One of my husband's colleagues at General Electric was taking Lamaze classes with his wife in preparation for the birth of their baby. The first evening, couples were asked to introduce themselves and state their occupations. A banker, a lawyer and a psychologist spoke up, and our factory-worker friend began to feel intimidated.

4 T Watkins chicken soup base
4 cups water
2 stocks celery cut into pieces
4 carrots sliced
1 pkg. frozen spinach (10 oz)
home made meatballs using pork and ground beef or you can use turkey (just add an egg and breadcrumbs to a 1/2 lb. and roll into balls. I let these cook in the soup)
4 Tablespoons of any tiny pasta you wish to use
1 Teaspoon Watkins Italian seasoning

Add parmesan cheese before serving if desired. Makes four cups! I let this cook and simmer in the crockpot on low for the day.

HEALTH TIP

Healthy teeth and gums are so important to your overall good health. Healthy gums provide support for your teeth. Gum disease can lead to tooth loss.

Gum Disease
Gum disease can lead to problems throughout the body, such as heart disease, diabetes, blood infection and even low birth-weight babies.

Gum disease, sometimes called periodontal disease, is actually a chronic low-grade infection. It is suspected of contributing to ailments through the bloodstream. Bacteria from the mouth flood into the circulatory system and travel to other parts of the body, causing widespread inflammation.

Another possibility is that oral infections trigger the immune system, producing inflammation elsewhere in the body.

Gum disease ranges from gingivitis - a mild and common form that causes inflammation of tissues around the teeth - to more serious forms like periodontitis, where the inflammation affects the connective tissue supporting the teeth. An estimated 20 percent of Americans have periodontitis, and it's the primary cause of tooth loss in adults.

Preventing Gum Disease

  • Regular and thorough brushing and flossing is the first line of defense against gum disease.
  • A good diet that avoids sugary snacks and sodas is another. The acid in diet soda can attack the teeth and gums.
  • People also should make sure they drink fluoridated water and use a fluoride toothpaste - something to reconsider in these days of bottled water. Lots of people today are drinking bottled water, and they're removing one of the best sources they have for preventing tooth decay and they don't even realize it.
  • You should also avoid tobacco; smokers have seven times the risk of developing gum disease than non-smokers. You should also limit alcohol intake.
  • Visit the dentist regularly. Check-ups can provide early detection of oral problems, and lead to treatments that can prevent further damage.

Seasoning Cast-Iron Cookware

I just bought myself a cast iron skillet. I've wanted one for several years but never got around to buying one. My mom used to make the best burnt sugar frosting in her cast iron skillet. Before you use cast iron cookware they must be "seasoned" so the food won't stick. I decided to include the information I found about seasoning cast iron.

Seasoning is a technique for sealing the porous surface of cast-iron cookware, thereby creating a nonstick coating.

  • Method 1: Generously coat the pan’s interior with vegetable oil. Place in a preheated 350 F oven and bake for 1 hour. Cool completely, then rub the surface with a paper towel.

  • Method 2: Generously coat the pan’s interior with vegetable oil. Place over medium heat and cook until the pan begins to smoke, about 10 minutes. Remove from the heat and cool completely. Wipe out excess oil with a paper towel, pressing down hard and buffing the surface. Repeat the process.

  • Seasoned pans should be gently cleaned. Use a paper towel to wipe out food as soon as you’re through cooking. Loosen stubborn bits with a nylon pad. Rinse well, then wipe with a paper towel and dry thoroughly over a low burner for a minute or two. Let the pan sit on the turned-off burner until cool before storing.

  • Keep cast-iron pans in a dry place so they remain rust free.

  • Reseason pans whenever food begins to stick to the surface.

RECIPES

Spiced Walnut Coffee Cake

Topping
2/3 cup all-purpose flour
1/3 cup packed light-brown sugar
1/3 cup granulated sugar
2 teaspoons Watkins Pumpkin Pie Spice
1/8 teaspoon salt
6 tablespoons cold unsalted butter, cut into small pieces
1-2/3 cups walnuts, coarsely chopped

Cake
2-1/4 cups all-purpose flour
1 teaspoon Watkins Baking Powder
1/2 teaspoon baking soda
1/2 teaspoon Watkins Pumpkin Pie Spice
1/4 teaspoon salt
6 tablespoons unsalted butter, at room temperature
1/2 cup packed light-brown sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon Watkins Vanilla Extract
1 cup buttermilk
1 cup confectioners' sugar
1 tablespoons milk

  1. Heat oven to 350 degrees F. Coat an 8-inch square baking pan with Watkins Nonstick Cooking Spray.

  2. Topping: In a medium-size bowl, stir together flour, sugars, pumpkin pie spice and salt. With pastry cutter, cut butter into the mixture. Stir in walnuts. Refrigerate.

