RECIPES

Almond Coffee Cake

2 1/2 cups flour
1 cup sugar
6 ounces butter
1 teaspoon Watkins Baking Powder
1/4 teaspoon salt
3/4 cup sour cream
2 eggs
1 teaspoon Watkins Almond Extract
1 cup (8 oz) softened cream cheese
6 tablespoons cottage cheese
2 tablespoons sliced almonds

Preheat oven to 350 degrees F. Spray a 9-inch spring form pan with non-stick cooking spray. Combine flour, 3/4 cup sugar, and cut in butter until mixture resembles course crumbs. Reserve 1 cup of mixture and set aside. To the remaining crumb mixture in bowl, add baking powder, salt, sour cream, 1 egg and almond extract. Blend well. Spread batter in pan. In separate mixing bowl combine cream cheese, cottage cheese and 1/4 cup sugar and beat until mixed. Add egg and beat an additional minute until blended well. Pour this cheese mixture over the batter in the pan. Combine reserved crumb mixture with almonds. Sprinkle over mixture. Bake at 350 degrees for 45-50 minutes or until cheese mixture is set and cake is firm and slightly pulling away from the sides of the pan. Cool before removing sides of pan. serves 12.

Creamed Spinach
This vegetable side dish is nutritious and delicious.

2 teaspoons extra-virgin olive oil
1/4 cup minced green onions or red onion
1 10-ounce bag fresh spinach, tough stems removed
1 tablespoon butter
1 tablespoon flour
1/2 cup 1% milk
1/8 teaspoon Watkins Nutmeg
1/8 teaspoon salt
1/8 teaspoon Watkins Granulated Black Pepper
2 tablespoons grated Parmesan or Pecorino Romano cheese

The sturdier texture of mature spinach stands up better to sauteing than baby spinach and it's a more economical choice. We prefer to serve baby spinach raw.

Heat oil in a large nonstick skillet or Dutch oven over medium-high heat. Add onion; cook, stirring, until fragrant, about 30 seconds. Add spinach and cook, stirring, until just wilted, about 2 minutes.

Heat butter in a small saucepan over medium-high heat. Add flour and cook, stirring, until smooth and bubbling, about 30 seconds. Add milk, nutmeg, salt and pepper; cook, whisking constantly, until thickened, about 1 minute. Stir the spinach into the sauce. Sprinkle with grated cheese and serve.

Chicken Noodle Casserole

1 can (10 3/4 ounces) condensed cream of chicken soup, undiluted
1/2 cup mayonnaise
2 tablespoons lemon juice
2 cups cubed cooked chicken
1 small onion, chopped
1/4 cup chopped green pepper
1/4 cup chopped sweet red pepper
1/4 teaspoon Watkins Granulated Black Pepper
1 cup (4 ounces) shredded Monterey Jack cheese, divided
1 cup (4 ounces) shredded sharp cheddar cheese, divided
12 ounces medium egg noodles, cooked and drained

In a large bowl, combine soup, mayonnaise and lemon juice. Add the chicken, onion, peppers, black pepper, 1/2 cup of Monterey Jack cheese and 1/2 cup of cheddar cheese; mix well. Add noodles and toss to coat.

Transfer to a greased 2-quart baking dish. Bake, uncovered, at 350 degrees F for 30-35 minutes. Sprinkle with remaining cheeses. Bake 10 minutes longer or until vegetables are tender and cheese is melted. Makes 6 servings.

Wholesome Cornbread

1 1/4 cups yellow cornmeal
3/4 cup whole-wheat flour
3 tablespoons sugar
1 teaspoon Watkins Baking Powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 large egg, lightly beaten
1 1/4 cups buttermilk
2 tablespoons canola oil

Preheat oven to 350 degrees F. Coat an 8-inch-square baking pan with cooking spray.

