Clean mushrooms only when you are ready to use them. Remove any bits of the debris on the
surface, rinse quickly with cold running water or gently wipe the mushrooms with a damp cloth, paper towel,
or soft brush.

COOKING TIP
When a recipe calls for fresh orange sections without the membranes as an ingredient, first cut the top
and bottom from the orange. Then remove the peel, rind, and outer membrane by cutting from the
top of the orange to the bottom with a sharp knife. Continue cuting sections of peel and rind until
the orange is peeled. Holding the orange over a bowl, use a knife to remove individual segments of
orange as the juice drips into the bowl.

COOKING TIP
When grilling kabobs most recipes alternate meat and vegetables on the skewer. If the meat and vegetables
cook for different lengths of time to achieve the desired doneness, place the meat and vegetables
on separate skewers, baste, and grill.

RECIPES
The healthy food for this issue is oranges.
If you are looking for a light and nutritious dessert, serve oranges. Oranges provide Vitamin C and clear
the palate. Either cut the oranges into wedge-shaped sections with the rind on, or peel and slice into
rounds.
Orange Chicken Salad
2 seedless oranges
2 cups (500 ml) chicken broth made from Watkins Chicken Soup Base
1 cup (250 ml) long-grain rice
1/2 cup (125 ml) extra-virgin olive oil
1/4 cup (60 ml) orange juice
2 tsp (10 ml) Watkins Honey Mustard
1 lb (450 g) cooked chicken, diced
1/2 cup (125 ml) cashews or almonds, lightly toasted
3 Tbs (45 ml) chopped fresh chives
Salt and freshly ground Watkins Pepper to taste
Peel one of the oranges being careful to remove only the thin orange
part of the peel, leaving the white pith behind. Combine the orange
peel, chicken stock, and rice in a pot and bring to a boil over
moderate heat. Reduce the heat and simmer covered for 15 minutes.
Remove from the heat and let stand covered for 10 minutes. Meanwhile,
whisk together the olive oil, orange juice, and honey mustard. Set
aside. Remove and discard the orange zest from the rice. Transfer
the rice to a serving bowl and toss with half the dressing. Cool to
room temperature or chill in the refrigerator. Completely peel both
oranges and divide into segments. Immediately before serving, toss
the rice with the remaining dressing, add the chicken, cashews, and
chives, and toss to combine. Adjust the seasoning with salt and
pepper and garnish with orange segments. Serves 4 to 6.
Orange Cottage Cheese Jell-o Salad
1 (16-ounce) container cottage cheese
1 (11-ounce) can mandarin oranges
1 (3-ounce) package flavored orange Jell-o
1 (7-ounce) container non-dairy whipped topping, thawed
1 tablespoon Watkins Mandarin Orange Fruit Dip Mix
Combine all of the ingredients and mix well.
Refrigerate until ready to serve.

Palm Springs Fruit Salad
1/2 cup dates, sliced
4 boneless chicken breast halves, cooked & cooled
2 large oranges
1 pineapple
2 kiwi fruits, for garnish
mint sprigs, for garnish
Orange Mint Yogurt Dressing
1 cup plain lowfat yogurt
2 Tbs honey
2 tsp grated orange peel
1/4 teaspoon Watkins Ginger
1/8 tsp salt
1 dash Watkins Cayenne Pepper
1 1/2 tsp chopped fresh mint
Remove peel and pith from oranges. Slice oranges into 1/4 inch
thick rounds. Quarter and peel pineapple. Slice into 1/2 inch thick
slices. Arrange oranges, kiwi fruit and pineapple an 4 salad
plates.
Meanwhile, tear chicken into strips. Toss with dates and Orange
Mint Yogurt Dressing. Divide mixture into 4 portions and arrange
evenly on each serving plate. Garnish with mint sprigs.
Dressing
Whisk together all ingredients until well combined.
Servings: 4
Shish kabob (SHISH kuh-bob) are chunks of meat, poultry, or
seafood that have been marinated and are threaded on a skewer
alternately with vegetables and grilled or broiled. Kabobs are
versatile and bite-sized which make a quick and delicious meal.
Pork Kabobs
1-1/2 pounds lean, boneless, pork tenderloin
1/2 cup orange juice
1/4 cup wine vinegar
1 clove garlic, minced
1/2 teaspoon Watkins Oregano
1/2 teaspoon Watkins Thyme
2 small onions, quartered
1 large bell pepper, cut in 1-inch pieces
1/2 pound fresh mushrooms, cleaned
Trim the fat and cut the pork into 1-inch cubes. In a bowl
combine the juice, vinegar, garlic and oregano. Place the
pork, onion, pepper and mushrooms in a bowl; add the
marinade, cover and marinate for 2 hours at room temperature.
Put the pork and vegetables alternately on skewers; grill over
medium heat, turning frequently. Baste with marinade every 12
to 15 minutes or until meat is done. Serves: 6.

