LAUGH WITH ME

Catherine, a registered nurse, was unhappy with her job, so she submitted her resignation. She was sure she'd have no trouble finding a new position, because of the nursing shortage in her area. She e-mailed cover letters to dozens of potential employers and attached her resume to each one. Two weeks later, Catherine was dismayed and bewildered that she had not received even one request for an interview.

Finally she received a message from a prospective employer that explained the reason she hadn't heard from anyone else. It read: "Your resume was not attached as stated. I do, however, want to thank you for the vegetable lasagna recipe."

COOKING TIPS

I don't like to waste extra or too ripe fruits and vegetables so I freeze them.

  • Ripe bananas can be saved for baking purposes by mashing, placing them in a plastic bag, and freezing until you are ready to use them. You can also place the whole banana in a bag and freeze it in its skin.
  • Dice unused green, red, and yellow bell pepper before it spoils in the refrigerator. Place in a freezer bag and freeze to use in soups, chilis, stews, and omlettes.
  • Freezing vegetables like asparagus, cauliflower, and broccoli changes the texture but not the flavor. Turn them into pureed pasta sauces and soups.

    In a large saucepan, saute a clove of minced garlic in olive oil. When it begins to turn golden, add a package of frozen asparagus pieces, a pinch of salt and enough water to cover the bottom of the pan. Cover the pan and simmer until the asparagus, cauliflower, or broccoli is tender. Then puree in a food processor, or with an immersion blender. If puree is too thick, add some pasta-cooking water. Add some grated parmesan cheese.

Chocolate Milk, a Sports Drink?

A recent study points to an old favorite as an excellent way to rebuild muscles and alertness. By Susan Kleiner for MSN Health & Fitness

When you finish a workout or a strenuous afternoon moving furniture, gardening or playing with the kids, one of the best sports drinks you can drink for an energy boost might surprise you. Milk, or even chocolate milk.

And there is research to support this. A 2006 study published in the International Journal of Sport Nutrition and Exercise Metabolism showed that athletes who drank chocolate milk after a workout were able to exercise more intensely during a second workout than participants who downed a commercial sports drink. The reason: Chocolate milk contains an optimal carbohydrate-to-protein ratio to refuel both tired muscles and a taxed brain.

Make sure your chocolate milk is cold enough, so it works best as a thirst-quencher.

Possible Cure for Type-2 Diabetes

Some doctors say that a low-carbohydrate (starch and sugar) diet, with an increase of fats could help cure type-2 diabetes. Read the complete article before making any diet changes.

Italian Salad Dressing
Have you eaten the the salad-soup-breadsticks lunch at the Olive Garden Restaurant? Everything tastes delicious! Here is a similar recipe for the Italian salad dressing they serve on their vegetable salad. I made this for dinner last night and my family loved it!

1/2 cup white vinegar
1/3 cup water
1/3 cup vegetable oil
1/4 cup light corn syrup
2 1/2 tbsp grated Parmesan or Romano cheese
2 tbsp dry pectin
2 tbsp beaten egg or egg substitute
1 1/4 tsp salt
1 tsp lemon juice
1/2 teaspoon minced garlic
1/4 tsp Watkins Parsley
1/8 tsp Watkins Oregano
1/8 tsp Watkins Red Pepper Flakes

Combine all ingredients in a pint jar and shake until well mixed. Chill at least one hour. Serve over mixed green and vegetable salad or use as a marinade. Makes one pint.

You can purchase dry pectin in a box that looks like a box of jello in the aisle with baking and cooking supplies or near the canning items at your supermarket. It is used in making jams and jellies. It thickens the dressing slightly. I used the egg substitute instead of raw egg. You can find it in the refrigerated section of your supermarket. If using a raw egg make sure it is fresh and from a reliable source.

Crispy Baked Ravioli
This is a perfect warm appetizer for the cold winter months. In this recipe the ravioli are baked instead of deep fried to decrease the amount of fat.

1/2 cup Italian dry bread crumbs
1/4 cup grated Parmesan cheese
1/4 teaspoon Watkins Basil
1/2 cup sour cream
1/4 cup milk
1 9 oz. package refrigerated cheese-filled ravioli
3/4 cup pasta sauce or marinara sauce, warmed

Heat the oven to 375 degrees F. Combine the bread crumbs and cheese in a medium size bowl. Combine the sour cream and milk in small bowl. Dip the ravioli in the sour cream mixture, then in the bread crumb mixture to coat it evenly.

Place the ravioli on a nonstick baking sheet and bake for 12 to 14 minutes or until the ravioli are crisp and lightly browned.

Serve with warmed pasta or marinara sauce for dipping.

Zesty Chicken Italiano

2 tablespoons Butter or Margarine
1 pound Chicken Breast, cut in 1 inch pieces
1 clove Garlic, minced
1 1/2 cups Zucchini, thinly sliced
1 1/2 cups Mushrooms, sliced, fresh
15 ounces Tomato Sauce
14 1/2 ounces Canned Tomatoes, undrained & quartered
1/2 teaspoon Watkins Dried Oregano
1/2 teaspoon Watkins Lemon Pepper
8 ounces Vermicelli, or other pasta
Grated Parmesan Cheese
Salt and Pepper to taste

In a large skillet, melt butter and saute chicken pieces until lightly browned. Add garlic, zucchini and mushrooms, and saute 2 minutes. Stir in remaining ingredients except pasta and Parmesan cheese. Simmer, uncovered, 10 minutes to blend flavor and thicken sauce. Meanwhile, cook pasta according to directions on package; drain. Serve sauce over hot cooked pasta and sprinkle with Parmesan cheese. Makes 6 servings.