Whisk cornmeal, flour, sugar, baking powder, baking soda and salt in a large bowl. Whisk egg, buttermilk and oil in a separate bowl. Add to the dry ingredients and stir until just combined. Scrape the batter into the prepared pan, spreading evenly.

Bake the cornbread until the top springs back when touched lightly, 25 to 30 minutes. Let cool in the pan on a wire rack for at least 5 minutes. Serve warm or at room temperature.

Caramel Apple Pudding

2 large tart apples, such as Jonathan or Granny Smith
1/4 cup water
3/4 teaspoon Watkins Ground Cinnamon
1/2 cup packed brown sugar
2 tablespoons light-color corn syrup
2 tablespoons butter or margarine
1/4 cup pecan pieces
3 eggs, beaten
1 1/4 cups milk
1 teaspoon Watkins Vanilla
1/4 teaspoon Watkins Ground Nutmeg
8 to 10 1/2-inch-thick slices Italian or French bread

  1. Peel, core, and slice apples (approximately 2 cups). In a small saucepan, combine apple slices and 1/4 cup water. Bring to boiling; reduce heat. Cook, covered, over medium-low heat for 5 to 7 minutes or until apples are tender, stirring occasionally. Drain in a colander. Transfer apples to a small bowl. Gently stir cinnamon into cooked apples; set aside.
  2. For caramel, in the same small saucepan, combine brown sugar, corn syrup, and butter. Cook and stir over medium heat until mixture just comes to a boil. Remove from heat. Pour mixture into a 2-quart square baking dish. Sprinkle pecans over all.
  3. In a medium bowl, combine eggs, milk, vanilla, and nutmeg. Arrange a layer of half the bread slices in baking dish on top of caramel mixture, trimming bread to fit. Spoon cooked apples evenly over bread layer. Arrange remaining bread slices on top. Carefully pour egg mixture over bread, pressing bread down gently to moisten slices completely. Cover and chill in refrigerator for 3 hours to 24 hours.
  4. Preheat oven to 325 degress F. Bake, uncovered, for 40 to 45 minutes or until a knife inserted near center comes out clean. Remove from oven; run a knife around edge to loosen. Let stand in dish on a wire rack for 15 minutes. Carefully invert pudding onto a platter. Spoon any remaining caramel mixture in dish over pudding. Serve warm or cool. Makes 8 servings

Brown Sugar Fudge

2 cups firmly packed brown sugar
1 cup granulated sugar
1/4 cup dark Karo corn syrup
2 T. butter or margarine
3/4 cup milk
1/8 tsp salt
1 tsp Watkins Vanilla
May add 7 oz marshmallow creme at the end before placing in pan. 1/2 cup coarsely chopped nuts, optional

  1. Combine sugars, corn syrup, butter, milk and salt in a medium sized heavy saucepan.
  2. Heat, stirring constantly , to boiling, then cook, stirring several times, to 238 degrees F on a candy thermometer. (a teaspoon of syrup will form a soft ball when dropped in very cold water) Remove from heat at once. Add vanilla.
  3. Cool mixture in pan to 110 degrees F or until lukewarm; (this can be hastened along by sitting it in a sink of ice water) Beat with wooden spoon until mixture thickens and begins to lose its gloss (approx 15 minutes).
  4. Spread in buttered 9 by 5 by 3 inch pan. Use a little bigger pan if you like your candy less thick. Add nuts if using. Let stand until cool, cut into squares. Makes 2 lbs.

Strawberry Dip

8 oz. cream cheese, softened
1/3 cup powdered sugar
1 tsp. Watkins Vanilla Extract
2 tsp. Watkins Strawberry Extract
4 Tablespoon sour cream
2 drops Watkins Red Food Coloring

Blend all ingredients together. Chill and serve with fresh fruit, as a bagel spread, or a frosting.

