  • Six Onion Soup Base: Add to mashed potatoes or meat balls, sprinkle on a roast. Makes a great cheese ball!
  • Tomato Horseradish: Great as a sauce for the bloomin’ onion, on salmon or as a sandwich spread.
  • Creamy Salad Dressing: Combine 1/2 cup mayonnaise, 1/3 cup low-fat milk, 2 tsp. vinegar, and 2-3 tsp (to taste) of any of the following mixes: Cucumber-Dill, Garden Vegetable, Garlic-Dill.
  • Spinach Dip: Add either Garden Vegetable or Bacon-Cheddar mix into your favorite Spinach Dip recipe. Serve in a hollowed out bread bowl.

RECIPES

Sassy Salsa and Sour Cream Seven-Layer Dip
This recipe is a variation of the traditional Seven-Layer Dip.

1 can black beans, rinsed, drained and mashed
1 tsp/5ml Watkins Cumin
1 cup/250 ml sour cream
1/2 cup/125 ml mayonnaise
3 tablespoons/45 ml Watkins Salsa and Sour Cream Snack and Dip Seasoning
1 cup/250 ml shredded cheddar cheese
1/2 cup/125 ml thinly sliced green onions
1/4 cup/60 ml black olives
1 cup-250 ml chopped, seeded tomatoes
1 can (4 oz/120g) diced green chilies, drained
Watkins Jalapeno Hot Pepper Sauce, to taste

Combine mashed beans and cumin, spread over bottom of a 9 inch /23 cm pie plate or other serving plate. In a small bowl, combine sour cream, mayonnaise and seasoning. Spread mixture over mashed beans. Sprinkle with cheese, green onions, olives, tomatoes, and green chilies. Sprinkle to taste with Watkins Jalapeno Hot Pepper Sauce. Chill until served. Served with tortilla chips.

Sweet and Sour Chicken Drumsticks
Chicken drumsticks stay deliciously moist when grilled even with the skin removed. The sweet-and-sour dipping sauce adds a refreshing twist to grilled chicken. Serve with brown rice and slices of fresh pineapple.

1/2 teaspoon freshly grated orange zest
1/4 cup orange juice
1/4 cup water
3 tablespoons honey
1 tablespoon plus 1 teaspoon cider vinegar, divided
1/2 teaspoon salt, divided
1/4 teaspoon Watkins Ground Cinnamon
1 teaspoon cornstarch
8 chicken drumsticks (about 2 pounds), skin removed, trimmed
1/4 teaspoon Watkins Granulated Pepper

Tip
To oil the grill rack oil a folded paper towel, hold it with tongs and rub it over the rack. (Don't use cooking spray on a hot grill).

Preheat grill to medium. Sprinkle drumsticks with salt and pepper. Oil the grill rack. Grill the drumsticks until crispy on all sides and an instant-read thermometer inserted into the thickest part registers 165 degrees F, about 15 minutes total. Serve the drumsticks with the dipping sauce on the side.

Using broiler position oven rack in the upper third of the oven; preheat broiler to high. Prepare sauce. Coat a broiler pan with cooking spray. Sprinkle drumsticks with salt and pepper, then broil, turning once, until an instant-read thermometer inserted into the thickest part registers 165 degrees F, about 15 minutes total.

Dipping Sauce
Combine orange zest, orange juice, water, honey, 1 tablespoon vinegar, 1/4 teaspoon salt and cinnamon in a small saucepan; bring to a boil. Whisk cornstarch and the remaining 1 teaspoon vinegar in a small bowl until smooth. Add to the saucepan and return to a boil, whisking until thickened, 30 seconds to 1 minute. Remove from the heat. Serve with drumsticks.

Roast Beef in Pepper Crust
1 3/4 pounds tenderloin (rump roast), about 2 1/4 inches in diameter, tied with string
3 teaspoons Watkins Black Peppercorns or Royal Peppercorn Blend
1 teaspoon Watkins Sea Salt
1 teaspoon Watkins Thyme
1/2 teaspoon peanut oil

Allow the meat to stand at room temperature for 1 hour before cooking. Preheat the oven to 475 degrees F. Place a cast-iron or porcelain baking dish with rack or roasting pan large enough for the roast in the oven to preheat.

Combine the peppercorns with the coarse salt in a mortar. Grind together, and add the thyme; mix well. Pat the roast dry and brush it with the oil. Season evenly with the ground herbs and spices.

Place the meat on the rack so that heat reaches all sides and cook for 30 minutes. Turn off the oven and let the roast rest in the oven for another 10 minutes without opening the oven door.

Slice the roast 1/2 inch thick, the slices will be cooked pink throughout. Arrange on a warm plate and serve with Garlic Mashed Potatoes.

