COOKING TIPS
Salads and Dressings
- Use your fork and dip first into a side of dressing, then spear your salad. This fork-full method gives you more control than if you simply dumped on the dressing.
- Squeeze a wedge of lemon or lime onto salads as a zesty vitamin C-rich substitute for salad dressing.

RECIPES
Healthified Ranch Dressing
This version has 77% less fat, no saturated fat, and 66% fewer calories than the original recipe. Plain yogurt replaces sour cream in a tasty versatile dressing or a dip for veggies.
1/2 cup fat free plain yogurt
1/4 cup reduced-fat mayonnaise
3/4 cup buttermilk
1 tablespoon chopped fresh chives
2 teaspoons chopped fresh parsley or 1/2 teaspoon Watkins Parsley
1/8 teaspoon salt
1/8 teaspoon Watkins Organic Garlic Powder
1/8 teaspoon Watkins Black Pepper
In small bowl, mix ingredients until blended. Cover; refrigerate 1 hour to blend flavors. Store in refrigerator for up to 2 days. Makes 12 servings (2 tablespoons each)
Turkey-Pasta Salad
Salad
1 box (14.5 oz) uncooked multigrain or whole grain rotini or rotelle pasta
3 cups small fresh broccoli florets
1 1/2 cups cubed cooked turkey breast (1/2 lb)
1/2 cup dried cherries
1 small onion, chopped (1/2 cup)
1 medium stalk celery, chopped (1/2 cup)
1/2 cup unblanched whole almonds, toasted
Dressing
1 1/2 cups fat free plain yogurt
1/2 cup reduced-fat mayonnaise
2 tablespoons Dijon mustard
1 tablespoon champagne vinegar, white wine vinegar or cider vinegar
1/4 cup powdered sugar
1 teaspoon salt
1/2 teaspoon Watkins Black Pepper
1/2 teaspoon poppy seed
- Cook pasta as directed on package omitting salt and adding broccoli for last 2 minutes of cooking; drain. Rinse with cold water to cool; drain.
- In large bowl, mix pasta, broccoli and all remaining salad ingredients except almonds.
- In medium bowl, beat dressing ingredients with wire whisk until smooth. Add to pasta mixture; toss to mix well. Cover; refrigerate at least 2 hours to blend flavors. Before serving, stir in almonds.
Makes 10 servings (1 cup each).
To toast almonds, heat oven to 350 degrees F. Spread almonds in ungreased shallow pan. Bake uncovered 6 to 10 minutes, stirring occasionally, until light brown.
Substitution
Dried cranberries can be substituted for the cherries.
Taco Salad
1 lb extra lean ground beef
2/3 cup water
1 tablespoon Watkins Chili Powder
1/2 teaspoon Watkins Ground Cumin
1/2 teaspoon Watkins Ground Red Pepper (cayenne)
12 cups torn romaine or iceberg lettuce
1 can (15 oz) pinto beans, drained, rinsed
2 medium tomatoes, chopped (1 1/2 cups)
3 medium green onions, sliced (3 tablespoons)
3/4 cup shredded reduced-fat sharp Cheddar cheese (3 oz)
3/4 cup salsa (any variety)
3/4 cup fat-free sour cream
3 oz tortilla chips
- In 10-inch nonstick skillet, cook beef over medium-high heat 5 to 7 minutes, stirring frequently, until thoroughly cooked; drain. Stir in water, chili powder, cumin and ground red pepper; reduce heat to medium-low. Cook about 5 minutes or until most of liquid has evaporated.
- Divide lettuce among 6 salad plates; top each with meat mixture and remaining ingredients except chips. Arrange chips around salad. Serve immediately. Makes 6 servings (3 cups each).
Avocado slices make a perfect garnish for this zesty salad.