Pork Roast a l'Orange
You can use any type of pork roast for this recipe. Choose a less expensive bone-in roast or
choose a boned, rolled roast or tenderloin for a special occasion.
Pork Roast, choose size appropriate to number of servings
1 cup fresh orange juice
1/2 teaspoon Watkins Garlic Salt or Garlic Granules
1/2 teaspoon Watkins Thyme
1/2 teaspoon Watkins Ginger
Watkins Black Pepper to taste
Salt to taste
Place pork roast in roasting pan. Sprinkle with pepper and salt. Mix orange juice with garlic,
thyme, and ginger. Pour 1/3 of juice over roast and cook in 325 degree F oven. Cook roast just
until all traces of pink have disappeared. Do not over cook. Cooking time will vary according to size
of roast. Halfway through roasting baste with another 1/3 cup of orange juice mixture. Approximately
10 minutes before roast is done baste with last 1/3 cup of juice mixture. Do not cover roast as it
cooks.
When roast is done, slice and place on serving platter. Drizzzle with fresh orange juice.
Orange Chicken
6 Chicken breasts, boned and skinned
1/2 tsp Watkins Ginger
1 tsp Salt
Watkins Granulated Pepper
8 oz Frozen concentrate orange juice
1 1/2 cups Shredded coconut
2 cups Orange segments or canned, mandarin oranges
2 Green onions, chopped
Put chicken, ginger, salt, pepper and frozen orange juice in crock
pot and cook on low 6 hours. Serve chicken on hot cooked rice on
platter.
Top with coconut, orange segments and green onions. Serve chicken
liquid in gravy boat, if desired.
Servings: 6
Mandarin Orange Pie
Crust:
1 cup/250 ml graham cracker crumbs
1 tbsp/15 ml Watkins Orange Peel
1 tbsp/15 ml granulated sugar
3 tbsp/45 ml melted butter
Cream Cheese Layer:
3 oz/85 g softened cream cheese
1 tsp/5 ml Watkins Original Vanilla
1 tbsp/15 ml Watkins Mandarin Orange Dip Mix
1 tbsp/15 ml soft butter
1 tbsp/15 l milk
Top Layer:
1 (10 oz/285 g) bag of miniature marshmallows
3/4 cup/180 ml milk
3 tbsp/45 ml Watkins Mandarin Orange Dip Mix
1 cup/240 ml whipping cream
1 can mandarin oranges, drained
Add orange peel, sugar, and butter to the graham cracker crumbs. Mix well. Press into bottom of a
9-inch/23-cm pie pan
Beat cream cheese, vanilla, dip mix, butter, and milk together until smooth. Spread over bottom of
pie crust.
Melt marshmallows and milk in a large saucepan over medium heat. Let cool. When cool, stir in the
dip mix.
Whip cream until soft peaks form. Fold into cooled marshmallow mixture. Pour half of mixture over
cream cheese layer. Place mandarin oranges over marshmallow mixture. Pour the rest of the
marshmallow mixture over the oranges. Refrigerate until ready to serve. Serves 8.

