On a flight to Florida, I was preparing my notes for one of the parent-education seminars I conduct as an educational psychologist. The elderly woman sitting next to me explained that she was returning to Miami after having spent two weeks visiting her six children, 18 grandchildren and ten great-grandchildren in Boston. Then she inquired what I did for a living.

COOKING TIP - Tender Muffins

  • For light, tender muffins, substitute buttermilk or yogurt for milk in a recipe. Add 1/2 teaspoon baking soda for each cup of buttermilk or yogurt used.
  • Any muffin can be made lighter by separating the eggs. Mix the yolks with the other moist ingredients; beat the whites until stiff and fold them into the batter just before baking.
  • Vigorously beating the batter creates tough muffins with pointed, peaked tops. Stir the batter only until all the dry ingredients are moistened. Don’t worry about small lumps; they’ll disappear during baking.
Muffin crisps
Thinly slice leftover muffins, place the slices on a baking sheet, and toast both sides under the oven broiler or in a toaster oven until golden brown. If desired, brush one side lightly with melted butter before toasting.

HEALTH TIP

Cherries are today's hottest "superfruit." Studies show that tart cherries, enjoyed as dried and frozen cherries and cherry juice, have among the highest levels of disease-fighting antioxidants compared to other fruits. They also contain other important nutrients such as beta carotene, vitamins C and E, potassium, magnesium, iron, fiber and folate.

Studies also suggest cherries may help reduce inflimmation and ease the pain of arthritis and gout, offer protection against heart disease and some cancers, and may reduce the risk of diabetes and insulin resistance syndrome. Cherries also may help with sleep and aid in possible prevention of memory loss.

Add cherries to your daily routine. You can find dried and frozen tart cherries, as well as cherry juice (or juice concentrate) at your supermarket.

  • Make your own trail mix with dried cherries, almonds and whole-grain cereal. Or add dried cherries to ready-made granola.
  • Add dried cherries to your cereal, oatmeal, yogurt or pancakes. Just ½ cup of dried tart cherries gives you one whole serving of fruit!
  • Add dried cherries to tossed salads, fruit salads and chicken salads for added taste and nutrition.
  • Keep a bag of dried cherries in your purse, desk or gym bag for a snack.
  • Enjoy a new twist on the standard oatmeal raisin cookie by using dried cherries instead of raisins.
  • Add dried cherries to couscous, rice pilaf, grits, risotto and pasta.
  • Blend frozen cherries with cherry juice concentrate and lowfat yogurt. Add a straw and you have a sensational smoothie for breakfast or a snack.
  • Thaw frozen cherries and then layer with lowfat vanilla yogurt and granola.
  • Make a refreshing cherry spritzer by adding cherry juice concentrate to ice cold seltzer water – a refreshing treat on a hot summer day.
  • Mix it Up – Look for cherry juice blends, like cranberry cherry juice, or cherry apple juice. Or, make your own blend and combine ready-to-drink 100% cherry juice with another juice favorite.
  • Grab a single-serve bottle of 100% cherry juice or fill a water bottle with diluted cherry juice concentrate as head out to the gym. Some research suggests cherry juice may help reduce exercise-related joint pain!

RECIPES

Mandarin Orange Tart

Crust
3/4 cup/175 ml butter, softened
1 1/2 cups /375 ml flour
1/3 cup/80 ml powdered sugar
1/4 tsp/1.2 ml salt

Cream Cheese Layer
6 oz/170 g softened cream cheese
2 tsp/10 ml Watkins Vanilla Extract (on sale this month)
2 tbsp/30 ml Watkins Mandarin Orange Fruit Dip Mix (on sale this month)
2 tbsp/30 ml soft butter
2 tbsp/30 ml milk

Top Layer
5 oz/142 g marshmallows (1/2 bag)
1/2 cup/125 ml milk
3 tbsp/45 ml Watkins Mandarin Orange Dip Mix (on sale this month)
3/4 cup/175 ml whipping cream
1 can mandarin oranges (drained)

Preheat oven to 350 degrees F/180 degrees C. Mix crust ingredients together unti a soft dough forms. Press in bottom of a 10-inch/25-cm pie or tart pan and prick well with tines of a fork. Bake at 350 degrees/180 degrees C for 15 to 20 minutes, or until browned. Remove from oven and cool.

