4 cup flour
3/4 cup rolled or quick oats
1/2 cup margarine
1 or 2 teaspoons Watkins Cinnamon
1 cup unsweetened applesauce
Mix sliced apples with applesauce and place in 9-inch square baking pan or dish. Combine remaining ingredients cutting in margarine till crumbly. Press crumb mixture over apples. Bake 1 hour at 350 degrees F till browned. Recipe can be doubled or even tripled.
Glazed Apple Bars from Lilly
Bars
1/2 cup butter, softened
1 1/3 cups light brown sugar
1/2 t. salt
1/2 t. Watkins Ground Nutmeg
1 t. Watkins Ground Cinnamon
1 t. Watkins Ground Cloves
1 egg
2 cups all purpose flour
1 t. baking soda
1 medium chopped red apple, peeled if desired
1 cup raisins
1 cup chopped pecans
1/4 cup. reduced fat milk
Glaze
1 1/2 cups confectioners' sugar
2 1/2 t. warm reduced fat milk
1 T. butter, softened
1/4 t. Watkins Vanilla
1/8 t. salt
Preheat oven to 400 degrees F. Lightly grease a 15x10 jellyroll pan.
To prepare bars, cream butter and brown sugar with mixer at medium-high speed. Add salt, nutmeg, cinnamon, cloves and egg; beat until well blended.
Combine 1 cup flour and baking soda in a bowl;add to butter mixture. Stir in apple, raisins and pecans by hand. Add milk and remaining flour;mix well. Spread in prepared pan. Bake 10 minutes, until light brown. Cool 10 minutes.
To prepare glaze, combine confectioners' sugar, milk, butter, vanilla and salt in a bowl; mix well. Spread glaze over cooled bars and cut to serve. Makes 2 dozen bars.
Ginger Pumpkin Pie with Graham Cracker Crust
1 15 ounce can pumpkin or 2 scant cups thick homemade pumpkin puree
2 eggs
1/2 cup brown sugar
2 1/2 teaspoons ginger puree or grated ginger
2 teaspoons Watkins Cinnamon
1/2 teaspoon salt
1 1/2 cups half and half or evaporated milk
1 graham cracker pie crust
Pre-bake the graham cracker crust for five minutes at 375 degress F.
Whisk the pumpkin puree with the eggs and brown sugar. Whisk in the ginger, cinnamon, salt and pepper. You can either use the ginger puree that comes in a jar or grate ginger yourself. Use about a 3 inch piece and discard the tough fibers. Just use the milky juice and puree.
Whisk in the half and half and whisk until smooth. Pour into the graham cracker crust. Bake for about 50 minutes at 375 degrees F, or just until set. The filling will continue to firm up after it comes out of the oven. Let cool for at least two hours before serving. This is a great make-ahead dessert; it keeps well in the fridge and the flavors develop even more. Makes one 9-inch pie.
Graham Cracker Crust
10 to 12 whole graham crackers (about 5 ounces)
3 tablespoons granulated sugar
6 tablespoons melted butter
1/4 teaspoon Watkins Vanilla
Pre-heat oven to 350 degrees F.
Pulse the graham crackers in a food processor until finely ground. If you don't have a food processor, put the graham crackers in a plastic bag and crush them with a rolling pin.
Stir the warm melted butter, sugar and vanilla into the graham cracker crumbs.
While the mixture is still warm and easy to handle, mold it into the pie plate. Start with the bottom and then build around the sides. As an alternative, the crust can be made into individual servings in smaller souffle cups or tart pans.
Bake for 7-10 minutes. You should see that the sugar has melted and the crumbs have formed a solid crust. Makes enough crust for one 9-inch pie
Pumpkin and Apple Crisp
This recipe is perfect at harvest time and is great for Thanksgiving. It's quick once the apples and pumpkin are peeled.
5 cups peeled and diced (1/2 to 3/4 inches) apples
4 cups peeled and diced (1/2 to 3/4 inches) pumpkin
2/3 cup maple syrup
2/3 cup rolled oats
2/3 cup all-purpose flour
1 cup brown sugar
1 teaspoon Watkins Cinnamon
1/4 teaspoon Watkins Ground Nutmeg
1/8 teaspoon Watkins Ground Cloves
1/2 teaspoon salt
6 tablespoons butter
- Preheat the oven to 350 degrees F. Grease a 9 x 13-inch pan.
- Spread the cubed apples and pumpkins in the pan. Pour the maple syrup over the cubes.
- Mix the oats, flour, brown sugar, spices, and salt together in a medium bowl. Cut the butter into the flour mixture with a pastry knife until the mixture is the consistency of grain-like kernels. Spread the topping over the apple and pumpkin mixture.
- Bake for 35 to 40 minutes or until the pumpkin is tender.
- Serve warm with ice cream or whipped cream.
