Take Your Heart for a Walk

Wondering if your walking routine is robust enough to really help your heart? Wonder no more.

Research has revealed that walking can do as much to keep you out of heart trouble as more vigorous forms of exercise, such as running, playing tennis, or doing pretty much anything that makes you break a sweat. In one study, women who walked briskly for 2.5 hours per week reaped the same heart disease protection benefits as women who did more intense exercise for the same amount of time.

When it comes to walking and heart health, speed and frequency count. Yes, strolling is better than sitting, but you get the most benefits if you really step out -- ideally for 30 minutes a day, most days. Exercise lowers heart disease risk in many ways. Walkers and other regular exercisers experience less cardiovascular aging: they have fewer heart attacks and strokes, they have lower blood pressure, and they have higher blood levels of heart-protective HDL cholesterol. And the benefits add up fast. In as little as 90 days, doctors can actually measure the age-reducing effects.

"What do you say?" she asked.

Respectfully, the boy replied, "You're thin and beautiful."

The woman reached in her purse and gave her son the money.

Tips for Better Muffins

  • Take care not to overmix the batter. A lumpy batter will yield more tender muffins.
  • Standard muffin pans come in different sizes, which affect baking time. The muffin pans we recommend measure 2 1/2 inches across. Adjust baking time for size of pan.
  • If your muffin recipe does not fill all the cups in your pan, fill the empty cups with water. The muffins will bake more evenly.
  • Unless directed otherwise, muffins should go directly into the oven as soon as the batter is mixed.
  • Always check muffin for doneness 5-7 minutes before the end of recommended baking time to avoid overbaking. The miffins are done if a toothpick inserted near the center comes out clean.
  • Muffins are best served warm, fresh from the oven.

RECIPES

Pecan-Crusted Artichoke Spread

1 tablespoon butter
1/2 cup finely chopped onion
3 cloves garlic, minced
4 cups coarsely chopped fresh spinach
1 14-ounce can artichoke hearts, drained and chopped
1 8-ounce package reduced-fat cream cheese (Neufchatel), softened
1/2 cup fat-free mayonnaise dressing or salad dressing
2 cups shredded reduced-fat cheddar cheese (8 oz.)
1/2 cup grated Parmesan cheese (2 oz.)
2 dashes Watkins Jalapeno Hot Pepper Sauce
1/4 cup finely chopped pecans Baguette-style French bread slices, toasted

  1. Preheat oven to 350 degree F. In a medium saucepan, melt butter over medium-high heat. Add onion and garlic; cook for 3 minutes. Add spinach; cook for 3 to 5 minutes more or until onion is tender and spinach is cooked, stirring frequently. Remove from heat. Stir in chopped artichoke hearts, cream cheese, mayonnaise dressing, cheddar cheese, Parmesan cheese, and hot pepper sauce.
  2. Transfer to an ungreased 1-1/2-quart casserole. Bake for 40 minutes. Top with pecans; bake for 10 minutes more.
  3. Serve with toasted bread slices. Makes 4 cups spread (sixty-four 1-tablespoon servings).

Orange Blossom Muffins
These moist, tender muffins are fun to serve full-size or as mini muffins at luncheons and wedding and baby showers.

2 tablespoons plus 1/4 cup sugar, divided
4-1/2 teaspoons all-purpose flour
1/2 teaspoon Watkins Ground Cinnamon
1/4 teaspoon Watkins Ground Nutmeg
1 tablespoon cold butter or stick margarine
2 cups reduced-fat biscuit/baking mix
1 egg
1/2 cup orange juice
1/2 cup orange marmalade
2 tablespoons canola oil
1/4 cup chopped pecans

In a small bowl, combine 2 tablespoons sugar, flour, cinnamon and nutmeg; cut in butter until crumbly. Set aside for topping. Place the biscuit mix in a bowl. Combine the egg, orange juice, marmalade, oil and remaining sugar; stir into biscuit mix just until moistened. Fold in pecans. Coat muffin cups with nonstick cooking spray or use paper liners; fill two-thirds full with batter. Sprinkle with reserved crumb mixture. Bake at 400° for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm. Yield: 1 dozen.

Nutritional Analysis: One muffin equals 194 calories, 7 g fat (1 g saturated fat), 20 mg cholesterol, 255 mg sodium, 32 g carbohydrate, 1 g fiber, 2 g protein. Diabetic Exchanges: 1 starch, 1 fruit, 1 fat

Shrimp 'n' Shells Salad
Serve on a bed of fresh greens with muffins or toasted garlic bread for lunch or dinner. Serve as a salad at your next backyard barbecue.

