Picnic Deli Sandwich
1 loaf (about 14 inches long) Sourdough Bread
1/2 cup vinaigrette-style salad dressing (your favorite)
1/2 cup finely chopped cucumbers
1/2 cup finely chopped tomato
2 Tablespoons thinly sliced green onion
4 ounces sliced Swiss cheese
12 thin green bell pepper rings
9 ounces deli turkey
12 pieces thin-sliced salami
thin sliced red onion
- With a serrated knife, horizontally slice 1 inch off top of loaf. Pull soft center from bottom half of loaf (make a shell with 1/2-inch thick walls). Reserve soft bread for other uses.
- In a bowl, mix vinaigrette, cucumber, tomato and green onions. Spoon about half of the dressing evenly over interior of the hollowed out loaf. Also brush inside top of loaf to moisten.
- Layer cheese, bell pepper, turkey, salami and onion in loaf. Drizzle with remaining dressing. Set bread top over filling. Wrap sandwich in foil or plastic wrap and refrigerate at least 3 hours or up to 24 hours.
- Unwrap, slice and enjoy!

While I sat in the reception area of my doctor's office, a woman rolled an elderly man in a wheelchair into the room. As she went to the receptionist's desk, the man sat there, alone and silent. Just as I was thinking I should make small talk with him, a little boy slipped off his mother's lap and walked over to the wheelchair. Placing his hand on the man's, he said, "I know how you feel. My mom makes me ride in the stroller too.

Friendly Fats
Avocados, nuts, olives, and seeds are good for you even if you have high cholesterol.
Unsaturated fats are your friends when it comes to lowering bad LDL cholesterol and raising good HDL cholesterol. So if your salad looks a little dull, make your stomach and your arteries happy. Toss in some walnuts, sunflower seeds, or avocado and use a dressing made with olive oil.
To make your diet heart-healthy, choose foods that contain unsaturated fat rather than saturated, and stay away from trans fat altogether. How can you tell the difference? Almost all plant-based fats are the heart-healthy kind, unless they have been hydrogenated. Cook with natural, unhydrogenated canola, sesame, or vegetable oil instead of butter, shortening, or stick margarine. On sandwiches, skip the mayo and spread on a moist, flavorful alternative like mustard, hummus, or crushed-olive tapenade. Just remember
Heart-healthy or not, you still need to limit total fat consumption to about 30 percent of your daily diet.

COOKING TIP
Zucchini contains a lot of water, and freezing seems to pull the moisture to the surface, leaving a “puddle” upon thawing. You can add frozen zucchini directly to soup without thawing, but if you’re making bread, cookies or cake, you should thaw it and blot it dry.
A bit of shredded zucchini added to a boxed brownie mix makes moist and tasty brownies.

