Decorative Ice Cubes
Make ice cubes festive for a party by freezing sprigs of mint, maraschino cherries, lemon peel, orange peel, or edible flowers in them. Pansies, nasturtiums, rose petals, tulip petals, dianthus, and lilacs are edible and can be used in cooking and are safe to eat. Buy them at the supermarket or organic food store or grow them yourself to make sure they have not been sprayed with insecticides.

Plan For a Heathy Vacation
- Check to see if you need any immunizations, especially if you're traveling to other countries, but it's also a good idea for those traveling in their own countries.
- Be sure to bring all important health-related information and medical supplies. Carry a list of the medications you're taking and any allergies you have, your doctor's name and phone number, and your health insurance information. If you take daily doses of medication, pack a couple of extra days' worth just in case your plans change or your transportation home is delayed.
- Do your best to avoid germs in planes, taxis, when exchanging money, and in other travel-related settings and situations. Washing your hands as often as possible can reduce your risk of getting sick. Drink only bottled water, which should also be used to brush your teeth. Don't eat any food that's been washed or cooked in water, unless it's been boiled. Don't drink beverages with ice.
- Don't overeat. Share high-fat and high-calorie dishes with a family member or friend.
- Stay active on your holidays by planning outings that involve plenty of walking.

RECIPES
Root Beer Cake
Cake
1 cup butter
2 cups granulated sugar
3 cups cake flour
1 1/2 tablespoons baking powder
1/2 teaspoon salt
3 1/2 teaspoons water
4 eggs
1 tablespoon Watkins Root Beer Extract
1 teaspoon Watkins Vanilla Extract
1 cup milk
Vanilla Frosting
7 1/2 cups confectioners' sugar
2 1/2 cups butter
3 to 5 tablespoons cream or milk
3 teaspoons Watkins Vanilla Extract
Preheat oven to 350 degrees F. Grease and flour 2 (9-inch) cake pans.
In a large mixing bowl, cream the butter; then add the sugar and continue mixing until light and fluffy.
Meanwhile, sift together the cake flour, baking powder, and salt.
With the mixer on low speed, gradually add the water and eggs to the butter mixture until blended. Mix in the root beer extract and vanilla. Alternately add the flour mixture and milk to form a smooth batter.
Pour the batter into the prepared pans and bake, about 30 to 40 minutes. Let cool in pans for 5 minutes, and then invert onto cooling racks to cool completely before frosting.
Mix Frosting
Combine the confectioners' sugar and butter and mix on low speed until well blended; then increase speed to medium and beat for another 3 minutes. Add the cream and vanilla and continue to beat on medium speed for 1 minute more, adding more cream if needed to reach spreading consistency.
To decorate the cake
Place 1 cooled cake layer on a cake stand, frost the top surface. Place the second cake layer on top. Frost the sides and top.
Lemon Parmesan Crusted Salmon
1 salmon fillet, 1 1/4 pounds
2 tablespoons butter or margarine, melted
1/2 teaspoon Watkins Garlic Salt
3/4 cup fresh white bread crumbs, 1 slice
1/4 cup grated Parmesan cheese
2 tablespoons thinly sliced green onions
2 teaspoons grated lemon peel
1/4 teaspoon Watkins Thyme
- Heat oven to 375 degrees F. Spray shallow baking pan with cooking spray. Pat salmon dry with paper towel. Place salmon, skin side down, in pan; brush with 1 tablespoon of the butter. Sprinkle with salt.
- Mix bread crumbs, cheese, onions, lemon peel and thyme in small bowl. Stir in remaining 1 tablespoon butter. Press bread crumb mixture evenly on salmon.
- Bake uncovered 15 to 25 minutes or until salmon flakes easily with fork. Serve immediately. 4 servings
Barbecue-Roasted Salmon
Watkins Cooking Spray
1/4 cup orange juice
2 tbsp fresh lemon juice
2 tbsp light brown sugar
4 tsp Watkins Chili Powder
2 tsp finely grated lemon zest
1 tspWatkins Ground Cumin
1/2 tsp salt