Beat cream cheese, vanilla, dip mix, butter, and milk together until smooth. Spread over bottom of pie crust. Melt marshmallows and milk in a saucepan over medium heat. Let cool. When coll, stir in the dip mix. Whip cream until soft peaks form. Fold into cooled marshmallow mixture. Pour half of mixzture over cream cheese layer. Place mandarin oranges over marshmallow mixture. Pour the rest of the marshmallow mixture over the oranges. Refrigerate until ready to serve.

Frosted Maple Gingerbread Cake

For the Cake
1 egg
1 cup maple syrup
1 cup sour cream
4 tablespoons (1/2 stick) butter, melted
2 1/3 cups all-purpose flour
1 1/2 teaspoons Watkins Ground Ginger
1 teaspoon baking soda
1/2 teaspoon salt

For the Frosting
1 1/2 cups confectioners’ sugar
1 tablespoon heavy cream
6 tablespoons maple syrup

Preheat the oven to 350 degrees F.

In a bowl, combine the egg, maple syrup, sour cream, and melted butter; blend well.

In a second bowl, sift together the flour, ginger, baking soda, and salt and mix well. Combine the liquid and dry ingredients until they are well blended.

Pour the batter into a greased and lightly floured 8-x-8-inch baking pan and bake for 35 minutes or until the cake pulls away from the sides of the pan. Transfer to a serving dish and let cool before frosting.

To make frosting
In a bowl, combine all of the frosting ingredients. Mix until smooth. Spread over the cooled gingerbread.

Chicken Cherry Wraps
This innovative sandwich appeals to everyone

1/2 cup nonfat lemon yogurt
1 tablespoon honey Dijon-style mustard
1 teaspoon Worcestershire sauce
3/4 teaspoon Watkins Curry Powder
1/4 teaspoon salt
1/4 teaspoon Watkins Ground Pepper (on sale this month)
1 1/2 cups finely chopped cooked chicken (8 ounces)
1 cup dried tart cherries
1/2 cup seeded and finely chopped cucumber
1/3 cup shredded carrot
1/4 cup sliced green onion
4 (8- to 10-inch) whole wheat flour tortillas, tomato-flavored flour tortillas

Stir together yogurt, mustard, Worcestshire sauce, curry powder, salt and pepper in a medium mixing bowl. Gently stir in chicken, cherries, carrot, cucumber and green onion. Mound about 3/4 cup chicken mixture just below center of each tortilla. Fold in sides, just covering edges of chicken mixture. Roll up from one side, jelly roll fashion. Serve seam side down on a plate. Makes 4 servings.

Nutrition Facts per serving: 318 cal., 3 g total fat (1 g sat. fat), 53 g carbo., 45 mg chol., 23 g pro., 4 g fiber, 449 mg sodium. Daily RDA values: 60% vit. A, 4% vit. C, 8% calcium, 10% iron.

Pork Chops with Cherry Sauce
Cherries add flavor to pork chops.

2 boneless pork loin chops, about 1-inch thick
Salt and Watkins Black Pepper (on sale this month), to taste
2 tablespoons vegetable oil
1/2 cup chopped onion
1 cup prepared chicken broth made with Watkins Chicken Soup Base
1/3 to 1/2 cup dried tart cherries
2 tablespoons orange marmalade
1 tablespoon balsamic vinegar
1 tsp Watkins Thyme (on sale this month)
Dried Watkins Red Pepper Flakes (on sale this month), to taste, approx. 1/8 teaspoon

