Staving Off Diabetes
Diabetes has increased tenfold in the United States in the past 30 years and so has pre-diabetes,
previously called borderline diabetes. Dietary changes are important in helping obese and other
at-risk people avoid diabetes, but physical exercise may be even more important.
"Exercise improves your insulin sensitivity, helps the body better metabolize glucose and keeps
people at risk of diabetes out of the danger zone," says University of Alabama at Birmingham
endocrinologist Richard Rosenthal, MD. Exercise that builds lean body mass, such as weight training,
yoga or Pilates, can further improve insulin sensitivity, making it a helpful complement to aerobic
exercise such as walking or running.
He emphasizes that people with pre-diabetes should try to exercise for a minimum of 20 to 30
minutes every day.
Winter Foods That Boost Health
Take advantage of seasonal vegetables to boost your potassium intake.
Winter squashes such as acorn squash and butternut squash are high in potassium,
a mineral your body needs to support cardiovascular, bone, and kidney health.
Add cubed or mashed squash to soups, stews, casseroles, and stir-frys for extra flavor and
nutrition.
One cup of cubed squash contains almost 900 milligrams of potassium. Winter squash varieties
include acorn, spaghetti, butternut, turnip, hubbard, banana, and carnival. These potassium-rich
gourds can be baked, boiled, or steamed until the flesh is tender. Serve up squash as a side dish
by pureeing butternut squash with a bit of olive oil, lime juice, and nutmeg. Or, serve it up as the
main course by making a savory soup out of butternut squash, carrots, apples, sweet potatoes,
olive oil, chives, and spices. Other good sources of potassium include dried peaches and apricots,
potatoes, bananas, watermelon, tomato paste, and yogurt.

Sugar-Free Cocoa Mix
2 cups Nonfat Dry Milk Powder
1/2 cup Nondairy Creamer, fat-free powder
1/2 cup Watkins Watkins Cocoa Powder
10 packets Equal sweetener or Splenda sweetener
3/4 teaspoon Watkins Ground Cinnamon
Combine dry ingredients. Place in a zip baggie or air tight container and store up to three months.
To use mix
Sugar-free Cocoa
For each serving, in a heat-proof mug add 3/4 C. of boiling water to 1/3 C. Sugar-free Cocoa
Mix; stir to dissolve. Enjoy!
For a holiday gift: Place mix in a jar or decorative container. Print instructions on a decorative card
and attach to mix. Cover jar lid with holiday fabric and ribbon. If you do counted cross stitch you can
cross stitch a holiday design to place on the jar lid for those very special gifts.

3 cups apple cider or apple juice
1 cup cranberry juice cocktail
8 inches stick cinnamon, broken
In a medium saucepan combine apple cider or apple juice, cranberry juice cocktail, and stick
cinnamon. Bring to boiling; reduce heat. Simmer, uncovered, for 5 minutes.
Remove stick cinnamon before serving. Makes 4 servings.

Mulled Cranberry Cider
1 small orange
8 cups cranberry-raspberry drink
1/4 cup packed brown sugar
6 inches stick cinnamon
1 teaspoon Watkins Whole Cloves
Orange peel strips
- Remove the orange portion of the orange peel using a vegetable peeler. Cut peel into strips.
Squeeze juice from orange; discard seeds and pulp. In a 3-1/2-, 4-, or 5-quart crockery cooker
combine orange juice, cranberry-raspberry drink, and brown sugar.
- For spice bag, place the orange peel, cinnamon, and whole cloves on a double-thick,
8-inch square of 100 percent cotton cheesecloth. Bring corners of cheesecloth together and tie
with a clean cotton string. Add to crockery cooker.
- Cover; cook on low-heat setting for 5 to 6 hours or on high-heat setting for 2-1/2 to 3 hours.
To serve, remove spice bag and discard. Ladle cider into cups. If desired, garnish with additional
orange peel. Makes 10 (6-ounce) servings.

Apple-Berry Cider
8 cups apple cider or apple juice
1 10-ounce package frozen red raspberries or frozen sliced strawberries
4 inches stick cinnamon
1-1/2 teaspoons Watkins Whole Cloves
Cinnamon sticks (optional)
1 medium apple, cut into wedges (optional)
In a large saucepan combine the apple cider or juice, raspberries or strawberries, the 4 inches stick
cinnamon, and the cloves. Bring to boiling and reduce heat. Cover and simmer for 10 minutes.
Strain through a sieve lined with 100-percent-cotton cheesecloth.
To serve, pour the cider into heat-proof glasses or cups. If desired, garnish each serving with a
cinnamon stick and apple wedge. Makes 11 (6-ounce) servings.

Winter Fruits Cranberries
Cranberries are good for more than just a tasty holiday side dish. In addition to being a rich
source of cancer-fighting phytochemicals, cranberries can also prevent urinary tract infections.
