Did You Know?

Peaches and nectarines are actually the same thing. That is, they are the same species (Prunus persica) and nectarines are a spontaneous mutation of the peach. Although the mutation is considered dominant, some nectarine pits will produce peach trees and vice versa. In fact, some branches of a peach tree may begin producing nectarines while the rest of the tree continues to produce peaches. The only difference is in the skin, with nectarines being smooth and peaches being fuzzy.

Stir the corn flakes, garlic powder, black pepper and red pepper in a shallow medium bowl.

Dip the chicken into the prepared soup and gravy base. Coat with the corn flake mixture. Place the chicken on a baking sheet.

Bake at 400 degrees F for 20 minutes or until the chicken is cooked through. Serves 4.

Slow Cooker Pork Chops
4 to 6 pork chops, bone-in or boneless
Flour
Salt
Watkins Granulated Black Pepper
1/4 cup oil
1 large onion, sliced
2 cups chicken broth made with 3 teaspoons Watkins Chicken Soup Base and 2 cups boiling water
8 oz. sour cream (regular or fat free )

Season pork chops to taste and dredge in flour. Lightly brown in oil and place in slow cooker; top with onion slices. Pour chicken broth over chops. Cook on low 7-8 hours. After the pork chops have cooked, stir 2 tablespoons flour into the sour cream; stir into cooking juices. (It is not necessary for this to be totally blended into cooking juices, but don't just dump it on top either.) Turn slow cooker to high for 15-30 minutes or until liquid is slightly thickened. Serve with rice, noodles or potatoes as you choose. Serves 4 to 6.

Beef and Noodle Casserole
2 cups cooked egg noodles
1 pound lean ground beef
1 can (15 oz.) tomato sauce
1-2 cloves garlic, minced
1 teaspoon Watkins Onion Flakes
1/2 teaspoon salt
1/4 teaspoon Watkins Granulated Black Pepper
1 package (4 oz.) cream cheese, softened
1 green onions, chopped
1 cup grated cheddar cheese

Preheat oven to 350 degrees F. Spread cooked noodles in the bottom of a medium casserole dish (2 quart). In a frying pan brown ground beef and garlic. Drain and discard fat. Add tomato sauce to the meat, heat and simmer for 15 minutes. Season with salt, pepper, and onion flakes. Pour meat mixture over the noodles in casserole dish. In a small bowl combine the cream cheese with the sour cream and mix until smooth. Stir in green onions. Spread over meat mixture. Sprinkle cheddar cheese over top of the cream cheese. Bake, uncovered, for 35 minutes. Makes 4 servings.

Orange Nut Bread with Cream Cheese Spread
1/3 cup butter, softened
2/3 cup sugar
2 eggs
1/2 teaspoon Watkins Orange Extract
1/2 teaspoon Watkins Double Strength Vanilla Extract
2 cups all-purpose flour
1 teaspoon Watkins Baking Powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1 cup orange juice
1 cup chopped walnuts

Spread
1 package (8 ounces) cream cheese, softened
2 tablespoons orange juice
1 tablespoon confectioners' sugar
1 teaspoon grated orange peel

In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in extracts. Combine the flour, baking powder, salt and baking soda; add to creamed mixture alternately with orange juice. Fold in walnuts.

Transfer to three greased 5-3/4-in. x 3-in. x 2-in. loaf pans. Bake at 350 degrees F for 35-40 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.

In a small bowl, beat the cream cheese, orange juice, confectioners' sugar and peel until well blended. Chill until serving. Serve with bread. Yield: 3 mini loaves (6 slices each) and 1 cup spread.

Double Applesauce Muffins
This is a healthy muffin recipe. It uses very little oil and sugar. The applesauce and apples add sweetness and moistness. The whole wheat flour adds to the nutrition.

1 3/4 cups whole-wheat flour
2 teaspoons Watkins Baking Powder
1/2 teaspoon baking soda
1 teaspoon Watkins Cinnamon
1/8 teaspoon salt
1/2 cup fat-free plain yogurt
1 large egg
3 tablespoons brown sugar
2 tablespoons canola oil
2 medium Golden Delicious apples, grated
3/4 cup unsweetened applesauce
1/2 cup currants, raisins, dried cranberries, or dried cherries

Preheat the oven to 375 degree F. Coat an 18-cup muffin tray with cooking spray.

In a large bowl, stir together the flour, baking powder, baking soda, cinnamon, and salt.

In a medium bowl, whisk together the yogurt, egg, brown sugar, and oil until smooth. Stir in the apples, applesauce, and dried fruit.

Pour the apple mixture into the dry ingredients and stir until just blended.

Spoon the batter evenly into the prepared cups, filling them nearly to the top. Bake for 20 to 25 minutes, or until muffins are springy to the touch and lightly browned. Turn out onto a wire rack to cool. Makes 18 muffins.

There was a hawk sitting on the fence outside my kitchen window last week. I was pleased that it sat there long enough for me to get my camera and take several pictures. I'm not sure of the species even though it was close. It may be a juvenile Red-tailed Hawk.
