Today is December 1st. I don't know about you, but 2009 seems to have flown by. While winter doesn't officially arrive until later this month, harsher winter weather has arrived in most parts of North America. We had strong gusting winds for a couple of days and our electricity was off for a few hours Saturday evening. The moon light shining through the windows provided enough light for me to find candles and matches so we weren't sitting in the dark. As it turned out we had a very peaceful evening.

COOKING TIP - Clementine and Mandarin

You'll find citrus fruits known as Clementines and Mandarins in the supermarkets especially during the winter holidays. If you've ever wondered about their origins some information is provided below.

Clementine
The Clementine is a hybrid of the tangerine and the Seville or bitter orange developed in 1902 near Oran, Algeria by Father Clement Rodier, a French missionary. They are easy to peel, have only occasional seeds, and have a very pleasant tangy, sweet flavor. They have been called 'zipper oranges' and kid-glove oranges because they are so easy to peel (a lady could peel one wearing kid gloves).

Mandarin
The Mandarin orange includes several varieties of citrus fruit, including the Mandarin (China), Tangerine (named for Tangier, Morocco, where they were first imported from China), Dancy, Clementine and Satsuma (Japan). They vary in size, sweetness, and whether they have seeds or not, but they all have loose skins that slip off easily. They were introduced into the U.S. in 1882. Most canned mandarin oranges are made from Satsumas.

RECIPES

Creamy Mashed Potato and Onion Soup
Don't throw away those leftover mashed potatoes. Make a creamy potato soup.

1 tablespoon olive oil
1/2 cup chopped onion
1 bulb fennel, cut into 1/4-inch pieces
Salt to taste
3 cups mashed potatoes
6 cups low-sodium chicken broth made with 6 cups boiling water and 3 tablespoons Watkins Chicken Soup Base
crisps or crackers (optional)

  1. Heat the oil in a large pot over medium heat. Add the onion, fennel pieces, and 1/4 teaspoon salt and cook, stirring occasionally, until soft, 8 to 10 minutes.
  2. Add the mashed potatoes and broth and simmer over medium heat, stirring occasionally, until heated through, 4 to 6 minutes. Puree in the pot using a handheld immersion blender (or, working in batches, in a standard blender).
  3. Ladle into bowls. Serve with the crisps or crackers

Oatmeal Spice Cookies
2 sticks unsalted butter, at room temperature
1 cup packed dark brown sugar
1/2 cup granulated sugar
2 tablespoons corn syrup
1 teaspoon Watkins Vanilla Extract
1 large egg
2 3/4 cups all-purpose flour
1/2 teaspoon kosher salt
1 1/4 teaspoons baking soda
1 teaspoon Watkins Apple Bake Seasoning or Watkins Pumpkin Pie Spice (or substitute 1/2 teaspoon Watkins Ground Cinnamon, 1/4 teaspoon Watkins Ground Ginger, and 1/4 teaspoon Watkins Ground Nutmeg)
2 cups old-fashioned oatmeal

  1. Heat oven to 375 degrees F. Grease or line 2 baking sheets with parchment paper or aluminum foil.
  2. With an electric mixer on medium-high, beat the butter, brown and granulated sugars, corn syrup, and vanilla for 3 minutes. Add the egg and beat until combined. In a separate bowl, whisk together the flour, salt, baking soda, and pie spice. Reduce mixer speed to low and slowly add the flour mixture to the egg mixture. Stir in the oatmeal.
  3. Form the dough into tablespoon-size mounds. Place on the prepared baking sheets, 2 inches apart. Bake until lightly browned at the edges, 12 to 15 minutes. Cool on the baking sheets for 5 minutes. Transfer the cookies to wire racks. Cool completely.

Bananas Foster Bars
This recipe takes all those great flavors rum, bananas and, butter and transforms them into a bar cookie that's sure to make any dessert plate a hit.

Bars
1/2 cup (1 stick) butter, softened
1 cup dark brown sugar, packed
1 egg
1 tablespoon dark rum or 1 teaspoon Watkins Rum Extract
1 cup flour
1/8 teaspoon baking soda
1/2 teaspoon Watkins Baking Powder
1 teaspoon Watkins Cinnamon
1/4 teaspoon salt
1 cup bananas, diced
1/2 cup (2 ounces) pecans or walnuts, chopped

Frosting
2 tablespoons unsalted butter at room temperature
4 ounces cream cheese, softened
1/4 cup light brown sugar, packed
1 teaspoon Watkins Rum Extract or Watkins Pure Vanilla Extract
1 teaspoon Watkins Cinnamon
1 to 2 cups confectioners' sugar, sifted
pecan halves for garnish

Bars
Preheat oven to 350 degrees F. Lightly butter and flour 9-inch square pan. For a thicker bar, use an 8-inch square pan.

In large bowl, beat together butter and sugar with electric mixer until creamy. Add egg and rum; mix to combine. In small bowl, whisk together flour, baking soda, baking powder, cinnamon and salt; gradually add to butter mixture. Mix in bananas and pecans; stir to incorporate. Pour batter into prepared pan and spread evenly. Bake for 20 to 25 minutes or until toothpick inserted in the center comes out clean. Remove pan to a wire rack to cool completely.

Frosting
In a large bowl, combine butter, cream cheese, sugar and extract with an electric mixer. Beat until light and fluffy. Add cinnamon and 1 cup confectioners' sugar; blend until smooth (careful; over mixing will cause separation). Add additional confectioners' sugar to create desired consistency. Spread frosting immediately over cooled bars. Cover and store bars in refrigerator for up to 3 days. When ready to serve, cut bars into 2-inch squares. If desired, top each square with a pecan half.