8 ounces uncooked small pasta shells
1 cup fat-free mayonnaise
1/4 cup grated Parmesan cheese
1/4 cup 1% buttermilk
1/3 cup finely chopped onion
2 tablespoons minced fresh parsley
1-1/2 teaspoons minced fresh basil or 1/2 teaspoon Watkins Basil
1/2 teaspoon salt
1/2 teaspoon Watkins Black Pepper
1 pound cooked medium shrimp, peeled and deveined
1/4 cup frozen peas, thawed
1/4 cup diced pimientos
1 medium tomato, seeded and chopped
2 green onions, thinly sliced

Cook pasta according to package directions. Meanwhile, for dressing, combine the mayonnaise, Parmesan cheese, buttermilk, onion, parsley, basil, salt and pepper in a blender or food processor; cover and process until blended. Drain the pasta and rinse in cold water. In a large bowl, combine the pasta, shrimp, peas, pimientos, tomato and onions. Add dressing and toss to coat. Cover and refrigerate until chilled. Yield: 9 servings.

Nutrition Facts: 3/4 cup equals 191 calories, 3 g fat (1 g saturated fat), 81 mg cholesterol, 477 mg sodium, 26 g carbohydrate, 2 g fiber, 15 g protein. Diabetic Exchanges: 1-1/2 starch, 1 lean meat, 1/2 fat.

Honey Mustard Pork Tenderloin

Ingredients for each tenderloin

2 tbsp/30 ml Watkins Honey Mustard
1 tbsp/15 ml Watkins Honey Barbecue Sauce Concentrate
2 tsp/10 ml Watkins Mediterranean Black Pepper Grilling Rub or Jamaican Jerk Grilling Rub

Combine all into a paste; rub over pork tenderloin and marinate in refrigerator for 3 or more hours. Grill over medium fire until done to your liking, turning frequently.

Jamaican Jerk Turkey Wraps

2 cups broccoli coleslaw mix
1 medium tomato, seeded and chopped
3 tablespoons reduced-fat coleslaw dressing
1 jalapeno pepper, seeded and chopped
1 tablespoon prepared mustard
1-1/2 teaspoons Watkins Jamaican Jerk Herb and Spice Grilling Rub
2 turkey breast tenderloins (8 ounces each)
4 fat-free flour tortillas (8 inches)

In a large bowl, toss the coleslaw mix, tomato, coleslaw dressing, jalapeno and mustard; set aside.

Rub the seasoning over turkey tenderloins. Coat grill rack with nonstick cooking spray before starting the grill. Grill tenderloins, covered, over medium heat for 8-10 minutes on each side or until a meat thermometer reads 170°. Let stand for 5 minutes.

Grill tortillas, uncovered, over medium heat for 45-55 seconds on each side or until warmed.

Thinly slice turkey; place down the center of tortillas. Top with coleslaw mixture and roll up. Yield 4 servings.

Editor's Note: When cutting or seeding hot peppers, use rubber or plastic gloves to protect your hands. Avoid touching your face.

Nutrition Facts: 1 wrap equals 295 calories, 4 g fat (1 g saturated fat), 59 mg cholesterol, 658 mg sodium, 34 g carbohydrate, 3 g fiber, 31 g protein. Diabetic Exchanges: 3 very lean meat, 2 starch, 1 vegetable, 1/2 fat.

Tuna Artichoke Melts

1 can (6 ounces) light water-packed tuna, drained and flaked
1/3 cup coarsely chopped water-packed artichoke hearts
2 tablespoons fat-free mayonnaise
1/2 cup shredded reduced-fat Mexican cheese blend, divided
1/4 teaspoon Watkins Lemon-Pepper, salt-free
1/8 teaspoon Watkins Dried Oregano
2 English muffins, split and toasted

In a small bowl, combine the tuna, artichokes, mayonnaise, 1/4 cup cheese, lemon-pepper and oregano. Spread over English muffin halves. Place on a baking sheet. Broil 4-6 in. from the heat for 3-5 minutes or until heated through. Sprinkle with remaining cheese; broil 1-2 minutes longer or until cheese is melted. Yield: 2 servings.

