LAUGH A LITTLE
An older gentleman is on a golf green about to putt out, and a
foursome is behind him, waiting for him to finish. Suddenly, on
the road alongside the golf course, a shiny black hearse pulls
into view, followed by an entourage of some fifty vehicles.
Immediately, the man takes off his hat, places it over his
heart, and stands at a respectful silence until all fifty cars
have slowly passed. He then puts on his hat, taps his ball into
the hole, and walks to the next tee.
The members of the foursome are impressed, and, when they catch
up to him, say that it has been some time since they have
witnessed such a display of respect and dignity.
To which the older gentleman replies: "It's the least I could do.
On Monday we would have been married fifty years!"

I have been using my bread machine for a year or so. It can be so frustrating when you are looking
forward to a lovely loaf of bread only to get a rock the size of a grapefruit or a mini-loaf.
I have two tips:
Start with warm, not hot, ingredients.

- I have a suggestion for your newsletter. In the recipe section it is sometimes hard to
distinguish where one recipe ends and the next begins because of it all being the same color. Some
suggestions for this might be to use alternating colors for the recipes, a dividing line between them,

Self-Care Tips for Your Feet
Are you taking good care of your feet? Most people log thousands of steps every day,
so spending a little extra time on the care and grooming of your feet seems like a smart way to
keep this especially important part of your body healthy. With proper foot care, often you can
prevent foot problems before they start, or help prevent a treated foot problem from returning.
- Care and Grooming
Proper cleansing and grooming techniques can help reduce your risk of infections. Wash feet daily
and be sure to dry them thoroughly. Moist skin is a welcome mat to fungus or other parasites.
If feet sweat while exercising or working, change your socks more than once daily.
Finally, be sure to trim your nails carefully, cutting straight across and not too close to the nail
bed. Use clippers especially designed for this purpose.
- Shoes and Socks
Properly fitting shoes are a must for good foot health. Be sure to have your feet measured
regularly; they tend to grow a bit with age. Do not wear the same shoes every day, as this does
not allow the shoe time to dry out between uses. Wear socks that absorb moisture, such as cotton
or wool socks; or choose socks made of moisture wicking fabric; and always wash socks
before wearing them again. When you exercise, be sure to wear athletic shoes designed for your
sport and don't wear the shoes beyond their useful life.
- Expert Care
After you have done all you can to care for your feet, remember to get expert care, too.
See your healthcare provider at the first sign of injury or infection. Also, don't ignore foot pain.
It is not a normal part of growing older. Treating problems early could mean a shorter, easier
course of treatment or could help you avoid more serious complications down the road.
Keep Feet Fit with Exercise
Your feet play a major role in your quest to keep your body healthy through exercise.
But did you ever think that regular exercise might be good for your feet, too?
It's true. Just like other parts of the body, feet benefit from regular exercise. However, some
high-impact activities can be rough on feet. The American Podiatric Medical Association recommends
walking as one of the best forms of exercise for feet. Walking helps to exercise the muscles of the
feet but is gentle on the feet, too.
To begin your walking program, start out slowly, especially if you are exercising for the first time.
Moderation is the key to getting your walking program off on the right foot. Over the course of
several weeks, gradually build your speed and distance until you reach your target.
(Most people should exercise for at least 30 minutes five days a week.)
Here are a few walking tips to protect your feet during your workout and also ensure that you are
following good walking form:
- Land on the heel of your foot and roll forward, pushing off on the ball of your foot.
- Keep your head up, your stomach tucked in, and your back straight.
- Swing your arms at your sides to aid momentum and balance.
- Never walk barefoot.
Proper footwear is a must for walking or any other physical activity, so be sure to get the
appropriate gear before you start your exercise program.
Get an Expert's Opinion
Some people think that a certain amount of pain in one's feet is normal. However, contrary to
popular belief, foot pain is not normal. If you experience pain in your feet, toes, or ankles, you
should make an appointment with your healthcare provider or podiatrist today.