Season pork chops with salt and pepper. Heat oil in a large skillet on high heat. Add pork shops; brown well, about 3 minutes per side. Remove to plate. Add onions to skillet; cook until tender, 3 to 5 minutes. Add chicken broth, dried cherries, orange marmalade, vinegar and red pepper flakes, and thyme. Bring to a boil; boil rapidly on medium heat until broth is reduced by half. Reduce heat. Add pork chops to pan to heat through, 5 to 6 minutes. (Cook pork chops longer on lower heat, if pork chops are very thick or if they have a bone in them.) Internal temperature of the pork should be about 160 degrees F. Add chicken broth or water, if needed. Serve pork chops with cherry sauce spooned over them. Makes 2

Cherry Buttermilk Scones

2 1/4 cups all-purpose flour
1/2 cup oatmeal
1/3 cup sugar plus 1 tablespoon sugar, divided
2 teaspoons Watkins Baking Powder
1/2 teaspoon baking soda
1/2 teaspoon Watkins Ground Cinnamon
1/4 teaspoon salt
1/4 cup cold unsalted butter, cut into small pieces
3/4 cup dried tart cherries, finely chopped
1/2 cup low-fat buttermilk
3 large eggs, divided (2 for scone batter; 1 for egg wash)
Additional flour for cutting scones

Combine dry ingredients in a mixing bowl. Cut in butter with a pastry blender until the mixture resembles coarse meal. Stir in the dried cherries. In another bowl, whisk together the buttermilk and two of the eggs. Add liquid mixture to dry mixture, stirring just until moist (dough will be soft and sticky).

Allow dough to rest for 10 minutes. Preheat oven to 400 degrees Fahrenheit. Prepare egg wash. Flour surface for forming scones. Turn out dough and knead two to three times. Dough will be very soft. Divide dough in half. Roll each piece of dough into a 5-inch circle about 3/4 inch thick.

Using a sharp knife, cut each round into 8 pie-shaped wedges. Using a metal spatula, carefully transfer wedges onto a cookie sheet, arranging so that wedges are not touching. They should be at least 1 1/2 inches apart. In a small bowl, whisk remaining egg with 1 tablespoon of water to make an egg wash. Brush a very light coat of egg wash onto the top of each scone; sprinkle tops of scones with remaining tablespoon of sugar, and bake for about 13 minutes, or until the tops are lightly browned and the insides are fully baked. The scones will be firm to the touch. Serve warm. Makes 16 scones

Cherry Bran Muffins
Mini cherry bran muffins loaded with chopped dried cherries and toasted nuts.

1 cup unprocessed wheat bran or oat bran
1 1/2 cups whole-wheat flour
1 ¼ teaspoons baking soda
1 teaspoon Watkins Ground Cinnamon
1/8 teaspoon salt
3/4 cup 1% lowfat milk, or soymilk
½ cup honey
1 large egg
2 tablespoons canola oil
1 tablespoon cherry juice concentrate
1 teaspoon Watkins Vanilla Extract (on sale this month)
1 cup dried or fresh (or thawed from frozen) tart cherries, finely chopped
½ cup chopped toasted pecans

Position a rack in the center of the oven and preheat oven to 400 degrees Fahrenheit. Lightly coat 24 nonstick mini or 12 regular muffin cups with cooking oil spray.

In a medium bowl, combine bran, flour, baking soda, cinnamon, and salt. Set aside. In another medium bowl or in a blender, combine the milk, honey, egg, oil, and vanilla extract until smooth. Make a well in the center of the dry ingredients and pour in liquid mixture. Stir just until combined. Add cherries and pecans; stir again, but do not overmix.

For small muffins, spoon about 1/8 cup batter into each prepared muffin cup. Bake for about 10 minutes, or until golden brown and the tops just spring back when pressed gently in the centers. Do not overbake. Cool in the pan on a wire rack for 10 minutes before removing from the cups. Serve warm or cool completely on the rack.

For larger muffins, spoon about ¼ cup of batter into each prepared muffin cup. Bake for about 13 minutes, or until golden brown and the tops spring back when pressed gently in the centers. Cherry Oatmeal Muffins
Perfect for breakfast-on-the-run or lunchbox treats.