This roast is also delicious served cold. Remove it from the oven after the 10 minutes of resting time and let it cool on a rack so that the meat is not bathed in its own juices. Serve in very thin slices, with salad, fresh onions and olives.

Marinated Beef Pot Roast
2 1/2 to 3 pounds rump, chuck, eye of round, or shoulder roast
3 cloves garlic, slivered
1 cup balsamic vinegar
2 teaspoons Watkins Rosemary
3 medium onions, peeled and thinly sliced
14 1/2-ounce can whole tomatoes, chopped, all juices reserved
Watkins Garlic Salt and freshly ground Watkins Black Pepper

Poke the meat all over with a thin-bladed knife and insert the garlic slivers into the holes. In a large ceramic dish or bowl, or in a zip-top bag, combine the vinegar and rosemary. Add the meat and turn to coat completely. Cover and refrigerate overnight.

Heat the oven to 350 degrees F. Spread the sliced onions in a large casserole or small roasting pan. Nestle the meat into the onions and pour in the remaining marinade. Season the meat with garlic salt and pepper. Add the tomatoes and juice. Cover the pot or pan tightly with a lid or aluminum foil. Cook the beef until it is easily pierced with a fork and its juices run clear, 3 to 3 1/2 hours.

Remove the roast from the oven and allow it to rest in the pan for 5 to 10 minutes before carving. Serve the sliced meat with the onions, tomatoes, and pan juices.

Cashew Salad
1/3 cup (80 ml) sugar
1/3 cup (80 ml) vinegar
1 tsp (5 ml) Watkins Dry Mustard
1 clove garlic, finely chopped
1 tsp (5 ml) Watkins Celery Seed
Salt and Watkins freshly ground Black Pepper to taste
Equal parts fresh raw spinach and leaf lettuce, enough to serve 6 to 8
1/2 cup (125 ml) whole or coarsely chopped cashews, or more to taste

Combine the sugar, vinegar, mustard, garlic, celery seed, salt, and pepper in a bowl and whisk until combined. Toss the greens in the dressing and place on individual serving plates. Sprinkle with the cashews and serve immediately. Serves 6 to 8.

Coconut Snowballs

1 cup sweetened flake coconut
1 cup all purpose flour
1 1/4 cups confectioner's sugar
pinch salt
6 Tablespoons (3/4) stick butter-unsalted, softened
1 teaspoon Watkins Vanilla Extract
4 teaspoons milk

Grind 1/2 cup coconut in food processor. Chop remaining coconut and set aside. Add the flour, 1/4 cup confectioners sugar and salt. Pulse to blend. Add butter and vanilla, pulse until dough comes together.

Heat oven to 350 degress F. Roll dough into 1 inch balls. Place dough balls 1 inch apart on ungreased cookie sheet. Bake at 350 degrees for 15 minutes (firm but tender). Remove and cool completely.

In a small bowl, stir remaining 1 cup confectioners' sugar and enough milk until smooth but thick. Dip cookies in glaze letting it drip down the sides. Dip into chopped coconut and set aside for glaze to dry.

Tip - For the holidays I am using the Watkins Almond Extract instead of the Vanilla and adding a well drained maraschino cherry to each dough ball. If you want to get fancy find the maraschino cherries with the stems to make them look like a Christmas ball.

Five Flavor Cake
1 cup (2 sticks) butter, softened
3 cups all-purpose flour
1/2 cup vegetable shortening
1/2 tsp. Watkins Baking Powder
3 cups sugar 1 cup milk
5 eggs, well beaten
1 tsp. each Watkins Butter, Coconut, Lemon, Rum and Vanilla Extracts

Cream butter, shortening and sugar in large mixing bowl until light and fluffy. Add eggs and beat until smooth.

In small bowl, combine flour and baking powder, mix well and set aside.

Combine milk and extracts. Add flour mixture to creamed mixture alternately with milk mixture, beginning and ending with flour mixture.

Spoon mixture into greased 10-inch tube pan (angel food pan) and bake at 325 degrees F for 1 1/2 hours or until cake tests done. Cool in pan on wire rack for 10 minutes. Turn cake out of pan onto wire rack, invert again. Place waxed paper under wire rack to catch glaze drippings. Slowly spoon glaze onto top of hot cake and let glaze drizzle down sides of cake. Let cool completely.

Glaze
1/2 cup sugar
1/4 cup water
1/2 tsp. each Watkins Almond, Butter, Coconut, Lemon, Rum and Vanilla Extracts.

Combine ingredients in heavy saucepan. Bring to a boil, stirring until sugar is dissolved. Drizzle over hot cake.
