Frosting Recipe using Dessert Mixes
2 cups/500 ml powdered sugar
1/2 cup/125 ml Watkins Dessert Mix (chocolate, vanilla, banana, butterscotch, or lemon)
1/4 cup/60 ml vegetable shortening

A long line of cars was ahead of us at the drive-in window of the bank, and my 18-month-old daughter, tired of waiting, began to fuss and cry. All my efforts to quiet her failed. At last it was our turn and I drove up to the window. "Hello," the teller called out cheerfully. "May I help you?" My daughter stopped crying and piped up hopefully, "Fries?"

COOKING TIP - Better Soups
- Make soup a day ahead of time, so that the seasonings will have time to improve the flavor. Fat will solidify on top of the chilled soup allowing it to be removed easliy.
- Never use salt or pepper to season soups until you are almost finished with the cooking process. Both of these seasonings will intensify and may give the soup too strong a flavor.
- Simmer soup with the lid on to help the flavors become better absorbed.
- When you make a cold coup, remember that a cold soup needs more seasoning than a hot soup.

Strengthen Eyes and Bones
Adding avocado, olive oil, nuts, olives, or another healthy fat source to red, green, orange, and yellow fruits and veggies increases the amount of fat-soluble vitamins, such as A, E, and K. These nutrients boost vision, improve immunity, and protect against stroke and osteoporosis, respectively.

RECIPES
Chocolate Orange Fondue
This fondue makes a lucious dessert for a party or Valentine's Day dinner.
1/3 cup whipping cream
1 teaspoon grated orange zest
10 to 12 oz semi-sweet chocolate chips
1 tsp Watkins Original Double-Strength Vanilla
1 tsp Watkins Orange Extract (on sale this month)
Dippers
- Fresh fruits - bananas, strawberries, grapes, tangerines, kiwi, pears, apples, raspberries. Fresh fruit should be ripe but still firm enough to not dissolve while dipping.
- Dried fruit - apricots, dates, figs
- Cakes or cookies - Bite sized cubes of angel food cake, pound cake, lady fingers or crisp biscotti
- Nut Breads - Nut breads can be served toasted or fresh. Cut into bite sized pieces. Use date nut bread, cinnamon bread, pumpkin bread, banana bread, or zucchini bread.
- Marshmallows, pretzels
Heat cream, chocolate chips, and orange zest in heavy medium saucepan or electric fondue pot on low heat. Whisk until chocolate is melted and mixture is smooth. Stir in vanilla and orange extracts. If heating in saucepan transfer to fondue pot and keep warm over candle or canned heat burner.
Serve with dippers using fondue forks or skewers.
Variation
Replace Orange extract with other Watkins extracts - Banana, Mango, Peach, Pineapple, Raspberry, Strawberry, (fruit extracts on sale this month) Almond, Caramel, Peanut Butter, Peppermint, Coconut
Raspberry and Cream Cheese Coffee Cake
The cheesecake-like topping and fresh raspberries make this low-fat coffee cake better than good, it's sensational
Watkins nonstick cooking spray
1-1/4 cups all-purpose flour
1-1/4 teaspoons Watkins Baking Powder
1 teaspoon finely shredded lemon or orange peel
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup granulated sugar
3 tablespoons butter or margarine, softened
1/4 cup refrigerated or frozen egg product, thawed
1 teaspoon Watkins Vanilla
1/2 cup buttermilk
2 ounces reduced-fat cream cheese, softened
1/4 cup granulated sugar
2 tablespoons refrigerated or frozen egg product, thawed
1 cup raspberries
Sifted powdered sugar
- Lightly coat a 9x1-1/2-inch round baking pan with cooking spray; set aside. In a medium bowl stir together the flour, baking powder, lemon peel, baking soda, and salt. Set aside.
- In a medium mixing bowl beat the 3/4 cup granulated sugar and butter with an electric mixer on medium to high speed until combined. Add the 1/4 cup egg product and the vanilla. Beat on low to medium speed for 1 minute. Alternately add the flour mixture and buttermilk to the egg mixture, beating just until combined after each addition. Pour into prepared pan.
- In a small mixing bowl beat the cream cheese and the 1/4 cup granulated sugar on medium to high speed until combined. Add the 2 tablespoons egg product. Beat until combined. Arrange the 1 cup raspberries over the batter in the pan. Pour the cream cheese mixture over all.
- Bake in a 375 degree F oven for 30 to 35 minutes or until a wooden toothpick inserted near center comes out clean. Cool slightly on wire rack. Serve warm. If desired, top with additional fruit. Sprinkle with powdered sugar. Makes 10 servings.

