Turkey Cooking Helplines

The winter holidays are just around the corner. Here are some holiday tips and substitutes to help take some of the stress out of your holiday cooking.

Holiday Eggnog Cookies
Relax by the fire and savor the flavors of the season with a plate of these spirit-warming cookies.

3 cups all-purpose flour
4 teaspoons baking powder
1/2 cup (1 stick) butter, softened
1/2 cup granulated sugar
3 large eggs
1 teaspoon Watkins Rum Extract
1/2 teaspoon Watkins Ground Nutmeg
2 cups confectioners' sugar
2 to 4 teaspoons milk
red, green and white nonpareils

1. Preheat the oven to 375F. Lightly grease 2 baking sheets.
2. In a medium bowl, sift together the flour and baking powder. In a large bowl, using an electric mixer set on medium, beat the butter and granulated sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the rum extract and nutmeg. Add the flour mixture to the butter mixture; stir until a soft dough forms.
3. With lightly buttered hands, separate the dough into walnut-size pieces; roll pieces into 1-inch balls. Place the balls on the prepared baking sheets. Bake the cookies until firm, 10 to 12 minutes. Transfer to wire racks; cool completely.
4. In a small bowl, combine the confectioners' sugar and enough milk to make a thin icing. Dip the top half of each cookie into the icing. Before the icing sets, sprinkle the tops with nonpareils. Set the cookies aside to dry. Makes about 4 dozen cookies.

Pecan Snowballs

2 cups all-purpose flour
1 cup pecan halves, toasted
3/4 teaspoon salt
2 sticks (1 cup) unsalted butter, softened, plus additional for cookie
sheets 2-1/2 cups confectioners' sugar
1 teaspoon finely grated fresh lemon zest
1-1/2 teaspoons Watkins Vanilla Extract

1. Place 1 cup flour and the pecans in a food processor; pulse until nuts are finely ground. Transfer to a medium bowl. Whisk in remaining 1 cup flour and the salt.
2. Beat together butter, 1/2 cup sugar, the zest and extract in a large bowl on high speed until light and fluffy, about 2 minutes. Reduce speed to low and slowly add flour-nut mixture, beating until just combined. Chill dough until firm but still pliable, about 1 hour.
3. Preheat oven to 350 degree F and arrange racks in upper and lower thirds; lightly butter 2 large cookie sheets.
4. Using a 1-1/8-inch ice-cream scoop, drop dough onto prepared cookie sheets. Roll each between palms of hands to form smooth balls. Arrange on cookie sheets, placing about 1 inch apart, and chill until firm, about 15 minutes.
5. Bake cookies until bottoms are golden brown, switching sheets halfway through, about 15 minutes. Transfer cookies on sheets to racks and let stand until just cool enough to handle but still warm, about 4 minutes.
6. Place remaining 2 cups sugar in a bowl. Working with 4 cookies at a time, roll in sugar, coating well. Transfer to rack and cool completely. Roll cooled cookies in sugar one more time. (Can be stored at room temperature in an air-tight container, in single layers separated by waxed paper, up to 2 weeks.) Makes about 30 cookies.

Herb-Stuffed Chicken Breasts
Moist and tender chicken breasts filled with vegetables and herbs make an elegant and easy main dish for a special occasion.

2 tablespoons olive oil, divided
1/4 cup chopped yellow onion
1/4 cup chopped celery
1 clove garlic, minced
1/2 teaspoon Watkins Dried Basil
1 tablespoon lemon juice
1/2 teaspoon salt
1/4 teaspoon Watkins Black Pepper
4 skinless, boneless, chicken breast halves (about 5 ounces each)
2 tablespoons chopped fresh parsley

1. Preheat oven to 400 degrees F. Spray a 13 x 9-inch baking dish with vegetable cooking spray.
2. In a large skillet, heat 1 1/2 tablespoons of oil over medium-high heat until hot but not smoking. Add onion and celery; cook until tender, about 5 minutes. Add garlic and basil; cook for 1 minute longer. Remove from heat; stir in lemon juice, salt, and pepper.
3. Using a small, sharp knife, cut a deep, horizontal pocket into each chicken breast. Stuff 1/4 of onion-celery mixture into each pocket; press edges to close the opening. Rub remaining oil over chicken breasts.
4. Transfer chicken to the prepared baking dish; bake until cooked through and juices run clear when meat is pierced with a knife, about 20 to 25 minutes. Garnish with parsley and serve immediately. Serves 4.