Getting a diagnosis and treatment for painful foot conditions can help prevent a problem from
progressing into a more serious condition. Some foot problems, when allowed to progress, can
end up affecting your gait, your musculoskeletal system, or your overall health.
Routine Care
- Having a doctor check your feet should be a regular part of routine healthcare.
Your doctor can examine the shape and condition of your feet and nails and use this information to
rule out or diagnose many different medical conditions.
- Be sure to get all of your questions answered when you visit your doctor with any special
concerns. Bring a pad of paper and a pen and jot down important points. You also can bring a list
of questions you would like to ask your doctor. Also, take notes on your foot symptoms and bring
this information with you to your doctor's office. This may help speed diagnosis and treatment
planning.
- While you are at your doctor's office, be sure to ask about any signs and symptoms that you
should be watching for when examining your own feet at home.
Common Foot Problems
Do you know how to look for the signs and symptoms of different foot ailments? Being familiar
with the signs of foot problems can help you get a head start on proper treatment. Here is a quick
primer on the symptoms for some common conditions, as well as information on available
treatment options.
- Athlete's foot
Symptoms may include itching, burning, or stinging between the toes or on the soles; blisters;
cracking, peeling, or thickened skin; odor; or thick, crumbly ragged nails. Mild conditions can be
treated with topical over-the-counter medications. Prescription medications are available for severe
cases.
- Toenail fungal infection
Symptoms may include thickened, brittle, crumbly, ragged, distorted, dull, or discolored
(yellow, green, brown, or black) nails. Topical over-the-counter treatments are available;
however, they are not reliably effective. Effective oral medications are available with a doctor's
prescription.
- Ingrown toenails
Signs of an ingrown toenail include pain, tenderness, redness, swelling, or infected tissue along
the side of the nail. Most ingrown toenails grow out on their own; however, a doctor can treat
extremely painful cases by trimming or removing portions of the nail.
- Plantar warts
Symptoms include growths on the sole of the foot that may look like calluses. These growths may
appear to grow inward. Topical treatment with salicylic acid is usually successful. However,
medication injections, cryotherapy, and surgery also are available.
- Corns/Calluses
Signs of corns or calluses include thickened skin and pain or tenderness under dead or yellowed skin.
After self-care options such as wearing comfortable shoes, using protective pads, or thinning
thickened skin with a pumice stone have been tried, your doctor can reduce the corn or callus with
a scalpel.
- Bunions
Signs: Misaligned big toe that creates a bulging bump at the base of the big toe, accompanied by
soreness, redness, or swelling. Often caused by wearing tight or improperly fitting shoes.
Treatments: Surgery is often recommended to correct the problem. Corrective footwear can
relieve pain.
- Hammertoes
Signs: Toes that have a bent, claw-like appearance; may be accompanied by corns, calluses, or
pain.
Treatments: Roomier footwear or orthotic foot padding may relieve pain. Surgery may be
recommended in severe cases.
- Flat feet
Signs: Heel tilts away from midline of body; foot pain when walking, running, standing.
Treatments: Orthotic insoles or arch supports can relieve pain.
- High arches
Signs: Excessive elevation of heel-to-toe arch; foot pain associated with walking, sitting, standing.
Treatments: Corrective shoes or inserts may help relieve pain. Surgery may be necessary for severe cases.
- Heel pain
Signs: Pain in the heel can be caused by plantar fascitis; bursitis; inflammation or injury of the
Achilles tendon; or a bony spur.
Treatments: Treatments range from rest to over-the-counter pain relief to anti-inflammatory
medications depending on diagnosis.
Foot pain also can be the result of underlying medical problems, such as arthritis, nerve or
circulatory disorders, and stress fractures. If you experience chronic foot pain, see your healthcare
provider soon.
If you suspect you have a foot ailment, remember that self-treatment isn't always advisable and
could make a problem worse. See a healthcare specialist for diagnosis and advice on treatments.
