COOKING TIP
Using Fresh Ginger
To peel the ginger root, cut off the amount you think you'll need, and peel it with a vegetable peeler to remove the brown skin. You can also use a teaspoon to scrape a section of fresh ginger root instead of a knife; it's much, much safer and faster. If the recipe calls for it to be grated use a grater with tiny holes. Mince by hand if it calls for minced - ginger doesn't respond well to machine processing. Try minced ginger in soups, marinades, with vegetables or fish. Add it grated to sugar cookie batter or quick breads.
How To Toast Nuts
Spread in single layer on baking sheet. Bake at 350 degrees F for 5 to 7 minutes or until lightly toasted.

RECIPES
Spinach Dip with Artichokes - 50% Less Fat
This dip is slimmed down in calories and fat and with more spinach for extra vitamins.
4 cups fresh spinach leaves, slightly packed (4 oz)
1 package (8 oz) 1/3-less-fat cream cheese (Neufchatel), softened
1/4 cup reduced-fat mayonnaise
4 tablespoons shredded Parmesan cheese (1 oz)
1/4 cup fat-free (skim) milk
2 cloves garlic, finely chopped
1 teaspoon Watkins Basil
1 can (14 oz) artichoke hearts, drained, chopped
Baguette slices, if desired
Assorted raw vegetables, if desired
- Heat oven to 350 degrees F. Spray 1-quart shallow glass baking dish or 9-inch glass pie plate with cooking spray.
- Place spinach in 2-quart microwavable casserole; add 1/4 cup water. Cover; microwave on High 2 minutes. Drain well, pressing spinach with paper towels to remove excess liquid. Chop spinach.
- In large bowl, beat cream cheese with spoon until smooth. Beat in mayonnaise, 3 tablespoons of the Parmesan cheese, the milk, garlic and basil until well blended. Stir in spinach and artichokes. Spread evenly in baking dish. Sprinkle with remaining tablespoon cheese.
- Bake 20 to 25 minutes or until heated through. Serve with baguette slices, bread sticks, or raw vegetables. Makes 10 servings (1/4 cup each)
A 9-oz box of frozen spinach can be used in place of the fresh spinach. Cook as directed on box and drain well, pressing spinach with paper towels to remove excess liquid.
Chicken Florentine Casserole
Pounded skinless, boneless chicken breast halves are layered in a baking dish with basil-seasoned cooked pasta shells, thawed spinach, cottage cheese, shredded Italian-blend cheese, and prepared alfredo sauce.
2 to 3 lbs. skinless boneless chicken breast halves
8 oz. medium pasta shells (cooked and drained)
1 envelope alfredo sauce mix (prepare as directed)
1 box frozen chopped spinach (thawed and drained)
2 Tbsps olive oil
2 tsp Watkins Basil
1 tsp Watkins Garlic Granules
16 ounces small curd cottage cheese
16 ounces shredded Italian-blend cheese
Preheat oven to 350. Cover chicken with plastic wrap and pound with a meat mallet to about half the original thickness. Toss cooked pasta shells with the olive oil, garlic granules, and one teaspoon of the basil. Spread in a 9x13" dish or pan. Using half of the chicken, place evenly over the pasta. Spread cottage cheese over chicken, then the spinach. Sprinkle half of the shredded Italian cheese, then half of the alfredo sauce, and the rest of the basil. Place the remaining chicken on top, then pour over the rest of the alfredo sauce. Sprinkle with the rest of the shredded Italian cheese, and bake for 45 minutes. Serves 6.
Hash Brown Potato Casserole
Thanks to Carol, a friend and Watkins associate, for this yummy potato casserole recipe!
2 lb. hash browns (frozen)
1 1/2 sticks melted margarine or butter
1 Tbsp Watkins Onion Flakes
1 can cream of chicken soup (or cream of mushroom)
1 pint sour cream
2 cups sharp cheddar cheese, grated
1/2 tsp salt
1/2 tsp Watkins Black Pepper
2 cups crushed corn flakes
Mix potatoes, margarine, onion, soup, sour cream, cheese, salt, and pepper. Place in 9 x 13 inch pan (may butter if you wish). Mix corn flakes and margarine (add garlic to taste, if desired) and spread over top of potatoes. Bake at 350 degrees for 1 hour.
