A recent college graduate took a new job in a hilly city and began commuting each day to work through a tiring array of tunnels, bridges and traffic jams. To make the task less onerous, he invited several of his coworkers to share the ride. He soon found, however, that the commute continued to get more stressful, especially the trips through the tunnels. He consulted the company doctor.

"Doc," the frustrated commuter complained, "I'm fine on the bridges, in the traffic, in the day and at night. But when I get in the tunnels and I've got those four other guys crowded around me in the car, I get anxious and dizzy and feel like I'm going to explode."

Without further analysis, the doctor announced he had identified the ailment.

"What is it, Doc? Am I going insane?"

"No. You have something very common in these parts."

"Tell me! What is it?"

"You have what is known as Carpool Tunnel Syndrome."

When you want to slice beef, chicken, or pork into very thin strips, slice while still partly frozen if defrosting meat or place meat in freezer for 15 to 20 minutes before slicing. Use sharp knife to slice meat.

HEALTH TIP

If you are a long-time subscriber you have heard this from me before but I feel it needs repeating, especially as we start a new year!

I don't really believe in fad diets although some diets work for some people. If you decide to follow a diet to help you lose weight choose one that includes a variety of healthy fresh foods. Eating just one food or leaving out essential vitamins and minerals of complete food groups over an extended period of time will lead to malnutrition and health problems.

Eating fresh foods that are low in salt, calories, and fat will help you lose weight and keep the weight from coming back. Our body uses healthy calories to supply energy for growth, activity, and mental acuity. We also need a small amount of salt and fat in our diet to provide electrolytes and nutrients for the proper functioning of our organs and for food absorption.

The best advice I can give you is:

  • Eat healthy foods daily so that an occasional high calorie or high fat meal won't lead to weight gain or unhealthy consequences.
  • Get plenty of sleep, 7 to 8 hours a night. While you are sleeping your body systems are functioning at a lower rate and energy is used to heal and repair your body.
  • Exercise and stay active each day. Gardening, outdoor chores, cleaning, and walking are activities you can incorporate into your daily routine.
  • Enjoy the great outdoors for fresh air, sunlight, and outdoor activities.

I challenge you to follow these guidelines in 2005 and I bet you will not only feel great but lose a few pounds to boot!

Last issue I gave you a list of 10 healthy foods to include in your daily diet. This issue I'm highlightling one of those 10 foods, broccoli, and including several taste-tempting recipes.

BROCCOLI IS A CANCER FIGHTER

Broccoli is known as the ''crown jewel of nutrition'' because it is rich in vitamins and minerals.

Many fruits and vegetables are loaded with substances that seem to block cancer cells before they turn deadly. Broccoli tops the list, offering an outstanding 30 types of these agents.

Fresh raw broccoli is delicious with nutritious dips. Do you throw away the stem from the broccoli? Don't! Peel and eat it raw or cook with florets. The crunchy stem is my favorite part to eat as a snack.

The best way to cook broccoli is to steam, cook in the microwave or stir-fry with a little broth or water. Some of the vitamin and mineral content are lost from the vegetable and end up in the cooking water when boiled.

Cooked broccoli should be tender enough so that it can be pierced with a sharp knife, and still remain crisp and bright green in color.

It is best if used a day or two after purchasing. Choose bunches that are dark green. Good color indicates high nutrient value. Florets that are dark green, purplish or bluish green contain more beta-carotene and vitamin C than paler or yellowing ones.

Choose bunches with stalks that are firm. Stalks that bend or seem rubbery are of poor quality or have been sitting too long. Avoid broccoli with open, flowering, discolored or water-soaked bud clusters and tough, woody stems.

According to Douglas J. Markham, MD, author of Beyond Atkins: A Healthier, More Balanced Approach to a Low Carbohydrate Way of Eating, "People who don't get enough fiber are more prone to constipation on a low-carb diet and are at a higher risk for colon cancer... Furthermore, lack of the proper amount of phytonutrients -- plant-sourced vitamins and minerals, leads to potential malnutrition."

Dark green vegetables such as spinach, kale, broccoli and Swiss chard offer vitamins A and C as well as varying amounts of folate, magnesium, calcium and iron.

Nutritionists say we should eat 5 to 7 servings of fruits and vegetables each day. These storehouses provide vital vitamins and minerals for growth, disease fighting, and healing. They are low in fat and calories and provide necessary fiber. Most vitamins and minerals are retained if eaten raw but including them in your favorite recipes adds to your daily nutrition needs.

