Happy New Year 2008! Welcome to another issue of Around the Kitchen Table!

COOKING TIP

Substituting whole wheat flour for all-purpose flour is a great idea and can be an easy way to sneak extra fiber into your diet. For best results, it is recommended that equal proportions of whole wheat flour and all-purpose flour be used. Keep in mind that baked goods made with whole wheat flour tend to be denser and have a coarser texture.

RECIPES

Apple Puffed Pancake
This recipe for a delightful breakfast treat is perfect for the entire family. Serve this recipe as a dessert, simply by doubling the cinnamon and sugar used, and serving a la mode.

6 large eggs
1 1/2 cups skim milk
1 teaspoon Watkins Original Double-Strength or Pure Vanilla Extract
1 cup all-purpose flour
2 tablespoons granulated sugar
1/2 teaspoon salt
1/2 teaspoon Watkins Ground Cinnamon
Pinch of Watkins Nutmeg
1/2 cup (1 stick) unsalted butter, room temperature
4 apples, such as Gala or Red Delicious, peeled, quartered, cored and thinly sliced
1 tablespoon light-brown sugar
Confectioners' sugar, optional

  1. Preheat oven to 425 degrees F.
  2. Blend eggs, milk, and vanilla. Mix until well combined. Add flour, granulated sugar, salt, cinnamon, and nutmeg. Blend until dry ingredients are well incorporated; set aside.
  3. Place butter in a 9-by-13-inch glass baking dish. Transfer dish to oven and heat until butter has just melted. Carefully remove from oven and place apples in a single layer in baking dish. Return to oven and cook until butter begins to bubble, about 4 minutes.
  4. Pour batter over apples, sprinkle with brown sugar, and continue baking until puffed and golden, about 20 minutes. Sprinkle with confectioners' sugar, if desired; serve immediately

Lighter Chicken Potpie
A few changes make a reduced fat recipe: white-meat chicken (not dark), extra veggies, low-fat milk in the filling, and a lighter crust. Brushing the phyllo with just a small amount of oil instead of butter makes it just as tasty.

2 chicken breast halves (12 to 14 ounces each)
Salt to taste
Watkins Black Pepper to taste
3 tablespoons olive oil or Watkins Grapeseed Oil
4 carrots, sliced 1/4 inch thick
1 medium onion, finely chopped
1/4 teaspoon Watkins Thyme
1/4 cup all-purpose flour
2 1/2 cups low-fat (1%) milk
1 package (10 ounces) frozen peas, thawed
2 tablespoons fresh lemon juice
6 phyllo sheets (each 12 by 17 inches), thawed

Preheat oven to 400 degrees F. Place chicken in baking dish; season with salt and pepper. Cover with foil. Roast 25 to 30 minutes or until jucices are clear. Let cool slightly. Shred meat, and set aside.

While chicken is roasting, heat 2 tablespoons oil in a large saucepan over medium. Add carrots, onion, and thyme; season with salt and pepper, and cook until carrots are crisp-tender, 8 to 10 minutes. Add flour, and cook, stirring, 1 minute. Gradually add milk, stirring until smooth. Cook, stirring occasionally, until mixture comes to a simmer and thickens.

Remove from heat; stir in peas, lemon juice, and chicken, and season with salt and pepper. Pour filling into a 9-inch deep-dish pie plate.

Stack phyllo on a work surface. Using a paring knife, cut out an 11-inch circle from the stack; discard trimmings. Stack 2 circles on work surface, and brush gently with 1 teaspoon oil; repeat with remaining circles and oil. Place phyllo stack over filling, and press down about 1/2 inch from the edge so phyllo fits inside rim of pie plate. Bake until golden and bubbling, 20 to 25 minutes. Let potpie cool 15 minutes before serving. Serves 4. Omit salt to lower sodium content.

Baked Chicken Romano
A velvety cheese sauce and crunchy almonds transform everyday chicken breasts into an elegant dish.

