    EMERGENCY INFORMATION FOR YOUR FAMILY

    Print a business size card for each member of your family and laminate it to carry in wallet or purse. On each card include the family member's name, relationship, city and phone number to be called in case of emergency; doctor's and dentist's names; allergies; and list of daily prescriptions. They come in very handy whenever you go to a doctor, dentist, blood bank, or in an emergency.

    Getting Stuck in an Exercise Rut Could Put Body and Mind at Risk.

    Repetitive exercise routines may cause overuse injuries, and new research shows they may hurt your mental health, too. According to a study, people 65 or older who engage in four or more different kinds of physical activities each week are less likely to develop Alzheimer's disease than people who participate in one or no activities.

    The causes of Alzheimer's disease are unclear; the only clearly defined risk factors are advanced age and a family history of the disease. However, evidence suggests you may lower your risk of Alzheimer's with certain lifestyle choices, such as eating a healthful diet, exercising regularly, and engaging in mentally stimulating activities. Nutrients that may reduce the risk of Alzheimer's include omega-3 fatty acids, vitamins C and E, folate, and flavonoids, such as those found in colorful fruits and vegetables, tea, and dark chocolate. A recent study suggests variety in exercise activities may be protective, but not in people who have the APO-E 4 variant of the apolipoprotein E gene, a gene implicated in Alzheimer's disease risk.

    COOKING TIP

    Pine, spruce, or other evergreen wood should never be used for barbequeing. These woods, when burning or smoking, can add harmful tar and resins to the food.

    Only hardwoods should be used for smoking and grilling, such as oak, pecan, hickory, maple, cherry, alder, apple, or mesquite, depending on the type of meat being cooked.

    Walnuts - Healthy Food for this Issue

    In previous issues we have discussed the health benefits of the following "healthy foods:"

    Our "healthy food" for this issue is walnuts.

    FDA News The U.S. Food and Drug Administration affirms the first whole food health claim for walnuts, "Supportive but not conclusive research shows that eating 1.5 ounces per day of walnuts, as part of a low saturated fat and low cholesterol diet and not resulting in increased caloric intake, may reduce the risk of coronary heart disease. "

    Walnuts are a very good source of antioxidants, vitamins, fiber, and a plant source of omega-3 fatty acids.

    For more than a dozen years, research by highly-respected scientific and clinical experts has continued to reveal that just a handful of walnuts daily can play a significant role in reducing the risk of heart disease by lowering cholesterol, reducing inflammation and improving arterial function. In addition, a recent study conducted in Australia shows that, for patients with type 2 diabetes, a diet including walnuts can reduce LDL "bad" cholesterol by as much as 10 percent while helping reduce insulin resistance.

    Care & Storage

    Walnuts are an ideal pantry staple as they have a long shelf life. So always keep some on hand to add to recipes or enjoy as a snack.

    Storage Tips

    • Store walnuts in low moisture, (55 to 65 percent relative humidity), and low temperature 32-38ºF (0-3.3ºC) conditions.
    • To ensure maximum shelf life, keep walnuts in an odor-free environment.
    • Exposure to light, moisture and heat will reduce the shelf life of walnuts.
    • Keep chopped walnuts in an air-tight container stored in a dark, cool place.
    • Chopped walnuts refrigerated or frozen in an air-tight container will last up to six months.
    • Unopened packages of shelled walnuts have a shelf life of up to one year.
    • Cold storage is best because coolness prolongs the oxidation of natural walnut oil, which can contribute to off flavors.
    • Whole, in shell walnuts keep best.
    • In-shell walnuts should also be stored in a cool, dry place. If properly stored, they will last up to six months.
    • Do not shell nuts until you are ready to use them.

    Versatile walnuts go with breakfast, lunch or dinner. And they make for a tasty, healthy snack. Walnuts add flavor, crunch, texture and health.