Per Serving: 302 Calories; 6g Fat (18.5% calories from fat); 23g Protein; 40g Carbohydrate; 2g Dietary Fiber; 57mg Cholesterol; 639mg Sodium. Exchanges: 2 Grain(Starch); 2 1/2 Lean Meat; 2 Vegetable; 1 Fat.

Roast Glazed Loin of Pork

1 (4-1/2 to 5-pound) pork loin roast
2 teaspoons salt
Watkins freshly ground pepper
1 cup orange juice
1/2 cup light brown sugar
1 teaspoon Watkins Ginger
1/4 teaspoon Watkins Cloves

Preheat the oven to 325 degrees F. Place the pork, fat side up, in a roasting pan. Insert a meat thermometer, do not let it touch bone. Rub in the salt and pepper.

Roast for 35 minutes per pound, or until thermometer reaches 170 degrees F. In a small saucepan, mix the orange juice, sugar, ginger and cloves. Simmer for 30 minutes. Brush the glaze over the pork while it is roasting.

Baked Salmon with Herbs

2-1/2 cups soft bread crumbs (about 5 slices)
4 garlic cloves, minced
2 tablespoons grated Parmesan cheese
2 teaspoons Watkins Parsley
1 teaspoon Watkins Thyme
1 teaspoon Watkins Rosemary, crushed
1/2 teaspoon salt
1/4 teaspoon Watkins Pepper
2 tablespoons butter, melted
1 salmon fillets (3 pounds)

Line a 15-in. x 10-in. x 1-in. baking pan with foil; coat foil with nonstick cooking spray. In a bowl, combine the bread crumbs, garlic, Parmesan cheese, parsley, thyme, rosemary, salt and pepper. Add butter; toss to coat evenly.

Place salmon on prepared pan. Spray with nonstick cooking spray and pat with bread crumb mixture. Bake, uncovered, at 350 degrees F for 35-40 minutes or until fish flakes easily with a fork. Yield: 8 servings.

Baked Ravioli in Tomato Sauce

2 (25 ounce) packages frozen meat or cheese ravioli
4 (14.5 ounce) cans diced tomatoes with juice
4 (8 ounce) cans tomato sauce
1 onion, chopped
2 tablespoons Watkins Italian Seasoning
1 teaspoon salt
1 cup water
16 ounces shredded mozzarella cheese
1/2 cup grated Parmesan cheese
2 cloves garlic, minced

In a medium stock pot combine the diced tomatoes, tomato sauce, chopped onion, Italian seasoning, salt, water, and minced garlic. Allow mixture to simmer for 2 hours. If sauce seems too thick add additional water.

In large pot of boiling water cook the ravioli until done. Drain.

In a 9x13 inch pan layer sauce and cooked ravioli. Top with grated Parmesan cheese and grated mozzarella cheese. In a preheated 400 degrees F (205 degrees C) oven bake for 30 minutes, or until light golden brown. Let cool 15 minutes before serving. Serves 8 to 10.

Applesauce-Nut Bread

1 cup sugar
1 cup applesauce
1/4 cup canola oil
3 egg whites
3 tablespoons skim milk
2 cups flour
1 teaspoon baking soda
1 teaspoon Watkins Baking Powder
1/2 teaspoon salt
1/2 teaspoon Watkins Cinnamon
1/4 teaspoon Watkins Nutmeg
1/2 cup walnuts, chopped

In a large mixing bowl, combine the sugar, applesauce, oil, and milk. Mix well. Add the flour, baking soda, baking powder, salt and spices. Mix thoroughly. Stir in the chopped walnuts. Spread in an oiled and floured loaf pan, 9 x 5 x 3-inches. Bake at 350 degrees for 60 to 70 minutes.

Coconut Macaroons

14 ounces sweetened shredded coconut
14 ounces sweetened condensed milk
1 teaspoon Watkins Vanilla Extract
2 extra-large egg whites, at room temperature
1/4 teaspoon salt
Preheat the oven to 325 degrees F.

Combine the coconut, condensed milk, and vanilla in a large bowl. Whip the egg whites and salt on high speed in the bowl of an electric mixer fitted with the whisk attachment until they make medium-firm peaks. Carefully fold the egg whites into the coconut mixture.

Drop the batter onto sheet pans lined with parchment paper using either a 1 3/4-inch diameter ice cream scoop, or two teaspoons. Bake for 25 to 30 minutes, until golden brown. Cool and serve. If you prefer smaller cookies remember to decrease the cooking time.

Yield: 20 to 22 cookies

Bird Ballet

These flying seagulls are very graceful as they glide and swoop above the ocean.

Each species of bird has a distinctive flying pattern.We have black bird flocks here in northern California. Have you seen flying black birds where you live? Their movements seem like a perfectly choreographed ballet. Each flock twists, turns, and glides in the sky changing the shape and pattern of the flock. No bird is out of place. Birds do not collide with each other as the group changes direction. Separate flocks fly side by side acting out their own ballet yet still interacting with the other flock as if partners in a dance.