Are your feet ready for sandals and barefoot walks on the beach? Are your heals dry or cracked from
the dry winter air? Are your feet a little rough around the edges? If you want to feel good about
baring your soles and your toes get them ready for warm weather with a few simple tips.

To rid your heals of rough dry skin or cracks, first bathe or soak your feet in warm water. The warm
water will moisten and soften the dry cracked skin.
- If you use a pumice stone rub gently so you don't make your heals sore. I prefer not to use a
pumice stone. After bathing I gently rub my heals with the tips of my fingers and fingernails.
This removes the moistened dry skin.
- Liberally apply Vasoline or Watkins Petro-Carbo Salve to your heals and toes.
- Then put on cotton socks. You can do this anytime of day but I usually follow this routine at
bedtime. While you are sleeping your feet are healing and softening. The Petro-Carbo Salve works to
heal your cracked heals.
- After following this routine for a week or two your feet, including toes and heals, will be soft and
look beautiful for sandals and summer barefoot fun. Women are particularly conscious of there feet
but this routine is great for men's feet too!
- Now that you are ready to bare your feet, keep them looking soft and moist with Watkins

In previous issues we have discussed the health benefits of the following "healthy foods:"
broccoli
oranges
beans
yogurt
whole grains
wild salmon
Our "healthy food" for this issue is spinach.
Spinach is a leafy vegetable. It prefers cool climates.
Studies show a higher intake of spinach helps lower the rate of cardiovascular disease, several
cancers - including colon, lung, skin, ovarian, and breast cancer - cataracts and age-related
macular degeneration. Spinach is a rich source of Vitamin A, Vitamin E and several vital antioxidants.
On the negative side, spinach is also high in oxalates, which can contribute to gout.
Spinach is the richest natural source of folic acid, and this vitamin was first purified from spinach.
Healthy individuals can safely consume such foods in moderation, but those with kidney disorders,
gout, or rheumatoid arthritis are typically advised to avoid foods high in oxalic acid or oxalates.
Foods that contain significant quantities of oxalic acid include cocoa, chocolate, most nuts,
most berries, rhubarb, beans, and beets.
Eating a wide variety of foods for a balanced diet protects against any negative effects or health
problems.
Purchasing Spinach:
Choose spinach that has vibrant deep green leaves and stems with no signs of yellowing.
The leaves should look fresh and tender, and not be wilted or bruised. Avoid those that have a
slimy coating as this is an indication of decay.
Store fresh spinach loosely packed in a plastic bag in the refrigerator crisper where it will keep fresh
for about four days. Do not wash it before storing as the moisture will cause it to spoil. Spinach can
be frozen after being blanched for two minutes.
Washing Spinach:
Spinach, whether bunched or prepackaged, should be washed very well since the leaves and stems
tend to collect sand and soil. Before washing, trim off the roots and separate the leaves. Place the
spinach in a sink or large bowl of cool water and swish the leaves around with your hands as this will allow
any dirt to become dislodged. Remove the leaves from the water, empty the bowl, refill with clean
water and repeat this process until no dirt remains in the water. Rinse with cool water. Cut away any
overly thick stems to ensure for more even cooking. If you plan to use the spinach in a salad,
dry it in either a salad spinner, shaking it in a colander, or by blotting with paper towels. If
you are going to cook it, you do not need to worry about drying it well as the remaining water will
serve to help it cook.
Quick Serving Ideas:
- Add layers of steamed spinach to your next lasagna recipe.
- Toss steamed spinach with pressed garlic, fresh lemon juice and olive oil. Sprinkle with a little
Parmesan cheese.
- Use spinach leaves in sandwiches and wraps in place of lettuce.
- Cook spinach until tender in a little water; remember 1 cup cooked spinach is equal to 1 pound fresh
spinach. Add salt and pepper to taste and sprinkle with vinegar. Serve as a side dish.
