COOKING TIPS
- How to Thaw a Turkey
Refrigerator thawing is the recommended method. However, if short on time, submerge the turkey in cold water. Thawing the turkey at room temperature is not recommended, as it could promote bacterial growth.
Refrigerator Thawing
Thaw turkey in unopened wrapper, breast-side up, on a tray in the refrigerator. For every four pounds of turkey, allow at least one day of thawing. 14 pound turkey equals 45 days.
Cold Water Thawing
Place turkey in unopened wrapper, breaast down and cover completely with cold tap water. Change water every 30 minutes to keep surface of turkey cold. Estimate minimum thawing time to be 30 minutes per pound for a whole turkey. 16 pound turkey equals 8 hours.

RECIPES
Artichoke Turkey Noodle Bake
Combine your leftover turkey with egg noodles and bake in a cream sauce with artichokes, tomatoes and Cheddar cheese.
Watkins Cooking Spray
8 ounces uncooked wide egg noodles
2 tablespoons butter
1/2 cup finely chopped onion
1 1/2 tablespoons all-purpose flour
1 1/2 cans (12 ounces each) evaporated skim milk
1 can (14.5 ounces) stewed tomatoes
1/4 teaspoon salt
1/8 teaspoon Watkins Granulated Black Pepper
Dash Watkins Red Pepper Flakes or Watkins Cayenne Pepper
2 1/2 cups shredded leftover cooked turkey
1 can (14 oz.) sliced artichoke hearts
2 cups (8 oz.) shredded sharp Cheddar cheese
- Preheat oven to 375 degrees F. Spray 13x9-inch baking dish with cooking spray. Set aside.
- Cook noodles according to package directions; rinse and drain. Set aside.
- Meanwhile, melt butter in medium saucepan on medium-high heat. Add onion. Cook and stir 5 minutes, or until tender. Add flour; cook and stir 1 minute.
- Gradually stir in milk. Cook and stir 5 minutes, or until thickened. Stir in tomatoes, salt, black pepper and red pepper.
- Combine noodles and tomato mixture. Stir in turkey, artichokes and 1 cup of the cheese. Spoon into prepared baking dish. Sprinkle with remaining cheese.
- Bake 40 minutes, or until hot. Makes 6 servings.
Quick Cloverleaf Herb Rolls
Make these dinner rolls using frozen bread dough.
1/4 cup butter, melted
1/2 teaspon Watkins Sage
1/2 teaspoon Watkins Rosemary, crushed
1/2 teaspoon Watkins Thyme
1 (1-pound) loaf frozen bread dough, thawed
Stir together butter, sage, rosemary and thyme in 9-inch pie plate.
Cut bread dough into 36 (about 1-inch) pieces using kitchen shears. Shape each piece into a ball; roll in herb mixture. Place 3 balls in each of 12 ungreased muffin cups. Cover; let rise until double in size (about 30 minutes).
Heat over to 400 degrees F. Bake for 15 to 20 minutes or until golden brown. Makes one dozen rolls.
Slow Cooker Stuffing
Save precious oven space on Turkey Day by using your crock-pot to cook the stuffing.
1/2 cup chopped celery
1 onion, chopped
1/4 cup butter
6 cups dry bread crumbs or stuffing croutons
1/2 cup chicken broth made with Watkins Chicken Soup Base
1/4 cup chopped toasted pecans
1/2 teaspoon Watkins Poultry Seasoning
1/2 teaspoon salt
1/4 teaspoon Watkins Black Pepper
Melt butter in skillet and cook celery and onion until tender, stirring frequently. Add remaining ingredients and toss gently to coat. Grease a 4-5 quart crock-pot and fill with stuffing, 3/4 full.
Cover crock-pot and cook on Low for 4-5 hours. Serves 6-8.
Cranberry-Blueberry Pie
Cranberries and blueberries sweetened with sugar, cinnamon and spices are baked in a pastry crust.
2 packages (12oz) frozen blueberries
1 package (12 oz) fresh cranberries
2 teaspoons grated orange peel
1 1/2 cups granulated sugar
1teaspoon Watkins Ground Cinnamon
1/2 teaspoon Watkins Ground Nutmeg
1/4 cup cornstarch
6 tablespoons fresh orange juice
whipped cream or whipped topping
prepared pie pastry
- Combine blueberries, cranberries, 1-1/2 cups sugar, cornstarch, orange peel, cinnamon, nutmeg and orange juice in large sucepan until well blended. Bring to boil on medium-high heat. Cook and stir constantly 5 minutes, or until thickened and bubbly. Remove from heat; cool completely.