Crunchy Asian Salad
Dressing
1/3 cup canola oil
1/3 cup rice vinegar
3 tablespoons sugar
3/4 teaspoon salt
1/2 teaspoon Watkins Black Pepper
Salad
1 package (3 oz) ramen noodle soup mix (any flavor)
1 bag (16 oz) coleslaw mix (shredded cabbage and carrots)
8 medium green onions, sliced (1/2 cup)
1/2 cup sliced almonds (2 oz)
1 medium red bell pepper, cut into 1x1/8-inch strips
2 seedless oranges, peeled, coarsely chopped (1 1/2 cups)
2 cups coarsely chopped fresh baby spinach leaves
- In a large bowl, beat dressing ingredients with wire whisk until sugar is dissolved and mixture is well blended.
- Break up ramen noodles in bag before opening. Use seasoning packet from soup package for another recipe. Add noodles and all remaining salad ingredients except oranges and spinach to dressing; toss to mix well. Stir in oranges and spinach. Serve immediately or refrigerate up to 8 hours. 15 servings (2/3 cup each)
Tips
- Turn this into a delicious main dish salad by adding shredded cooked chicken.
- Chopped peanuts or honey-roasted peanuts would be a delicious substitute for the almonds in this recipe.
- The ramen noodles will be crisp if the salad is served right after making it, but will soften if the salad is stored. If you plan to refrigerate salad, add ramen noodles just before serving.
Tropical Chicken Stir-fry
1 1/2 lbs chicken breast, cubed
2 Tbsp sesame oil
2 cloves garlic, minced
1 green onion, minced
1 can (15.25 oz) tropical fruit cocktail
1 Tbsp soy sauce
1 tsp Watkins Ginger
1/2 tsp Watkins Paprika
1/4 tsp turmeric
1/4 tsp Watkins Allspice
1/2 cup orange juice
1 Tbsp cornstarch
Salt and Watkins Black Pepper
3 cups cooked jasmine rice
Drain tropical fruit, reserving juice; set aside. Combine 1/2 cup reserved juice with soy sauce, ginger, paprika, turmeric, and allspice in a small bowl; set aside. Mix orange juice and cornstarch in a small bowl; set aside.
Salt and pepper chicken. Heat oil in wok or large skillet over high heat. Add garlic and green onion and stir-fry for 1 minute. Add chicken and stir fry until no longer pink (approximately 1 minute). Add fruit juice soy sauce mixture to the wok. Stir gently for about 30 seconds. Add fruit salad, cover and cook 2 minutes. Add orange juice with cornstarch to the wok and stir until thickened. Serve on a platter over hot jasmine rice. 4 servings
Fruit and Nut Chicken Salad
2 chicken breasts cooked, cubed and chilled
2 stalks celery, cut in 1/2-inch pieces
1 large red apple, cubed
25 seedless green grapes
1 can mandarin oranges (drained)
1/2 cup coarsly chopped pecans
1/2 cup light ranch dressing (first recipe above)
romaine or iceberg lettuce leaves
Mix first 5 ingredients in bowl. Add ranch dressing and toss. Arrange salad on romaine lettuce leaves. Sprinkle with chopped pecans.
Great for a light lunch with crispy crackers and iced tea. 4 serivings
Italian Cream Cake
This recipe was sent in by Lilly from Pennsylvania. It includes her notes as to how she modified the recipe.
"I just had to share this recipe I found in an insert of our newspaper a few weeks ago. It is sooooooooooooo good."
Cake
1 cup buttermilk (I used 1 cup of unflavored yogurt instead)
1 t. baking soda
5 eggs, separated
2 cups granulated sugar
1/2 c. butter softened
1/2 cup vegetable shortening
2 cups all purpose flour
1 t. vanilla extract (I used 2 t.) Watkins vanilla
1 3 oz. can sweetened coconut ( I used the coconut in a bag)
I didn't make the frosting. By the time I would buy 2 pkgs. Philadelphia cream cheese it would cost more than the 18 oz. of Cream Cheese Frosting already made and ready to use.
Here's their frosting recipe
12 oz. cream cheese softened
6 T. butter softened
24 oz. confectioners sugar
1 1/2 t. Watkins Vanilla Extract
1/4 cup chopped pecans
Preheat oven to 350 degrees F. Grease three 9 inch cake pans and line with wax paper. I used my nonstick pans instead. I didn't have three round so I used two round then made an 8" square pan and kept it separate and used the two round layers and frosted in between them then the rest.