  3. Cake: In a large bowl, whisk together the flour, baking powder, baking soda, pumpkin pie spice and salt. Set aside.

  4. In another large bowl, beat butter and sugars on medium speed until creamy and blended, about 3 minutes. Beat in eggs, one at a time. Add vanilla and beat until smooth.

  5. On low speed, beat in the flour mixture in three additions, alternating with buttermilk. Beat for 2 minutes.

  6. Spoon half of the batter into the prepared pan. Sprinkle half of the topping over the batter. Spoon remaining batter over topping. Sprinkle remaining topping over top of cake.

  7. Bake at 350 degree F for 50 to 60 minutes or until toothpick inserted in center of cake comes out clean. Cool completely on wire rack. Loosen edges with a knife or small spatula. Cut into 12 equal pieces.

  8. In a small bowl, mix together confectioners' sugar and just enough milk to get a good drizzling consistency. Drizzle over cake squares and allow to set before serving. Makes 12 servings.

Spicy Pumpkin Cookies

1 cup sugar
1/2 cup butter or margarine, softened
1 cup canned pumpkin
2 eggs
2 cups all-purpose flour
2 teaspoons Watkins Baking Powder
2 teaspoons Watkins Ground Cinnamon
1/2 teaspoon Watkins Ground Nutmeg
1/2 teaspoon Watkins Ground Ginger
1/4 teaspoon Watkins Ground Cloves
1/2 cup chopped walnuts

Heat oven to 375 degrees F. Beat sugar and butter in large bowl with electric mixer on medium speed until light and fluffy, or mix with spoon. Beat in pumpkin and eggs. Stir in remaining ingredients except walnuts. Then add walnuts. Drop dough by rounded teaspoonfuls about 2 inches apart onto ungreased cookie sheet. Bake 8 to 10 minutes or until edges are set. Immediately remove from cookie sheet to wire rack. Makes approximately 4 dozen cookies.

Creamy Pumpkin Soup
There’s nothing nicer on a frosty night than sitting down to a steaming bowl of pumpkin soup.

4 tablespoons butter
1 cup chopped onion
1 clove garlic, crushed
1 teaspoon Watkins Curry Powder
1/2 teaspoon salt
1/4 teaspoon ground coriander
1/8 teaspoon Watkins Red Pepper Flakes
3 cups chicken broth made from Watkins Chicken Soup Base
1 (16-ounce) can pumpkin puree
1 cup half-and-half

  1. Melt butter in a large saucepan over medium-high heat. Sauté onion and garlic in hot butter, stirring continually, until tender, about 2 minutes.

  2. Add curry, salt, coriander and red pepper flakes to onion mixture and mix well. Cook, stirring frequently, for 1 minute.

  3. Stir broth into onion mixture. Bring to a boil over medium heat. Cook, stirring frequently, until thickened, 10 to 15 minutes. Add pumpkin and half-and-half to broth mixture and mix well. Cook for 5 minutes.

  4. Pour soup into a blender. Process until creamy. Serve warm or reheat to desired temperature. Ladle into soup bowls. Top with green onion curls, if desired.

Variations For a little extra color and flavor, add green onion curls or a dollop of sour cream and chopped chives to the top of each serving.

To give the soup a more mellow flavor, you can eliminate the curry powder and coriander, and top each bowlful with finely chopped ham.

Cream of Broccoli Soup
Here’s a satisfying soup with homemade taste that is so easy to make! For lighter eaters, all you’ll need is crackers or rolls and a tossed green salad to go with this hearty soup. For those with bigger appetites, put together some ham sandwiches on whole-grain bread with mustard and mayonnaise.