- Preheat oven to 375 degrees F.
- Roll 1 pie pastry into circle 12-inches in diameter on lightly floured surface. Transfer dough to a 9-inch deep dish pie plate. Ease pastry into pie plate, being careful not to stretch dough. Transfer filling to pastry. Trim pastry even with rim of pie plate.
- Roll second pie pastry into circle 12-inches in diameter. Carefully place pie crust over filling. Trim 1/2-inch beyond edge of pie plate. Wrap excess top crust under bottom crust. Press edges together to seal. Flute edge. Cut 5 or 6 slits in top crust in spoke pattern.
- Place pie on baking sheet lined with aluminum foil. Bake 60 minutes, or until crust is golden brown.
- Cool completely on wire rack. Cut into 8 slices. Serve with whipped topping or whipped cream.
Maple Pecan Pumpkin Pie
A hint of maple in the filling, a drizzling over the pecans and a touch in the whipped cream makes traditional pumpkin pie extraordinary.
Crust Ingredients
1 cup all-purpose flour
1/8 teaspoon salt
1/3 cup cold butter
2 to 3 tablespoons cold water
Filling Ingredients
1/4 cup sugar
1 (15-ounce) can pumpkin
2 eggs, slightly beaten
1 cup heavy whipping cream
1/4 cup pure maple syrup or maple-flavored syrup
2 teaspoons Watkins Pumpkin Pie Spice
Topping Ingredients
1/2 cup pecan halves
3 tablespoons pure maple syrup or maple-flavored syrup
1/2 cup heavy whipping cream
Heat oven to 375 degrees F. Combine flour and salt in large bowl; cut in butter with pastry blender or fork until mixture resembles coarse crumbs. Mix in water until flour is just moistened.
Roll out dough on lightly floured surface into 12-inch circle. Fold into quarters. Place dough into 9-inch pie pan; unfold, pressing firmly against bottom and sides. Trim crust to 1/2 inch from edge of pan. Crimp or flute edge. Set aside.
Combine sugar, pumpkin and eggs in large bowl. Add all remaining filling ingredients; mix well. Pour into prepared pie crust. Cover edge of crust with 2-inch strip of aluminum foil. Bake for 40 minutes. Remove aluminum foil. Continue baking for 15 to 25 minutes or until knife inserted in center comes out clean.
Arrange pecan halves on top of pie; drizzle or brush 1 tablespoon maple syrup over pecans.
Beat whipping cream at high speed in small bowl until soft peaks form. Gradually add remaining 2 tablespoons maple syrup; continue beating until stiff peaks form. Spoon dollops of whipped cream unto pie; garnish with additional pecan halves, if desired.
Chocolate Peanut Butter Pie
This recipe is from Carol, a friend and Watkins associate. She forwarded the recipe from the Cook'n Club web site. Doesn't this look yummy!
1 1/2 cups crushed chocolate wafers or graham crackers
1/4 cup butter
2 tablespoons creamy peanut butter
1 8-ounce package cream cheese
3/4 cups chunky peanut butter (or creamy if you like)
1/4 cup sugar
1/4 cup butter
1 cup whipping cream
2 teaspoons Watkins Vanilla Extract
Whipped topping or whipped cream
Preheat oven to 350 degrees F. Put 1/4 cup butter in pie plate and heat until melted. Remove and add crushed chocolate wafers and mix together. Press in the bottom and up the sides of pan and bake for 10 minutes. Remove from overn and immediately put 2 tablespoons peanut butter on crust and spread it around the bottom of the pan. Cool completely. In a mixer whip 1 cup cream until fluffy. Put in a separate bowl. Now mix cream cheese, peanut butter, sugar, butter, and vanilla. Beat until light and fluffy. Fold in whipped cream. Spread over crust and chill. Top with whipped cream, whipped topping, or drizzle with chocolate sauce. Decorate top with tiny chocolate candy bars or grated chocolate.
Cranberry Buttermilk Muffin Mix
Bake these delicious muffins for your family and friends or place ingredients in a gift jar and attach a holiday recipe card with ingredients and baking instructions.
Contents of gift jar
1/2 cup sugar
2 1/2 cups flour
1 cup dried cranberries
1/2 teaspoon Watkins Ground Ginger
2 teaspoons Watkins Baking Powder
1/2 teaspoon baking soda
1/4 teaspoon salt
Plus
1 cup buttermilk
1/2 cup melted butter
2 eggs
1 teaspoon Watkins Vanilla Extract
- Preheat oven to 375 degrees F.