Wintermint Wafers
With westerly winds whipping in from the Rockies, the Central part of the United States can be quite cold and crisp this time of year. Wintermint Wafers capture the essence of wintry wind with the freshness of mint in a chewy, chocolaty and buttery wafer that is drenched in dark chocolate.

Chocolate Cookies
1 cup (2 sticks) butter, softened
1 cup confectioners' sugar
1 teaspoon Watkins Pure Peppermint Extract
1/2 teaspoon salt
1 cup unsweetened Watkins Baking Cocoa
1 1/2 cups flour

Chocolate Coating
1 pound semi-sweet chocolate, chopped
1 teaspoon Watkins Pure Peppermint Extract
colored sprinkles for garnish

Chocolate Cookies
In large bowl, beat butter and confectioners' sugar with electric mixer until light and fluffy. Stir in peppermint extract followed by salt and cocoa powder; mix. Add flour and mix to incorporate.

Divide dough in two pieces and place each on large sheet of plastic wrap. Flatten into 1/2-inch thick discs, wrap and refrigerate until firm enough to roll out, about 45 minutes.

Preheat oven to 350 degrees F. Remove chilled dough, place disc between two sheets of parchment; roll out to 1/8-inch thick. Cut desired shapes and place on parchment-lined baking sheets. Bake 5 to 6 minutes. Remove cookies from oven; cool on pan 3 to 4 minutes. Remove to wire rack to cool completely.

Chocolate Coating
Place chocolate in large microwave-safe dish. Microwave 30 seconds on high, stir and continue to microwave in 10- to 20-second intervals, stirring after each until chocolate is melted and smooth. Stir in peppermint extract.

To frost cookies, place one cookie on slotted spatula, carefully dip into the chocolate, coating completely; lift cookie out. Hold cookie on spatula, allowing excess chocolate to drip off. Place cookie onto wire cooling rack and garnish with colored sprinkles, if desired. Repeat with remaining cookies. Let chocolate set. Place coated cookies in freezer for 1 hour to set before storing or serving. Store cookies in airtight container for up to 1 week, or in freezer for up to 3 weeks.

Nutmeg Sugar Cookies
1/2 cup butter or margarine, at room temperature
1/2 cup granulated sugar
1/2 cup powdered sugar
1/2 cup canola oil
1 large egg
1/2 teaspoon Watkins Vanilla Extract
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon Watkins Ground Nutmeg
1/4 teaspoon salt

  1. In a large bowl, with a mixer on medium speed, beat 1/2 cup butter, granulated sugar, and powdered sugar until smooth. Add oil, egg, and vanilla and beat until well blended.
  2. In a medium bowl, mix 2 cups flour, baking soda, nutmeg, and salt. Stir into butter mixture, then beat until well blended. Cover bowl with plastic wrap and chill until dough is firm, about 1 hour.
  3. Shape dough into 1-inch balls and place about 2 inches apart on buttered 12- by 15-inch baking sheets. Press each cookie with the lightly floured tines of a fork to flatten slightly.
  4. Bake cookies in a 350 degrees F regular or convection oven until edges are lightly browned, 8 to 10 minutes; if baking two sheets at once in one oven, switch their positions halfway through baking. Let cookies cool slightly, then use a wide spatula to transfer to racks to cool completely. Yield: Makes about 3 dozen cookies.

Pistachio Biscochitos
Biscochitos are a traditional Southwestern treat, typically spiced with anise and cinnamon. Beautiful, festive and packed with flavor, they feature a butter cookie base that is crisp on the outside and chewy on the inside. This particular variety adds orange and pistachio for extra zing and crunch.

3 cups flour
1 1/2 teaspoons Watkins Baking Powder
1 teaspoon Watkins Ground Cinnamon
1/2 teaspoon salt
3/4 cup shelled, roasted and salted pistachios, chopped
1 cup (2 sticks) butter, softened
1/3 cup raw sugar*
1/3 cup dark brown sugar, packed
1 large egg
1/2 to 1 teaspoon Watkins Anise Extract
1 teaspoon Watkins Almond Extract
1 teaspoon Watkins Orange Extract
2 teaspoons orange zest
colored sugar, for decoration

In medium bowl, combine flour, baking powder, cinnamon, salt and pistachios; set aside. In large bowl, beat together butter and sugars with an electric mixer until light and fluffy. Add egg, extracts and zest; mix to combine. Gradually add flour mixture; mixing well.

Divide dough in two pieces and place each piece on large sheet of plastic wrap. Flatten into 1/2-inch thick discs, wrap and refrigerate until firm enough to roll out, about 30 to 45 minutes.

Preheat oven to 350 degrees F. Roll dough out until 1/4-inch thick and cut into desired shapes. Place cookies on parchment-lined baking sheets. Decorate with colored sugars, if desired. Bake 9 to 11 minutes, until golden and crisp.

Cool cookies on pan 3 to 4 minutes. Remove to wire rack to cool completely. Store in airtight container for up to 1 week. Makes 5 dozen cookies.

*Demerara and Turbinado are two common types of raw sugar.

BIRD WATCHING

The new season of Project FeederWatch began November 14th and I've been feeding, identifying, and counting my backyard birds again. The birds like my homemade suet much better than what I buy at the birding store. It's a mixture of bacon grease or shortening, oatmeal, peanut butter, jam or jelly, peanut pieces, stale cereal, and bird seed. I make a bowl full and then form into patties and freeze until ready to use.

So far I've had the usual cast of bird visitors - mourning doves, white crowned sparrows, golden crowned sparrows, oak titmice, chestnut-backed chickadees, white breasted nuthatches, western scrub jays, steller's jays, house finches, downy woodpecker, california towhees, and anna's humingbirds.