RECIPES
Grilled Chicken, Sausage and Vegetable Skewers
8 12-inch wooden skewers, soaked in water for 30 minutes prior to use
Marinade
1/2 cup canola oil
1/4 cup red wine vinegar
1 teaspoon salt
1/2 teaspoon Watkins Black Pepper
Chicken
1/2 teaspoon each, Watkins Basil, Watkins Oregano and Watkins Thyme
3 boneless, skinless chicken breast halves, cut into 2-inch cubes
1 12-ounce package mushrooms, stems removed
2 red bell peppers, seeded and cut into 2-inch squares
2 medium onions, peeled, quartered and separated into pieces 2-3 layers thick
3 links Italian sausage, cut into 1-1/2-inch slices
Watkins Cooking Spray
In a shallow dish, whisk together the marinade ingredients; add chicken mushrooms and red bell pepper.
Spray unheated grill grate with cooking spray; prepare grill. Remove chicken and vegetables from marinade; discard marinade. Alternately skewer chicken, mushrooms, peppers, onion and sausage.
Grill 20 minutes or until meats are completely cooked, turning occasionally. Serve with orzo or rice.
Spicy Cocoa Sloppy Joes
1-1/2 pounds lean ground beef
1 to 1-1/4 cups chopped onion
1 cup ketchup
2 tablespoons Watkins Cocoa
1-1/2 tablespoons yellow mustard
2-1/2 teaspoons Watkins Chili Powder
1-1/2 teaspoons Watkins Black Pepper
1-1/4 teaspoons salt
1. Cook ground beef and onion in large skillet on medium heat until beef is browned and onion is tender. Drain excess fat.
2. Stir in ketchup, cocoa, mustard, chili powder, pepper and salt. Heat 10 to 15 minutes on low heat or until hot. Serve in buns. Cover; refrigerate leftovers. About 4-1/2 cups sandwich filling.
Beef N' Pork Burgers
4 bacon strips, diced
1 large onion, finely chopped
1 garlic clove, minced
1-1/2 cups soft bread crumbs
1 egg, beaten
1/2 cup water
1 tablespoon Watkins Parsley Flakes
2 to 3 teaspoons salt
1/4 teaspoon Watkins Marjoram
1/4 teaspoon Watkins Paprika
1/4 teaspoon Watkins Black Pepper
1 pound ground beef
1 pound ground pork
8 hamburger buns, split and toasted
Mayonnaise, mustard, ketchup, lettuce leaves and tomato slices
In a skillet, cook bacon, onion and garlic over medium heat until the bacon is crisp; drain and place in a bowl. Stir in the bread crumbs, egg, water, parsley, salt, marjoram, paprika and pepper. Crumble beef and pork over the mixture and mix well. Shape into eight 3/4-in.-thick patties.
Grill, uncovered, over medium-hot heat for 9-12 minutes or until juices run clear, turning occasionally. Serve on buns with mayonnaise, lettuce and tomato.
Yield: 8 servings.
White Chip And Macadamia Nut Coffeecake
CRUMB TOPPING (recipe follows)
6 tablespoons butter or margarine, softened
3/4 cup granulated sugar
3/4 cup packed light brown sugar
2 cups all-purpose flour
2 teaspoons Watkins Baking Powder
1/2 teaspoon Watkins Ground Cinnamon
1-1/4 cups milk
1 egg
1 teaspoon Watkins Vanilla Extract
WHITE DRIZZLE (recipe follows)
- Heat oven to 350 F. Grease and flour 13x9x2-inch baking pan. Prepare CRUMB TOPPING; set aside.
- Beat butter, granulated sugar and brown sugar until well blended. Stir together flour, baking powder and cinnamon; beat into butter mixture. Gradually add milk, egg and vanilla, beating until thoroughly blended. Pour 1/2 batter into prepared pan; top with 1/2 CRUMB TOPPING. Gently spread remaining batter over topping. Sprinkle remaining topping over batter.
- Bake 30 to 35 minutes or until wooden pick inserted into center comes out clean. Cool completely.
- Prepare WHITE DRIZZLE; drizzle over cake. 12 to 16 servings.
CRUMB TOPPING Combine 2/3 cup packed light brown sugar, 1/2 cup all-purpose flour, 6 tablespoons firm butter or margarine and 1-1/3 cups (8-oz. pkg.) white chips and macadamia pieces in medium bowl. Mix until crumbly.
WHITE DRIZZLE Beat together 3/4 cup powdered sugar, 2 to 3 teaspoons milk, 1 teaspoon softened butter and 1/4 teaspoon vanilla extract. If necessary, add additional milk 1/2 teaspoon at a time until of desired consistency.
Citrus Dream Pie
Crust
9-inch pie crust
Lemon-Orange Butter Filling
1 -1/2 cups sugar
1/4 cup all-purpose flour
1/4 cup cornstarch
1/8 teaspoon salt
1 cup orange juice
1/4 cup water
3 egg yolks, lightly beaten
2 tablespoons butter or margarine
1 teaspoon grated lemon peel
1 teaspoon grated orange peel
1/3 cup fresh lemon juice
Lime Cream Filling
1 envelope (about 1 tablespoon) unflavored gelatin
3/4 cup cold water, divided
3 egg yolks
3/4 cup sugar
2 packages (8 ounces each) cream cheese, softened
2 teaspoons grated lime peel
1/4 cup fresh lime juice
Topping and Garnish
1 cup whipping cream, whipped
1/2 cup reserved lemon-orange butter filling
For crust, prepare pie crust recipe. Place in 9-inch pie plate. Bake and cool completely.
For lemon-orange butter filling, combine 1-1/2 cups sugar, flour, cornstarch and salt in medium saucepan. Stir orange juice and 1/4 cup water into sugar mixture gradually. Cook and stir on medium heat until mixture comes to a boil. Reduce heat to low. Cook and stir 8 minutes. Stir 1/2 cup hot filling into egg yolks slowly. Mix well. Return mixture to saucepan. Cook and stir on medium heat until mixture comes to a boil. Reduce heat to low. Cook and stir 4 minutes. Remove from heat. Add butter. Stir well. Add lemon peel, orange peel and lemon juice. Stir until blended. Cool.
For lime cream filling, sprinkle gelatin over 1/4 cup water in small bowl. Beat egg yolks lightly in small saucepan. Stir in 3/4 cup sugar gradually. Add remaining 1/2 cup water gradually. Stir well. Cook and stir on medium heat 5 minutes. Remove from heat. Add gelatin mixture, stirring until dissolved. Cool 2 to 3 minutes.
Beat cream cheese at medium speed of electric mixer until light and fluffy. Add slightly cooled gelatin mixture gradually. Beat at low speed until blended. Stir in lime peel and lime juice. Place in freezer 1 hour to set filling.
To assemble pie, spread half of lemon-orange butter filling in bottom of baked pie crust. Spoon lime cream filling over lemon-orange butter filling. Place in freezer 1 hour. Drop teaspoonfuls of remaining lemon-orange butter filling over lime filling, reserving 1/2 cup for garnish, if desired. Spread gently to cover.
For garnish, spread whipped cream carefully over top. Use reserved lemon-orange butter filling to pipe lattice strips across top, if desired. Refrigerate several hours or until firm.
Peachy Blueberry Pie
1 unbaked 9-inch double pie crust
4 cups peeled, thinly sliced fresh ripe peaches (or 4 cups frozen, thawed)
1-1/2 cups fresh blueberries, washed and well drained
1 cup plus 2 tablespoons granulated sugar, divided
2 tablespoons cornstarch
2 teaspoons Watkins Vanilla Extract
1/4 cup milk
Heat oven to 350°F.
In a large bowl combine peaches, blueberries, 1 cup sugar, cornstarch and vanilla extract; mix gently until cornstarch is dissolved and fruit is well coated.
Pour into unbaked pie crust.
Moisten pastry edge with water. Cover pie with top crust. Trim 1/2 inch beyond edge of pie plate. Fold top edge under bottom crust; flute. Cut slits in top of crust to allow steam to escape.
Bake about 35 minutes. Remove from oven, brush top with milk and sprinkle with remaining 2 tablespoons sugar.
Return to oven and continue to bake for an additional 15 to 20 minutes or until peach-blueberry mixture bubbles and crust is golden. Let cool 10 minutes before serving.
