A quick way to separate frozen vegetables is to pour boiling water over them through a colander and then add them to your casserole or pot to finish cooking.

HEALTH TIPS

Just a half-teaspoon of cinnamon a day helps diabetics lower their blood suger and bad cholesterol.

Cloves contain eugenol, a powerful anti-inflammatory proven to reduce joint pain and swelling by up to 30%. This same ingredient that gives cloves their spicy taste also acts as a mild anesthetic that numbs pain signals to the brain. It helps beat pain so well, it's used in many dental anesthetics

RECIPES

Slow Cooker Beef Pot Roast

1 large onion, diced
1 cup baby carrots, sliced 1/4 inch thick
1 rib celery, sliced 1/4 inch thick
2 cloves garlic, chopped
1 boneless chuck roast (about 3 pounds)
1 tablespoon olive oil
1 teaspoon salt
1/4 teaspoon Watkins Granulated Black Pepper
2 cups sliced white button mushrooms or 1 package (8 ounces) small whole mushrooms
1 teaspoon Watkins Thyme
1 Watkins Bay Leaf
1 cup beef broth made with 1 1/2 teaspoons Watkins Beef Soup Base and 1 cup boiling water
1/2 cup dry red wine
2 tablespoons tomato paste
2 tablespoons olive oil
2 tablespoons all-purpose flour
1 pound egg noodles or mashed potatoes

  1. In 5- to 5 1/2-quart slow cooker, layer onion, carrots, celery and garlic. Scatter the mushrooms over the vegetables in the slow cooker. Add bay leaf. Rub the roast all over with the 1 tablespoon olive oil; season the roast with the salt and pepper. Brown roast on all sides in skillet. Place the chuck roast on top of vegetables. Sprinkle with thyme.
  2. In medium-size bowl, whisk together beef broth, wine and tomato paste; pour over meat.
  3. Cover slow cooker; cook on high heat for 4 hours or on low for 6 to 8 hours.
  4. Remove chuck roast from slow cooker; keep warm.
  5. Pour the liquid with the vegetable mixture from the slow cooker into a medium-size saucepan; remove and discard the bay leaf. Bring to a boil.
  6. In a cup or jar, stir together 1/2 cup of water and flour until well blended and smooth. Stir the flour mixture into the liquid and vegetables in the saucepan. Boil, stirring, until liquid is slightly thickened, about 1 minute. Sometimes I leave the cooked vegetables as they are and sometimes I push them through a seive or strainer into the sauce before I add the thickening for a smooth sauce.
  7. Meanwhile, cook noodles in large pot of lightly salted boiling water following package directions. Drain the noodles well. Or cook potatoes for mashed potatoes.
  8. Slice pot roast. Serve with gravy and cooked noodles or mashed potatoes. Makes 10 servings.

Asparagus-Stuffed Potatoes

4 medium baking potatoes
1 to 2 tablespoons milk
1/2 cup sour cream
1 teaspoon Watkins Onion Salt
1/8 teaspoon Watkins Black Pepper
1 pound fresh asparagus, cut into 1-inch pieces and cooked
1 cup (4 ounces) shredded cheddar cheese
2 bacon strips, cooked and crumbled

Bake potatoes at 400 degrees F for about 1 hour or until done. Cut a thin slice off the top of each potato and discard. Carefully scoop out pulp while leaving shell intact. In a mixing bowl, mash pulp with milk, sour cream, onion salt and pepper until smooth. Fold in asparagus. Stuff shells; place in an ungreased shallow baking dish. Sprinkle with cheese and bacon. Return to the oven for 20-25 minutes or until heated through. Yield: 4 servings.

Coco-Mint Cookies
(A Soft Mint Filling Between Crisp Refrigerator Cookies)

The green mint filling in these chocolate sandwich cookies make them a perfect treat for St. Patrick's Day.

Cookie
1 1/2 sticks (3/4 cup) butter
1 cup sugar
1 large egg
2 cups sifted flour
1 teaspoon Watkins Baking Powder
1/2 teaspoon soda
1/2 teaspoon salt
3/4 cup Watkins All-Natural Baking Cocoa
1/4 cup milk
1/2 teaspoon Watkins Vanilla

Cream butter. Add sugar and beat until light and fluffy. Add egg and beat well. Sift flour, baking powder, soda, salt, and cocoa together. Add with milk and vanilla. Shape the dough into long rolls, 1 1/2-inch in diameter. Wrap each roll in waxed paper. Chill. Cut chilled rolls into 1/8-inch slices. Bake on baking sheet in a slow oven (325 degrees F) for 10 minutes. Remove from baking sheet while warm. When cooled, put cookies together, sandwich style, with Mint Filling.

Mint Filling
3 tablespoons butter
3 cups powdered sugar
3 tablespoons milk
4 to 5 drops Watkins Peppermint Extract (adjust to taste)
Green food coloring

Combine all ingredients and beat until smooth and creamy. Adjust amount of milk and peppermint extract. Filling should be thick.

Pull-Apart Caramel Coffee Cake

2 tubes (12 ounces each) refrigerated flaky buttermilk biscuits
1 cup packed brown sugar
1/2 cup heavy whipping cream
1 teaspoon Watkins Cinnamon

Cut each biscuit into four pieces; arrange evenly in a 10-inch fluted tube pan coated with cooking spray. Combine the brown sugar, cream and cinnamon; pour over the biscuits.

Bake at 350 degrees F for 25-30 minutes or until golden brown. Cool for 5 minutes before inverting onto a serving platter. Yield 12 servings.

Lemon Squares

Bottom Layer
1/2 cup/125 mL butter
1 cup/250 mL flour
1/2 cup/125 mL chopped pecans
1 tsp/5 mL Watkins Butter Extract

Cream Layer
1 cup/250 mL powdered sugar
8 oz/227 g fat-free or light cream cheese (at room temperature)
1 tsp/5 mL Watkins Clear Vanilla Extract
Half of a 1-quart/liter container of whipped topping

Lemon Layer
1 pie filling recipe from Watkins Lemon Dessert Mix (recipe on container)
1 tbsp/15 mL lemon juice

Combine bottom layer ingredients and pack into an 11 x 7/28 x 18 cm baking pan. Bake at 375 degrees F/190 degrees C for 15 minutes. Cool completely.

Cream together powdered sugar and cream cheese. Add whipped topping and fold in. Prepare lemon pie filling; add lemon juice and let cool.

Spread a thin layer of cream mixture over baked bottom layer. Spread lemon filling on top; spread rest of cream mixture on top of that. Chill. (Chilling after applying lemon layer may make it easier to spread top layer.) Cut in squares.

(Other Watkins Dessert Mixes may be used in place of Lemon.)
