LAUGH WITH ME
There was once a snail who was sick and tired of his reputation for being so slow. He decided to get some fast wheels to make up the difference. After shopping around a while, he decided that the Datsun 240-Z was the car to get. So the snail goes to the nearest Datsun dealer and says he wants to buy the 240-Z, but he wants it repainted "240-S."
The dealer asks, "Why 'S'?"
The snail replies, "'S' stands for snail. I want everybody who sees me roaring past to know who's driving."
Well, the dealer doesn't want to lose the unique opportunity to sell a car to a snail, so he agrees to have the car repainted for a small fee.
The snail gets his new car and spent the rest of his days roaring happily down the highway at top speed. And whenever anyone would see him zooming by, they'd say "Wow! Look at that S-car go!"

RECIPES
Shrimp and Crab Potato Bites
This appetizer has a hash brown crust with a savory seafood filling.
Crust
1 1/2 cups refrigerated hash brown potatoes
2 tablespoons butter, melted
Fillling
1 (8 ounce) package cream cheese, softened
1 teaspoon Watkins Onion Flakes or Minced Green Onion
2 tablespoons Watkins Crab Snack and Dip Seasonings
1 cup (4 ounces) Swiss cheese, shredded
1 (6 ounce) can crabmeat, drained, cartilage removed, flaked
1 (4 ounce) package frozen cooked salad shrimp, thawed, drained
1 egg
1 tablespoon all-purpose flour
1/8 teastpoon Watkins Cayenne Pepper
Heat oven to 425 degrees F. Combine crust ingredients in small bowl. Press into bottom of ungreased 8-inch square baking pan. Bake for 20 minutes.
Mix softened cream cheese with onion flakes and crab snack and dip seasoning. Combine all other filling ingredients except 1/4 cup cheese in medium bowl; mix well. Spread mixture over hot, partially baked potato layer. Bake for 10 to 15 minutes or until cheese mixture is set. Let stand 5 minutes. Sprinkle with remaining cheese. Garnish each piece with parsley and shrimp, if desired. Serve warm or at room temperature.
Recipe Tip
Canned shrimp can be used in this recipe but has more of a briny flavor than the frozen variety.
Confetti Corn Bread
This moist sweet savory cornbread tastes great with chili or stew. The basic batter tastes similar to Marie Callenders corn bread.
2 eggs
3/4 cup milk
2 tablespoons melted butter or margarine
1 1/2 cups Bisquick
3/4 cup cornmeal
1/4 cup sugar
1/2 teaspoon Watkins Baking Powder
1 teaspoon Watkins Onion Flakes
2 tablespoons diced pimento
2 tablespons diced canned green chiles
Preheat oven to 350 degrees F.
Combine Bisquick, cornmeal, sugar, baking powder, and onion flakes in mixing bowl.
Mix eggs, milk, and melted butter and add to dry ingredients. Stir until blended.
Stir in pimento and green chilis. Mix well.
Pour into greased 8 inch pan or greased mufin pan and bake for 25 to 30 minutes until golden brown. Makes 9 servings.
Slow Cooked Chicken Cacciatore
1/2 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon Watkins Cayenne Pepper or Black Pepper
8 boneless, skinless chicken thighs
1 1/2 pounds boneless, skinless chicken breast halves
3 tablespoons olive oil
1 cup chicken broth prepared from Watkins Chicken Soup Base
1 can (14-1/2 oz.) diced tomatoes, undrained
1 8 ounce can tomato sauce
1 can (14 oz.) artichokes hearts, drained and cut into quarters
1 cup sliced fresh mushrooms
1/2 cup chopped onion
1/2 cup chopped green pepper
1 1/2 teaspoons minced fresh garlic
1/2 teaspoon Watkins Oregano
1/2 teaspoon Watkins Basil
Hot cooked linguine or spaghetti
In a large resealable plastic bag combine the flour, salt, and pepper. Add chicken, a few pieces at a time, and shake to coat. In a large skillet brown chicken in hot oil in batches. Transfer to a 5-quart slow cooker. Stir in the broth, undrained tomatoes, tomato sauce, artichoke hearts, mushrooms, onion, green pepper, garlic, oregano, and basil. Cover and cook on low heat for 5 to 6 hours or until chicken is no longer pink. Serve chicken and sauce over linguine or spaghetti. Mmakes 6 to 8 servings.
Chocolate Raspberry Pudding Cake
This gooey, moist cake is easy to prepare. Serve it warm from the oven.
1 cup all-purpose flour
3/4 cup sugar
1/4 cup Watkins Cocoa, unsweetened
1 tablespoon Watkins Baking Powder
1/2 teaspoon salt
1/2 cup milk
3 tablespoons, melted
1 teaspoon Watkins Vanilla
1 (10-ounce) package frozen raspberries in syrup, thawed
1 cup hot water
1/3 cup chocolate flavor syrup
Powdered sugar
Fresh raspberries
Heat oven to 350 degrees F. Place flour, sugar, cocoa, baking powder and salt into greased 8- or 9-inch square baking pan; stir with fork to combine. Stir in milk, butter and vanilla until well mixed. Stir in raspberries.
Combine hot water and chocolate syrup in small bowl. Pour evenly over batter. Bake for 30 to 35 minutes or until center is set and edges pull away from sides of pan. Let stand 25 minutes. Sprinkle with powdered sugar and garnish with fresh raspberries, if desired.
Coconut Pecan Cake with Broiled Frosting
This moist cake is topped with an old fashioned broiled frosting.
2 cups all-purpose flour
2 cups sugar
1 1/2 cups butter, softened
1 cup buttermilk*
4 eggs
1 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon Watkins Vanilla
2 cups sweetened flaked coconut
1 cup chopped pecans
Frosting
1 cup firmly packed brown sugar
1 cup chopped pecans
1/3 cup butter, melted
1/2 teaspoon Watkins Butter Pecan Extract
1/4 cup heavy whipping cream or milk
Heat oven to 350 degrees F. Combine all cake ingredients except coconut and pecans in large bowl. Beat at low speed, scraping bowl often, until all ingredients are moistened. Beat at high speed, scraping bowl often, until smooth. Stir in coconut and pecans by hand.
Pour into greased and floured 13x9-inch baking pan. Bake for 45 to 50 minutes or until cake springs back when touched lightly in center and edges begin to pull away from sides of pan.
Heat broiler. Combine all frosting ingredients in small bowl until well mixed. Spread over warm cake. Broil 2 to 4 inches from heat until bubbly (1 to 3 minutes). Serve warm or cool. Makes 15 servings.
*Substitute 1 tablespoon vinegar or lemon juice plus enough milk to equal 1 cup buttermilk. Let stand 10 minutes.

BIRD WATCHING
I haven't had as many birds at my feeders so far this year. I'm not sure if it's because I changed the layout of my feeders, increased hawk activity, the mild winter weather, outdoor activity and noises or a combination. The wild turkeys that roam our area have not found their way into our backyard.
We have a privet tree in our backyard that is covered with berries. The berries are a favorite food of several bird species - thrushes, robins, cedar waxwings and wild turkeys. However, the berries that fall to the ground have a high germination rate and I spend many hours pulling the little plants from my flower beds and lawn.