Apple Breakfast Bars
1/2 cup dried apples, snipped
1/3 cup honey
1/4 cup raisins
1 tablespoon brown sugar
1/3 cup peanut butter
1/4 cup apple butter
1/2 teaspoon Watkins Ground Cinnamon (on sale this month)
1/2 cup rolled oats
1/2 cup chopped walnuts or pecans
1/3 cup toasted wheat germ
1/4 cup roasted sunflower seeds
1 to 2 cups cornflakes or wheat flakes
- In a Dutch oven combine dried apples, honey, raisins, and brown sugar. Heat and stir until mixture boils; reduce heat slightly. Cook, uncovered, for 1 minute, stirring constantly. Remove from heat. Stir in peanut butter until melted. Stir in apple butter and cinnamon. Stir in rolled oats, walnuts or pecans, wheat germ, and sunflower seeds until well combined. Add cereal, stirring to coat.
- Press mixture firmly into an ungreased 8x8x2-inch pan. Chill to set. Cut into 8 bars. Store in an airtight container in the refrigerator up to 2 days. Makes 8 bars.

Brunch Loaf
This brunch loaf is made with whole grains and yogurt, spiced with cinnamon and sweetened with brown sugar and raisins making it both delicious and wholesome.
1 cup all-purpose flour
1 cup whole wheat flour
2/3 cup packed brown sugar
1/4 cup whole bran cereal
1 teaspoon baking soda
1/2 teaspoon Watkins Ground Cinnamon (on sale this month)
1/4 teaspoon salt
1 beaten egg
1 8-ounce carton vanilla yogurt
1/4 cup milk
1/4 cup cooking oil
1/2 cup raisins
In a medium mixing bowl combine all-purpose flour, whole wheat flour, sugar, bran cereal, baking soda, cinnamon, and salt. Make a well in the center of the dry ingredients; set aside.
In a small mixing bowl combine egg, yogurt, milk, and oil. Add yogurt mixture all at once to dry ingredients. Stir just until moistened. Do not overmix. Fold in raisins.
Pour batter into one greased 8x4x2-inch loaf pan or two greased 7-1/2x3-1/2x2-inch loaf pans.
Bake in a 350 degree F oven until a toothpick inserted near the center comes out clean. Allow about 55 minutes for large loaf or about 35 minutes for small loaves. Cool in pan for 10 minutes. Remove from pan; cool. Makes 14 servings.

Caramel Apple Breakfast Pudding
This bread pudding combines two favorites, French toast and caramel rolls, without the mess of bread dipping or tedious dough rolling. Layered in a pan ahead of time, the pudding can remain chilled overnight until morning baking.
2 large tart apples (such as Jonathan or Granny Smith)
3/4 teaspoon Watkins Ground Cinnamon (on sale this month)
1/2 cup packed brown sugar
2 tablespoons light corn syrup
2 tablespoons margarine or butter
1/4 cup pecan pieces
3 beaten eggs
1-1/4 cups milk
1 teaspoon Watkins Vanilla
1/4 teaspoon Watkins Ground Nutmeg
8 to 10 1/2-inch-thick sliced bread or French bread
- Peel, core, and slice apples (2 cups). In a small saucepan combine apple slices and 1/4 cup water. Bring to boiling; reduce heat. Cook, covered, over medium-low heat for 5 to 7 minutes or until apples are tender, stirring occasionally. Drain in a colander. Transfer apples to a small bowl. Gently stir cinnamon into cooked apples. Set aside.
- In the same small saucepan combine brown sugar, light-colored corn syrup, and margarine or butter. Cook and stir over medium heat until mixture just comes to a boil. Remove from heat. Pour mixture into a 2-quart square baking dish. Sprinkle pecans over all.
- In a medium mixing bowl combine the eggs, milk, vanilla, and nutmeg. Arrange a layer of half the bread slices in the baking dish atop the caramel mixture, trimming bread to fit. Spoon cooked apples evenly over bread layer. Arrange remaining bread slices on top. Carefully pour the egg mixture over bread, pressing the bread down gently to moisten the slices completely. Cover with plastic wrap and refrigerate for at least 3 hours or up to 24 hours.
- At serving time, uncover and bake in a 325 degree F. oven for 40 to 45 minutes or until a knife comes out clean. Remove from oven; run a knife around edge to loosen. Let stand for 15 minutes. Carefully invert pudding onto a platter. (Spoon any remaining caramel mixture in dish over pudding.) Serve warm. Makes 8 servings.

