Deglazing is accomplished by adding a small amount of liquid to a pan in which foods (usually meats) have been browned or roasted and stirring the liquid while scraping the bottom of the pan to dissolve all the delicious "brown bits" stuck to the bottom. The liquid can then be spooned over the finished dish or used as the base of a sauce or gravy. Deglazing has the added benefit of making cleanup easier because much of the cleaning of the pan is done by the hot liquid.
Appetizer Meatballs In a Dutch oven, combine the first nine ingredients. Bring to a boil. Reduce heat; simmer, uncovered for 15 minutes. Meanwhile, thaw meatballs in microwave according to package directions. Stir into sauce; simmer meat balls in sauce for several minutes so they absorb the flavor. Yield: about 6 dozen.
Bacon and Onion Stuffed Mushrooms Remove stems from mushrooms; brush caps with oil. Stir seasoning into cream cheese; fill opening where mushroom stem was removed with mixture. Bake on cookie sheet at 350 degrees F/180 degrees C for 10-15 minutes. Remove from oven; sprinkle with green onions or chives. Makes 24 appetizers.
Broccoli Cheese Soup Cut Velveeta into cubes. Combine all dry ingredients in a medium saucepan. Add milk and water and mix well. Cook over medium-high heat stirring constantly, until mixture comes to a boil. Reduce heat and add Velveeta. Stir until sauce is smooth. Add broccoli and simmer for 10 minutes. Makes 6 servings. You can use other vegetables in place of the broccoli (asparagus, cauliflower, and potatoes.)
Peanut Butter Crunch Cookies
On one of my bird counting days for Project FeederWatch I was watching and counting the birds at my feeders. A wren and a chickadee were both pecking at the suet. The chickadee was a little more aggressive and frightened the wren a short distance away. The wren was not about to give up and continued to reach for the suet. Then, the chickadee seemed to deliberately break off a chunk of the suet, bend over, and drop the suet to the ground.