    • On top of breakfast cereal
    • Tossed into salad or on pasta
    • Sprinkled into stir frys

    • Whole walnuts in a bowl to crack open for snacking

    • Chopped walnuts give summer coleslaws additional texture and crunch.

    Did you know that by simply adding a handful of walnuts a day to your diet, you can help reduce cholesterol?

    What is a handful? About 1/4 cup or 8-11 walnut halves. It is easy to add a handful of walnuts into your diet everyday. Walnuts are also a good source of protein and fiber.

    Walnuts can be candied, pickled, blanched, toasted, crushed for flours, ground for pastes, and eaten unshelled. Add a walnut garnish to your plate presentation. Use walnuts alone or paired with fruit, cheese, or your personal favorites.

    Southwest Spiced Walnuts
    Great by the handful or sprinkled over salads, these spiced nuts are addictive.
    Yield 2 cups

    2 cups walnut halves
    1 tablespoon sugar
    1/2 teaspoon kosher salt
    1/2 teaspoon Watkins Garlic Salt
    1/2 teaspoon Watkins Ground Cumin
    1/4 teaspoon Watkins Cayenne Pepper
    1 tablespoon walnut oil or canola oil

    Preheat the oven to 375F. Spread the walnuts on a baking sheet and roast about 5 minutes until golden brown. Place the sugar, salt, garlic powder, cumin, and cayenne pepper in a small bowl and stir to combine. Heat the oil in a large nonstick skillet over medium heat. Add the nuts and stir to coat with the oil. Add the seasoning mixture and toss until the nuts are coated. Cool on a paper towel.

    Per serving: 186 calories, 4g protein, 5g carbohydrates, 1.8g fiber, 18g total fat, 1.7g saturated fat, 10g omega-6 fat, 2.5g omega-3 fat, 0mg cholesterol, 140mg sodium

    Honey Walnut Spread
    Goat cheese is available in various shapes and textures, and sometimes flavored with herbs or spices. For this recipe, you want an unflavored cheese, and what you use will depend on local availability and your preferences. The honey walnut spread makes a generous amount; serve the extra in a bowl, with crackers or additional sliced bread.
    Serves 12

    1/4 cup Watkins Hot Honey Soy Sauce
    2 cups (8 ounces) walnuts
    3/4 cup honey
    3/4 cup (about 4 ounces) dried pears, cut in 1/4-inch dice
    2 teaspoons Watkins Provencal Herb and Spice Grilling Rub
    1 teaspoon ground coriander
    2 tablespoons finely grated orange zest
    1 tablespoon orange juice
    1 teaspoon lemon juice
    1/8 teaspoon Watkins Sea Salt
    12 slices baguette-type French bread, (16 ounces), cut diagonally, about 1/2-inch thick
    4 ounces (1/2 cup) plain goat cheese

    Preheat the broiler.

    Chop 1 cup of the walnuts coarsely; chop the remaining cup of nuts finely. Place all the nuts in a large bowl and add the honey, pears, herbes de Provence, coriander, orange zest, orange juice, lemon juice and salt. Beat vigorously until completely mixed. Set aside.

    Slice baguette on the diagonal into about 12 slices. Place on a baking sheet. Cut the cheese into pieces and divide among the baguette slices. Broil until cheese is just melted and spread cheese uniformly on slice. (Broil about 4 inches from heat, just to warm the bread and soften the cheese - watch closely, this only takes a moment.) Top each with a spoonful of Honey Walnut Spread and serve immediately.

    Cinnamon Nuts
    Serves 6

    2 tablespoons Butter
    1 cup Walnuts or other shelled nuts
    1 1/2 tablespoons Splenda
    1/2 teaspoon Watkins Ground Cinnamon

    Melt the butter in a heavy skillet over medium heat, then add the nuts. Cook for 3-5 minutes, stirring frequently from time to time. Turn off heat and immediately sprinkle the Splenda and cinnamon over the top, and stir to distribute. Cool.

