Here are some of the replies from June's question: "Has the higher price of gasoline affected your lifestyle?" How do you compare?

  • Yes, the price of gasoline has effected our lifestyle. Anytime we drive to go shopping we manage to stop at as many stores that are in that particular area closeby as possible before leaving making it well worth our trip. We cut back on any uneccesary trips also. Our social life is also being affected. We manage to chose events closer to home. If there is an event we want to go to farther away from home we will see what else we can do in that area to make it worth the drive. Lilly from Pennsylvania

  • Boy has it, but, in a positve way! We do more walking (Cheryl walks to work and since it is relatively close she says it works for her). We walk to the local park about 6 blocks away and enjoy the outdoors now that the weather has warmed up. Dana from California

  • The higher cost of gas has somewhat affected our lifestyle. We are not canceling our family trips up north, but we are watching our other driving for the most part. Margaret from Wisconsin

  • The higher cost of gasoline has definitely affected my lifestyle. I consolidate as many errands and trips as possible and won't be taking a vacation this year. We limited eating out to once a week and then to a cheap or fast food type restaurant to help offset the cost of gasoline. I've also taken other measures to help reduce some of the increased costs attributed to the raise in gasoline prices. I purchased some cheap washcloths which we now use instead of paper towels for all but the very messiest chores. I use folded newspapers to soak up grease when I am cooking with one paper towel over them and use the old newspapers when peeling items such as potatoes, etc. I then microwave the peelings for 2 minutes and give them to my chickens when they cool for a treat.

    These are just a few of the "belt tightening" things I've implemented to help offset the rising costs attributed to the increased cost of gasoline. Marilyn from Missouri

COOKING TIP

Uses of an Egg Slicer

An egg slicer is a very versatile tool that is so handy in the kitchen. When making potato salad it is so easy to cut new potatoes into uniform slices by cooking them, peeling and then chilling in the refrigerator before slicing with the egg slicer. They can then be put through the slicer without breaking. I also use the slicer for cutting small beets, strawberries, peeled kiwi fruit and mushrooms.

RECIPES

Grilled Garlic Chicken

2 chickens, cut up
1 bunch scallions, minced
6 garlic cloves, peeled and finely chopped
2 cups orange juice
1/4 cup cider vinegar
2 teaspoons Watkins Dried Oregano
2 teaspoons salt
1/2 teaspoon crushed Watkins Red Pepper Flakes

Place the chicken pieces in 1 or 2 large resealable plastic bags and add the rest of the ingredients. Shake to mix. Refrigerate at least 1 hour or overnight.

Fire up a grill to medium heat or until the coals are lightly covered with ash. Cook the chicken skin-side up for 20 minutes. Turn and cook an additional 15 to 20 minutes or until the juices run clear when a thigh is pricked with a fork; it should register 180 degrees F on an instant-read thermometer.

Alternatively, roast the chicken uncovered in a preheated 400 degrees F oven for 35 to 45 minutes. Serve half the chicken hot and reserve the rest for another use.

Yield: 4 servings, with leftovers for salads, sandwiches, soups, or stir frys.

Lemon-Apricot Chicken

2 egg whites, slightly beaten
2 tablespoons water
1 cup Bisquick Heart Smart mix
1 tablespoon grated lemon peel
1/4 teaspoon Watkins Garlic Powder
6 small boneless skinless chicken breasts (1 lb)
2/3 cup apricot preserves
2 tablespoons lemon juice
1/2 teaspoon Watkins Ground Ginger
Lemon slices, if desired Watkins Cooking Spray

  1. Heat oven to 425 degrees F. Spray 15x10x1-inch pan with cooking spray. In shallow bowl, beat egg whites and water slightly. In another shallow bowl, mix Bisquick mix, lemon peel and garlic powder.
  2. Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound with flat side of meat mallet or rolling pin until about 1/2 inch thick. Dip chicken into egg mixture, then coat with Bisquick mixture. Place in pan. Spray chicken with cooking spray.
  3. Bake uncovered 20 minutes. Turn; bake 10 minutes longer or until juice is no longer pink when centers of thickest pieces are cut. Cut chicken crosswise into 1/2-inch slices.
  4. In 1-quart saucepan, mix all remaining ingredients except lemon slices. Cook over medium-low heat until hot, stirring frequently. Cut chicken crosswise into 1/2-inch slices; pour sauce over chicken. Garnish with lemon slices.

Cooking Tips

  • You can use a meat mallet, rolling pin or even a wine bottle to flatten chicken breast halves. Just pound each breast down to 1/2-inch thickness. This helps the meat cook quickly and evenly.
  • Serve this citrus chicken with basmati rice. Basmati rice has a wonderful nutlike flavor and fragrant aroma. It can be found in Indian and Middle Eastern markets and in many supermarkets.
  • Check your pantry. Peach or orange preserves can be substituted for the apricot preserves for an equally delicious dish.

Peanut Butter Cookies
This recipe is similar to the Mrs. Field's Peanut Butter Cookie recipe.

1/4 Teaspoon salt
1/2 Teaspoon baking soda
2 Cups flour
2 Teaspoons Watkins Double-Strength Vanilla Extract
1 Cup creamy peanut butter
3 Eggs
1 Cup softened butter
1 1/4 Cup granulated sugar
1 1/4 Cup dark brown sugar

Preheat your oven to 300 degrees F.

In a medium sized bowl, combine the flour, baking soda, and salt. Mix together with a wire whisk. In a large bowl, blend the sugars using an electric mixer at medium speed. Add butter and mix until it forms paste. Next, add the eggs, peanut butter, and vanilla extract. Mix at medium speed until the batter becomes light and fluffy. Add the flour mixture and change the mixer to low speed. Continue until just mixed.

Drop by tablespoons onto an ungreased cookie sheet, 1 1/2 inches apart. With a fork, gently press a crisscross pattern on top of each cookies. Bake for 10-20 minutes until cookies are slightly brown along the edges. Transfer cookies from the pan immediately with a spatula and allow them to cool.

If you like a little more crunch to your cookie add 1 cup of chopped peanuts.

Chocolate Cream Cheese Cupcakes

1 package (8 ounces) cream cheese, softened
1-1/2 cups sugar, divided
1 egg
1 teaspoon salt, divided
1 cup (6 ounces) semisweet chocolate chips
1-1/2 cups all-purpose flour
1/4 cup Watkins Baking Cocoa
1 teaspoon baking soda
1 cup water
1/3 cup canola oil
1 tablespoon white vinegar

Frosting
3-3/4 cups confectioners' sugar
3 tablespoons Watkins Baking Cocoa
1/2 cup butter, softened
6 tablespoons milk
1 teaspoon Watkins Double-Strength Vanilla Extract
1/3 cup chopped pecans

For filling, in a small mixing bowl, beat cream cheese and 1/2 cup sugar until smooth. Beat in egg and 1/2 teaspoon salt until combined. Fold in chocolate chips; set aside.

In a bowl, combine the flour, cocoa, baking soda, and remaining sugar and salt. In another bowl, whisk the water, oil and vinegar; stir into dry ingredients just until moistened.

Fill paper-lined muffin cups half full with batter. Drop filling by heaping tablespoonfuls into the center of each. Bake at 350 degrees F for 24-26 minutes or until a toothpick inserted in cake comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.

For frosting, in a large mixing bowl, combine confectioners' sugar, cocoa, butter, milk and vanilla; beat until blended. Frost cupcakes; sprinkle with pecans. Store in the refrigerator. Yield: 20 cupcakes.