Pinch Watkins Cayenne Pepper
4 (6-ounce) salmon fillets, about 1-inch thick
- Preheat oven to 400 degrees F. Coat a shallow baking dish with cooking spray.
- In a small bowl, whisk together orange juice, lemon juice, brown sugar, chili powder, lemon zest, cumin, salt, and cayenne.
- Using tongs, add salmon fillets to the prepared pan. Pour the orange juice mixture over the salmon and turn to coat both sides.
- Roast for 15 minutes, until the salmon flakes with a fork.
Slow-Cooker Baked Beans
Don't heat up the whole house for baked beans. Slow cook them! Get the same spicy brown sugar taste, and let your slow cooker take the heat.
3 cans (28 ounces each) baked beans
1 medium onion, chopped (1/2 cup)
2/3 cup barbecue sauce
1/2 cup packed brown sugar
2 tablespoons ground mustard
- Mix all ingredients in 3 1/2- to 6-quart slow cooker.
- Cover and cook on low heat setting 4 to 5 hours (or high heat setting 2 hours to 2 hours 30 minutes) or until desired consistency.
Marinated Corn Salad
2 cups yellow corn kernels, about 4 ears (or use frozen)
1/4 cup water
1/4 cup chopped green bell pepper
1/4 cup chopped red bell pepper
1/2 cup chopped celery
3 green onions, sliced
1/4 cup vegetable oil
1 1/2 tablespoons cider vinegar
1 tablespoon sugar
2 teaspoon salt
1/2 teaspoon Watkins Dry Mustard
1/4 teaspoon Watkins Granulated Pepper
Combine corn and water in a medium saucepan. Bring to a boil; cover, reduce heat, and simmer 3 to 4 minutes, or until corn is crisp-tender. Drain well.
Combine the corn, green and red bell pepper, celery, and green onions in salad bowl. Set aside.
In a small bowl, whisk together the oil, vinegar, sugar, salt, mustard, and pepper mixing well. Pour over vegetables and gently mix to coat well. Cover and chill for 3 to 4 hours before serving. Makes 4 to 6 servings.
Strawberry Pizza
Both strawberry and cheesecake lovers will delight in this fruity treat.
Crust
6 tablespoons butter, softened
1/2 cup sugar
1 egg
1/2 teaspoon Watkins Vanilla Extract
1/4 teaspoon Watkins Almond Extract
1-1/4 cups all-purpose flour
1/2 teaspoon Watkins Baking Powder
1/2 teaspoon salt
Filling
1 package (8 ounces) cream cheese, softened
1/2 cup confectioners' sugar
2 cups sliced fresh strawberries
1 cup sugar
1/4 cup cornstarch
2 cups crushed strawberries
In a mixing bowl, cream butter and sugar for 2 minutes. Beat in egg and extracts. Combine flour, baking powder and salt; gradually add to creamed mixture and mix well. Cover and refrigerate for 1 hour.
On a floured surface, roll dough into a 13-in. circle. Transfer to an ungreased 12-in. pizza pan. Build up edges slightly. Bake at 350 degrees F for 18-22 minutes or until lightly browned. Cool completely.
In a mixing bowl, beat cream cheese and confectioners' sugar until smooth. Spread over crust. Arrange sliced strawberries on top.
In a saucepan, combine sugar, cornstarch and crushed berries until blended. Bring to a boil; cook and stir for 2 minutes or until thickened. Cool slightly. Spoon over strawberries. Refrigerate until serving. Yield: 12-16 servings.

BIRD WATCHING
Birds Need Water
Birds need water as much as they need food. Their high metabolic rate and respiration system drains moisture from their bodies quickly, resulting in some very parched birds.
Birds do not use water just to quench their thirst; they also use it for bathing and preening their feathers. Clean feathers are important for birds' health and optimum flying ability.
Put out water dishes, birdbaths, fountains, drippers, and misters to give your backyard birds water. Create a summertime water oasis in your backyard. I've seen hummingbirds in my yard frolic in the fine mist of the sprinklers. Birds are also attracted to dripping water.
Every other day you should empty the bath, scrub it with a brush and rinse it well. Refill with fresh water. If the alga builds up quickly, you can use ten parts water to one part bleach solution to clean the birdbath. Be sure to rinse well and place fresh water in the bath.
