LAUGH WITH ME

A woman in our diet club was lamenting that she had gained weight. She'd made her family's favorite cake over the weekend, she reported, and they'd eaten half of it for dinner. The next day, she said, she kept staring at the other half, until finally she cut a thin slice for herself. One slice led to another, and soon the whole cake was gone.

The woman went on to tell us how upset she was with her lack of willpower, and she knew her husband would be disappointed. Everyone commiserated, until someone asked what her husband said when he found out. She smiled. "He never found out. I made another cake and ate half!"

COOKING TIP

Roasting Chicken

Wash and sanitize your hands, cutting boards, sink, all work areas and equipment with hot, soapy water before and after handling raw chicken.

Many people overcook chicken. As a general rule, cook whole chickens for about 20 minutes per pound at 350 degrees F.

When feeding a big crowd, cook two chickens instead of one. That way you get moist chicken breasts and an extra set of drumsticks! You don't have to double the cooking time; just increase it by 5 to 10 minutes per lb.

Did You Know? - Corned Beef

You may wonder where the term “corned beef” came from. Corning is a form of curing. In the days before refrigeration, meat was dry-cured in coarse “corns” of salt. Chunks of salt, akin to the shape and size of corn kernels, were rubbed into the beef to keep it from spoiling and to preserve it.

These days instead of dry salt, salt water is used to “corn” beef. This process is called brining. We can consider the name “corned beef” still relevant because of the spices that are added to it, one of the most prevalent being peppercorns.

For tender corned beef place roast and spices in a covered pot of water and bring to a boil. Watch carefully so that pot does not boil over. Reduce heat and simmer for two or more hours until meat is fork tender. Remove from pot, cut off fat, and slice across grain. For a corned beef and cabbage dinner serve with cabbage wedges, carrots, and potatoes. I prefer not to cook the vegetables in the pot with the spices as they overwhelm the taste of the vegetables. Add the cabbage wedges when the carrots and potatoes are almost cooked as the cabbage takes less time to cook.

Trans Fat Facts

Q: What are trans fats?

A: Their proper name is trans fatty acids. They're the fats created when liquid oils are made into solid fats like shortening and hard margarine. The process of adding hydrogen to vegetable oils to harden them is known as hydrogenation, which increases the shelf life and flavor stability of foods.

Small amounts of trans fats are found naturally, primarily in some animal-based foods.

Q: What foods have trans fats?

A: Trans fats can be found in vegetable shortenings, some margarines, crackers, cookies, snack foods and other foods made with or fried in partially hydrogenated oils.

Q: Why are trans fats bad?

A: Trans fats pack a double whammy. They raise low-density lipoprotein, (LDL) or "bad cholesterol'' and also lower high-density lipoprotein (HDL) or "good cholesterol,'' increasing the risk of coronary heart disease, which can lead to heart attacks and strokes.

Q: What's the difference between trans fats, saturated fats and cholesterol?

A: All three can raise bad cholesterol levels in the blood, but saturated fats and cholesterol don't decrease good cholesterol levels the way trans fats do.

Saturated and trans fats can be found in some of the same foods, such as vegetable shortenings, some margarines (especially margarines that are harder), crackers, candies, cookies, snack foods, fried foods, baked goods and other processed foods made with partially hydrogenated vegetable oils.

High amounts of saturated fat are found in animal products, such as beef and pork, chicken skin, butter, whole milk and cheese.

Foods high in cholesterol include liver and other organ meats, egg yolks and dairy fats like cheese.

Q: What about food labels?

A: As of 2006, all packaged foods must show how much trans fat they contain, as well as saturated fat and cholesterol. To make the healthiest food selections, choose items with the lowest combined amount of saturated fat and trans fat and the lowest amount of cholesterol.

Shamrock Mint Cupcakes

'Tis the luck o' the Irish you'll be gettin' when you top cake-mix cupcakes with a simple shamrock design.

1 box (1 lb 2.25 oz) chocolate fudge cake mix with pudding
(Water, vegetable oil and eggs called for on cake mix box)
1 cup mint baking chips
1/2 teaspoon Watkins Peppermint Extract
1 container (12 oz) fluffy white whipped frosting or homemade butter frosting
24 large green gumdrops

  1. Heat oven to 350 degrees F. Place paper baking cup in each of 24 regular-size muffin cups. In large bowl, beat cake mix, water, oil and eggs with electric mixer on low speed 30 seconds; beat on medium speed 2 minutes, scraping bowl occasionally. Stir in baking chips. Divide batter evenly among muffin cups, filling each 3/4 full.
  2. Bake 21 to 26 minutes or until toothpick inserted in center of cupcake comes out clean. Cool in pan 10 minutes. Remove cupcakes from pan; cool completely, about 45 minutes.
  3. Stir peppermint extract into frosting until well blended; spread on cupcakes. To garnish each cupcake, cut 1 gumdrop into 4 slices. Place 3 rounds on cupcake to make shamrock leaves; press remaining round into thin strip and place below leaves for stem. Makes 24 cupcakes.

Not enough green for St. Patrick’s Day? Color the frosting with a little green food color. Use colored frosting without the gumdrops.