Maple-Butter Twists
2/3 cup milk
2 eggs
1/3 cup butter, cut up
1/4 cup water
4 cups bread flour
1/4 cup granulated sugar
1-1/2 teaspoons salt
2-1/2 teaspoons active dry yeast or bread machine yeast
1/2 cup packed brown sugar
1/3 cup granulated sugar
1/4 cup all-purpose flour
1/4 cup butter, softened
1/4 cup pure maple syrup or maple-flavored syrup
1 teaspoon Watkins Ground Cinnamon (on sale this month)
1/2 teaspoon Watkins Maple Flavoring
1/2 cup chopped pecans
- Add the first eight ingredients to bread machine according to the manufacturer's directions. Select the dough cycle. When cycle is complete, remove dough. Punch down. Cover and let rest for 10 minutes.
- Meanwhile, for filling: In a small bowl, stir together brown sugar, the 1/3 cup granulated sugar, the all-purpose flour, the 1/4 cup butter, the maple syrup, cinnamon, and maple flavoring; set aside. Grease two 8x1-1/2-inch round baking pans. Grease the outsides of two 6-ounce custard cups. Place a cup upside down in the center of each prepared baking pan; set aside.
- Divide dough in half. On a lightly floured surface, roll one dough portion into a 16x6-inch rectangle. Spread with half of the filling and sprinkle with half of the pecans. Starting from a long side, roll up into a spiral; seal edge and ends. Cut spiral in half lengthwise.
- To shape, line up the halves side by side with cut sides up; loosely twist halves together, keeping cut sides up. Gently stretch to 20 inches long. Transfer to prepared baking pan, forming it into a ring around custard cup; moisten ends and press together to seal. Repeat with the remaining dough, filling, and pecans. Cover and let rise in a warm place until nearly double (30 to 40 minutes).
- Preheat oven to 350 degrees F. Place baking pans on baking sheets to catch any drips while baking. Bake about 25 minutes or until golden brown. Cool in pans on wire racks for 5 minutes. Loosen edges and carefully remove cups. Remove bread from pans; cool slightly on wire racks. Serve warm or cool completely. Makes 16 servings

Minestrone Parmesan Soup
1/4 cup olive oil
1 cup minced onion
2 tablespoons minced fresh cilantro or 2 teaspoons Watkins Cilantro (on sale this month)
3 cups finely diced smoked ham
4 quarts boiling water
1 cup Watkins Beef Soup Base
1 cup diced fresh or canned tomatoes
1 cup diced carrots
1 cup diced celery
1/2 cup corn
1 cup diced raw white potatoes
1 cup cooked garbanzo beans
1 cup uncooked small pasta (macaroni or smaller)
2 cups shredded fresh spinach
1 tsp Watkins Basil (on sale this month)
Freshly ground Watkins Pepper, to taste
Freshly grated Parmesan cheese, to taste
Heat oil in a large stockpot and sauté onions, garlic, cilantro and smoked ham until onions are soft. Mix beef soup base into boiling water; then add to mixture in stock pot and simmer on medium-low heat for 20 minutes.
Add tomatoes, carrots, celery, corn, potatoes and garbanzo beans. Cover and simmer until vegetables are tender. Add pasta and spinach and cook until pasta is al dente. Season with pepper. Stir in freshly grated Parmesan cheese and serve hot. Serves 10 to 12.