1 cup old-fashioned or quick cooking oats, uncooked
1 cup all-purpose flour
1/2 cup firmly packed brown sugar
1-1/2 teaspoons Watkins Baking Powder
1/4 teaspoon Watkins Ground Nutmeg
3/4 cup buttermilk
1 egg, slightly beaten
1/4 cup vegetable oil
1 teaspoon Watkins Almond Extract (on sale this month)
1 cup frozen tart cherries
Coarse granulated sugar (about 2 tablespoons)

Put oats, flour, brown sugar, baking powder and nutmeg in a large mixing bowl; mix well. Combine buttermilk, egg, oil, and almond extract in a small bowl. Pour buttermilk mixture into oats mixture; stir just to moisten ingredients. Quickly stir in cherries (it is not necessary to thaw cherries before chopping and adding to batter.) Spray muffin pan with non-stick spray. Fill muffin-cups 2/3 full. Sprinkle with granulated sugar. Bake in a preheated 400 degree F oven 15 to 20 minutes, or until golden brown. Makes 12 Muffins

Cherry Biscotti
These twice-baked Italian cookies are perfect for dunking in coffee or milk.

3/4 cup granulated sugar
2 eggs
1/4 cup vegetable oil
1 tablespoon orange juice
2 teaspoons grated orange peel
1-1/2 teaspoons Watkins Vanilla Extract (on sale this month)
2 cups all-purpose flour
1/2 cup finely chopped walnuts
1 teaspoon Watkins Baking Powder
1/4 teaspoon salt
1 cup dried chopped tart cherries
1 egg white
1 tablespoon water
Granulated sugar (used 2 tablespoons) Watkins nonstick spray

Combine 3/4 cup sugar and eggs in a large mixing bowl. Beat with an electric mixer at medium speed, scraping bowl often, 2 to 3 minutes, or until thick and pale yellow in color. Add oil, orange juice, orange peel and vanilla; beat 1 to 2 minutes, or until well mixed.

Combine flour, walnuts, baking powder and salt; gradually add to egg mixture. Mix on low speed for 1 to 2 minutes, or until well mixed. Stir in cherries by hand.

Turn dough onto lightly floured surface (dough will be soft and sticky). With floured hands, shape into 2 logs. Place 3 to 4 inches apart on a greased baking sheet; flatten tops slightly. Combine egg white and water; brush on logs. Sprinkle with granulated sugar. Bake in a preheated 350 degree F oven 25 to 30 minutes, or until light brown or firm to the touch. Let cool on baking sheet 15 minutes. Reduce oven temperature to 300 degrees F.

Cut logs diagonally into 1/2 inch slices with a serrated knife; arrange slices, cut-side-down, on baking sheet. Bake 8 to 10 slices, turn slices. Bake 8 to 10 slices or until golden brown. Remove to wire rack; let cool completely. Makes 2-1/2 dozen

Crunchy Cherry Party Mix

4 cups bite-size corn or rice square cereal (such as Corn or Rice Chex)
2 cups bite-size wheat square cereal (such as Wheat Chex)
2 cups broken whole grain Melba toast
2 cups small fat-free pretzel twists
3 tablespoons margarine or butter, melted
1 tablespoon Worcestershire sauce
2 teaspoons Watkins Chili Powder
1/4 teaspoon Watkins Garlic Granules (on sale this month)
14 teaspoon Watkins Onion Granules (on sale this month)
1/8 teaspoon Watkins Ground Red Pepper
1-1/2 cups dried tart cherries

Put corn or rice cereal, wheat cereal, Melba toast and pretzels in a large bowl; stir to mix. In a glass mesuring cup or small bowl, stir together melted margarine or butter, Worcestshire sauce, chili powder, garlic powder, onion powder and ground red pepper. Drizzle over cereal mixture. Toss to coat. Spread cereal mixture in a 15x10x1-inch (or 13x9x2-inch) baking pan. Bake in a preheated 300 degree F oven about 25 minutes, stirring every 7 to 8 minutes. Remove from oven; stir in dried cherries. Cool. Store in a tightly covered container for up to 1 week. Makes 20 (1/2 cup) servings

I participated in this year's Great Backyard Bird Count (GBBC). I counted my backyard birds Friday, Saturday, and Sunday, February 16, 17, and 18.