In fact, this age-old folk cure is backed by solid scientific evidence; studies show a group of
phytochemicals unique to cranberries prevents harmful bacteria from sticking to the lining of the
urinary tract, thereby preventing these painful infections.
Buying
Cranberries are available year-round but are typically cultivated between the months of
September and December. You can buy them fresh or frozen; make sure they're firm with a
bright-red color and no signs of discoloration.
Storing
Keep fresh cranberries in the refrigerator for up to two weeks, or freeze them in an airtight bag
or container for up to a year. (Freezing is an especially convenient storage method for cranberries
since they don't need to be thawed before cooking.)
Preparing
Cranberries are too tart to be eaten raw, but become tangy-sweet when cooked.
They make a vibrant holiday relish and a great addition to salads or home-baked,
whole-grain breads.
Add cranberries to homemade compotes or applesauce. However you choose to use them,
make sure there's a sweet element in the recipe to offset their tartness.
Cranberry Sauce
1 cup frozen cranberry juice cocktail concentrate, thawed
1/3 cup sugar
1 12-ounce package fresh or frozen cranberries, rinsed, drained
1/2 cup dried cranberries
3 tablespoons orange marmalade
2 tablespoons fresh orange juice
2 teaspoons minced orange peel
1/4 teaspoon Watkins Ground Allspice
Combine cranberry juice concentrate and sugar in medium saucepan. Bring to boil over high heat,
stirring until sugar dissolves. Add fresh and dried cranberries and cook until dried berries begin to
soften and fresh berries begin to pop, stirring often, about 7 minutes.
Remove from heat and stir in orange marmalade, orange juice, orange peel and allspice.
Cool completely. Cover; chill until cold, about 2 hours. Can be made 3 days ahead.
Keep refrigerated. Makes about 2 1/2 cups.
Classic Cranberry Nut Bread
2 cups flour
1 cup sugar
1 1/2 teaspoons Watkins Baking Powder
1 teaspoon salt
1/2 teaspoon baking soda
3/4 cup orange juice
1 tablespoon grated orange peel
2 tablespoons shortening
1 egg, well beaten
1 1/2 fresh or frozen cranberries, coarsely chopped
1/2 cup chopped nuts
2 teaspoons Watkins Vanilla Nut Extract
Preheat oven to 350°. Grease 9x5-inch loaf pan.
Mix together flour, sugar, baking powder, salt and baking soda in a medium mixing bowl.
Stir in orange juice, orange peel, shortening, egg, and extract. Mix until well blended.
Stir in cranberries and nuts. Spread evenly in loaf pan.
Bake for 55 minutes or until a toothpick inserted in the center comes out clean.
Cool on a rack for 15 minutes. Remove from pan; cool completely. Wrap and store overnight.
Makes 1 loaf.
If you prefer not to add nuts to the recipe, the vanilla nut extract adds a delicious nutty flavor.
Cranberry Apple Crisp
5 cups sliced tart apples (about 6 medium apples)
1 1/2 cups fresh or frozen cranberries
1/3 cup sugar
1/2 cup all-purpose flour
1/2 cup brown sugar
1 teaspoon Watkins Cinnamon
1/4 cup butter or margarine
Preheat oven to 375°. Lightly grease a 9-inch square baking pan.
Pare and core apples. Layer apples and cranberries in pan sprinkling with sugar as you layer.
Mix flour, brown sugar, and cinnamon. Work in butter until light and crumbly.
Sprinkle topping evenly over apples and cranberries.
Bake 45 minutes or until apples are tender. Makes 9 servings.
Brown Butter Creamy Apple Pie
Filling
1/4 cup butter or margarine
1/2 cup granulated sugar
1 egg
2 tablespoons all-purpose flour
1 teaspoon Watkins Double-Strength Vanilla
5 cups sliced peeled Granny Smith apples (5 medium)
Crust
1 frozen deep dish pie crust or homemade crust
Streusel
1/2 cup all-purpose flour
1/4 cup granulated sugar
1/4 cup packed brown sugar
3/4 teaspoon Watkins Ground Cinnamon
1/4 cup firm butter
Topping
1/2 cup whipping cream
1 tablespoon powdered sugar
1/4 teaspoon Watkins Ground Cinnamon
1/2 teaspoon Watkins Double-Strength Vanilla
- Heat oven to 400°F. Place cookie sheet in oven to heat. In 1-quart saucepan, cook 1/4 cup
butter over medium heat, stirring constantly, until melted and lightly browned.
Cool completely, about 15 minutes.
- In large bowl, beat 1/2 cup granulated sugar and the egg with wire whisk until light and fluffy.
