Welcome to another issue of Around the Kitchen Table!

Now that spring has finally arrived I've been busy planting flowers, fresh herbs, and tomatoes in my backyard. We have several large trees and the roots seem to be taking over the flower beds and lawn. All those roots makes it very difficult to dig up the soil to plant so I use pots and hanging baskets for most of my flowers. I've also been enjoying the activity of the birds and squirrels.

LAUGH WITH ME

To help a busy mother get away for a two-week vacation, my sister agreed to stay with the woman's three children. On the first evening, she cooked one of their favorite meals. To the youngsters' delight, dinner after dinner, she "guessed" what they liked. When my sister returned home, we asked her what the secret of her success was. "Each afternoon I would flip through the cookbook until I found a page that was ripped, smudged and food-splattered," she explained. "Then I would make that recipe. It worked every time!"

COOKING TIPS

Cleaning Mushrooms
Since they are very absorbent, clean mushrooms with a damp cloth or brush instead of washing them under running water.

Storing Mushrooms
Store unwashed mushrooms in the refrigerator for up to 3 days in a cardboard carton or paper bag.

Baking Soda and Baking Powder
Baking soda will live to see your four-year-old get married. Baking powder has a shelf life of about a year. What’s the difference? Both are leavening agents, but baking powder contains an acid that allows it to react in recipes as soon as it gets wet, giving off the carbon dioxide that makes a cake rise. Baking soda has no acid; it relies on acids in the batter to activate it. If baking powder gets wet or is stored in a humid environment, its potency is diminished. To find out if your baking powder is still good, put some in a glass of water. If it bubbles, bake away. If not, head to the store.

Key Limes
Key limes are small limes grown in south Florida that are sometimes quite expensive and often difficult to find. You can purchase bottled key lime juice in most gourmet markets.

HEALTH TIP - Vision Myths

MYTH: If I have poor eyesight, my child will inherit that trait.

FACT: Unfortunately, this myth is sometimes true. If you need glasses for good vision or have developed an eye condition (such as cataracts), your child may inherit that same trait. Discuss your family's visual history with your child's doctor.

MYTH: Children should eat carrots to improve their vision.

FACT: Although it's true that carrots are rich in vitamin A, which is essential for sight, many other foods (asparagus, apricots, nectarines, and milk, for example) also contain vitamin A. So, a well-balanced diet can provide the vitamin A needed for good vision.

RECIPES

Golden Chicken Fingers
These chicken fingers can be served around the clock - lunch, dinner or late night snack. Double the recipe for your next party.

3 cups bread crumbs
3/4 cup grated Parmesan cheese
1 tablespoon Watkins Garlic Powder
1 tablespoon Watkins Basil
1 teaspoon Watkins Oregano
1/2 teaspoon Watkins Paprika
1/4 teaspoon Watkins Black Pepper
2 eggs
2 tablespoons olive oil
1 tablespoon water
4 skinless, boneless chicken breasts (5 ounces each)

  1. Preheat oven to 425 degrees F. Cover a large baking sheet with aluminum foil and spray with cooking spray.
  2. In a shallow dish, add bread crumbs, Parmesan, garlic powder, basil, oregano, paprika and pepper; mix well.
  3. In a small bowl, beat eggs, olive oil and water. Cut each chicken breast into 6 strips. Dip each piece into egg mixture, allowing excess to drip back into bowl. Dredge chicken in crumb mixture, turning to coat. Place on prepared baking sheet.
  4. Bake chicken fingers, turning half way through cooking, until golden brown, about 15 minutes. Serve immediately. Serves 4.

Creamy Dill-Turkey Wrap
Ingredients for one wrap

1 whole wheat tortilla (6 inch)
1 Tbsp. Miracle Whip Light Dressing
1/4 tsp. Watkins Dill
1 slice American Cheese
2 thin tomato slices
3 thin cucumber slices
6 slices Shaved Smoked Turkey Breast

Mix dill and dressing. Spread on tortilla. Top with remaining ingredients; roll up and eat. Makes one serving.

Chicken and Pasta Salad

8 oz. pkg. vermicelli
1 1/2 c. French Salad Dressing
10 fresh mushrooms, sliced
1 c. broccoli floweretes, blanched slightly
10 cherry tomatoes, cut in half
2 c. cooked, cubed chicken
1/3 c. fresh basil or 1 1/2 tsp. Watkins Basil
1/3 c. pine nuts, toasted or 1/3 c. sunflower seeds
Salt and Watkins Black Pepper to taste

Cook pasta, drain, and add 1/2 cup dressing and toss. Cool in refrigerator. Place remaining dressing in another bowl and add broccoli, mushrooms and tomatoes. Stir and chill. When ready to serve, add chicken to pasta and toss. Then add vegetables, basil and nuts. Toss and enjoy.

Key Lime Pie
This sweet and tangy pie will cool down a hot spring day.

4 egg yolks
1 (14-ounce) can condensed milk
2/3 cup fresh lime juice
1 (9-inch) graham cracker piecrust
1/2 cup whipping cream
1/2 teaspoon Watkins Vanilla
2 tablespoons sugar
1 lime, thinly sliced

  1. Combine egg yolks and condensed milk in a heavy saucepan over medium heat.
  2. Add lime juice to saucepan. Cook, stirring continually, until mixture reaches 160 degrees F or until mixture is thick enough to coat the back of a spoon, about 8 minutes.
  3. Pour filling into piecrust. Chill pie in freezer until firm.
  4. Beat cream, vanilla, and sugar in a chilled bowl with an electric mixer set at high speed until soft peaks form, about 5 minutes. Slice pie. Garnish pie with whipped cream and lime slices. Serves 6.

Peanut Butter Filled Cookies

1/2 cup (1 stick) butter or margarine, softened
3/4 cup sugar
1/3 cup creamy or crunchy peanut butter
1 egg
1/2 teaspoon Watkins Vanilla Extract
1-1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1-1/3 cups (8-oz. pkg.) Reese's Milk Chocolate Baking Pieces Filled with Peanut Butter Creme

  1. Heat oven to 350 degrees F.
  2. Beat butter, sugar and peanut butter in large bowl until creamy. Add egg and vanilla; beat well. Stir together flour, baking soda and salt; add to butter mixture, blending well. Stir in baking pieces. Drop by heaping teaspoons onto ungreased cookie sheet.
  3. Bake 12 to 14 minutes or until light golden brown around the edges. Cool 1 minute; remove from cookie sheet to wire rack. Cool completely. About 2-1/2 dozen cookies.

BIRD WATCHING

I've been keeping an eye on the baby chickadee nest box. The adult birds land on a branch nearby and then swoop into the opening carrying what looks like, from a distance, worms and grubs. They are so quick and never collide with the side of the nest box. I've tried to snap a picture of them entering or leaving but they are too fast for me!

I was so pleased that the chickadees decided to raise their young in our backyard that I put up another nest box for chickadees. Within minutes a chickadee found the new nest box and was peeking in the opening and chirping to another chickadee. I'm always amazed at the intelligence of animals.

The other nest box is for nuthatches, titmice, or downy woodpeckers.The specific design of the box meets the requirements to entice all three species of birds. I'm hoping a nuthatch or titmouse will lay her eggs there. Although downey woodpeckers and acorn woodpeckers visit our neighborhood I'd rather not have too many around to drill holes in our house. I don't mind if they eat at the suet feeder or peck insects from the trees but don't peck holes in the siding of our house.
