Frosting Recipe using Dessert Mixes

COOKING TIPS

Opt for nonstick pans. That way, you can reduce the amount of oil needed for cooking. Use Watkins butter-flavored non-stick Cooking Spray or make your own oil spritz bottle to reduce the amount of oil and butter you use. If a recipe calls for 1 tablespoon of fat, you can usually cut out 1 or 2 teaspoons. (One tablespoon equals 3 teaspoons.)

Use a rubber scraper designed for use at high temperatures to mix, stir, and slide foods from nonstick pans instead of a spoon or pancake turner. They don't scratch your pan and the food slides cleanly out of your pan or skillet onto serving plate.

HEALTH TIP

February is National Heart Health Month

The most basic test to assess cardiac risk is a "lipoprotein" profile, which measures your cholesterol and triglyceride (a type of fat that circulates in your blood) levels. This is an inexpensive and simple blood test, and it's recommended at least every five years for all adults starting at 20 years old. (Individuals who are at risk for heart disease, such as those with a family history of heart disease or those who are already on lipid-lowering medications, should be tested more often.)

A lipoprotein profile shows:

  • Total cholesterol
  • HDL (the "good") cholesterol
  • LDL (the "bad") cholesterol
  • Triglycerides (blood fats)

Government and health organizations recommend the following cholesterol and triglyceride levels for the general public:

  • Total cholesterol at or below 200 mg/dL
  • LDL cholesterol at or near an optimal level of 100 to 129 mg/dL
  • HDL cholesterol at or above 60 mg/dL
  • Triglycerides at or below 150 mg/dL

Cholesterol and triglyceride levels that fall outside of this range are considered risk factors for heart disease. For individuals who have a higher risk for heart disease, such as those who have sustained a heart attack, the recommended ranges are set lower.

Modifying your lifestyle by reducing the amount of saturated and trans fat you eat and engaging in regular exercise can lower your risk for heart disease. If you smoke, quitting will help raise your HDL.

Heredity can be a factor in your test results (and your risk for heart disease), particularly when it comes to LDL and triglyceride levels.

RECIPES

Pasta with Lemon-Peppered Chicken

1 pound/454 g skinless, boneless chicken breasts, cut into 1/2 inch/1 cm strips
2 tsp/30 ml Watkins Cracked Black Pepper (on sale this month)
1 1/2 tsp/7.5 ml Watkins Garlic Liquid Spice (on sale this month)
2 tbsp/30 ml Watkins Garlic and Parsley Grapeseed Oil
1 cups/250 ml water
2 tbsp/30 ml Watkins Chicken Soup Base (on sale this month)
1 1/2 tbsp/25 ml fresh lemon juice, or to taste
12 ounces/340 g dry linguine or fettuccine
1/4 cup/60 ml finely grated Parmesan cheese
4 oz/114 g baby spinach leaves or other leafy greens

Toss the chicken with Watkins cracked pepper and Watkins Garlic Liquid Spice. Marinate, covered and refrigerated, for at least one hour or as long as overnight.

When ready to serve, bring water to boil to cook pasta. Heat grapeseed oil in a saute pan over medium-high heat. Add chicken and lightly brown on all sides, about 3 minutes. Add the water, soup base and lemon juice. Reduce heat to a simmer and cook for about 8 minutes.

Cook pasta, drain, and toss with chicken and half of spinach leaves. Garnish with lemon wedges, fresh parsley, and remaining spinach leaves. Sprinkle with Parmesan cheese and serve hot. Makes 6 servings.

Honey Cornbread Chicken
This down-home chicken recipe is sure to become a family favorite.

1 (3 1/2 to 4-pound) frying chicken, cut into 8 pieces, skinned
1 teaspoon Watkins Poultry Seasoning (on sale this month)
3 tablespoons honey
2 tablespoons butter, melted
1 1/2 cups dried crumbly-style cornbread stuffing or crumbled homemade cornbread
1 teaspoon Watkins Seasoning salt

Heat oven to 350 degrees F. Spray 13x9-inch baking dish with no-stick cooking spray. Place chicken in baking dish. Sprinkle with poultry seasoning.

