Three Features to Look For in a Pair of Sunglasses

Sunglasses do more than lend you an air of mystery. They help prevent eye problems such as cataracts and macular degeneration.

Good shades don't have to be worthy of a celebrity or have a huge price tag. Here are the "specs" to look for:

  1. Sunglasses should wrap around your temples to help prevent rays from sneaking in through the sides.
  2. Choose sunglasses that provide at least 99% UV protection. If the label says "UV protection up to 400 nm," they have enough protection.
  3. Opt for lenses with a neutral tint, such as gray, brown, or green.

Besides wearing shades, you can add more protection by wearing a hat or cap.

COOKING TIP

Tips for potato salads

  • To cook potatoes for salads, scrub and wash potatoes; remove any eyes. Place whole unpeeled potatoes in a large kettle. Cover with cold water; add 1-2 teaspoons salt for each quart of water. Cover and boil until fork-tender yet firm. (Cooking times vary greatly with size and variety - small potatoes cook in 15 minutes while larger ones may need 30 minutes.) Drain potatoes; alllow to cool. Use a paring knife to peel or leave peelings on. Slice or cut potatoes into chunks.

  • Red potatoes are especially good for salads because they don't absorb excess dressing or break apart as easily as other varieties. And because of their thin edible skin, the don't need to be peeled.

RECIPES

Strawberry Stuffed French Toast

8 cups thinly sliced fresh strawberries
1 cup sugar
1 T. lemon juice
4 oz. fat free cream cheese, softened
3 T. pecans, chopped
1 loaf French bread
6 eggs
1/3 cup skim milk
1/4 t. cinnamon
1/4 t. salt
1/2 t. vanilla
Watkins Cooking Spray for frying

Mix sliced strawberries, sugar and lemon juice. Microwave on high for 6 minutes, stirring every 2 minutes. With slotted spoon, take out 1/4 cup reserved strawberries, cream cheese and pecans. Slice bread 2 inches thick. Slice a pocket in center of each piece. spread about 1 tablespoon of the cream cheese mixture inside each pocket. Mix eggs, milk, cinnamon, salt and vanilla. Dip bread slices in the mixture and let soak. Spray pan with cooking spray and fry until both sides are golden brown. Serve with warm strawberry syrup mixture. Makes 6 servings.

Strawberry Freezer Jam
This easy Freezer Jam developed by Kraft Kitchens, avoids the mess and fuss of canning.

Clean and remove hull from firm, ripe strawberries. Mash with potato masher.

Measure 1- 3/4 cups crushed strawberries into a second bowl. Stir in 4 cups sugar and let stand 10 minutes.

Stir in 2 tablespoons lemon juice and 1 pouch Certo Liquid Pectin. Continue stirring a full 3 minutes.

Spoon into freezer containers or pint or half pint jars. Seal and freeze up to 1 year.

Strawberry Pie

1 ( 3 ounce ) package strawberry-flavored gelatin
1 cup boiling water
1/2 cup cold water
1 ( 8 ounce ) container frozen whipped topping, thawed
1 cup fresh sliced strawberries
1 ( 9 inch ) graham cracker crust
Additional sliced strawberries

Dissolve gelatin in boiling water; add cold water, stirring well. Chill until the consistency of unbeaten egg white. Fold in whipped topping and 1 cup strawberries. Spoon into graham cracker crust. Chill at least 4 hours. Arrange additional strawberry slices on top of pie.

Strawberry Bread

3 cups flour
1 tsp. baking soda
1 tsp. Watkins Ground Cinnamon
2 cups sugar
1 tsp. salt
3 cups mashed strawberries
1-1/4 cup oil
4 eggs, well beaten
1/2 cup strawberry juice, drained from mashed strawberries
8 oz. softened cream cheese

Mix first five ingredients together. Make a well in centre of mixture. Stir in strawberries, oil and eggs. Pour into two greased 9x5" loaf pans. Bake at 350 degrees F for 50 to 60 minutes. Cool on wire rack. For topping, blend reserved strawberry juice with cream cheese. Drizzle over cooled loaves.

