If your recipe calls for buttermilk and you don't have any in the refrigerator you can make this quick substitution.

1 cup milk
1 tablespoon lemon juice or vinegar
Combine ingredients and let stand 5 minutes.
After 5 minutes, mix together and use as buttermilk in any recipe!

Commercially produced fresh liquid buttermilk is one of the most stable dairy products you can buy, certainly good for a couple of weeks after the sell-by date (we often use it well over a month later). we would all appreciate being able to purchase it in smaller amounts (dairy producers, are you listening?), because there is always some left over, which quietly moves to the back of the refrigerator and is forgotten.

You can also substitute buttermilk powder for fresh buttermilk in recipes. Lots of recipes call for it specifically. It is especially useful in the delay cycle of a bread machine, where you wouldn't’t necessarily want liquid buttermilk waiting with the other ingredients for hours and hours until the cycle starts.

Powdered buttermilk performs in all the expected ways when it is rehydrated, it just doesn't’t taste the same. But since powdered buttermilk is almost exclusively used for baking, the taste difference may not be particularly noticeable.

1. In a large pot over medium-low heat, combine olive oil, carrots, celery and garlic. Cover pot and cook, stirring occasionally, until vegetables are tender, about 15 min.
2. Raise heat to medium, add tomato paste and stir 1 minutes. Add mushrooms, broth, sherry (if using), thyme, salt and 2 cups water. Cover and bring to a boil. Add tortellini and cook 4 minutes or until tender. Makes 8 cups.

Slow Cooker Short Ribs
4 medium carrots, cut into 1-inch pieces
2 cups frozen pearl onions (from a 16-ounce bag)
4 garlic cloves, minced
4 pounds bone-in beef short ribs
1 tablespoon vegetable oil
1 can (14.5 ounces) diced tomatoes
3/4 cup beef broth made with 3/4 cup boiling water and 1 1/2 teaspoons Watkins Beef Soup Base
1/4 cup dry red wine
1/4 cup coarsely chopped fresh flat-leaf parsley, plus additional for garnish
2 tablespoons cornstarch
2 tablespoons tomato paste
1/2 teaspoon Watkins Thyme
1 Watkins Bay Leaf

1. Combine carrot, onions and garlic in a 6-quart slow cooker.
2. Rinse ribs and pat dry; season with salt and pepper. Heat oil in a large, wide pot over moderately high heat until hot but not smoking. Add ribs, in batches, and cook, turning, until browned on all sides, about 15 minutes. Transfer, as cooked, to slow cooker.
3. Stir together tomatoes, broth, wine, parsley, cornstarch, tomato paste, and thyme in a bowl; pour over ribs. Add bay leaf. Cover and cook, 9 to 11 hours on low or 4-1/2 to 5-1/2 hours on high. Skim off any fat from top (discard bay leaf).
4. Serve with rice, mashed potatoes, or polenta.

Garlic Chicken
Sprinkle chicken breasts with garlic powder, onion powder and seasoning salt - then saute and enjoy. Couldn't be easier! Great recipe for quick and easy meal, even for the pickiest eater!

3 tablespoons butter
4 skinless, boneless chicken breast halves
2 teaspoons Watkins Organic Garlic Powder
1 teaspoon Watkins Seasoning Salt
1 teaspoon Watkins Organic Onion Powder

Melt butter in a large skillet over medium high heat. Add chicken and sprinkle with garlic powder, seasoning salt and onion powder. Saute about 10 to 15 minutes on each side, or until chicken is cooked through and juices run clear.

Grasshopper Fudge Cake
Pretty streaks of green peek out from slices of white cake topped with hot fudge sauce and creamy whipped topping in this St. Patrick's Day treat.

1 box Betty Crocker SuperMoist white cake mix
1 1/4 cups water
1/3 cup vegetable oil
2 teaspoons Watkins Irish Cream Extract* or Watkins Pure Peppermint Extract
3 egg whites
12 drops green food color
2 jars (16 oz each) hot fudge topping
1 container (8 oz) frozen whipped topping, thawed
5 drops yellow food color
Thin rectangular creme de menthe chocolate candies, unwrapped and cut into pieces, if desired

1. Heat oven to 350 degrees F. Spray or grease 13x9-inch pan and dust with flour.
2. Make cake mix as directed on box, using water, oil, 1 1/2 teaspoons of the extract and the egg whites. Reserve 1 cup batter. Stir 3 drops of the green food color into reserved batter; set aside. Pour remaining batter into pan.
3. Drop green batter by generous tablespoonfuls randomly in 12 to 14 mounds onto batter in pan. Cut through batter with metal spatula or knife in S-shaped curves in one continuous motion. Turn pan 1/4 turn; repeat cutting for swirled design.
4. Bake 28 to 33 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.
5. Carefully spread fudge topping evenly over cake. In medium bowl, stir whipped topping, remaining 1/2 teaspoon extract, remaining 9 drops green food color and the yellow food color until blended. Spread whipped topping mixture evenly over fudge. Garnish with candy pieces. Store covered in refrigerator.

Buttermilk Coconut Bars
1 1/4 cups white sugar
3/4 cup packed brown sugar
2 cups all-purpose flour
1/2 cup butter, softened
1/2 cup shredded coconut
1/2 cup chopped walnuts
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon Watkins Ground Cinnamon
1 egg
1 cup buttermilk
1 teaspoon Watkins Vanilla Extract
1 cup confectioners' sugar
1 tablespoon milk

1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
2. In a medium bowl, combine the sugar, brown sugar, flour, and butter; blend with a pastry blender until the mixture is in coarse crumbs. Remove 2 cups of the mixture to another bowl, and reserve the rest.
3. Stir the coconut and walnuts into the 2 cups of the sugar mixture. Pat firmly into the greased pan. Stir the baking soda, salt, and cinnamon into the reserved mixture. Then mix in the egg, buttermilk and vanilla until well blended. Spread this over the crust in the pan.
4. Bake for 35 to 45 minutes in the preheated oven, or until firm. Allow to cool. Make a glaze using confectioners' sugar and enough of the milk to give it a drizzling consistency. Drizzle over bars before cutting into squares.

There was a hawk sitting on the fence outside my kitchen window last week. I was pleased that it sat there long enough for me to get my camera and take several pictures. I'm not sure of the species even though it was close. It may be a juvenile Red-tailed Hawk.