Mini Ice-Cream Sandwiches

Mini sugar cookies
Green Mint Chocolate Chip Ice Cream
Green colored sugar or sprinkles

Bake your favorite sugar cookie recipe or store bought refrigerated cookie dough. When cookies have cooled, spread slightly softened ice cream on bottom of cookie. Top with another cookie, roll edges in colored sugar or sprinkles and enjoy! Wrap individual cookie sandwiches in plastic wrap, waxed paper, or sandwich bags and place in freezer until ready to eat.

Cookie Pops

These cookies make a cute lollipop!

Sugar cookies made from you favorite recipe or from store bought refrigerated cookie dough
Ready-to-spread frosting or homemade frosting
Wooden craft sticks
Ribbon

Bake cookies as directed. When cookies have cooled, spread a generous amount of frosting on bottom of cookie; top with another cookie. Gently press cookies together. Insert a craft stick into the frosting between the cookies. Tie ribbon on stick.

Roasted Chicken

1 roasting chicken or two smaller whole chickens
1 bottle (8 oz.) Balsamic Vinaigrette Dressing or Italian Salad Dressing, divided
1 small onion, cut into wedges
4 stalks celery, cut into chunks
Watkins Granulated Black Pepper (on sale this month)

Preheat oven to 350 degrees F. Wash and pat chicken dry with paper towels.

Brush bottom of chicken with 1/4 cup of the dressing. Tuck wings under chicken; carefully place chicken, breast-side up, on rack in roasting pan. Brush or pour 1/2 cup of the dressing on outside surface of chicken. Sprinkle chicken with pepper. Mix onions and celery with dressing; spoon into chicken cavity.

Bake 1-1/2 to 2-1/2 hours or until chicken is cooked through (180 degrees F). Let stand 10 minutes before serving. Meanwhile, remove and discard vegetables from chicken cavity. Remove drumsticks and slice breast and thighs. Serve on warm platter.

Herb-Grilled Cornish Game Hens

4 Cornish Game Hens
2 fresh lemons or limes
Watkins Chicken Seasoning (on sale this month)
Watkins Onion Granules (on sale this month)
Watkins Basil (on sale this month)
Watkins Garlic Granules (on sale this month)
Watkins Rosemary (on sale this month)
Watkins Black Pepper (on sale this month)

Wash hens. Cut in half lengthwise using shears or knife. Arrange hens on broiler pan (they can also be grilled). Squeeze lemon or lime juice over hens and season with remaining ingredients. Broil close to heat for 10-12 minutes. Turn over and broil 12-15 minutes more, or until juices run clear. Makes 8 servings, 1/2 hen each.

You can also prepare hens according to recipe and roast in 350 degree F oven for 1 to 1 1/2 hours.

Creamy Lemon-Asparagus Risotto

2 Tbsp. olive oil
1 medium onion, finely chopped
2 cups instant white rice, uncooked
1/2 lb. fresh asparagus, cut into 2-inch lengths
2 cups chicken broth made from Watkins Chicken Soup Base
2 Tbsp. Light Cream Cheese Spread
Grated peel and juice from 1/2 of a medium lemon

Heat oil in large skillet on medium heat. Add onions; cook and stir 2 minutes or until tender.

Stir in rice, asparagus and broth. Bring to boil. Reduce heat to low; simmer 5 minutes.

Add cream cheese spread, lemon peel and juice; stir until well blended.

Tortellini Chicken with Garden Vegetables

10 ounces dried cheese-filled tortellini (2-1/2 cups) or two 9-ounce packages refrigerated tortellini
1 medium carrot, thinly sliced
2 cups asparagus pieces
1 tablespoon margarine or butter
1 pound skinless, boneless chicken breasts, cut into bite-size pieces
1 cup sliced fresh mushrooms
1/3 cup chicken broth made from Watkins Chicken Soup Base
1-1/2 teaspoons Watkins Dried Oregano (on sale this month)
2 teaspoons all-purpose flour
3/4 teaspoon garlic salt
1/2 teaspoon Watkins Granulated Pepper (on sale this month)
1 cup milk
1 8-ounce package cream cheese or light cream cheese (Neufchatel), cubed and softened
1 tablespoon lemon juice
1 cup quartered cherry tomatoes
1 small red or green sweet pepper, coarsely chopped
2 tablespoons grated Parmesan cheese

  1. Cook tortellini in boiling salted water according to package directions, adding the carrot during the last 5 minutes of cooking and the asparagus during the last 1 minute of cooking; drain.
  2. Meanwhile, heat margarine or butter in a 12-inch skillet. Add chicken and mushrooms, and cook about 5 minutes or until chicken is no longer pink. Remove from skillet.
  3. Shake together chicken broth, oregano, flour, garlic salt, and pepper in a screw-top jar until smooth. Add to skillet along with milk. Cook and stir until thickened and bubbly; add cream cheese. Cook and stir until cream cheese is smooth. Remove from heat. Stir in lemon juice. Add pasta mixture, chicken mixture, tomatoes, and sweet pepper. Toss to coat. Turn into an ungreased shallow 3-quart baking dish.
  4. Bake, covered, in a 350 degrees F oven for 30 to 35 minutes or until heated through. Stir mixture and sprinkle with Parmesan cheese. Makes 12 main-dish servings.

Make-Ahead Tip: Prepare as directed but don't bake it. Instead, cover and chill up to 24 hours. Bake, covered, in a 350 degrees F oven about 55 minutes or until hot.
