Sunday, June 17 is Father's Day. Sonora Dodd first proposed the idea of a "father's day" in 1909 to honor her father. Sonora realized his strength and selflessness as he raised six children after her mother died in childbirth. The first Father's Day was observed on June 19, 1910 in Spokane, Washington. In 1966 President Lyndon Johnson signed a presidential proclamation declaring the 3rd Sunday of June as Father's Day in the United States.
Father's Day has become a day to not only honor fathers, but all men who act as a father figure. Stepfathers, uncles, grandfathers, and adult male friends are all honored on Father's Day.

How will recipes be judged?
All eligible recipes that meet the above criteria will be prepared and tested in the Watkins Test Kitchen at our home office, in Winona, MN. Recipes not meeting the above criteria will be disqualified. Recipes will be tested by a random panel of food professionals and non-professionals, judged on taste, appearance, creativity, use of other organic materials and consumer appeal.
What happens if I win?
You will be contacted by between December 1st and December 10th. Finalists will be required to certify that their recipe is original to them, and has never been previously published in a national newspaper or magazine. You will then be presented with a check of $500. Your recipe will be professionally photographed and will be listed on our website at www.JRWatkins.com, where you will be credited for the recipe submission. Your recipe is subject to publication in any printed material Watkins chooses for the marketing and advertising of our products.

Winners will be posted on our website December 10th, 2007.

Marinating Foods
Why is it unsafe to marinate foods at room temperature? Doesn't the acid in the marinade kill any bacteria that might be present?
Bacteria grow rapidly at room temperature, so for food safety purposes, food should always be refrigerated while marinating. (Refrigeration slows bacterial growth.) Marinade that has been used on raw meat, poultry, and seafood contains raw juices. These juices may contain bacteria that, if eaten, could make you sick. The acid in marinade doesn't kill bacteria, it merely slows or stops bacterial growth.

Getting the Most Out of Your Food
Just because good things are in your salsa doesn't mean you're getting all the good out of it.
If you toss some avocado chunks into the spicy red stuff, you'll absorb 400 percent more lycopene from the tomatoes. Avocados give spinach salad a boost, too.
Topping spinach salad with half a cup of sliced avocado helps you absorb 14 times more beta carotene from the greens. Lycopene and beta carotene are fat-soluble carotenoids - meaning they need to piggyback with fat to be absorbed in your small intestine. Avocado, olive oil, pine nuts . . . any source of healthful fat will do the trick.

RealAge Tip of the Day - June 4, 2007
Quick Guacamole
Use a cup of the Fresh Tomato Salsa to make this easy guacamole. Mash a few avocados, stir in lemon juice and you're done! Guacamole will turn brown if allowed to sit and is best made shortly before serving. Makes 8 servings, about 1/3 cup each
3 avocados, diced (about 3 cups)
1 cup fresh tomato salsa or prepared salsa
1 tablespoon lemon juice
1/4 teaspoon salt
Using a potato masher, mash diced avocados in a medium bowl, leaving them a little chunky. Add salsa, lemon juice and salt; stir to combine.