Strawberry Muffins

2 1/2 cups all-purpose flour
2/3 cup sugar
1 tsp baking soda
3/4 tsp salt
1 1/2 cup fresh strawberries, sliced
1 cup buttermilk
1/3 cup margarine, melted
1 1/4 tsp Watkins Vanilla Extract
1 egg, lightly beaten
1 egg white, lightly beaten
Watkins Cooking Spray
1 1/2 tbsp sugar

Combine flour, sugar, baking soda, salt in a large bowl. Add fresh strawberries; stir well, and make a well in center of mixture. Combine buttermilk, margarine, vanilla, egg, egg white; stir well. Add to dry ingredients, stirring just until moistened.

Divide batter evenly among 18 muffin cups coated with cooking spray; sprinkle 1-1/2 tbsp sugar evenly over muffins. Bake at 350 for 25 minutes or until toothpick inserted in center comes out clean. Remove from pans immediately; let cool on a wire rack.

Strawberry Blossoms

12 large, fresh strawberries, rinsed
1 - 3 oz pkg cream cheese, softened
2 tbsp powdered sugar
1 tbsp sour cream

Remove stems from strawberries to form a flat base. Place berries on cutting surface, pointed end facing up. With a sharp knife, carefully slice each berry in half vertically to within a 1/4 inch of base. Cut each half into three wedges to form 6 petals. (Don't slice through the base.) Pull petals apart slightly.

In a small bowl, combine cream cheese, powdered sugar and sour cream; beat until light and fluffy. With a pastry bag and star tip or small spoon, fill strawberries with cream cheese mixture.

Note: A zipper sandwich bag can be used instead of a pastry bag by filling with cream cheese mixture and squeezing out excess air before sealing. Carefully cut one corner off of the bottom of the bag.

Outrageous Chicken Salad
Serve this outrageous salad on a bed of mixed greens with homemade bread, iced tea and fresh fruit salad.

1/2 cup mayonnaise
1/2 teaspoon salt
3/4 teaspoon Watkins Poultry Seasoning
1/4 teaspoon Onion Granules
1/4 teaspoon Watkins Garlic Granules
1/4 teaspoon Watkins Granulated Black Pepper
1 tablespoon lemon juice
3 cups diced, cooked chicken breast meat
1/2 cup finely chopped celery
1/2 cup chopped green onions
1 (8 ounce) can water chestnuts, drained and chopped
1 1/2 cups diced Swiss cheese
1 1/2 cups halved green grapes

In a medium bowl, whisk together the mayonnaise, salt, poultry seasoning, onion granules, garlic granules, pepper, and lemon juice.

In a large bowl, toss together the chicken, celery, green onions, water chestnuts, Swiss cheese, and grapes. Add the mayonnaise mixture, and stir to coat. Chill until serving.

Croissant French Toast

2 eggs
1/2 cup milk
1/2 teaspoon Watkins Ground Cinnamon
1 teaspoon Watkins Vanilla
1 tablespoon sugar
2 large croissant, split horizontally

In a bowl wisk the eggs, milk, cinnamon, vanilla, and sugar until combined. Soak croissant slices in mixture. Heat frying pan to low-medium heat and spray lightly with non-stick cooking spray. Lightly brown soaked croissants in frying pan, flipping after first side is golden. Cook slowly so that the mixture cooks throughout without needing to flatten the croissants. Makes two servings.

Serve with powered sugar or syrup and two slices bacon or sausage.

Tarragon-Mustard Potato Salad

6 medium potatoes, cut in quarters
2/3 cup/160 ml mayonnaise
3 tbsp/45 ml apple cider vinegar
1 tbsp/15 ml Watkins Horseradish Mustard
2 1/2 tsp/12.5 ml Watkins Potato Salad Seasoning
1/2 tsp/2.5 ml Watkins Tarragon
3 green onions, sliced

Boil potatoes in salted water until just tender.

Meanwhile, combine remaining ingredients except green onions. Toss potatoes with dressing and green onions while warm. Refrigerate until serving.

Live Eagles's Nest Web Cam

The eagle eggs have hatched! Two eaglets in nest!
An eagle pair in Maine tend to their nest and newly hatched young eagles! You can get an intimate view into their massive nest with the live web camera. The nest is 6 feet wide and 15 feet high, about 30 feet up near the top of a white pine tree that overlooks the Atlantic Ocean. The eggs were laid on March 6. Bald eagles normally incubate their eggs for about 35 days. The eggs hatched on April 10.

Last week I saw two little eaglet heads poking up out of the nest! One of the parent eagles was feeding them. Today when I looked both adult eagles were gone and the nest looked empty. The babies must have been sleeping because a few minutes later a parent eagle was feeding them. Live Eagle Web Cam