Spiced Nuts

1 2/3 cups peanuts, dry-roasted
1/2 cup almonds, unblanched
1/2 cup walnuts
1 egg white, slightly beaten

Seasoning
3/4 cup sugar
1/2 teaspoon salt
1/2 teaspoon Watkins Ginger
1 1/4 teaspoons Watkins Cinnamon
1/4 teaspoon Watkins Nutmeg
1/4 teaspoon Watkins Cloves

Place in large bowl and cover nuts with egg white.

Add seasoning to nuts. Place on cookie sheet and bake at 350 degrees F for 15 minutes.

This makes a nice hostess gift at Christmas time.

Chocolate-Cherry Cookies

1 package (8 ounces) semisweet-chocolate squares, coarsely chopped
6 tbsp. margarine or butter, cut up
3/4 cup sugar
2 tsp. Watkins Vanilla Extract
2 large eggs
1/4 cup all-purpose flour
1/4 cup Watkins Baking Cocoa
1/2 tsp. Watkins Baking Powder
1/4 tsp. salt
1 package (6 ounces) semisweet-chocolate chips (1 cup)
1 cup dried tart cherries

Preheat oven to 350 degrees F, In 3-quart saucepan, melt chocolate with margarine or butter over low heat, stirring frequently. Remove saucepan from heat and, with wire whisk, stir in sugar and vanilla until blended. Whisk in eggs, 1 at a time. With spoon, stir in flour, cocoa, baking powder, and salt. Add chocolate chips and cherries, stir just until evenly mixed.

Drop dough by rounded tablespoons, 1 1/2 inches apart, onto ungreased large cookie sheet. Bake 13 to 15 minutes, until tops of cookies are set. Let cookies remain on cookie sheet on wire rack 1 minute to cool slightly. With wide metal spatula, transfer cookies to wire rack to cool completely. Repeat with remaining dough. Store cookies in tightly covered container up to 2 weeks.

Holiday Peanut Butter Cookies

3-1/4 cup all-purpose flour
1 teaspoon Watkins Baking Powder
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, softened
1/2 cup creamy peanut butter
3/4 cup packed brown sugar
3/4 cup granulated sugar
2 eggs
1 teaspoon Watkins Vanilla Extract
1 cup red and green M&M candies
1/2 cup peanuts, chopped

  1. Heat oven to 375 degrees F. Blend flour, baking powder and salt in a small bowl.
  2. Beat butter and peanut butter in large bowl until creamy. Beat in sugars until fluffy. Beat in eggs, 1 at a time. Add vanilla.
  3. On low speed, beat flour mixture into butter mixture. Stir in 1/4 cup warm water. Fold in M&M's and nuts.
  4. Drop by heaping tablespoonfuls onto ungreased baking sheets. Flatten slightly with your hand to form a 2-inch round.
  5. Bake at 375 degrees F for 11 minutes or until set. Cool on wire rack. Makes 4 dozen cookies.

Anise Cookies

Making spritz cookies will go more smoothly if you pack the dough firmly into the cookie press. This eliminates any air pockets that could leave holes in the shapes.

3/4 cup butter or margarine, softened
1/2 cup packed brown sugar
1/2 teaspoon Watkins Baking Powder
1/4 teaspoon Watkins Ground Cinnamon
1/8 teaspoon Watkins Ground Ginger
1 egg yolk
1 teaspoon Watkins Anise Extract
1 3/4 cups all-purpose flour

In a large mixing bowl beat the butter or margarine with an electric mixer on medium to high speed for 30 seconds. Add the brown sugar, baking powder, cinnamon, and ginger; beat till combined. Beat in the egg yolk and anise extract. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour with a wooden spoon. Do not chill dough.

Pack the dough into a cookie press fitted with your choice of shaped plate. Force dough through press 1 inch apart onto ungreased cookie sheets.

Bake in a preheated 375 degrees F oven for 8 to 10 minutes, or till edges of cookies are firm but not brown. Remove cookies from pans and cool on a rack. Makes 5 dozen.