4 skinless, boneless chicken breasts (5 ounces each)
1/4 cup all-purpose flour
2 tablespoons olive oil
3/4 cup chicken broth made with Watkins Chicken Soup Base, on sale this month
1 package (10 ounces) frozen broccoli, thawed
1/4 cup sliced almonds

For the Sauce
3 tablespoons butter or margarine
3 cloves garlic, minced
2 1/4 cups chicken broth made with Watkins Chicken Soup Base, on sale this month
3 tablespoons all-purpose flour
1 cup grated Romano cheese, divided

  1. Preheat oven to 350 F. Grease a large, shallow baking dish.
  2. Dredge chicken in flour. In a large skillet, heat oil over medium heat. Add chicken; cook, turning once, until golden, about 10 minutes. Stir in broth. Reduce heat to medium-low. Cover; simmer for 15 minutes.
  3. Meanwhile, for sauce, in a saucepan, melt butter over medium heat. Add garlic; sauté for 1 minute. Reduce heat to low. Whisk in broth and flour; cook, stirring, until thickened, about 5 minutes.
  4. Drain pan juices from chicken; combine with sauce. Add 3/4 cup Romano; stir until melted and smooth, about 3 minutes.
  5. Arrange broccoli in prepared baking dish; pour half of sauce on top. Place chicken over broccoli; top with remaining sauce. Sprinkle with almonds. Bake for 25 minutes. Remove from oven; sprinkle with remaining Romano. Bake for 5 minutes longer. Serves 4.

Super-Easy Manicotti
This dish is so simple you can get the kids involved and assemble it together. Use your favorite homemade or store-bought variety of marinara or spaghetti sauce.

16 manicotti tubes
16 sticks part-skim mozzarella string cheese (1 pound)
2 cups reduced-sodium marinara or spaghetti sauce
1 teaspoon Watkins Basil
1/4 cup freshly grated Parmesan cheese

  1. Grease an 11 x 7-inch baking dish. In a large pot of boiling salted water, cook the manicotti for 6 minutes, stirring once at the start to separate the tubes. Drain well, then rinse under cold water and drain again.
  2. Insert a mozzarella stick into each tube. Arrange the filled pasta in the prepared baking dish. Pour the sauce on top. Sprinkle with basil
  3. Bake at 350 F for 30 minutes. Sprinkle the Parmesan cheese over the top of the dish Serves 4. Serve with a crisp green salad and garlic bread.

Do Ahead
Prepare the recipe through Step 2, cover with foil and refrigerate for up to 1 day before baking. The dish can also be baked, then frozen for up to 1 month; defrost in the refrigerator, then reheat in a 350 F oven for 35 minutes.

Pound Cake with Maple Glaze
The almond and lemon extracts balance the pound cake's buttery flavor.

1 cup unsalted butter, (2 sticks), softened
3 cups cake flour, plus more for pan
3 cups granulated sugar
6 large eggs, room temperature
1 cup heavy cream, room temperature
1 teaspoon Watkins Vanilla Extract
1/2 teaspoon Watkins Lemon Extract
1/4 teaspoon Watkins Almond Extract
2 tablespoons unsalted butter
1/4 cup pure maple syrup
1 cup confectioners' sugar

Butter and flour a 10-cup bundt pan; set aside.

Prepare the cake
In the bowl of an electric mixer fitted with the paddle attachment, combine butter and granulated sugar until fluffy, about 10 minutes. Add eggs, one at a time, mixing well after each addition. Add 1/2 each of the flour and cream, mixing well to combine. Add remaining flour and cream, mixing until incorporated. Stir in vanilla, lemon, and almond extracts.

Pour batter into prepared baking pan. Transfer to unheated oven; bake at 300 degrees for 1 hour 45 minutes. Let cool on wire rack in pan for 15 minutes. Remove from pan, place cake on wire rack, and let cool completely.

Prepare the glaze
In a small saucepan, melt butter and syrup together over medium heat. Whisk confectioners' sugar into hot mixture until smooth, and immediately pour over cooled cake.