What counts as one serving?

  • 1 cup salad greens such as spinach, romaine lettuce or mixed greens
  • 1/2 cup veggies or fruits such as small broccoli florets or sliced strawberries
  • 1/4 cup dried fruit such as raisins, cranberries, or apricots
  • 1 medium piece of fruit such as an apple, orange or banana

The following recipes contain broccoli but are not all low in calories or fat. I know what you're thinking! Broccoli! My family won't eat broccoli! Cook one of these recipes using this nutritious vegetable and you might be surprised. Add a cup or two of broccoli florets to your favorite potato soup.

Broccoli Soup with Cheddar Cheese

1/2 tablespoon olive oil
1/2 cup finely chopped celery
1 large onion, chopped
salt to taste
Watkins freshly ground Black Pepper
1 small russet potato
1 Watkins Bay Leaf
1/4 teaspoon Watkins Oregano
about 1 quart low-sodium chicken broth prepared from Watkins Chicken Soup Base
5 cups broccoli florets
6 tablespoons shredded low-fat sharp cheddar cheese

  1. Heat the olive oil in a saucepan over low-medium heat. Add the celery and onion, season lightly with salt and pepper and cook for 10 minutes.

  2. Peel and slice the potato and add it to the pot. Add the bay leaf, oregano and broth and bring to a boil quickly over high heat.

  3. Lower the heat and simmer until the vegetables are completely tender, about 15 minutes.

  4. Add the broccoli and simmer until just tender, about 5 to 7 minutes.

  5. Remove the bay leaf and puree the soup in a blender or mash with potato masher. Strain and adjust the salt and pepper.

  6. Serve the piping hot soup in bowls, sprinkled with a tablespoon of cheddar cheese.

Nutrition Facts: Serving Size: 1 & 1/2 cups Calories 104, Protein 7 g, Total Carbohydrate 13 g, Dietary Fiber 3 g, Sodium 249 mg, Total Fat 3 g, Saturated Fat 1 g, Percent Calories from Fat 28%, Percent Calories from Protein 26%, Percent Calories from Carbohydrate 46%

Hot Broccoli Bread

One loaf Italian Bread, sliced long-ways and at least half of the bread removed to make room for ingredients. Two boxes of chopped broccoli cooked, drained, and squeezed dry
or 4 cups fresh cooked broccoli florets, well drained and mashed
1 stick butter
2 teaspoons Watkins Garlic Granules
16 oz grated mozzarella cheese
1 cup parmesan cheese

Mix garlic granules into softened butter and spread evenly on one half of the hollow loaves. Fill this loaf with mozzarella cheese. Mix hot broccoli with salt and pepper to taste, combine broccoli and Parmesan cheese and fill the other half loaf. Quickly close the loaf and wrap well in foil. Bake at 350 for 15-18 minutes. Remove from foil and cut hot bread into slices. Makes a great appetizer.

Beef and Broccoli

1 lb. boneless beef sirloin or top round steak, 3/4" thick
1 tbsp. vegetable oil
1 can (10 3/4 oz.) Campbell's Condensed Tomato Soup (Watkins does not have Tomato Soup Base)
3 tbsp. Watkins Spicy Garlic Soy Sauce
1 tbsp. vinegar
1 tsp. Watkins Garlic Granules
1/4 tsp. red pepper flakes
3 cups fresh or thawed frozen broccoli flowerets
4 cups hot cooked rice

  1. Slice beef into very thin strips.
  2. In skillet over medium-high heat, heat oil. Add beef and stir-fry until browned and juices evaporate.
  3. Add soup, soy, vinegar, garlic granules and pepper flakes. Heat to a boil.
  4. Add broccoli and cook over medium heat until broccoli is tender-crisp, stirring often.
  5. Serve over rice. Serves 4.