Combine honey and butter in small bowl; spoon 3 tablespoons over chicken.

Sprinkle and press cornbread stuffing over chicken. Sprinkle with seasoning salt; drizzle with remaining honey mixture.

Bake for 50 to 60 minutes or until chicken is no longer pink. Makes 6 servings.

Mini Hot Chocolate Cakes
Love chocolate? You'll find a hot, flowing chocolate center that oozes decadence when you fork into these gems.

5 ounces semisweet or bittersweet baking chocolate, chopped
1/2 cup plus 2 tablespoons butter or margarine
3 eggs
3 egg yolks
1 1/2 cups powdered sugar
1/2 cup all-purpose flour
Additional powdered sugar, if desired
1 can (21 ounces) cherry pie filling
1/4 tsp Watkins Almond Extract

  1. Heat oven to 450 degrees F. Grease bottom and side of six 6-ounce custard cups with shortening. In 2-quart saucepan, melt chocolate and butter over low heat, stirring frequently. Cool slightly.
  2. Meanwhile, in large bowl, beat eggs and egg yolks with wire whisk or hand beater until well blended. Beat in 1 1/2 cups powdered sugar. Beat in melted chocolate mixture and flour. Divide batter evenly among custard cups.
  3. Bake 11 to 13 minutes or until sides are set and cakes feel soft when touched in center. Run small knife or metal spatula along sides of cakes to loosen. Immediately turn upside down onto individual plates; remove cups. Sprinkle with additional powdered sugar. Mix almond extract into pie filling and spoon pie filling over cakes. Serve warm. Makes 6 servings.

These cakes are meant to have a hot, flowing chocolate center that oozes out when you cut into them. Oven temperature and baking time are critical to the success of the recipe. Be sure to check at the minimum bake time. If the cakes are too soft or do not hold their shape, bake a minute or two longer. If the centers are too cakelike in texture, bake a few minutes less next time.

Easy Coconut Custard Pie
When there’s little time to prepare dessert, bake this custard pie which forms its own crust during baking.

2 cups milk
1 cup sweetened flaked coconut
3/4 cup sugar
1/2 cup all-purpose flour
3 tablespoons butter, melted
4 eggs
1 teaspoon Watkins Vanilla
Sprinkle of Watkins Nutmeg (on sale this month)

Heat oven to 325 degrees F. Place milk in 5-cup blender container; add all remaining ingredients except nutmeg. Cover; blend at medium speed until well mixed.

Pour egg mixture into greased and floured 9-inch pie plate or pan; sprinkle with nutmeg. Bake for 40 to 50 minutes or until knife inserted in center comes out clean.

Serve warm or chilled. Store refrigerated. Makes 8 servings.

Bread Pudding with Butter Pecan Sauce

Pudding
4 eggs
3/4 cup/180 ml sugar
2 cups/500 ml milk
1 cup/250 ml half and half
1/2 cup/125 ml butter, melted
1 tbsp/15 ml Watkins Vanilla Extract
3/4 cup/180 ml raisins
2 medium apples, peeled and thinly sliced
2 tsp/10 ml Watkins Cinnamon (on sale this month)
1 loaf Texas Toast (thick-sliced bread) torn into pieces

Sauce
1 cup/250 ml sugar
1/2 cup/125 ml water
1/2 cup/125 ml heavy cream
2 tbsp/30 ml butter, softened at room temperature
1 tsp/5 ml Watkins Butter Pecan Extract or any Watkins Extract of choice

Combine all pudding ingredients except bread. Add bread and allow to soak up liquid, about 20 minutes. Preheat oven to 350 degrees F/180 degrees C. Lightly grease a 9 x 13 inch glass baking dish and pour bread mixture into pan. Bake about 45 minutes to 1 hour. Serve with sauce.

To make sauce, place sugar and water in small saucepan over high heat and cook, stirring until sugar is dissolved. Then reduce heat to medium and cook without stirring until sauce has turned caramel color (about 15 minutes). Remove syrup from heat. Let cool slightly, then slowly add cream, butter and extract, being sure hot syrup doesn't spatter. Stir until smooth; serve on bread pudding. Serves 8.