Nutrition Facts: 2 open-faced sandwiches equals 335 calories, 8 g fat (4 g saturated fat), 47 mg cholesterol, 989 mg sodium, 31 g carbohydrate, 2 g fiber, 34 g protein. Diabetic Exchanges: 4 very lean meat, 2 starch, 1 fat.

Toffee Crunch Dessert

1-1/2 cups cold fat-free milk
1 package (1 ounce) sugar-free instant vanilla pudding mix
2 cartons (8 ounces each) frozen fat-free whipped topping, thawed
1 prepared angel food cake (16 ounces), cubed
4 Butterfinger candy bars (2.1 ounces each), crushed

In a large bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. Stir in 2 cups whipped topping. Fold in the remaining whipped topping.

In a 13-in. x 9-in. x 2-in. dish coated with nonstick cooking spray, layer half of the cake cubes, pudding mixture and crushed candy bars. Repeat layers. Cover and refrigerate for at least 2 hours before serving. Yield 15 servings.

Nutrition Facts: 3/4 cup equals 219 calories, 3 g fat (2 g saturated fat), 1 mg cholesterol, 366 mg sodium, 41 g carbohydrate, 1 g fiber, 5 g protein. Diabetic Exchanges: 2-1/2 starch, 1/2 fat.

Berry Nectarine Buckle

Topping
1/3 cup all-purpose flour
1/3 cup packed brown sugar
1 teaspoon Watkins Ground Cinnamon
3 tablespoons cold butter

Batter
6 tablespoons butter, softened
3/4 cup plus 1 tablespoon sugar, divided
2 eggs
1-1/2 teaspoons Watkins Vanilla Extract
2-1/4 cups all-purpose flour
2-1/2 teaspoons Watkins Baking Powder
1/2 teaspoon salt
1/2 cup fat-free milk
1 cup fresh blueberries
1 pound medium nectarines, peeled, sliced and patted dry or 1 package (16 ounces) frozen unsweetened sliced peaches, thawed and patted dry
1/2 cup fresh raspberries
1/2 cup fresh blackberries

For topping, in a small bowl, combine the flour, brown sugar and cinnamon; cut in butter until crumbly. Set aside.

In a large mixing bowl, cream the butter and 3/4 cup sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder and salt; add to creamed mixture alternately with milk. Set aside 3/4 cup batter. Fold blueberries into remaining batter.

Spoon into a 13-in. x 9-in. x 2-in. baking dish coated with nonstick cooking spray. Arrange nectarines on top; sprinkle with remaining sugar. Drop remaining batter by teaspoonfuls over nectarines. Sprinkle with raspberries, blackberries and reserved topping.

Bake at 350° for 35-40 minutes or until a toothpick inserted near the center comes out clean. Serve warm. Yield 20 servings.

Grosbeaks

The Black-headed and Rose-breasted Grosbeaks have unusual diets for birds with such a big seed-eating beak. Throughout most of the year, over half their diet is made up of insects.

Their huge beaks allow them to eat large grasshoppers, crickets and other insects that have tough exoskeletons. Learn more about grosbeaks.

Fun Facts About Evening Grosbeaks

Other birds like to eat wild cherries, but only Evening Grosbeaks target the pits. The slippery seeds are held firmly with special pads on the “gross beak” and are simply crushed. So favored are cherry pits that Evening Grosbeaks sometimes seek out the pits voided by American Robins.

Evening Grosbeaks manipulate cherries in their beak to remove the outer skin and flesh, the remaining seed is then swallowed after it is cracked open with their beak.

Evening Grosbeaks can break open food items that require up to 125 pounds of force to fracture apart in testing devices.

As with many finches whose diet is primarily vegetarian, Evening Grosbeaks are attracted to natural salt and mineral sources.

The Evening Grosbeak is an irruptive migrant that makes irregular appearances at winter feeding stations throughout much of United States.

The Evening Grosbeak was not commonly found east of the Rocky Mountains before the 1850’s. Winter irruptions now occur in all of the 48 contiguous states. This expansion may be attributed to widespread planting of box elder trees in landscapes across the east. Its seeds persist on the tree throughout the winter and provided flocks with a reliable source of food.

The Evening Grosbeak was named in 1825 based on erroneous accounts that they became vocal and active only “at the approach of night.” This erroneous belief persisted for years, and the name is still a misnomer.

Evening Grosbeaks seem to delight in snipping off the twigs of Sugar Maple trees and sipping the sweet sap.