Spinach Salad with Lime Poppy Seed Dressing
1 bunch clean spinach leaves
5 or 6 green onions, thinly sliced
1 c. bean sprouts
1 (8 oz.) can mandarin oranges, drained
1/4 c. slivered almonds
Lime poppy seed dressing
Combine salad ingredients.
Whisk together the following:
1/3 cup honey
1/4 cup vegetable oil
1/4 teaspoon finely shredded lime peel
1 1/2 teaspoon Watkins Poppy Seeds
1/4 teaspoon salt
1/8 teaspoon Watkins Ground Nutmeg
Pour over salad. Toss to coat. Serve immediately.
Favorite Spinach Salad
Dressing
1/2 c. brown sugar
1/3 c. vinegar
1 tbsp. Worcestershire sauce
1/2 c. salad oil
1/3 c. ketchup
1 teaspoon Watkins Onion Flakes
1/2 teaspoon Watkins Garlic Granules
Salad
2 qts. fresh spinach leaves, torn
1 can (16 oz.) bean sprouts, drained or 2 c. fresh bean sprouts
1 can (8 oz.) sliced water chestnuts, drained
4 hard cooked eggs, peeled and diced
6 slices bacon, fried and crumbled
1 small onion, thinly sliced rings
In bottle or jar, combine all dressing ingredients. Shake well to mix. Chill until ready to use; shake
well before using. In large salad bowl, toss all salad ingredients. Just before serving, pour dressing
over salad and toss. 8 servings.
Mediterranean Rice Salad
1 c. long-grain brown rice
1 tbsp. olive oil
4 med. zucchini, cut into 1/4" slices
1-2 tbsp. water
1 tsp. Watkins Basil
1 tsp. Watkins Oregano
4 c. lettuce (iceberg, butter, red leaf or any combination)
2 c. spinach
1/2 c. pimento-stuffed green olives, sliced
Make garlic herb dressing:
2 teaspoons Watkins Garlic and Spice Salad Dressing Blend
3/4 cup Watkins Grapeseed Oil
1/4 cup vinegar
Shake well before serving.
Prepare the rice, fluff; set aside. Prepare the zucchini. Heat oil in wok or large skillet. Add zucchini
slices and toss in oil. Sprinkle with water; continue tossing until zucchini turns a bright color.
Add basil and oregano. Toss gently and set aside.
Assemble the salad. Wash and dry lettuce. Break into bite-size pieces. Combine in large bowl with
spinach. Add rice, zucchini and olives. Toss well to combine all flavors.
Serve with garlic herb dressing.
Spinach Salad with Honey Poppy Seed Dressing
2 c. spinach, cleaned, stemmed & torn into bite-size pieces
6 mushrooms, cleaned & thickly sliced
1 (5 oz.) can mandarin oranges, drained
1/2 c. honey
1/2 tsp. Watkins Dry Mustard
1/2 tsp. Watkins Paprika
1/2 tsp. Watkins Poppy Seeds
2 1/2 tsp. vinegar
1/2 tsp. lemon juice
1/2 c. olive oil
Divide spinach between two salad plates. Arrange mushrooms and oranges on top. Combine honey,
mustard, paprika, poppy seeds, vinegar and lemon juice in blender container. Slowly add oil while
blending until mixture is emulsified. Drizzle 2 tablespoons of dressing over each salad just before
serving. (Remaining dressing will keep, refrigerated, for up to a week.) Makes 2 servings.
Cirtus Spinach Salad
Fresh oranges and orange juice give this spinach salad a delightful twist.
2 cups fresh spinach leaves
1/2 small red onion, thinly sliced
1 fresh navel orange, peeled and separated into sections
or 1/2 small can mandarin oranges
2 tablespoons toasted pine nuts
Dressing
2 tablespoons orange juice
2 tablsepoons white wine vinegar
3 tablespoons olive oil
2 teaspoons honey
1 tablespoon chopped fresh cilantro or 1 teaspoon Watkins Cilantro
2 teaspoons dijon mustard
salt to taste
Watkins Fresh Ground Pepper or Granulated Pepper to taste
Serves 2
Toss spinach, onion, oranges and pine nuts together. Whisk together all dressing ingredients.