Beat in 2 tablespoons flour and 1 teaspoon vanilla. Beat in cooled butter. Gently stir in apples.
Pour into crust-lined pan.
- In medium bowl, stir together all streusel ingredients except butter. With pastry blender or fork,
cut in 1/4 cup butter until mixture looks like coarse crumbs. Sprinkle over apples. Place pie on
cookie sheet in oven.
- Bake 20 minutes. Reduce oven temperature to 350°F and cover edge of crust with strips of
foil to prevent excessive browning, if necessary. Bake 40 to 50 minutes longer or until apples are tender and
crust is golden brown. Cool 2 hours.
- In small bowl, beat whipping cream until soft peaks form. Add remaining topping ingredients;
beat until stiff peaks form. Pipe or spoon onto pie.
Makes 8 servings.
Pizza Bubble Ring
This recipe makes a deliciious warm appetizer. Pepperoni is the surprise inside each piece of this pull-apart snack ring.
6 to 8 tablespoons butter or margarine, melted
1 teaspoon Watkins Italian Seasoning
1/2 teaspoon Watkins Garlic Granules
2 (12-oz.) cans Pillsbury Golden Layers Refrigerated Flaky Biscuits
40 small slices pepperoni (about 3 oz.)
8 oz. mozzarella cheese, cut into 20 pieces
1/4 cup grated Parmesan cheese
1 1/4 cups pizza sauce, heated
- Heat oven to 350 degrees F. Spray 12-cup fluted tube pan with cooking spray. In small bowl,
mix melted butter, Italian seasoning and garlic powder.
- Separate 1 can of dough into 10 biscuits; press or roll each into 3-inch round.
Place 2 pepperoni slices in center of each biscuit round. Top each with piece of mozzarella cheese.
Bring dough up around filling; press edge to seal and shape each into ball. Roll in butter mixture;
place 10 balls in sprayed pan.
- Sprinkle dough balls with Parmesan cheese. Repeat with remaining can of biscuits,
placing balls over balls in pan. Pour remaining butter mixture over top.
- Bake at 350 degrees F. for 33 to 38 minutes or until deep golden brown. Cool 5 minutes.
Gently loosen bread from sides of pan. Place large heatproof plate upside down over pan;
turn plate and pan over. Remove pan. Serve warm with warm pizza sauce for dipping.
Autumn Pumpkin Soup
1 pound onions, chopped
3 cups sliced fresh mushrooms
1/2 cup (1 stick) butter
1/2 cup flour
2 quarts chicken stock made from Watkins Chicken Soup Base
1 (14-ounce) can pumpkin
1-1/2 teaspoons Watkins Curry Powder
Salt and Watkins Black Pepper to taste
1/2 cup half-and-half
2 Tablespoons honey
Saute the onions and mushrooms in 1/4 cup of the butter in a large saucepan until the onions are
tender. Transfer the undrained onion mixture to a bowl. Heat the remaining 1/4 cup butter in the
same saucepan until melted. Add the flour and mix well. Whisk in the stock gradually.
Cook until thickened, stirring constantly. Stir in the onion mixture, pumpkin, curry powder, salt and
pepper. Add the half-and-half and honey and mix well. Cook just until heated through,
stirring frequently. Ladle into soup bowls. Garnish each serving with a dollop of sour cream and
minced fresh parsley. Serve with hot crusty French bread. Serves 10 - 12 .
Chocolate Fudge
2-1/2 cups/625 mL sugar
1/2 cup/125 mL butter or margarine
1 can (5 oz/148 mL) evaporated milk (2/3 cup/160 mL)
1 jar (7 oz/200 g) marshmallow creme (2 cups/500 mL)
1 package (12 oz/340 g) semi-sweet chocolate chips
1/2 cup/125 mL chopped walnuts
1 tsp/5 mL Original Double-Strength Vanilla (11 oz)
1 tsp/5 mL Vanilla Nut Extract
Line a 9-inch/23-cm square baking dish with foil so foil extends over sides of pan;
spray with Watkins Cooking Spray. In large saucepan, combine sugar, butter and milk.
Bring to a boil over medium heat, stirring constantly. Continue boiling 5 minutes, stirring constantly;
remove from heat. Add marshmallow creme and chocolate chips; blend until smooth.
Stir in walnuts and extracts. Pour into prepared pan; cool to room temperature.
Score fudge into 48 squares. Refrigerate until firm. Remove fudge from pan by lifting foil;
carefully peel off foil. Cut with knife through scored lines. Store in airtight container in refrigerator
with waxed paper between layers. Makes 48 pieces.
Variation
Peanut Fudge: Substitute 1/2 cup/125 mL finely-chopped peanuts and 2 tsp/10 mL
Watkins Peanut Butter Extract for the walnuts and Vanilla Nut Extract.
