Coconut Rice Pudding

This slow-cooked winter comfort dessert is a healthier option for your family that doesn't sacrifice comfort or flavor.

1 cup uncooked long grain rice
5 cups coconut milk, divided
2 tablespoons coconut oil
3/4 cup turbinado sugar or 3/4 cup brown sugar
1 cup dried cranberries or cherries
2 teaspoons Watkins Vanilla Extract
1 teaspoon Watkins Ground Cinnamon
Dash salt
Toasted sweetened shredded coconut and additional coconut milk, optional Sliced almonds, toasted

1. Place rice in a 3- or 4-qt. slow cooker coated with cooking spray; pour in 4 cups coconut milk. Add coconut oil; distribute evenly over top. Add the next five ingredients.
2. Cook, covered, on low until rice is tender, 4-5 hours, adding enough remaining coconut milk to reach desired consistency.
3. Let stand, uncovered for 10 minutes. Serve warm, with toasted coconut and sliced almonds and additional coconut milk if desired. Yields 12 servings.

Taco Meat

1 Tablespoon Vegetable Oil
1 Cup Onion, Finely Chopped
2 Tablespoons Watkins Chili Powder
3 Cloves Garlic, Minced or 1 Teaspoon Watkins Organic Garlic Powder
1 Teaspoon Watkins Cumin
1/2 Teaspoon Watkins Oregano
1/8 to 1/4 Teaspoon Watkins Crushed Red Pepper
Salt to taste
1 Pound Ground Beef, 90/10
1/2 Cup Canned Tomato Sauce
1/2 Cup Chicken Broth made with 1/2 cup boiling water and 1 teaspoon Watkins Soup and Gravy Base
2 Teaspoons Apple Cider Vinegar
1 Teaspoon Brown Sugar, Packed
Taco Shells

In a skillet, heat vegetable oil until it begins to shimmer. Stir in onions and saute until they're soft, about 5 minutes.

Add chili powder, garlic, cumin, oregano, cayenne, and 1 teaspoon salt. Continue to cook until mixture becomes fragrant, about 30 seconds.

Add ground beef, breaking up the meat, and continue to cook until there is no longer any pink left, about 5 minutes.

Add the tomato sauce, broth, vinegar, and brown sugar. Simmer mixture until slightly thickened, about 10 minutes. Adjust seasoning as needed.

Spoon taco meat into shells. Top with cheese, onion, lettuce, tomato.

Old-Fashioned Snickerdoodle Cookies

3/4 cup sugar
1/2 cup butter (1 stick)
1 medium egg
1/2 teaspoon Watkins Baking Vanilla
1 teaspoons baking powder
1/4 teaspoon salt
1-2/3 cups flour
2 tablespoons sugar mixed with 1-1/2 teaspoons Watkins Ground Cinnamon

Preheat the oven to 400 F.

Cream the butter and sugar together. Add the egg and vanilla and continue to mix until you have a light and creamy mixture. Combine the baking powder, salt and flour and add it to the butter mixture. Mix until you have a nice stiff dough.

Pour the sugar and cinnamon mixture into a small bowl. Break off walnut-sized chunks of the dough, roll it into a ball and then roll it in the sugar mixture. Place the cookies on a greased cookie sheet and flatten slightly.

Bake for about 10 minutes or until the cookies look done. They will be soft and chewy. Remove from pan and cool on rack.

I stopped feeding my backyard birds for several months because we had a rodent problem. I recently filled my feeders again and several young Chestnut-backed Chickadees found the feeders. One day I had seven or eight little chickadees eating seeds. It was fun watching the cheery little birds flying around my feeders.
