Make your slow cooker preparation even faster - get ingredients ready the night before and place in the slow cooker. Remove inner container and refrigerate until ready to cook the next day.

RECIPES

Cajun Chicken Fettuccine
We had Cajun Chicken Fettuccine at a restaurant and it was out of this world! I searched and found this similar recipe. The restaurant version used marinated red bell peppers instead of the green bell pepper and the red bell pepper. Serve with a crispy salad and french bread for a delicious meal.

4 tablespoons (1/2 stick) butter
1 green bell pepper, chopped (1 cup)
1 red bell pepper, chopped (1 cup)
1/2 white onion, chopped (1 cup)
1 clove garlic, pressed
2 boneless, skinless chicken breast halves
2 teaspoons olive oil
1 medium tomato, peeled and chopped
4 to 6 mushrooms, sliced (1 1/4 cup)
1 1/2 tsp. Watkins Chicken Soup Base
1 cup boiling water
Salt
1/4 teaspoon Watkins Cayenne Pepper
1/4 teaspoon Watkins Paprika
1/4 teaspoon Watkins Black Pepper
1/4 teaspoon Watkins Dried Thyme
4 to 6 quarts water
1 12-ounce box fettuccine

Melt 2 tablespoons of the butter in a large skillet over medium heat. Saute the bell peppers, onions, and garlic in the butter until the vegetables begin to soften slightly.

As the vegetables are cooking, cut the chicken breasts into bite- size pieces. Prepare a medium-size pan over high heat with the olive oil. When the pan is hot, add the chicken and cook, stirring, for 5 to 7 minutes or until the chicken shows no pink.(Over cooking will dry out chicken.)

Add the chicken to the vegetables in skillet. Mix chicken soup base with one cup boiling water to make chicken broth. Add the tomatoes, mushrooms, chicken broth, 1/4 teaspoon salt, cayenne pepper, paprika, pepper, and thyme and continue to simmer for 10 to 12 minutes until it thickens.

In the meantime bring the water to a boil in a large pot. Cook the fettuccine in the boiling water until done. This will take 10 to 12 minutes. When the noodles are done, drain them and add the remaining 2 tablespoons of butter. The butter should melt quickly on the hot noodles. Toss the noodles to mix in the butter.

Serve the dish by dividing the noodles in half onto two plates. Divide the chicken and vegetable sauce evenly and spread it over the top of the noodles on each plate. Makes 2 large servings or 4 smaller servings.

Tidbit
If you want a thicker sauce, combine 1/2 teaspoon cornstarch with 2 tablespoons of white wine in a small bowl and stir to dissolve. Remove the pan from the heat before adding this thickener, stir it in, and then put it back on the heat.

Hint
To peel tomato, dip in boiling water for 30 seconds.

Winter Beef Stew
With only a few simple ingredients, this foolproof hearty dish is guaranteed to become a favorite winter staple. Serve with crusty bread and fresh fruit for a complete meal.

3/4 cup Italian salad dressing
2 lb. beef for stew, such as beef chuck roast, cut into 1-inch chunks
6 slices bacon, chopped
3 cups sliced mushrooms
1 cup chopped onions (about 1 large)
3 cups sliced carrots (about 6 medium)
1-1/2 lb. potatoes, peeled, cut into large chunks (about 4 cups)
1 can (14-1/2 oz.) stewed tomatoes, undrained
3 tsp. Watkins Beef Soup Base
2 cups boiling water for beef broth

Pour dressing over meat in large resealable plastic bag. Seal bag; turn to evenly coat meat with dressing. Refrigerate 30 min. to marinate. Meanwhile, cook bacon in large saucepan on medium heat 5 minutes or until crisp, stirring occasionally. Remove bacon from saucepan; drain drippings.

Add mushrooms and onions to same saucepan; cook on medium-high heat 10 minutes or until tender, stirring occasionally. Mix beef soup base with boiling water. Remove meat from marinade; discard marinade. Add meat, carrots, potatoes, tomatoes, beef broth and bacon to saucepan; stir.

Bring to boil, stirring occasionally. Reduce heat to low; cover and simmer 1 hour 15 min. Uncover; simmer an additional 15 min. or until meat is cooked through and sauce is thickened, stirring occasionally. Makes 8 1-1/2 cup servings.

Add 1/2 tsp. Watkins Thyme with the beef broth for extra flavor.

How to Prepare Stew in Slow Cooker
Marinate meat and cook bacon, onions and mushrooms as directed. Remove meat from marinade; discard marinade. Add meat, onions, mushrooms and remaining ingredients to slow cooker. Cook 10 to 12 hours on LOW (or 5 to 6 hours on HIGH) or until meat is tender. Stir in 2 Tbsp. flour mixed with 2 Tbsp. water. (Mix water and flour in small jar, cover tightly with lid, and shake to mix.) Continue cooking an additional 15 min. or until sauce is thickened.

