LAUGH WITH ME
After every flight, Qantas (Australia's major airline) pilots fill
out a form, called a "gripe sheet," which tells mechanics about
problems with the aircraft. The mechanics correct the
problems, document their repairs on the form, and then pilots
review the gripe sheets before the next flight. Never let it be
said that ground crews lack a sense of humor. Here are some
actual maintenance complaints submitted by Qantas' pilots
(marked with a P) and the solutions recorded (marked with an
S) by maintenance engineers.
By the way, Qantas is the only major airline that has never,
ever, had an accident.
P: Left inside main tire almost needs replacement.
S: Almost replaced left inside main tire.
P: Test flight OK, except auto-land very rough.
S: Auto-land not installed on this aircraft.
P: Something loose in cockpit.

7 Holiday Foods That Are Actually Good For You
- Pumpkin Pumpkin is a remarkably healthy ingredient, providing 3 1/2 times the recommended daily allowance of vitamin A and a lot of fiber per half-cup serving. Pureed pumpkin lends itself to healthy cooking. It can, like applesauce and prune puree, replace fat in baked goods without giving them a rubbery texture.
- Roast Turkey Serve up three ounces of skinless turkey breast and you get a whopping 20 grams of protein with practically no fat. All that and only 100 calories. Plus you fill 25 percent of your daily need for niacin and vitamin B6.
- Sweet Potatoes Ounce for ounce, they have as much beta-carotene as carrots. A mere four ounces contain 50 percent of your daily requirement of vitamin C, as much potassium as a banana and a good amount of fiber. All this adds up to one terrific disease-fighting food!
- Cranberry Relish There's a substance in cranberries that helps prevent urinary tract infections by interfering with the ability of bacteria to adhere to cell membranes. Cranberries also contain a potentially cancer-preventing compound called ellagic acid. Make a fresh orange-cranberry relish and get added benefit from the vitamin C in oranges.
- Potatoes Whether mashed or in latkes, potatoes are good food. They contain loads of vitamin C and potassium, plus fiber, iron, copper and plenty of B vitamins. Boiling potatoes will destroy some of the vitamin C and dissolve some of the rest of it into the cooking water. To help preserve the vitamin C content, use some of the cooking water instead of milk or cream when mashing them.
- Figgy Pudding Figs help make the pudding a nutritional gold mine. They are a good source of potassium, calcium, magnesium and niacin, plus they have a natural laxative effect.
- Eggnog Choose only the low-fat variety and enjoy a holiday tradition while getting a good amount of protein and some calcium. (Just be sure not to drink too much, since there's still lots of sugar and calories in even the low-fat version.)

Turkey Cooking Hotlines
The winter holidays are just around the corner. Here are some holiday tips and substitutes to help take some of the stress out of your holiday cooking.

- If your stuffing recipe calls for poultry seasoning and you are out, substitute
3/4 teaspoon dried sage, crushed, and 1/4 teaspoon dried thyme, crushed, or 1/4 teaspoon dried marjoram, crushed, for each teaspoon of poultry seasoning used in the recipe.
- How much stuffing do I need to fill the turkey?
Allow about 3/4 cup stuffing for each pound of ready-to-cook turkey. For example, a 12-pound bird will hold about 9 cups stuffing. If your family loves stuffing, you may want to make extra stuffing to bake in a casserole beside the turkey.
If you are cooking stuffing in a casserole add a little extra broth so the stuffing isn’t too dry. Bake covered for 30 to 40 minutes. Remove the foil or lid a few minutes before removing from oven if you like the top of the stuffing browned.
- Add an extra 15 minutes to the cooking time of any dish or casserole that you prepared ahead of time and refrigerated, such as stuffing, baked sweet potatoes, mashed potato casserole, or vegetable casserole.
- If your holiday recipe calls for raw egg whites, substitute
pasteurized dried egg whites. They can be found in the baking section of supermarkets or grocery stores or in speciality food stores. Do not use raw or slightly cooked egg whites (or yolks) because they may contain harmful bacteria.
- If your pie recipe calls for pumpkin pie spice and you don’t have any, substitute
1 teaspoon ground cinnamon, 1/2 teaspoon ground ginger, 1/4 teaspoon ground cloves for 1 3/4 teaspoons pumpkin pie spice. This enough spice for one 9-inch pumpkin pie.
- If your pumpkin pie recipe calls for evaporated milk and you don’t have any, substitute
regular milk in the recipe, but the pie will not be quite as rich. You can also substitute cream.
- If your recipe calls for a 16-ounce can of pumpkin and your supermarket only has 15-ounce cans of pumpkin, substitute
a 15-ounce can of pumpkin. It won’t affect your recipe.
- If your recipe calls for apple pie spice and you are out, substitute
1/2 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg, 1/8 teaspoon ground allspice for 1 teaspoon apple pie spice.
- Don't Have a Roasting Pan?
Make a rack out of vegetables like celery, carrots and onion and place your chicken, turkey or roast on top. The excess fat drips away from the meat and your pan drippings will be more flavorful.