    161 Calories; 16g Fat (81.9% calories from fat); 5g Protein; 3g Carbohydrate; 1g Dietary Fiber; 10mg Cholesterol; 39mg Sodium.
    Exchanges: 0 Grain(Starch); 1/2 Lean Meat; 3 Fat.

    Nutty Stuffed Mushroom Caps
    Serves 6

    18 large mushroom caps, about 1lb total
    1/4 cup prepared Watkins Chicken Broth
    1/4 cup chopped shallots
    1 Italian plum tomato, or other small tomato, diced
    1/3 cup chopped walnuts
    2/3 cup fat free mayonnaise
    1 1/2 cups fresh white bread crumbs
    1 tablespoon chopped fresh tarragon OR 1 teaspoon Watkins Tarragon
    Salt and Watkins Black Pepper to taste

    Preheat oven to 375 F.

    Remove the stems from the mushroom caps, thus leaving an indentation in the underside of each cap to hold the filling later. Chop the stems and set aside.

    Coat a large nonstick skillet with Watkins Cooking Spray and place over medium-high heat. When hot, add the whole mushroom caps and cook for about 1 minute on each side, until faintly browned. Place the mushrooms, stem end up on a baking sheet.

    Return the pan to medium heat and add the broth. When it boils, add the mushroom stems and shallots and cook until most of the liquid has evaporated, 2 - 3 minutes. Scrape the mixture into a bowl and add the tomato, walnuts, mayonnaise, bread crumbs and tarragon. Stir to combine, then season with salt and pepper to taste.

    Mound the walnut mixture among the mushroom caps, placing a generous tablespoon in each one. Bake 15 - 18 minutes, until mushrooms are tender but hold their shape. If desired, place under a preheated broiler for a moment to brown the tops lightly. Serve warm or at room temperature.

    Curried Walnut Chicken
    Serves 6

    1/4 cup Watkins Spicy Garlid Soy Sauce
    1/4 cup sherry or red wine
    2 tsps vegetable oil
    2 Tbsps sugar
    1 clove garlic, minced
    1 Tbsp grated fresh gingerroot OR 1-1/2 tsps Watkins Ginger
    4 skinless, boneless chicken breast halves

    Lemon Curry Sauce
    1/3 cup fat-free mayonnaise
    1/3 cup plain nonfat yogurt
    2 Tbsps lemon juice
    2 tsps Watkins Curry Powder
    1 clove minced garlic
    Salt and Watkins Black Pepper to taste
    2/3 cup chopped walnuts

    To make the marinade, in a medium bowl combine the soy sauce, sherry, oil, sugar, garlic, and gingerroot or ginger. Whisk until the sugar has dissolved. Put the chicken in a large lock-top plastic bag and pour in the marinade. Press the air out and seal the bag tightly, then massage the bag gently to distribute the marinade. Place in a large bowl and refrigerate for at least 2 hours, or for up to all day if you wish. Remove the chicken from the marinade; reserve the marinade.

    To barbecue the chicken, grill over hot coals, turning occasionally and brushing two or three times with the reserved marinade during the first 10 minutes. Total cooking time is about 15 minutes; chicken is done when it is opaque throughout, with no trace of pink in the center; cut into a couple pieces to be sure.

    Alternately, cook the chicken under the broiler, turning it once and brushing two or three times with the reserved marinade during the first 8 minutes. Total cooking time is 12 - 15 minutes, and the chicken is done when it is opaque throughout, with no trace of pink in the center. Cut into pieces to be certain.

    At any free moment, prepare the Lemon Curry Sauce: in a small bowl stir together the mayonnaise and yogurt, lemon juice, curry and garlic. Season with salt and pepper to taste and stir in walnuts. Serve breast halves accompanied by the Lemon Curry Sauce.