Slow Cooker Sweet and Sour Chicken

1 medium onion, sliced
1 medium carrot, peeled, sliced
1 medium celery stalk, sliced
6 boneless skinless chicken thighs (1-1/2 lb.), cut into bite-size pieces
1/3 cup firmly packed brown sugar
1/3 cup Catalina Salad Dressing
1/4 cup Watkins Spicy Garlic Soy Sauce
1 tsp. grated gingerroot or 1/4 tsp. Watkins Ground Ginger
1 can (8 oz.) pineapple chunks, drained, liquid reserved
1 Tbsp. cornstarch
1 medium green pepper, sliced
1 medium red pepper, sliced
4-1/2 cups hot cooked white or brown rice

Place onions, carrots and celery in slow cooker; top with chicken.

Add combined brown sugar, dressing, soy sauce and ginger. Cover with lid.

Cook on LOW for 7 to 8 hours (or on HIGH for 3-1/2 to 4 hours). During last 30 min. of cooking time, increase to HIGH. Stir cornstarch into reserved pineapple liquid; add to slow cooker along with the pineapple and peppers. Cook 30 min. or until peppers are crisp-tender and sauce is thickened. Serve over rice. Makes 6 servings.

Barbecue Ranch Chicken Salad

1 lb. boneless skinless chicken breasts, cut into strips
1/2 cup prepared Watkins Original Barbecue Sauce
1 bag (10 oz.) mixed salad greens
1 large tomato, cut into wedges
1/2 cup red onion slices
1/2 cup reduced fat Ranch salad dressing
1/4 cup blue cheese

Cook and stir chicken in barbecue sauce in skillet on medium-high heat until chicken is cooked through. Stir in additional barbecue sauce to moisten, if desired.

Toss greens with tomato and onion in large bowl; top with chicken.

Add dressing; mix lightly. Sprinkle with cheese. Makes six servings.

Chocolate Orange Cheesecake Bars

1 cup all-purpose flour
1/2 cup packed light brown sugar
1/4 teaspoon Watkins Ground Cinnamon
1/3 cup shortening
1/2 cup chopped pecans
Chocolate Orange Filling (recipe follows)
Pecan halves(optional)

  1. Heat oven to 350 degrees F.
  2. Stir together flour, brown sugar and cinnamon in large bowl. Cut in shortening until mixture resembles coarse crumbs. Stir in chopped pecans. Reserve 3/4 cup flour mixture. Press remaining mixture firmly onto bottom of ungreased 9-inch square baking pan. Bake 10 minutes or until lightly browned.
  3. Meanwhile, prepare Chocolate Orange Filling; spread over warm crust. Sprinkle with reserved flour mixture. Press pecan halves lightly onto top, if desired. Return to oven. Bake 25 to 30 minutes or until lightly browned. Cool; cut into bars. Cover; refrigerate leftover bars. About 24 bars.

Chocolate Orange Filling
1 package (8 oz.) cream cheese, softened
2/3 cup sugar
1/3 cup Watkins Cocoa
1/4 cup milk
1 egg
1 teaspoon Watkins Vanilla Extract
1/4 teaspoon freshly grated orange peel

Beat cream cheese and sugar in medium bowl until fluffy. Add cocoa, milk, egg, vanilla and orange peel; beat until smooth.

Chocolatey Football Bites

6 squares Semi-Sweet Baking Chocolate
1/2 cup light corn syrup
1 Tbsp. butter or margarine
1/2 tsp. Watkins Vanilla
4 cups Rice Crispies Cereal
White decorating gel

Microwave chocolate, corn syrup and butter in large microwaveable bowl on HIGH 2-1/2 min., stirring after 1-1/2 min. Blend in vanilla.

Add cereal; mix well. Cool 10 min. Shape into 18 (3-inch-long) football shapes with lightly moistened hands. Place on large sheet of wax paper; cool completely.

Use decorating gel to add "lacings" to "footballs." Let stand until gel is firm.

Individually wrap these chocolatey treats in plastic wrap and bring to your next tailgate party.

BIRD WATCHING

How to Make a Brushpile

High on the list of important microhabitats you can create for wildlife in your backyard is the brushpile. Do not confuse the brushpile with your compost pile; make sure the brushpile is made with only branches, sticks, and twigs. No lawn clippings, leaves, or compost should be used, because they will compact and block off the many entrances and exits that make a brushpile the great hideout that it is.

To start a brushpile, pick a spot in the yard a distance from your house but still visible, so you can observe the pile's inhabitants. The finished size will depend on the amount of room you have. A good rule of thumb is to make the pile about twice as wide as it is tall.

To start your brushpile, place four logs or thick branches about 6 feet long in a square. On top of these, place five or six thinner limbs, propping them against each other to form an inverted cone, or teepee shape. The leafy ends of the branches should be toward the ground. Place smaller branches, again with the leafy ends down, against the uprights to fill in the spaces. This allows roosting birds access but keeps out nighttime predators such as raccoons foxes, and cats. The pile can be a great winter hideout for rabbits, too, if you keep two of the corners of the four bottom logs at least 4 inches apart before adding the branches. Make the brushpile thickest on the side facing the prevailing winds. Add more branches as the pile breaks down over the months and years. As you continue to build, crisscross the sticks to create a honeycomb effect.

Brushpiles are one way a backyard wildlifer can attract many animal species. From shelter for wintering mammals to reproductive cover for low-nesting birds, or even as a spot for hibernating butterflies, the brushpile is a great attraction that uses plant material that would otherwise be put out on the curb for trash.