4 cups chicken broth made with Watkins Chicken Soup Base
1 can (10 3/4 ounces) cream of celery soup
1 1/2 cups chopped fresh broccoli
1/2 cup butter or margarine
1 medium onion, chopped
1/4 cup all-purpose flour
2 cups milk
1/2 teaspoon salt
1/2 teaspoon Watkins Black Pepper
1/4 cup shredded Cheddar cheese

  1. Mix broth and soup in a large saucepan. Bring to a boil over medium-high heat. Add broccoli and return to a boil. Reduce heat and simmer, covered, for 5 minutes or until broccoli is tender.

  2. Meanwhile, heat butter in a medium skillet over medium heat; add onion. Saute until tender, about 5 minutes. Add flour. Cook, stirring, 1 minute longer.

  3. Gradually stir milk into skillet. Cook, stirring continually, until thickened, about 5 minutes. Add salt and pepper; mix well.

  4. Stir milk mixture into broccoli mixture. Simmer over low heat, stirring frequently, for about 5 minutes. Ladle soup into a serving bowl. Top with Cheddar.

Taco Soup

1 lb. ground beef
1 med onion, chopped
2 (16 oz.) cans chili beans
1 (16 oz.) can whole corn, undrained
1 (16 oz.) can chopped tomatoes, undrained
1 (15 oz.) can tomato sauce
1 1/2 c. water
1 ( 4 oz.) can chopped green chilies
3 T. Watkins Mexican Soup Base

Cook beef and onion until beef is browned; drain. Stir together with remaining ingredients and cook in a crock pot for 3-5 hours on low. Serve with tortilla strips, shredded cheddar cheese and sour cream.

Slow-Cooker Sloppy Joes
This is comfort food at its best, a classic family favorite that is slow-cooked to perfection. If you don't have a slow-cooker, see the Stove-Top Variation tip below.

3 pounds lean ground beef
1 medium onion, coarsely chopped
3 garlic cloves, minced
1 cup chopped red bell pepper
1 1/4 cups ketchup
5 tablespoons Worcestershire sauce
1/4 cup firmly packed light brown sugar
3 tablespoons vinegar
3 tablespoons prepared yellow mustard
2 teaspoons Watkins Chili Powder
8 to 10 hamburger buns

  1. In a large skillet over medium-high heat, cook the ground beef, onion and garlic, stirring, until the beef is browned and crumbly and the onion is tender. Drain excess fat from skillet.

  2. Combine the bell pepper, ketchup, Worcestershire sauce, brown sugar, vinegar, mustard and chili powder in the slow cooker. Stir in the beef mixture.

  3. Cover and cook on LOW for 6 to 8 hours. Spoon the beef mixture into the hamburger buns and serve. Serves 8-10.

Stove-Top Variation
To make this dish on the stove top, prepare as directed, then cover and cook the beef mixture on medium-low heat for 30 to 45 minutes, stirring occasionally.

White Chili

1 tablespoon olive oil
2 lbs boneless skinless chicken breasts, diced or 1 (3 lb) roasted chicken, chopped
1 onion, chopped
4 cloves garlic, minced
2 (14 1/2 ounce) cans coarsely chopped tomatoes
4 cups prepared Watkins Chicken Soup Base (3 tablespoons Watkins Chicken Soup Base mixed with 4 cups boiling water) or 2 (14 1/2 ounce) cans chicken broth
2 (4 ounce) cans chopped green chilies
6 tablespoons Watkins Mexican Soup and Seasoning Base
2 (11 ounce) cans cannellini or great northern beans, drained
3 tablespoons fresh lime juice
1/4 teaspoon Watkins Black Pepper

In a large pot cook diced chicken breasts in olive oil until done, remove from pan and set aside. Add onion and garlic, saute until tender. Stir in tomatoes, chicken broth, green chilies, and Mexican Soup and Seasoning Base. Bring to boil, reduce heat and simmer for 20 minutes. Add chicken and beans; cook until heated. Add lime juice and pepper.

TIP: Cook this a day ahead and refrigerate to let the seasonings blend.

Keeping a journal, regardless of our ultimate goal, helps us "see" more clearly and completely. Noting what you see in a journal makes your eyes active participants, requiring a visual judgment: What exactly am I seeing? How would I describe it - its color, texture, movement? What is it doing?

Start your journaling journey by assembling your supplies. A sturdy notebook and some sort of writing or drawing utensil is all you need to get started.