Light Shrimp-and-Broccoli Noodle Salad

Ingredients 1 pound broccoli, cut into florets (4 cups)
4 ounces bean threads (cellophane noodles)
1 1-inch piece fresh ginger or 1/2 teaspoon Watkins Ginger
8 ounces cooked and peeled small shrimp, thawed if frozen
1/4 cup rice vinegar
2 tablespoons sugar
1 tablespoon Watkins Spicy Garlic Soy Sauce
1 tablespoon Watkins Grapeseed Oil or canola oil
1 teaspoon toasted sesame oil
1/2 teaspoon salt
1/4 teaspoon Watkins Black Pepper
1 tablespoon water

  1. Cook broccoli, covered, in boiling salted water for 5 minutes or until crisp-tender; drain. Cool slightly and transfer to a large bowl. Set aside.
  2. Add bean threads to a saucepan of boiling water, then remove pan from heat. Cut ginger into thin strips and add to saucepan or sprinkle in ground ginger. Let stand for 2 to 3 minutes until noodles are pliable; drain. Rinse with cool water. Drain well. Toss noodle mixture and shrimp into broccoli.
  3. For dressing, stir together the vinegar, sugar, salad oil, soy sauce, sesame oil, salt, pepper, and water. Gently toss dressing into broccoli mixture until well-coated. Makes four (1-1/4-cup) servings.

Cook's Tip: Bean threads, or cellophane noodles, are dried green mung beans that become translucent "noodles" when soaked briefly in hot water. You'll find them in various sizes in Asian sections of supermarkets and at Asian grocery stores. If desired, substitute like amount of pasta of your choice.

Broccoli Tortellini Salad

4 cups broccoli florets
2 packages (9 ounces each) refrigerated cheese tortellini
1/2 cup finely chopped red onion
1/4 cup raisins or dried cranberries
1/2 cup reduced-fat mayonnaise
1 teaspoon Watkins Celery Seed
1 teaspoon Watkins Garlic Granules
3 tablespoons sugar or sugar substitute equal to 3 tablespoons sugar
1 tablespoon cider vinegar
5 slices bacon, cooked crisp and crumbled
1/4 cup unsalted sunflower seeds

In a large saucepan, cook broccoli in 6 cups boiling water for 2 minutes. Drain and immediately rinse in cold water. Do not pour out water. In the same saucepan, cook tortellini according to package directions. Drain and immediately rinse in cold water.

In a large bowl, combine the red onion, raisins, broccoli and tortellini. Combine the mayonnaise, sugar or sugar substitute, celery seed, garlic granules, and vinegar. Pour over mixture; toss to coat. Refrigerate for at least 1 hour. Just before serving, stir in bacon and sunflower seeds. Makes 12 servings.

Splenda No Calorie Sweetener was used in this recipe. Look for it in the baking aisle of your grocery store.

BIRD WATCHING

As many of you know, I feed my backyard birds and count them for Project FeederWatch. I'm always thrilled when a new bird visits my feeders. During the past two weeks I've had three new bird species join my old standbys. A Pine Siskin that ate thistle or nyger seed. A female Downy Woodpecker that feasted on suet containing a variety of seeds. And a female White-Breasted Nuthatch that also dined at the suet feeder. You may wonder how I could tell that the woodpecker and the nuthatch were female birds. The plumage of both birds show distinct color differneces between male and female species. The plumage of the male and female Pine Siskin have a slight color difference. It was a cloudy day and I was unable to tell if the bird was male or female. I hope to report more new species in further newsletters.

Male and female Pine Siskins - Male has a more distinguishable yellow color at base of flight wings than female.


Male and female Downy Woodpeckers - Male has a red spot at back of head; female has a black spot at back of head.

If you have considered becoming a backyard birdwatcher it is helpful to have a bird field guide to help identify bird species.

  • If you're looking for a comprehensive guide that works at home as well as in the field, the Sibley Guide to Birds is a good choice. It comes in two versions, all of North America, or separate Eastern North America and Western North America versions.

  • Running a close second is Kaufman's Guide to Birds of North America. The Kaufman guide features photographs (not illustrations) and good text with accurate maps. It covers all of North America but is pocket-sized and lightweight.

  • The revised Peterson Field Guide is also a good source and it offers more descriptive text and larger art.

You can buy any of these bird field guides at your local bookstore or through an online bookstore, birding store, or book club.

The 2005 Great Backyard Bird Count is scheduled for February 18-21, 2005, and we hope you will join us on at least one of the four days. See last year's count at:

This year we are encouraging you to go out into America’s Great Backyard, our public lands, and count birds. Take your family to your local National Park, National Wildlife Refuge or other public space with a bird checklist printed from the website, and count the birds you see. Then return to your computer and enter the birds you noted earlier to the central computer through the Internet. We will then add your sightings to those that others reported to present a full picture of our bird life. Please encourage your friends, family, and colleagues to take part too and help us spread the word.
