COOKING TIPS
Low Fat Cooking
- Get into the habit of measuring the oil you use while you cook, rather than just pouring it out of the bottle. It will be much easier to moderate the amount you use.
- Use non-stick cookware so that you don't have to use as much, if any, fat. When sauteing, use a small amount of chicken broth or wine instead of butter or oil.
- When cooking a dish with both vegetables and meat (i.e. in stir frys and stews), reduce the amount of meat by 1/3 and increase the amount of vegetables by 1/3. You will hardly notice!
- Thicken gravies with milk or broth blended in the blender with flour. Be sure to cook long enough to remove the raw flour taste. You'll never notice the lack of fat.

RECIPES
Honey-Glazed Black Pepper Roast Beef
Enjoy this sweet and peppery beef with baked sweet potatoes or roasted broccoli. Leftover beef makes great roast beef sandwiches.
2 tablespoons coarsley ground black pepper from Watkins Whole Black Peppercorn with Grinder Top
1 tablespoon coarse sea salt from Watkins Sea Salt with Grinder Top
1 (4-pound) beef top round roast
6 tablespoons honey
3 tablespoons balsamic vinegar
1 tablespoon canola oil or Watkins Grapeseed Oil
Preheat oven to 400 degrees F. Rub beef all over with pepper and salt and place on a rack in a roasting pan. Roast beef, undisturbed, for an hour.
Meanwhile, whisk together honey, vinegar, and oil in a medium bowl. After 45 minutes of roasting, brush beef all over with honey mixture. Continue to cook 15 minutes then reduce oven temperature to 350°F. Roast 10 to 30 minutes more, until roast has reached desired degree of doneness, brushing it every 15 minutes with glaze. Note that the meat will continue cooking while it rests after being removed from the oven and the temperature will rise another 5 or 10 degrees. Let meat rest 15 minutes before slicing thinly. Serve with pan juices drizzled over the top.
Serves 6 to 8.
Creamy Chicken Tomato-Basil Pasta
3 cups multi-grain or regular penne pasta, uncooked
1/4 cup Sun Dried Tomato Vinaigrette Dressing, divided
4 small boneless skinless chicken breasts (1 lb.)
1 cup chicken broth made with 1 cup boiling water and 1 1/2 teaspoons Watkins Chicken Soup Base
1/2 tsp. Watkins Garlic Powder
1/2 tsp. Watkins Black Pepper
4 oz. (1/2 of 8-oz. pkg.) Neufchatel Cheese, cubed
2 cups diced tomatoes
1/2 cup Shredded Parmesan Cheese
1/2 tsp. Watkins Basil
Cook pasta as directed on package. Meanwhile, heat 2 tablespoon dressing in large skillet on medium heat. Add chicken; cover. Cook 5 to 6 minutes on each side or until done (165 degrees F). Remove chicken from skillet; cover to keep warm. Carefully wipe out skillet with paper towel.
Add remaining dressing, broth and seasonings to skillet; cook 3 to 4 minutes or until heated through. Add Neufchatel Cheese; cook and stir 2 to 3 minutes or until melted. Stir in tomatoes; cook 3 minutes.
Drain pasta. Add to ingredients in skillet with Parmesan cheese and basil; mix well. Serve topped with chicken.
Serve with a crisp tossed green salad.
Snow Pie with Raspberry Sauce
1 cup/250 mL water
1/2 cup/125 mL sugar
3 1/2 tbsp/50 mL vanilla pudding mix
3 egg whites, beaten until stiff
1 tsp/5 mL Watkins Original Double-Strength Vanilla
1/2 tsp/2.5 mL Watkins Almond Extract
1 baked and cooled 9 inch/23 cm pastry pie shell
Whipped topping or whipped cream flavored with Watkins Original Double-Strength Vanilla
Boil one cup water and sugar until clear. Mix pudding mix with a little cold water; add to sugar syrup. Stir and cook until clear and bubbly. Immediately pour syrup in a thin stream into beaten egg whites and beat until stiff peaks form. Beat in vanilla and almond extracts. Pile into pie shell. Top with sauce (recipe below) and whipped topping; garnish as desired. Makes 8 servings.
Raspberry Sauce
1/3 cup/80 mL sugar
3 tbsp/45 mL vanilla pudding mix
3/4 cup/180 mL water
1 package (10 oz/283 g) frozen raspberries
A few drops of lemon juice
Combine all ingredients in medium saucepan. Cook and stir until mixture begins to boil and thicken. Chill until ready to use.

BIRD WATCHING
Have you seen a tiny chickadee or titmouse pecking at the shell of a peanut to get at the treat inside? It's takes a very determined bird with a very tiny beak! Sorry I didn't get a photo.

I did have a pleasant surprise yesterday! I saw six Chestnut-Backed Chickadees at my feeders all at once! I put up bird houses (nesting boxes) in my back yard and they may have helped to increase the local chickadee population. Oak Titmice, California Towhees, Mourning Doves, White-Breasted Nuthatches, House Finches, Western Scrub Jays, Stellar's Jays, Goldfinches, and Anna's Hummingbirds continue to visit but in lesser numbers.
Two California Quail visited our backyard stopping to sun themselves on an azalea planter. The darker-headed one is the male quail and the lighter-colored one is the female.