Can be baked at lower temperature for longer time, i.e. 300 degrees for 2 hours.
Chocolate Hazelnut Biscotti
Biscotti, meaning twice baked, are crisp Italian cookies often containing nuts or flavored with almond or anise. Traditionally, biscotti are made by baking cookie dough in two long slabs, cutting these into slices, and reheating them to dry them out. Other biscotti recipes here.
4 ounces (125 grams) semisweet or bittersweet chocolate, chopped fine
1 cup (215 grams) firmly packed light brown sugar
1 3/4 (250 grams) cups all-purpose flour
1/3 cup (30 grams) unsweetened cocoa, preferably Dutch-processed
1 tablespoon (4 grams) instant espresso powder
1 teaspoon (5 grams) baking soda
1/4 teaspoon salt
3 large eggs
1 1/2 teaspoons (6 grams) Watkins Vanilla Extract
1/2 teaspoon Watkins Hazelnut Extract
1 cup (150 grams) hazelnuts (toasted and coarsely chopped)
Preheat oven to 350 degrees F (180 degrees C). To toast hazelnuts spread on a baking sheet and bake for 15 minutes or until lightly browned and the skins begin to flake. Remove from the oven and place nuts in a dish towel. Roll up the towel and let the nuts steam for 5 minutes and then briskly rub the towel (with nuts inside) to remove the skins from the nuts. Cool and then chop coarsely. Set aside while you prepare the dough.
Reduce temperature of oven to 300 degree F (150 degrees C). Line a large baking sheet with parchment paper.
Mix finely chopped chocolate and brown sugar; set aside.
Sift or whisk together the flour, cocoa, espresso powder, baking soda and salt into a bowl; set aside. In the bowl of your electric mixer combine the eggs and vanilla and hazelnut extracts and beat to blend, about 30 seconds. On low speed mix in the chocolate/sugar and flour mixtures until a stiff dough forms, adding the hazelnuts about half way through mixing.
On a floured surface divide the dough in half. Form each half into a log 12 inches (30 cm) long. Do this by rolling the dough back and forth into a cylinder shape with floured hands. Transfer the logs to the baking sheet, spacing them well apart (width-wise on the pan), and pat to even the shapes. Bake until almost firm to the touch, about 35 - 40 minutes (logs will spread during baking). Remove from the oven, place on wire rack, and let cool for 10 minutes.
Using a long spatula transfer the logs to a cutting board. Using a serrated knife cut the dough into slices 3/4 inch (2 cm) thick on the diagonal. Arrange the slices cut-side down on the baking sheet. Bake 15 minutes. Turn the slices over and bake until crisp and dry, about 15 minutes longer. Remove from oven and let cool on wire rack.
Gfit suggestion
Heap several slices of biscotti in a colorful mug, wrap in a Christmas cello bag, and tie with a festive ribbon.
Eggnog Trifle
1 1/4 cups cold fat free milk
1 (3.25-ounce) package Jello Vanilla Flavor Fat Free Sugar Free Instant Reduced Calorie Pudding and Pie Filling
4 tablespoons orange juice, divided use
1/8 teaspoon Watkins Ground Nutmeg
1 (8-ounce) tub Cool Whip Lite Whipped Topping, thawed
1 (13.6-ounce) package fat free pound cake
3 cups halved strawberries
1/4 cup sliced almonds, toasted
Pour cold milk into large bowl. Add pudding mix, 2 tablespoons of the orange juice and nutmeg. Beat with wire whisk 1 minute. Gently stir in whipped topping.
Slice cake horizontally into 4 layers. Sprinkle cake layers evenly with remaining 2 tablespoons orange juice. Cut into 1-inch cubes.
Place 1/2 of the cake cubes in bottom of 2 1/2-quart straight-sided bowl. Spoon 1/2 of the whipped topping mixture over cake cubes.
Top with strawberries and almonds, reserving several for garnish, if desired. Layer remaining cake cubes and whipped topping mixture over strawberries.
Top with reserved strawberries and almonds. Refrigerate until ready to serve. Store leftover dessert in refrigerator. Makes 10 servings.

