Ground Beef Color
Why is pre-packaged ground beef red on the outside and sometimes dull, grayish-brown inside?
Oxygen from the air reacts with meat pigments to form a bright red color which is usually seen on the surface of meat purchased in the supermarket. The pigment responsible for the red color in meat is oxymyoglobin, a substance found in all warm-blooded animals. Fresh cut meat is purplish in color. The interior of the meat may be grayish brown due to lack of oxygen. If all the meat in the package has turned grey or brown, it may be beginning to spoil.

RECIPES
Grilled Teriyaki Chicken
Teriyaki Marinade
1/2 cup soy sauce
1/2 cup orange juice
2 tablespoons sugar
2 tablespoons vegetable oil
1/2 teaspoon Watkins Ground Ginger
2 cloves garlic, crushed
Chicken
8 bone-in chicken breast halves (about 3 pounds)
- In shallow glass or plastic dish or heavy-duty resealable food-storage plastic bag, mix all Teriyaki Marinade ingredients.
- Add chicken; turn to coat with marinade. Cover dish or seal bag and refrigerate, turning chicken occasionally, at least 1 hour but no longer than 24 hours.
- Heat coals or gas grill for direct heat. Remove chicken from marinade; reserve marinade. Cover and grill chicken, skin sides up, 5 to 6 inches from medium heat 15 minutes. Turn chicken. Cover and grill 10 to 20 minutes longer, turning and brushing 2 or 3 times with marinade, until juice of chicken is no longer pink when centers of thickest pieces are cut. Discard any remaining marinade.
Grilled Flank Steak with Nectarines
1/4 cup red wine
1/4 cup soy sauce
1/4 cup chicken broth prepared from Watkins Chicken Soup Base
1/4 cup honey
1/2 teaspoon Watykins Ground Ginger
3 medium green onions, sliced (3 tablespoons)
1 clove garlic, finely chopped
1 1/2 lb beef flank steak
2 nectarines, each cut into 8 pieces
- In shallow glass bowl or resealable food-storage plastic bag, mix all ingredients except beef and nectarines.
- Make cuts about 1/2 inch apart and 1/8 inch deep in diamond pattern in both sides of beef. Place beef in marinade in bowl; turn to coat. Cover dish or seal bag; refrigerate, turning occasionally, at least 4 hours but no longer than 24 hours.
- Heat coals or gas grill for direct heat. Remove beef from marinade; reserve marinade.
- Cover and grill beef over medium heat 12 to 14 minutes for medium doneness (160 degrees F), brushing occasionally with marinade and turning once. Add nectarines to grill for last 5 minutes of grilling, turning once and brushing frequently with marinade. Discard any remaining marinade. Cut beef diagonally across grain. Serve with nectarines.
Grilled Cheese and Hamburger Sandwich
1 pound ground beef
1 teaspoon Watkins Garlic Powder
1 egg, slightly beaten
8 slices of bread, your choice white, sour dough, whole wheat, rye, pumpernickel
4 slices American or Cheddar cheese
4 thin onion slices, Vidalia or other sweet onion
Butter, softened
Mix ground beef, garlic powder and egg in a bowl. Shape into four patties. Cook in a skillet or grill just until pink disappears. Lightly butter one side of each slice of bread. Place bread, butter side down in skillet. Top with a slice of cheese and a thin slice of onion. Add cooked hamburger pattie. Top with second slice of buttered bread. Grill both sides of sandwich until golden brown. Repeat for each sandwich.
Turkey Cucumber Dill Sandwiches
1/4 cup mayonnaise or salad dressing
1 tablespoon Watkins Dill
8 slices multigrain bread
1/2 pound sliced cooked deli turkey
4 slices (1 ounce each) Muenster cheese
16 thin slices cucumber
4 lettuce leaves
- Mix mayonnaise and dill weed. Spread on one side of each bread slice.
- Top 4 slices with turkey, cheese, cucumber and lettuce. Top with remaining bread.
Italian Rotini Salad
1/2 of a one pound package of rotini pasta (twists)
1 cup sliced fresh mushrooms
1 cup diced pepperoni
1/2 cup shredded cheddar cheese
3 large green onions, sliced
1/2 red bell pepper, sliced
1/2 cup olive oil
1/3 cup red wine vinegar
1 tsp. Watkins Italian Seasoning
1/2 tsp. Watkins Garlic Powder
1/2 tsp. salt
1/4 tsp. Watkins Granulated Black Pepper
Cook rotini according to directions, rinse and drain. Combine rotini, mushrooms, pepperoni, cheese, green onions and red bell pepper. Blend oil, vinegar and spices. Toss dressing with salad. Serve immediately or chill. Makes 6-8 servings.
Root Beer Baked Beans
1/2 lb/225 g bacon, diced
1 medium onion, diced
2 tbsp/30 mL Watkins Original Barbecue Sauce Concentrate
1/4 cup/60 mL ketchup
2 (28 oz/798 g) cans baked beans
1/4 tsp/1.2 mL Watkins Root Beer Extract
1/2 tsp/2.5 mL prepared mustard
2 tbsp/30 mL brown sugar
Dash Watkins Calypso Hot Pepper Sauce
Watkins Black Pepper to taste
Cook bacon and onion in skillet until bacon is brown and crisp. Pour off drippings. Combine barbecue sauce concentrate and ketchup; add to skillet. Mix in remaining ingredients. Bake at 300 degrees F/150 degrees C for 1 hour. Makes 12 servings.
Cookies and Cream Freeze
4 squares semi-sweet baking chocolate
14 Oreo Chocolate Sandwich Cookies, divided
1 pkg. (8 oz.) cream cheese, softened
1/4 cup sugar
1/2 tsp. Watkins Vanilla
1 tub (8 oz.) Cool Whip Whipped Topping, thawed
Melt chocolate as directed on package; set aside until ready to use. Line 8-1/2x4-1/2-inch loaf pan with foil, with ends of foil extending over sides of pan. Arrange 8 of the cookies evenly on bottom of pan. Crumble remaining 6 cookies; set aside.
Beat cream cheese, sugar and vanilla in medium bowl with electric mixer until well blended. Stir in whipped topping. Remove about 1-1/2 cups of the cream cheese mixture; place in medium bowl. Stir in melted chocolate.
Spread remaining cream cheese mixture over cookies in pan; sprinkle with crumbled cookies. Gently press cookies into cream cheese mixture with back of spoon; top with chocolate mixture. Cover. Freeze 3 hours or until firm. Remove from freezer about 15 min. before serving; invert onto serving plate. Peel off foil; let stand at room temperature to soften slightly before cutting to serve.
Crock Pot Peach Cobbler
3/4 C. all-purpose baking mix such as Bisquick
1/3 C. granulated sugar
1/2 C. packed brown sugar
1/2 can evaporated milk
2 tsp. margarine or butter, melted
2 large eggs
3 large ripe peaches, sliced
2 tsp. pure Watkins Vanilla Extract
3/4 tsp. Watkins Cinnamon
Lightly grease crock pot or spray with Watkins non-stick cooking spray. In a large mixing bowl, combine sugar and baking mix. Add eggs and vanilla extract. Stir. Pour in margarine and milk and stir. Mix in peaches and cinnamon, until well mixed. Pour into crock pot. Cover and cook on low for six to eight hours or on high for 3 to 4 hours. Serve warm. Top with vanilla ice cream if desired.