RECIPES
Thanks to Audrey in Idaho for sending in her homemade soup recipe.
Chunky Beef Noodle Soup
1 pound boneless round steak, cut into ½-inch cubes
1 medium onion, chopped
2 garlic cloves, minced
1 Tablespoon vegetable oil
2 cups water
1 can diced tomatoes, undrained
1 can condensed beef consommé soup, undiluted or 2 c. beef broth made with Watkins Beef Soup Base
1 to 2 teaspoons Watkins Chili Powder
1 teaspoon salt
½ teaspoon Watkins Dried Oregano
1 cup uncooked spiral pasta
1 medium green pepper, chopped
¼ cup minced fresh parsley, chopped (optional)
In a large saucepan, cook round steak, onion and garlic in oil until the meat is browned and the onion is tender, about 5 minutes. Stir in water, tomatoes, consommé and seasonings; bring to a boil. Reduce heat; cover and simmer until meat is tender, about 1-1/2 hours. Stir in pasta and green peppers. Simmer, uncovered, until noodles are tender, about 8 minutes. Add parsley. This makes approx. 2 quarts of soup.
Cornmeal-Chili Pepper Biscotti
Serve this crunchy biscotti with a bowl of homemade soup or chili.
1 cup shredded extra-sharp cheddar cheese (4 ounces)
1/4 cup butter, softened
1 4-ounce can diced green chili peppers, drained
2-1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon Watkins Black Pepper
2 eggs
1/2 cup yellow cornmeal
2 cups all-purpose flour
- Lightly grease a cookie sheet; set aside.
- In a large mixing bowl beat cheese and butter with an electric mixer on medium to high speed for 30 seconds. Add chili peppers, baking powder, salt, and pepper. Beat until combined, scraping sides of bowl occasionally. Beat in eggs. Beat in cornmeal and as much of the flour as you can with the mixer. Using a wooden spoon or your hands, stir or knead in any remaining flour.
- Divide dough in half. Shape each half of dough into a 9-inch-long loaf. Place about 5 inches apart on the prepared cookie sheet. Flatten slightly to 3 inches wide.
- Bake in a 350 degree F oven for 30 to 35 minutes or until light brown. Cool on cookie sheet for 1 hour.
- Transfer loaves to a cutting board. Cut each loaf diagonally into 1/2-inch-thick slices. Place slices, cut side down, on the cookie sheet. Bake in a 325 degree F oven for 15 minutes. Turn slices over and bake 15 minutes more or until cookies are dry and crisp. Transfer to a wire rack; cool. Makes 28 biscotti.