Lime Meltaways
12 tablespoons (1 1/2 sticks) unsalted butter, room temperature
1 cup confectioners' sugar
Grated zest of 2 limes
2 tablespoons freshly squeezed lime juice
1 tablespoon Watkins Vanilla Extract
1 3/4 cups, plus 2 Tablespoons all-purpose flour
2 tablespoons cornstarch
1/4 teaspoon salt
- In the bowl of an electric mixer fitted with the whisk attachment, cream butter and 1/3 cup sugar until fluffy. Add lime zest, juice, and vanilla; beat until fluffy.
- In a medium bowl, whisk together flour, cornstarch, and salt. Add to butter mixture, and beat on low speed until combined.
- Between two 8-by-12-inch pieces of parchment paper, roll dough into two 1 1/4-inch-diameter logs. Chill at least 1 hour.
- Heat oven to 350 degrees. Line two baking sheets with parchment. Place remaining 2/3 cup sugar in a resealable plastic bag. Remove parchment from logs; slice dough into 1/8-inch-thick rounds. Place rounds on baking sheets, spaced 1 inch apart.
- Bake cookies until barely golden, about 15 minutes. Transfer cookies to a wire rack to cool slightly, 8 to 10 minutes. While still warm, place cookies in the sugar-filled bag; toss to coat. Bake or freeze remaining dough. Store baked cookies in an airtight container for up to 2 weeks. Makes about 10 dozen.
Butterscotch Blondies
These bar cookies are dense with cashew chunks, toffee bits, and plenty of butterscotch chips.
Makes 9 large or 16 small squares
9 tablespoons unsalted butter, softened, plus more for pan
1 2/3 cups all-purpose flour
1 teaspoon Watkins Baking Powder
3/4 teaspoon coarse salt
1 cup packed light-brown sugar
2 large eggs
1 teaspoon Watkins Vanilla Extract
1/3 cup butterscotch chips
1/2 cup unsalted cashews, coarsely chopped (about 3 ounces)
1/4 cup toffee bits
Preheat oven to 350 degrees. Line a buttered 8-inch square baking pan with foil or parchment paper, allowing a 2-inch overhang. Butter lining (excluding overhang); set pan aside.
Whisk together flour, baking powder, and salt in a medium bowl; set aside.
Put butter and sugar in the bowl of an electric mixer fitted with the paddle attachment; mix on medium speed until pale and fluffy, about 3 minutes. Add eggs and vanilla; mix until combined. Reduce speed to low. Add flour mixture, and mix, scraping down sides of bowl, until well combined. Mix in butterscotch, cashews, and toffee.
Pour batter into prepared pan; spread evenly with a rubber spatula. Bake until golden brown and a cake tester inserted into blondies (avoid center and edges) comes out with a few crumbs but is not wet, 42 to 45 minutes. Let cool slightly in pan, about 15 minutes. Lift out; let cool completely on a wire rack before cutting into squares. Blondies can be stored in an airtight container at room temperature up to 3 days. Makes 16 small squares
Honey Bun Cake
1 package (18-1/4 ounces) yellow or white cake mix
4 egg whites
1 cup (8 ounces) sour cream
2/3 cup unsweetened applesauce
1/2 cup packed brown sugar
2 teaspoons Watkins Ground Cinnamon
1-1/2 cups confectioners' sugar
2 tablespoons milk
1 teaspoon Watkins Vanilla Extract
In a large mixing bowl, combine dry cake mix, egg whites, sour cream and applesauce. Beat on low speed until moistened. Beat on medium for 2 minutes.
Pour half into a greased 13-in. x 9-in. x 2-in. baking pan. Combine brown sugar and cinnamon; sprinkle over batter. Cover with remaining batter; cut through with a knife to swirl. Bake at 325 degrees F for 35-40 minutes or until a toothpick comes out clean. Cool on a wire rack.
For glaze, combine confectioners' sugar, milk and vanilla until smooth; drizzle over warm cake. Yield 20 servings.

BIRD WATCHING
Dark-eyed Junco
The Dark-eyed Junco is a common bird at winter bird feeders across North America. Data from Project FeederWatch show that it is often the most common feeder bird in most areas.
It comes in several distinctly different looking forms, but all are readily identified as "juncos" by their plain patterning, dark hood, and white outer tail feathers.