Pour over salad and serve.
Vegetable Spinach Dip
1 package (10 oz/280 mL) frozen chopped spinach
thawed and squeezed dry
1-1/2 cups/375 mL sour cream
1 cup/250 mL mayonnaise
1/4 cup/125 mL Watkins Garden Vegetable Snack and Dip Seasoning
2 tsp/10 mL Watkins Parsley
1 tsp/5 mL Watkins Garlic Granules
1/3 cup/80 mL chopped water chestnuts
1/4 cup/60 mL chopped green onion
In medium bowl, stir together all ingredients. Cover and refrigerate to blend flavors. Serve with crackers,
rye bread rounds or fresh vegetables, or serve in a hollowed-out bread bowl with bread cubes.
Makes 3 cups/750 mL, 2 tbsp/30 mL per serving.

1 cup sour cream

Mix all ingredients; cover. Refrigerate several hours or until chilled.
Serve with assorted crackers, breads and breadsticks.
Hot Mexican Spinach Dip - Serve for Cinco de Mayo
Take your taste buds on a wild joyride to old Mexico with this hot, creamy dip. This blend of
spinach, salsa and Monterey Jack cheese tastes great with tortilla chips.
1 (16 ounce) jar salsa
1 (10 ounce) package frozen chopped spinach, thawed and drained
2 cups shredded Monterey Jack cheese
1 (8 ounce) package cream cheese, diced and softened
1 cup evaporated milk
1 (2.25 ounce) can chopped black olives, drained
1 tablespoon red wine vinegar
1 teaspoon Watkins Garlic Granules
Watkins Granulated Black Pepper to taste
Salt to taste
Preheat oven to 400 degrees F (200 degrees C).
In a medium baking dish, mix together salsa, chopped spinach, Monterey Jack cheese, cream cheese,
evaporated milk, black olives, red wine vinegar, garlic granules, salt and pepper.
Bake mixture in preheated oven 15 to 20 minutes, or until bubbly.
Creamy Spinach and Tortellini
1 (16-ounce) package fresh or frozen uncooked cheese tortellini
2 tablespoons olive oil
1/2 cup chopped onion
2 cloves garlic, minced or 2 teaspoons Watkins Garlic Granules
1 (9-ounce) package frozen chopped spinach, thawed
1 large tomato, cubed
1/4 cup chopped fresh basil or 1 tablespoon Watkins Basil
1/2 teaspoon salt
1/2 teaspoon Watkins Granulated Pepper
1 cup whipping cream
1/4 cup freshly grated parmesan cheese
Cook tortellini according to package directions; drain and return to pan to keep warm.
In a large frying pan over medium heat, heat olive oil. Add onion and garlic; sauté 4 minutes or until
lightly browned. Stir in spinach, tomato, basil, salt, and pepper; cook another 5 minutes, stirring
occasionally. Stir in whipping cream and parmesan cheese. Cook until mixture must comes to a boil.
Reduce heat to low and mix in tortellini; cook an additional 4 minutes or until thoroughly heated.
Remove from heat, transfer onto individual serving plates, and serve with additional parmesan
cheese. Makes 4 servings.
Herb Spinach Bake
20 oz Spinach, frozen-chopped
2 cups Rice, cooked
16 oz Cheddar cheese, shredded
4 Eggs, beaten
2/3 cup Milk
1/4 cup Butter, softened
1/4 cup Onion, chopped
2 teaspoons Salt
1 teaspoon Worcestershire Sauce
1 teaspoon Watkins Thyme
Cook spinach according to package directions; drain well, squeezing out
excess liquid.
Combine spinach with remaining ingredients in a large bowl.
Pour into a greased 13x9x2-inch baking dish.
Cover and bake at 350F for 20 minutes. Uncover and bake 5 minutes more or until set.