Breakfast Bake
If you are having holiday guests, now is the time to plan your menu. This is a breakfast favorite - ham or sausage, potatoes, cheese and eggs combined in a simple, yet company-good casserole.
1 cup diced fully cooked ham or 1 (12 ounce) package bulk pork sausage, cooked
3 cups frozen hash brown potatoes
1 medium green bell pepper, chopped (1 cup)
1 medium onion, chopped (1/2 cup)
2 cups shredded Cheddar cheese (8 ounces)
1 cup Original Bisquick mix
2 1/2 cups milk
1/4 teaspoon Watkins Black Pepper
4 eggs
- Heat oven to 375 degrees F. Grease rectangular 13x9x2 inch baking dish.
- Cook pork sausage until no pink remains. Then saute bell pepper and onion. Layer ham or sausage, potatoes, bell pepper, onion and 1 cup of the cheese in baking dish.
- Stir Bisquick mix, milk, pepper and eggs until blended. Pour into baking dish.
- Bake uncovered 30 to 40 minutes or until light golden brown around edges. Sprinkle with remaining cheese. Bake 1 to 2 minutes longer or just until cheese is melted.
Health Twist
For fewer calories and less fat, use Reduced Fat Bisquick mix instead of the Original Bisquick mix and use 1 cup fat-free cholesterol-free egg substitute instead of the 4 eggs.
Substitution
Try different types of cheeses in this recipe. Swiss or Monterey Jack work well, but you can also try seasoned cheeses, such as shredded taco cheese or pepper Jack cheese.
Pumpkin-Cream Cheese Pie
Baked in a pecan-shortbread crust, this pie is a blend of cream cheese, pumpkin and spices.
Pecan Shortbread Cookie Crust
1 1/2 cups lightly packed crushed shortbread cookies with pecans (16 cookies)
3 tablespoons all-purpose flour
3 tablespoons butter or margarine, melted
Filling
1 cup sugar
3 tablespoons all-purpose flour
1 package (8 oz) cream cheese, softened
1 package (3 oz) cream cheese, softened
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon ground cloves
3 eggs
1 can (15 oz) pumpkin (not pumpkin pie mix)
1 tablespoon milk
- Heat oven to 375 degrees F. In medium bowl, mix all crust ingredients until crumbly. Press firmly on bottom and side of ungreased 9-inch glass pie plate. Bake about 12 minutes or until light golden brown.
- In large bowl, beat sugar, 3 tablespoons flour and both packages of cream cheese with electric mixer on low speed until smooth; reserve 1/2 cup. Add all remaining filling ingredients except milk to cream cheese mixture. Beat on medium speed, scraping bowl constantly, until smooth. Pour into crust.
- In small bowl, mix reserved 1/2 cup cream cheese mixture and the milk. Spoon over pumpkin mixture. Cut through cream cheese and pumpkin mixtures with knife to swirl mixture.
4. Bake 35 to 40 minutes or until knife inserted in center comes out clean. Cool 30 minutes. Cover loosely and refrigerate.
Variation
Put a slightly different spin on this pumpkin delight by using a store-bought graham cracker crumb crust instead of the cookie crumb crust you make yourself.
Gingersnap Gems
2 cups all-purpose flour
1 teaspoon Watkins Baking Powder
1/2 teaspoon baking soda
1 teaspoon Watkins Ground Cinnamon
1/2 teaspoon Watkins Ground Cloves
1/2 teaspoon watkins Ground Ginger
1/4 teaspoon salt
1 cup sugar
3/4 cup shortening
1/4 cup molasses
1 egg
Sugar
- In a bowl, stir together flour, baking powder, baking soda, cinnamon, cloves, ginger and salt. Set aside.
- In a large mixing bowl, beat the 1 cup sugar and shortening with an electric mixer till well combined. Beat in molasses; beat in the egg. Add the flour mixture and beat till combined.
- Shape the dough into 1-inch balls. Roll balls in sugar and place 2 inches apart on an ungreased cookie sheet.
- Bake in a 375 degree F oven for 8 to 10 minutes or till edges are set and tops are crackled. Cool on a cookie sheet for 1 minute. Transfer to wire racks to cool completely. Makes about 45 cookies.
Lemon Drops
1/2 cup (1 stick) unsalted butter, softened
1/2 cup confectioners' sugar
3 tablespoons fresh lemon juice 1 teaspoon Watkins Vanilla
1-3/4 cups all-purpose flour
1/2 cup finely ground macadamia nuts
2 teaspoons fresh lemon zest
1/3 cup confectioners' sugar (for coating)
Beat together butter and 1/2 cup confectioners' sugar in bowl until creamy. Add lemon juice and vanilla. On low speed, beat in flour, nuts, and zest (dough will be slightly stiff). Wrap in plastic and refrigerate 1 hour.
Heat oven to 325 degrees F. Pinch off heaping tablespoonfuls of dough. Roll into balls. Place 1 to 2 inches apart on ungreased baking sheets.
Bake cookies in 325 degree F oven for 16 to 18 minutes, or until slightly browned near the bottoms of the cookies. Remove cookies to wire rack.
Sift remaining 1/3 cup confectioners' sugar over still-warm cookies to coat. Makes 3-1/2 dozen cookies.
Lace Cookies
1/2 cup butter
1 cup regular rolled oats
3/4 cup sugar
1 beaten egg
1 teaspoon Watkins Vanilla
3 tablespoons all-purpose flour
1/4 teaspoon salt
1/4 teaspoon Watkins Baking Powder
- Line a cookie sheet with foil; lightly butter foil. Set aside.
- In a large saucepan, melt butter. Remove saucepan from heat. Stir in rolled oats, sugar, egg,and vanilla. Add flour, salt, and baking powder; mix well.
- Drop rounded teaspoons of cookie batter about 3 inches apart onto foil (about 9 cookies on a medium cookie sheet). Spread each dollop of cookie batter slightly to distribute the oats.
- Bake in a 350 degree F oven for 9 to 11 minutes or until golden brown. Remove from the oven; let cool on cookie sheets on a wire rack about 10 minutes or until the cookies are set. Remove from the foil. Makes 42 cookies.