RECIPES

Citrus-Glazed Salmon
1 2-pound fresh or frozen salmon fillet, skin removed
Salt and Watkins Black Pepper
3/4 cup orange marmalade
2 green onions, sliced (1/4 cup)
1 clove garlic, minced
2 teaspoons dry white wine or chicken broth
1 teaspoon grated fresh ginger
1 teaspoon Dijon-style mustard
1/4 teaspoon Watkins Cayenne pepper
1/8 teaspoon five-spice powder
3 tablespoons sliced almonds, toasted
- Thaw fish, if frozen. Preheat oven to 450 degree F. Rinse fish; pat dry with paper towels. Measure the thickest portion of the fillet. Season salmon with salt and pepper. Place in a shallow baking pan; set aside.
- In a small bowl stir together marmalade, green onions, garlic, wine, ginger, mustard, cayenne pepper, and five-spice powder. Spoon mixture over salmon.
- Bake, uncovered, for 4 to 6 minutes per 1/2-inch thickness or until salmon flakes easily when tested with a fork. Transfer fish and glaze to a serving dish with a lip. Sprinkle with almonds. Makes 8 servings.
Grilled Sweet-and-Sour Chicken Packets
4 boneless skinless chicken breasts (about 1 1/4 lb)
1/2 cup sweet-and-sour sauce
1/2 cup Watkins Tropical Salsa
1 can (8 oz) pineapple chunks, drained
1 medium bell pepper, cut into strips
1/2 small onion, cut into small wedges
1/2 cup chow mein noodles, if desired
- Heat gas or charcoal grill. Cut four 18x12-inch pieces of heavy-duty foil; spray with Watkins cooking spray.
- Mix sweet-and-sour sauce with tropical salsa. On one side of each foil piece, place 1 chicken breast. Top each with 2 tablespoons sauce mixture and one-fourth of the pineapple, bell pepper and onion. Top with remaining sauce.
- Fold foil over chicken and vegetables so edges meet. Seal edges, making tight 1/2-inch fold; fold again. Allow space on sides for heat expansion.
- When grill is heated, place packets on gas grill over medium heat or on charcoal grill over medium coals; cover grill. Cook 15 to 20 minutes, rotating packets 1/2 turn after 10 minutes, until juice of chicken is clear when center of thickest part is cut (170 degree F). Place packets on plates. Cut large X across top of each packet; fold back foil. Top with chow mein noodles.
Tomato-Basil Pasta Salad
12 oz/170 g multicolored spiral pasta
1/4 cup/60 mL Watkins Garlic and Parsley Grapeseed Oil
1/4 cup/60 mL water
3 tbsp/45 mL Watkins Tomato and Basil Snack and Dip Seasoning
1/2 tsp/2.5 mL Watkins Onion and Garlic Pepper
1 cup/250 mL cherry tomatoes, halved
1 medium green bell pepper, chopped
1 medium yellow or red bell pepper, chopped
1/4 cup/60 mL green onions, chopped
1/4 cup/60 mL sliced black olives
4 oz/113 g mozzarella cheese, cubed (or fresh)
1/4 cup/60 mL Parmesan cheese
Sea Salt Watkins Black Pepper to taste
Cook pasta according to package until al dente. Rinse with cold water and drain.
Mix oil, water, Snack and Dip Seasoning and garlic pepper together in small bowl. Set aside.
Combine vegetables with pasta and dressing and mix thoroughly. Add cheeses, adjust salt and pepper if desired and chill for at least three hours to allow flavors to develop. Makes 12 servings
Peanut Butter Chocolate Mousse Pie
1 (9-inch) pie crust, baked and cooled
1-2/3 cups (10-ounce package) Peanut Butter Chips, divided
1 package (3 ounces) cream cheese, softened
1/4 cup powdered sugar
1/3 cup plus 2 tablespoons milk, divided
1 teaspoon unflavored gelatin
1 tablespoon cold water
2 tablespoons boiling water
1/2 cup sugar
1/3 cup Watkins Cocoa
1 cup (1/2 pint) cold whipping cream
1 teaspoon Watkins Vanilla Extract
- Melt 1-1/2 cups peanut butter chips. Beat cream cheese, powdered sugar and 1/3 cup milk in medium bowl until smooth. Add melted chips; beat well. Beat in remaining 2 tablespoons milk. Spread into cooled crust.
- Sprinkle gelatin over cold water in small bowl; let stand 1 minute to soften. Add boiling water; stir until gelatin is completely dissolved. Cool slightly. Combine sugar and cocoa in medium bowl; add whipping cream and vanilla. Beat on medium speed of mixer until stiff; pour in gelatin mixture, beating until well blended. Spoon into crust over peanut butter layer. Refrigerate several hours. Garnish with remaining chips. Cover; refrigerate leftover pie.
Creamy Tropical Dessert
Escape to the Tropics whenever you please with this chilled pineapple and kiwifruit delight.
Almond Crust
1 1/2 cups all-purpose flour
1 cup butter or margarine, softened
1/2 cup powdered sugar
1/2 cup finely chopped almonds
Dessert Filling
1 package (8 oz) cream cheese, softened
2/3 cup granulated sugar
1 teaspoon Watkins Vanilla
1 can (20 oz) pineapple tidbits in juice, drained, 1 cup juice reserved
1 1/2 cups whipping cream
2 cups miniature marshmallows
1 tablespoon cornstarch
1 papaya or mango, peeled, seeded and cut into pieces
1 kiwifruit, peeled, cut into pieces
- Heat oven to 400 degrees F. In large bowl, beat flour, butter and powdered sugar with electric mixer on low speed 1 minute, scraping bowl constantly. Beat on high speed about 2 minutes or until creamy. Stir in almonds. Press mixture evenly in bottom of ungreased 13x9-inch pan. Bake 12 to 15 minutes or until edges are golden brown. Cool completely, about 30 minutes.
- In large bowl, mix cream cheese, granulated sugar and vanilla with spoon. Reserve 1/2 cup of the pineapple. Stir remaining pineapple into cream cheese mixture.
- In chilled medium bowl, beat whipping cream with electric mixer on high speed until stiff peaks form. Fold whipped cream and marshmallows into cream cheese mixture. Spread over crust. Cover and refrigerate at least 4 hours until set but no longer than 48 hours.
- In 1-quart saucepan, place cornstarch. Gradually stir in reserved 1 cup pineapple juice. Cook over medium heat, stirring constantly, until thickened and bubbly. Cook and stir 2 minutes longer. Cool completely, about 30 minutes. Fold in reserved 1/2 cup pineapple, the papaya and kiwifruit. For servings, cut dessert into 5 rows by 3 rows. Serve with fruit mixture. Store covered in refrigerator.

BIRD WATCHING
I would sure like to know what the Jays are saying to each other. Here in northern California we see Western Scrub Jays and Stellar's Jays every day. You can recognize both by their bright blue feathers. Stellar's Jays have a crest while Western Scrub Jays do not. All I have to do is put out a few handfulls of peanuts in the shell and they desend on our backyard screeching and squawking. They have excellent eyesight.
Jays screech, whistle, whisper, croak, rattle, and make rasping sounds like kwesh kwesh kwesh. They pose, peck, quiver, raise and lower their crests, flash meaningful looks at each other, and stand guard. Scrub Jays also make a rasping zhreek zhreek. Stellar's Jays tilt their head to one side and then to the other side. Stellar's Jays also mimic other sounds like the cry of the Red-tailed Hawk, the Golden Eagle, and chattering squirrels. They have been known to mimic other animal sounds as well.
They're communicating, all right, but I can only guess at what they mean. Still, sometimes I can catch the drift.
Today ornithologists are studying the communication of birds. They're trying to learn each species' vocabulary of gesture and sound. For example, we now know that jays announce a cat with a different call from the one they make when a hawk comes around. And based on the kind of call the jays make, other birds respond differently for each kind of threat.
Science has barely scratched the surface of communication between birds. But we can all listen to the sounds that birds make right in our own back yards. Simply noticing the sounds that birds make is the first step toward understanding them.