Spinach with Pine Nuts
2 lbs fresh spinach
4 tablespoons unsalted butter
3 tablespoons olive oil
3 cloves garlic, minced or 1 teaspoon Watkins Garlic Flakes
1/4 teaspoon Watkins Cayenne Pepper
4 tablespoons seedless raisins
4 tablespoons pine nuts
2 tablespoons Parmesan cheese
Wash spinach well, drain and cut into coarse shreds.
Plunge into boiling water and drain.
Heat 2 tbs of butter and olive oil in pan. Add garlic and cayenne to taste.
Cook over moderate heat for 2-3 minutes.
Add raisins and pine nuts. Cook 2 minutes more. Mix into spinach until well blended.
Arrange on an ovenproof dish. Sprinkle cheese over top.
Melt remaining butter and pour over the top. Brown quickly under the broiler.
Crunch-Topped French Toast
Nonstick cooking spray
1 cup evaporated fat-free milk
3/4 cup refrigerated or frozen egg product, thawed, or 3 slightly beaten eggs
3 tablespoons sugar
2 teaspoons Watkins Vanilla
1/2 teaspoon Watkins Ground Cinnamon
1/4 teaspoon Watkins Ground Nutmeg
6 1-inch slices Italian bread (3 to 4 inches in diameter)
1 large shredded wheat biscuit, crushed (2/3 cup)
1 tablespoon butter or margarine, melted
2 cups sliced strawberries
3 tablespoons sugar
1/2 teaspoon Watkins Ground Cinnamon
Lightly coat a 2-quart rectangular baking dish with cooking spray; set aside. In a medium bowl beat
together the evaporated milk, eggs , 3 tablespoons sugar, vanilla, 1/2 teaspoon cinnamon,
and nutmeg. Arrange the bread slices in a single layer in prepared baking dish. Pour egg
mixture evenly over slices. Cover and chill for 2 to 24 hours, turning bread slices once with a wide
spatula.
Combine crushed shredded wheat biscuit and melted butter; sprinkle evenly over the bread slices.
Bake, uncovered, in a 375 degree F oven about 30 minutes or until light brown.
Meanwhile, in a small bowl toss together strawberries, 3 tablespoons sugar, and 1/2 teaspoon
cinnamon. Serve with French toast. Makes 6 servings.

6 skinless, boneless chicken breast halves (about 1-1/2 pounds total)
1 8-ounce package cream cheese, softened
1/4 teaspoon Watkins Seasoned Salt
1/8 teaspoon Watkins Garlic Granules
Dash Watkins Ground Red Pepper
1/2 of a 10-ounce package frozen asparagus spears, thawed and chopped or fresh asparagus
1/2 of a 5-1/2- to 6-1/2-ounce can crabmeat, drained, flaked, and cartilage removed, or 3 ounces crab-flavored fish (surimi)
2 tablespoons butter or margarine, melted
Watkins Seasoned Salt
Watkins Garlic Granules
1 6-1/4- to 6-3/4-ounce package long-grain-and-wild-rice mix
1 10-3/4-ounce can condensed cream of chicken soup
3/4 cup milk
Place each chicken breast half, boned side up, between 2 pieces of clear plastic wrap.
Working from the center to the edges, pound lightly with the flat side of a meat mallet to form a
rectangle about 1/4 inch thick. Remove plastic wrap; set chicken aside.
In a mixer bowl, beat together until light and fluffy the cream cheese, the 1/4 teaspoon seasoned
salt, the 1/8 teaspoon garlic granules, and the red pepper. Gently fold in the chopped
asparagus and the crabmeat.
Divide the filling evenly among the chicken breasts, placing it in the center of each breast.
Fold in the bottom and sides of each breast. Roll up breasts, jelly-roll style, and secure them with
wooden toothpicks. Place the rolls in a 2-quart rectangular baking dish.
Pour melted butter over chicken. Sprinkle with additional seasoned salt and garlic granules.