    Raised Walnut Waffles
    Makes 8 waffles

    1/2 cup warm water
    1 package dry yeast
    2 cups warm milk
    1/2 cup melted butter
    1 teaspoon salt
    1 teaspoon sugar
    1 tsp Watkins Vanilla
    2 cups all-purpose flour
    2 eggs
    1/2 cup finely chopped walnuts
    1/4 teaspoon baking soda

    Use a rather large mixing bowl, as the batter will rise to double its original volume. Put the water in the mixing bowl and sprinkle in the yeast. Let stand to dissolve for 5 minutes. Add the milk, butter, salt, sugar and flour to the yeast mixture and beat until smooth and blended. Cover the bowl with plastic wrap and let stand overnight at room temperature.

    Just before cooking the waffles, beat in the eggs, add the walnuts and the baking soda, and stir until well mixed. The batter will be very thin. Pour about 1/2 - 3/4 cup batter into a very hot waffle iron. Bake the waffles until they are golden and crisp. This batter will keep well for several days in the refrigerator.

    Per serving: 310 calories, 8.64g protein, 29.28g carbohydrates, 1.53g fiber, 17.91g total fat, 8.04g saturated fat, 78.53mg cholesterol, 382.7mg sodium.

    Biscotti Walnut Mix
    Yield 4 quarts (One serving = 1 cup and contains 1/2 oz. of walnuts)

    3 cups reduced-fat all-purpose baking mix
    1/2 cup sugar
    1 tablespoon Watkins Cinnamon
    1 teaspoon Watkins Nutmeg
    2 cups walnuts, in large pieces and halves
    1 egg
    1/2 cup nonfat milk
    about 1/3 cup all-purpose flour, for dusting the work surface
    2 cups dried cranberries
    2 cups diced dried apples or pears

    Preheat the oven to 425º F. Cover a large baking sheet with foil; set aside.

    In a large bowl, place the baking mix, sugar, cinnamon, nutmeg and 1 cup of walnuts. Stir and toss the mixture with a fork until the ingredients are thoroughly mixed. In a cup or small bowl, beat together the egg and milk. Add to the walnut mixture and stir with a fork until the dough holds together in a rough mass.

    Dust your work surface with some of the flour and turn the dough out onto it. Knead the dough gently a few times to make it more manageable, sprinkling on additional flour as needed to keep it from sticking to your hands and the surface.

    Divide the dough into 8 fairly equal pieces and on the floured surface press, pat and roll each piece into a cigar-shaped cylinder about 1/2 - 3/4 inch wide and 10 inches long. Transfer to the baking sheet, leaving about 1 - 1/2 inches between each piece of dough. Bake 12 - 15 minutes, until the strips of dough have puffed and spread slightly. Remove from the foil and cool completely. Reduce the oven temperature to 325 F.

    With a sharp knife cut each strip of dough crosswise into pieces 1/3 - 1/2 inch, so they look like tiny biscotti. Don't worry if a few cookies break. Transfer to a large baking pan or roasting pan and add the remaining 1 cup of walnuts. Bake for about 25 minutes, stirring 2 or 3 times during baking, until golden brown. Cool. Stir in the dried fruit and enjoy. Store in air-tight container.

    Easy Oatmeal Caramel Bars
    Take these bars to your next picnic or get together. Makes 16 bars

    1 roll (18 oz) Pillsbury refrigerated chocolate chip cookies
    1 cup quick-cooking oats
    Dash salt, if desired
    2/3 cup caramel topping
    5 tablespoons Gold Medal all-purpose flour
    1 teaspoon Watkins Vanilla
    3/4 cup chopped walnuts
    1 bag (6 oz) semisweet chocolate chips (1 cup)

    1. Heat oven to 350°F. Break up cookie dough into large bowl. Add oats and salt; mix well. Reserve 1/2 cup dough mixture for topping. Press remaining dough mixture evenly in bottom of ungreased 9-inch square pan to form crust.
    2. Bake 10 to 12 minutes or until dough puffs and appears dry. Meanwhile, in small bowl, combine caramel topping, flour and vanilla; blend well.
    3. Remove partially baked crust from oven. Sprinkle walnuts and chocolate chips evenly over crust. Drizzle evenly with caramel mixture. Crumble reserved 1/2 cup dough mixture over caramel.
    4. Return to oven; bake 20 to 25 minutes longer or until golden brown. Cool 10 minutes. Run knife around sides of pan to loosen. Cool completely, about 1 1/2 hours. For bars, cut into 4 rows by 4 rows.