Orange Dreamsicle Dessert
4 1/2 oz Graham cracker crumbs
1/4 c Butter; melted
1/2 ts Watkins Ground Cinnamon
FILLING
1/2 ts Freshly grated orange peel
2 1/4 c Ricotta cheese
3 Eggs
1 tb Flour
2 ts Watkins Vanilla Extract
1/4 c Sugar
TOPPING
3 tb Cornstarch
2 c Orange juice
1 tb Lemon juice
1/2 ts Watkins Orange Extract
1/4 c Sugar
4 c Fresh orange sections
Preheat oven to 350°.
Combine crust ingredients and press into the
bottom of a 9 X 13 baking pan. Bake 8 minutes.
In a blender container, combine filling
ingredients. Blend until smooth and pour over
crust. Bake 18-20 minutes until set. Cool completely.
In a saucepan, dissolve cornstarch in orange
juice. Add lemon juice, orange extract, and sugar.
Bring to a boil and boil for 1 minute. Remove from
heat, cool for 5 minutes and add orange sections.
Spread evenly over cooled cheese filling. Chill
for several hours. Cut into squares and serve.
Whole Wheat Crepes with Orange Sauce
1 large egg
2 egg whites
1 1/2 cup fat-free skim milk
1/4 cup water
1 tsp orange zest
1/4 tsp Watkins Ground Cinnamon
1/4 tsp table salt
3/4 cup whole-grain wheat flour
6 ounces orange juice
Watkins Cooking Spray
3 Tbsp orange marmalade
3 medium orange(s), seedless, peeled and segmented
Mix egg, egg whites, milk, water, orange zest, cinnamon, salt and flour until smooth.
Let rest for 10 to 15 minutes.
To make crepes, coat a 6-inch nonstick skillet with cooking spray; place over medium-high heat.
Add 3 tablespoons of batter to skillet and swirl skillet to spread batter into an even layer.
Cook 2 minutes; flip with a spatula and cook for 30 seconds more. Remove from skillet,
place on a plate and cover to keep warm; repeat with remaining batter.
Crepes are simple to make but require a little extra time in the kitchen.
To make sauce, combine orange juice and marmalade in a small saucepan over medium-high
heat. Bring to a boil and cook for 3 to 4 minutes.
To serve, place a crepe on a flat surface. Top with 3 to 4 orange slices, roll up and drizzle with
about 2 1/4 teaspoons of sauce.
Orange Chiffon Cake
3 oranges
2 egg whites
1-1/2 cups sugar
2-1/4 cups all-purpose flour
2 teaspoons Watkins Baking Powder
1 teaspoon salt
1/2 cup milk
1/3 cup cooking oil
2 egg yolks
Orange Fluff Frosting (see recipe below)
1. Preheat oven to 350 degree F. Grease and flour two 9x1-1/2-inch round cake pans; set aside.
Finely shred 1 tablespoon of peel from 1 orange. Squeeze juice from 2 oranges to measure 1/2
cup juice. Section remaining orange. In a large mixing bowl beat egg whites to soft peaks.
Gradually add 1/2 cup of the sugar, beating to stiff peaks. In another large mixing bowl combine
flour, baking powder, salt, and remaining 1 cup sugar.
2. Add milk and oil. Beat on low speed of electric mixer until combined. Add orange juice and egg
yolks; beat 1 minute. Gently fold in egg white mixture until combined. Fold in orange peel. Divide
batter evenly between pans. Bake for 30 to 35 minutes or until a wooden toothpick inserted near
the centers comes out clean. Cool completely on wire racks; remove from pans.
Frost with Orange Fluff Frosting. Top with reserved orange sections. Makes 12 servings.
Orange Fluff Frosting
Finely shred 2 tablespoons orange peel; set aside. In small saucepan stir
together 1/3 cup sugar and 4 teaspoons cornstarch. Stir in 1/2 cup orange juice. Cook over medium
low heat, stirring frequently, until mixture thickens; cook and stir 2 minutes more. Remove from heat;
stir in the reserved orange peel and 1/2 teaspoon Watkins Vanilla. Cover; chill 1 hour. Beat 2 cups
whipping cream to stiff peaks; fold into chilled mixture.