- In a large bowl combine buttermilk, butter, eggs and vanilla.
- Add contents of jar and stir until just combined.
- Spoon batter into greased or papered muffin tins, filling each cup two-thirds full.
- Bake for 15 to 18 minutes, or until a toothpick inserted in the center comes out clean.
- Cool for 10 minutes in the muffin tins and then transfer to a wire rack and cool completely.
To assemble the gift jar
Wash and thoroughly dry a 1-quart wide-mouth canning jar.
Layer the ingredients in the jar as listed above, starting with the sugar on the bottom, then flour, cranberries, ginger, baking powder, baking soda and finally salt. Press each ingredient layer firmly into place with a flat-bottomed object (like a large plastic cup) before adding the next.
Secure the lid and attach recipe card.
You can also use a thoroughly washed canning jar, old mayonnaise or large jelly jar. Decorative or vintage jars from a specialty or antique store make a great keepsake after the muffin mix is used up. (Make sure they are food safe and thoroughly washed. Wash in dishwasher or wash and rinse in a pot of boiling water.)
Orange Spiced Nuts
1 cup sugar
1/4 teaspoon Watkins Ground Cinnamon
1/8 teaspoon salt
2 egg whites
2 cups pecan halves
2 cups lightly salted dry roasted whole cashews
1 cup walnut halves
1 tablespoon freshly grated orange peel or 1 teaspoon Watkins Orange Peel
1/4 cup butter
Heat oven to 325 degrees F. Combine sugar, cinnamon, and salt in small bowl.
Place egg whites in medium bowl. Beat at high speed, scraping bowl often, until soft peaks form. Continue beating, gradually adding sugar mixture, until stiff peaks form. Gently stir in nuts and orange peel by hand.
Line 15x10x1-inch jelly-roll pan with heavy-duty aluminum foil. Melt butter in oven in foil-lined pan (4 to 6 minutes). Spread nut mixture over butter. Bake, stirring every 10 minutes, for 25 to 30 minutes or until nuts are browned and no butter remains. Cool completely. Store in airtight container. Makes 5 cups.
Gift Idea
Teachers, mail carriers and neighbors will appreciate these sweet-spicy nuts at holiday time. Just place the cooled nuts in a festive mug, cover with plastic food wrap and tie with holiday ribbon.

Chestnut-Backed Chickadee
Chestnut-Backed Chickadees are freqent visitors to our backyard feeders. Baby chickadees have hatched from our backyard birdhouses. I enjoy the energy, liveliness, and acrobatics of this tiny bird. It always makes me smile.
The common chickadee of the Pacific Coast, the Chestnut-backed Chickadee is the smallest member of its family in America. It lacks a whistled song, but makes up for this deficiency by the complexity of its "chick-a-dee" calls. It resembles the Black-Capped Chickadee except the back is chestnut colored.

Length: 4 1/2 to 5 1/4 inches
Wingspan: 8 inches
Weight: 7-12 grams/0.25-0.42 ounces
Description: Small, short-billed bird. Brownish black cap. Black bib. White cheeks. Back deep rufous-chestnut
Nest: Six to eight white eggs with brown spots. Uses birdhouses and natural cavities to protect its nest of plant fibers, wool, hair and moss
Song: "Chick-a-dee-dee-dee" is its call, which many will recognize
Habitat: Wooded suburbs and open woodlands
Diet: Insects, berries and seeds
Backyard Favorites: Sunflower seeds, suet and thistle
Cool Facts
- The Chestnut-backed Chickadee uses lots of fur in making its nest, with fur or hair accounting for up to half of all the material in the hole. The hair from rabbits, coyote, and deer is most common, but hair from skunks, cats, horses, or cows will be used as well. The adults make a layer of fur about 1 cm (0.4 in) thick that they use to cover the eggs when they leave the nest.
- Hole-nesting birds tend to have higher nest success rates than open-cup nesters, but that doesn't mean that they are immune to predation. Chestnut-backed Chickadee nests get attacked by a number of predators, including mice, squirrels, weasels, snakes, and even black bears.
- The Chestnut-backed Chickadee is not truly migratory, but it does make some seasonal movements. In late summer some birds move to higher elevations up mountains. They move back to lower elevations when winter starts. In some winters, some chickadees will make local movements out of areas with deep snow.