Bake in a 375 degree F oven about 25 minutes or until chicken is tender and no longer pink.
Meanwhile, cook rice mix according to package directions. In a small saucepan, combine the
condensed soup, and the milk; heat through.
Serve the baked chicken over the rice mixture. Spoon soup mixture over all. Makes 6 servings.
Make-Ahead Tip: If you like, pound chicken, fill and place in baking dish. Cover; refrigerate overnight. Continue as above.

Very Berry Cheesecake
Make this delicious cheesecake for Mother's Day.
3/4 cup graham cracker crumbs
1/4 cup finely chopped walnuts
1 tablespoon firmly packed brown sugar
2 tablespoons butter or margarine, melted
1 container (8 oz.) cream-style cottage cheese
2 packages (8 oz. each) cream cheese or Neufchatel cheese, at room
temperature
1-1/4 cups granulated sugar
1 tablespoon fresh lemon juice
1 teaspoon Watkins Vanilla Extract
1/2 teaspoon fresh grated lemon peel or 1/4 teaspoon Watkins Lemon Peel
Pinch of salt
4 large eggs, at room temperature
1 container (8 oz.) sour cream
Fresh strawberries, blueberries, and raspberries, for garnish
2 packages (10 oz. each) frozen strawberries in light syrup, thawed
1 pint fresh strawberries, thinly sliced
1. Heat oven to 350 degree F.
2. Crust: Butter an 8-inch springform pan. Combine graham cracker
crumbs, walnuts, brown sugar, and butter in small bowl until crumbs are
evenly moistened. Pat crumbs evenly over bottom of prepared pan. Bake 10
minutes. Cool on wire rack (keep oven on). Tightly cover bottom and
sides of springform pan with heavy-duty foil.
3. Filling: Meanwhile, puree cottage cheese in food processor or
blender until smooth. Beat cream cheese in large bowl at medium-high
speed of electric mixer until light and fluffy, 2 minutes. Beat in
cottage cheese. Gradually beat in granulated sugar, scraping side of
bowl with rubber spatula, until mixture is completely smooth, 3 minutes.
Reduce speed to medium. Beat in lemon juice, vanilla, lemon peel, and
salt. Add eggs, 1 at a time, beating just until blended after each
addition. Beat in sour cream just until smooth.
4. Pour filling over crust in pan and place in a large roasting pan.
Place pan on oven rack. Carefully pour enough hot water into roasting
pan to come 1 inch up side of springform pan. Bake 1-1/4 hours or until
center is just set.
5. Remove cheesecake from water bath. Cool completely on wire rack.
Remove foil. Cover and refrigerate overnight.
6. Double Strawberry Sauce: Puree strawberries in syrup in food
processor or blender until smooth. Transfer to a medium bowl and stir in
sliced strawberries. Makes 3-1/3 cups.
7. Just before serving, run knife around edge of springform pan and
remove side. Garnish top with fresh berries, if desired. Serve with
Double Strawberry Sauce. Makes 12 servings.

Peanut-Butter Silk Pie
1 8-ounce package cream cheese, softened
1 cup sugar

1 cup heavy or whipping cream, beaten until stiff
1 9-inch prepared chocolate cookie-crumb crust
1 cup semisweet chocolate pieces
3 tablespoons brewed coffee
Chopped peanuts, for garnish
For Peanut-Butter Filling, beat cream cheese, sugar, peanut butter, butter, and vanilla in a large
mixer bowl, until creamy. Gently fold in half the beaten cream, then fold in remaining cream until
blended. Spread filling in crust; smooth top.
For topping, combine chocolate pieces and coffee in a microwave proof bowl. Cover with plastic
wrap. Microwave on High 1-1/2 to 2 minutes; stir until smooth. Cool chocolate slightly, then pour
over top of filling. Refrigerate pie 1 hour until chocolate is firm, then cover loosely with plastic wrap
and refrigerate overnight. Sprinkle with chopped peanuts, if desired. Makes 8 servings.