Nut Diamonds
1 cup (2 sticks) unsalted butter, softened
3/4 cup granulated sugar
1 large egg
1 teaspoon Watkins Vanilla Extract
1/4 teaspoon salt
3 cups all-purpose flour
1/2 cup (1 stick) unsalted butter, cut up
1-1/3 cups packed light-brown sugar
2/3 cup honey
1/2 cup heavy cream
3 cups chopped nuts (pecans and cashews)
- Heat oven to 350 degrees F. Line 15x10x1-inch jelly-roll pan with foil, extending over sides.
- Crust: In bowl, beat 1 cup butter, granulated sugar, egg, vanilla, and salt 2 minutes. Beat in flour. With floured hands, press dough in pan. Bake in 350 degree oven for 20 minutes (edges brown slightly).
- Topping: In saucepan, melt 1/2 cup butter, brown sugar, and honey; then boil 5 minutes, without stirring. Remove from heat; stir in cream; stir in nuts. Pour filling into crust.
- Bake in 350 degree F oven 25 minutes until bubbly. Let cool in pan. Lift cookie from pan. Cut 6 lengthwise strips 1-1/2 inches wide. Cut diagonal line lengthwise from opposite corners through center; then cut diagonally across strips at 2-inch intervals above and below first diagonal. Makes 4-1/2 dozen cookies.
Waffle Cookies
2 ounces unsweetened chocolate, cut up
1/3 cup butter or margarine
3/4 cup sugar
2 eggs, beaten
1 teaspoon Watkins Vanilla
1 cup all-purpose flour
1 cup semisweet chocolate pieces (6 ounces)
2 tablespoons light-colored corn syrup
1 tablespoon cooking oil
1/2 cup chopped pecans
- Preheat waffle iron. In a medium saucepan melt the unsweetened chocolate and butter over low heat. Cool slightly. Stir in sugar, eggs, and vanilla. Add flour; stir just until combined.
- Drop rounded teaspoonfuls of batter into center of each waffle grid. Bake on medium heat about 75 seconds. Using a fork transfer cookies to rack; cool. Repeat with remaining batter.
- In a small saucepan combine semisweet chocolate pieces, corn syrup, and cooking oil. Cook and stir over low heat

News About Our Local Backyard Birds Here in California
The Golden-crowned Sparrows have
arrived. Their plaintive, whistled three note
song (“oh-dear-me”) can be heard all
day long, but especially early in the morning.
White-crowned Sparrows have also
migrated in for the winter. They often flock
with the Golden-crowned Sparrows. Both
are ground or tray feeding birds and love
white millet seed. They also will eat suet.
The Dark-eyed Juncos are also arriving.
Mainly we see the “Oregon” sub-species
with their dark hood. Sometimes it’s possible
to find a “Slate-colored” Junco with
their dark bodies and white bellies. Look
for the white outer tail feathers on both of
these when in flight.
American Goldfinches should begin appearing
in larger numbers, often accompanied
by Lesser Goldfinches. Their numbers
will continue increasing all through
the winter. By January or February many
people see flocks of up to 100. They can
be seen eating wild thistle seeds and on
liquidambar and birch trees. Both will
readily come to thistle seed bird feeders.
If you stand outside and hold your feeder
at arm’s length, the goldfinches will come
and land on the feeder because they are
so anxious to feed.
It’s not too early to put out birdhouses.
Many birds such as wrens, chickadees, titmice,
woodpeckers, and bluebirds will use
the houses to roost in during cool fall and
winter nights. If you already have birdhouses
in your yard, this is the perfect time
to clean them out. Wear gloves, remove
the old nests and clean with a 10% bleach
solution. Rinse well, allow to dry, then rehang
the house.