Butterscotch Fudge: Substitute 12 oz/340 g butterscotch chips for chocolate chips, pecans for
walnuts, and Watkins Caramel Extract for Vanilla Nut Extract.
If you prefer not to add nuts to this recipe, add one of Watkins nut extracts for a rich nutty flavor.
Watkins nut extracts include Almond, Black Walnut, Butternut, Butter Pecan, or Vanilla Nut.
Low Carb Recipes
I don't know about you but I tend to add a few pounds during the winter months. I eat more when I'm cold.
The following are low carbohydrate recipes to help you keep the weight off.
Cranberry Apple Oat Bar
3 cups rolled oats
2 cups flour, all-purpose
2 teaspoons salt
1 teaspoon Watkins Baking Powder
2 cups brown sugar (can use a brown sugar substitute)
1/2 cup applesauce
1/4 cup margarine, softened
2 cups cranberries, dried
1 cup apple juice
2 cups apples, peeled, cubed
1 teaspoon Watkins Ground Cinnamon
Blend first 4 ingredients; set aside. Beat brown sugar, applesauce and margarine, in large bowl,
on high until smooth. Stir-in flour mixture until crumbly. Press half into bottom of greased pan;
reserve other half. Bake in preheated 350-degree F oven 15 minutes.
Place cranberries, apple juice, apples and cinnamon in small saucepan; soak 20 minutes.
Boil over medium-high heat 5 minutes until tender, stirring occasionally. Spread hot fruit over crust;
crumble remaining crust mixture over fruit.
Bake at 350 degrees F 20 to 25 minutes until light brown. Makes 48 bars.
Per serving (1 bar): 70 Calories; 13g Carbohydrates; 1g Dietary Fiber; 1.5g Fat (0g Saturated Fat); 1g Protein; 0mg Cholesterol; 115mg Sodium;
Apricot and Almond Cream Cake
1 cup butter (at room temperature)
2 rounded tablespoons Splenda
5 eggs (at room temperature)
2 cups ground almonds (almond flour)
1 teaspoon Watkins Baking Powder
1 tablespoon lemon juice
1 teaspoon Watkins Double-Strength Vanilla
1 teaspoon Watkins Almond Extract
1/2 cup heavy cream
5 apricot halves from a can of apricots in water
Butter and line two 8-inch round baking pans with baking paper. Preheat the oven to 350 degrees F.
Mix the first eight ingredients together in a food processor until smooth. Divide the mixture between
the two baking pans, level the tops and bake for about 30 minutes until firm in the center.
Remove from the oven and leave on a cooling rack for five minutes before loosening with a knife
and turning out onto the racks. Peel off the baking paper and leave to cool completely.
When cooled, whip the cream until fairly thick and "spreadable." Drain the apricots and chop into
small chunks, then mix them into the whipped cream. Turn one of the cakes upside down and
spread the cream mixture over it (like buttering a piece of bread!) Place the other cake on top of
the cream and press lightly to sandwich the cakes together. Serve cut into wedges. Serves 10.
You could use any fruit or low calorie fruit jam for the filling for this cake.
Per serving (one slice): 6.2g carbohydrates; 2.4g fiber; 7.3g protein; 34.7g fat; 355 calories
One-Bowl Peanut Butter Cookies
1 cup natural peanut butter
2 tablespoons butter
3/4 cup Splenda
3 tablespoons oat flour
1/2 teaspoon Watkins Baking Powder
1 egg
Cream peanut butter, butter, and Splenda. Stir in oat flour and baking powder. Beat in the egg.
Chill dough in refrigerator for 30 minutes.
Preheat oven to 350 degrees F. Shape dough into one-inch diameter balls.
Place 2 inches apart on an ungreased cookie sheet. Flatten by pressing with the tines of a fork in
alternate directions. Bake for 12-15 minutes. Makes two dozen.
Per serving: 3.2g carbohydrates; 0.7g fiber; 3.1g protein; 6.9g fat; 12.8mg cholesterol; 67.4mg sodium; 82.3 calories

Storing Cookies
Keep those cookies as fresh as the day you baked them with these storage tips.
- To protect cookies from air and humidity that can make them stale, keep them in
tightly-covered containers. Store bar cookies this way or in the baking pan, tightly covered with
plastic wrap or foil. Store moist and crisp cookies separately to avoid softening the crisp ones.
- To restore moisture to soft cookies that have begun to dry out, place a wedge of raw apple
or a slice of bread underlined with waxed paper into the container with the cookies and seal tightly.
Remove the apple or bread after 24 hours.
- For long-term storage, freeze baked cookies in freezer containers or plastic bags for up to 12
months. Before serving, thaw them in the container or plastic. Warming cookies for a few seconds
in the microwave will make them taste like fresh baked.