Combine buttermilk or yogurt and baking soda. Mix well. Beat egg whites with a mixer at high speed until stiff.
Combine granulated sugar, butter, and shortening. Beat with a mixer at medium speed until light. Add egg yolks one at a time beating well. Add buttermilk mixture alternately with flour. Stir in vanilla. Fold in egg whites. Stir in cocunt. Pour into pans.
Bake 18-20 minutes until a wooden toothpick inserted in the center comes out clean.
Cool in pans 10 minutes. Remove from pans and cool completely.
Strawberry Cheesecake Pie
This creamy pie is so refreshing on a hot day and also really easy to assemble.
2 cups sliced fresh strawberries
1/4 cup chopped almonds, toasted
1 tablespoon sugar
1 graham cracker crust (9 inches)
1 package (8 ounces) cream cheese, softened
1 teaspoon Watkins Double-Strength Vanilla or Watkins Pure Vanilla
2 cups cold milk, divided
1 package (3.4 ounces) instant vanilla pudding mix
In a bowl, combine the strawberries, almonds and sugar. Pour into crust. In a mixing bowl, beat cream cheese until smooth; gradually add 1/2 cup of milk. Stir in vanilla. Add pudding mix and remaining milk. Beat for 1 minute or until blended; pour over strawberries and almonds. Cover and refrigerate for 2 hours or until set. Garnish with sliced strawberries and whipped topping or whipped cream. 8 servings
Turtle Bars
2 cups all-purpose flour
1/2 cup confectioners' sugar
1 cup unsalted butter
1 14-ounce can sweetened condensed milk
1 large egg, beaten
1 teaspoon Double-Strength Vanilla Extract
1 cup pecans, coarsely chopped
3/4 cup semisweet chocolate chips
1 cup toffee-and-chocolate baking pieces
Preheat oven to 350 degrees F. Combine the flour, confectioners' sugar, and butter in the bowl of a food processor. Pulse until a crumbly dough is formed. Press the dough firmly into a greased 9-by-13-inch pan. Bake until just golden, about 13 minutes. Whisk together the condensed milk, egg, and vanilla. Pour the filling over the baked crust. Sprinkle the pecans, chocolate chips, and toffee pieces evenly over the filling. Bake until the filling is set, the edges are golden brown, and the toffee is melted, about 25 minutes. Cool completely in the refrigerator, about 2 hours. Cut into 32 bars.
Banana-Walnut Chocolate Chunk Cookies
1 cup all-purpose flour
1/2 cup whole-wheat flour
1 teaspoon coarse salt
1/2 teaspoon baking soda
3/4 cup (1 1/2 sticks) unsalted butter, softened
1/2 cup granulated sugar
1/2 cup packed light-brown sugar
1 large egg
1 1/2 teaspoons Watkins Double-Strength Vanilla Extract
1/2 cup mashed ripe banana (about 1 large)
1 cup old-fashioned rolled oats
8 ounces semisweet chocolate, coarsely chopped into 1/4-inch chunks or semisweet chocolate chips
1/2 cup coarsely chopped walnuts (about 2 ounces), toasted
Preheat oven to 375 degrees F. Whisk together flours, salt, and baking soda in a small bowl; set aside.
Mix butter and sugars until pale and fluffy. Add egg and vanilla; mix until combined. Mix in banana.
Add flour mixture; mix until just combined. Stir in oats, chocolate chunks, and walnuts.
Using a 1 1/2-inch ice cream scoop, drop dough onto baking sheets lined with parchment paper, spacing about 2 inches apart. Bake cookies, rotating sheets halfway through, until golden brown and just set, 12 to 13 minutes. Let cool on sheets on wire racks 5 minutes. Transfer cookies to wire racks; let cool completely. Cookies can be stored in airtight containers up to 2 days. Makes about 3 dozen.