    Heavenly Layered Bars
    Makes 36 bars

    1 roll (18 oz) Pillsbury refrigerated chocolate chip cookies
    1/2 cup chocolate cookie crumbs
    1 bag (11 oz) butterscotch chips
    1 1/2 cups flaked coconut
    1/2 cup chopped walnuts
    1 can (14 oz) sweetened condensed milk (not evaporated)

    1. Heat oven to 350°F. Line 13x9-inch pan with heavy-duty foil, extending foil over sides of pan. Spray bottom and sides of foil with nonstick cooking spray or grease foil. Break up cookie dough into sprayed foil-lined pan. With floured fingers, press dough evenly in bottom of pan to form crust.
    2. Sprinkle cookie crumbs evenly over crust. Top evenly with butterscotch chips, coconut and walnuts. Drizzle condensed milk over top.
    3. Bake 30 to 40 minutes or until edges are golden brown. (Center will not be set.) Cool completely, about 2 hours. Use foil to lift bars from pan. For bars, cut into 6 rows by 6 rows.

    CHERRY CRANBERRY SHAKES

    1 cup cranberry juice, chilled
    1 cup cherry soda, chilled
    1 tablespoon milk or half-and-half cream
    3/4 teaspoon Watkins Vanilla
    1 cup vanilla ice cream, softened

    Place all of the ingredients in a blender; cover and process until smooth.
    Pour into chilled glasses. Yield: 3-1/2 cups.

    HOMEMADE ROOT BEER ICE CREAM

    3 eggs
    2 c. sugar
    4 1/2 c. milk
    3 c. heavy whipping cream
    2 T. Watkins Root Beer Extract
    3/8 tsp. salt

    Beat eggs until light. Add sugar, gradually beating until thick. Add remaining ingredients and mix well. Pour into 4 quart ice cream maker and freeze.

    Butter Pecan Ice Cream

    Makes about 2 quarts

    1 (14-ounce) can EAGLE BRAND Sweetened Condensed Milk (NOT evaporated milk)
    1 to 1 1/2 cups chopped pecans
    3 tablespoons butter or margarine, melted
    1 teaspoon Watkins Butter Pecan Extract
    2 cups half-and-half
    2 cups whipping cream, unwhipped

    In large bowl, combine EAGLE BRAND, pecans, butter, and flavoring; mix well. Stir in remaining ingredients. Pour into ice cream freezer container. Freeze according to manufacturer’s instructions. Freeze leftovers.

    Vanilla Ice Cream

    Makes about 1 1/2 quarts

    4 cups (2 pints) half-and-half or light cream
    1 (14-ounce) can EAGLE BRAND Sweetened Condensed Milk (NOT evaporated milk)
    2 tablespoons Watkins Vanilla

    In 2-quart ice cream freezer container, combine all ingredients; mix well.
    Freeze according to manufacturer’s instructions. Freeze leftovers.

    Peach Ice Cream: Reduce vanilla to 1 tablespoon and add 1 teaspoon Watkins Almond Extract, 4 drops yellow and 2 drops red food coloring. If desired add 2 cups mashed fresh or frozen peaches, thawed or 1 (16-ounce) can peaches, drained and mashed. Proceeed as above.

    Strawberry Ice Cream: Reduce vanilla to 1 tablespoon. Add 1 teaspoon Watkins Strawberry Extract and 2 cups mashed fresh or frozen strawberries, thawed and few drops red food coloring if desired. Proceed as above.

    Banana Ice Cream: Reduce vanilla to 1 tablespoon; Add 1 teaspoon Watkins Banana Extract and 2 cups mashed bananas (4 medium). Proceed as above.
